Keeping up Appearances t’s that glorious time of year when everyone seems to be out and about enjoying our wonderful Dales countryside. And no wonder, because we’re lucky enough to live in some of the finest scenery in the world. It’s worth remembering, though, that much of our beautiful ‘natural’ landscape would soon disappear it wasn’t for the constant efforts of landowners, farmers and conservationists. As you’ll gather from our feature on p.36, much of the native tree-cover in the Dales has already vanished, along with the birds and animals it was once home to. Only thanks to the intervention of organisations like Yorkshire Dales Millennium Trust is the tide at last turning. It’s a similar story with our lush flower meadows, limestone pavements and heather moors. So this summer spare a thought for all the behind-the-scenes work that keeps the Dales landscape looking so pristine – and perhaps even consider doing your own bit to help.

Like many warblers seen in the British Isles, the sedge warbler is a summer visitor, arriving in April and returning to Africa in October. Sedge warblers like to set up home in damp spots – muddy streamsides and wet flushes – with plenty of reeds, rushes or bushes to perch in. The muted colouring of these charming little birds can make them quite difficult to distinguish from the background vegetation. Fortunately for birdwatchers they draw attention to themselves at dawn and dusk with their noisy, rhythmic song, which consists of a cheerful torrent of fastpaced clicks and chirps.

t may be our national flower, but if there’s one plant that causes more consternation amongst gardeners than any other, it’s the rose, so much so, in fact, that less confident gardeners are often reluctant to dabble with roses at all. And that’s a huge shame, because roses aren’t just gorgeous, they’re remarkably easy to grow.

Not that you’d believe it if you sat in on the average Q&A session at your local gardening club. There are always folk fretting about thin, sickly plants, whilst others worry about how to tame the spiky monsters running amok in their borders. Roses that were meant to bloom beside the cottage door have become long, leggy stems that only flower at roof level. Others simply won’t flower at all. Dales Life | SUMMER 2017 |

So where is it all going wrong? Gardening books are seldom much help, leaving beginners floundering in a sea of detail. Is my rose a climber or a rambler? Is it a Hybrid Tea, Floribunda or maybe a Portland? As for pruning, rose experts will have you believe it’s a skill right up there alongside brain surgery and rocket science. No wonder some people just can’t be bothered. But here’s the good news. You don’t need a degree in horticulture to grow perfect roses. Just stick to the three easy-to-follow principles below, and your roses will be plentiful and problem-free.

Different roses do different jobs, and it’s crucial to know what kind of rose you’re dealing with. Let’s simplify. Any given rose is either a standard rose, a shrub rose, a rambler or a climber. Standards are easy to recognise. They’re lollipopshaped: a single stem with a big blob of growth on top. Standards are good in formal gardens or in containers on the patio. Shrub roses, as the name suggests, are bushes. They stand around minding their own business, not sprawling, gangling or requiring support. You can trim them to shape and use them to add structure to your garden, just like any other shrub. Where most people struggle is with distinguishing between ramblers and climbers. Both of them flop about and need support to prevent them collapsing in a tangle. The key to telling them apart is how they behave. Ramblers usually flower just once a year, around midsummer. They throw out long, arching stems from ground level, and these grow frighteningly fast. If you’re being terrorised by a thorny triffid, it’s a rambler. But if you need a rose to blanket a large structure – a fence, pergola or garage roof – a rambler is just the ticket. Climbers, by contrast, are repeat flowering, and will jolly up your garden with bursts of blooms from summer through to late autumn. They grow less manically than ramblers, branching from existing stems rather than at ground level. Climbers are ideal for growing on modest, neat garden features like trellis panels or obelisks. Roses simply won’t swap roles. A bush rose won’t like being trained up a wall, and a climber will never make a tidy standalone plant. Ramblers are far too vigorous for your garden obelisk, or to live next to your front door. And if you’ve got a rose in the wrong place there’s only one thing to do: root it out and plant something more suitable.


Three of the best There are thousands of different rose cultivars, but here are three classics. Shrub: Peace Ever popular bi-coloured rose with big, long-lasting blooms and good disease resistance. Only faintly fragrant.

Rambler: Rambling Rector Abundant creamy-white, highly fragrant flowers. If you don’t deadhead, the hips will provide fantastic autumn colour.

Climber: Blush Noisette Semi-double, clove-scented, pale pink flowers that just keep coming. Good disease resistance. SNIP SENSIBLY Once you know what kind of rose you’re dealing with, pruning is a doddle. Ramblers should be pruned in summer, right after their one-and-only flush of flowers; prune too late and you’ll get no flowers next season. Shorten overlong stems and chop one third of the oldest stems back to just above the soil. This will encourage new growth from ground level to fill in bare areas. Roses flower more plentifully on horizontal stems, so tie your stems into structural supports with this in mind. Prune climbers in autumn or winter. Snip off the tips of vigorous shoots to encourage branching. Cut back older stems to just above a bud or replacement shoot – or remove them completely if the plant is getting too thickety. Throughout the year, tie in new, flexible shoots as close to horizontal as possible to encourage flowering. The aim is to stop your climber getting leggy and flowering only at the top of old, woody stems. If this has already happened, it’s kill-or-cure time. Lop it right down to the ground. If it grows back, prune it properly from now on! If it doesn’t, plant another. A standard is created by grafting, so find the graft point and treat this as if it were ground level. Then prune as per ramblers or climbers, depending on whether it flowers once a year (ramblers) or repeatedly (climbers). 24 | SUMMER 2017 | Dales Life

Shrub roses are also pruned in autumn or winter. They’re pretty forgiving once they’re established, so simply thin out congested growth and shorten stems to sculpt the shape you want. However hard you hack them they’ll usually bounce back. Whatever the rose, use pruning as an excuse to remove weak, diseased, damaged or crossing stems, and to create an open, airy structure – this will help prevent disease.

FEED, FEED, FEED! Roses are prey to a terrifying variety of diseases, but don’t worry – if you feed and water them properly they’ll most likely stay hale and hearty. Keep the area around the base of the rose free from competing plants, and add three handfuls of slow-release rose fertiliser to the soil in spring. Mulch with well-rotted manure or garden compost, being sure to keep the mulch a few centimetres away from the stems. Feed roses in containers with liquid rose feed every fortnight. Water ground-planted roses thoroughly every ten days during dry spells. It’s better to give them a proper drenching once in a while than a sprinkling every day. Roses in containers will need more attention, so check the condition of the compost regularly.

In 2014 Susan Dobson turned her twin passions for gardening and floristry into a business by setting up The Yorkshire Dales Flower Company. With the help of her husband Brian, she has planted her garden at Bradley, near Skipton, with a wealth of gorgeous flowers, shrubs and herbs, which she uses to create stunning floral arrangements for weddings and other special occasions. She also runs a variety of workshops to pass on her skills and enthusiasm to others. How did it all start? I got my passion for gardening at an early age, from my parents. We moved to our house at Bradley 25 years ago, and I have always been keen to run a business from my garden. At first I wondered about setting up a nursery, but I’ve always loved arranging flowers and foliage, so eventually I decided to train as a florist and embark on a career in flowergrowing and floristry. What kind of garden do you have? It’s very much a cottage garden in style, but also quite formal in places. My father painstakingly grew 400 box plants for me to use as formal hedging for my parterres – luckily we’ve never suffered from box blight! There’s a cutting garden and a lovely orchard area with old crab apple and pear trees that have beautiful blossom. And then there’s a small woodland with hazel and cherry trees, which makes a good source of foliage. Altogether it adds up to about an acre. I gather you haven’t used pesticides for the last 20 years… so how do you keep slugs, snails and other pests at bay? We have lots of hedgehogs, frogs and toads in the garden, along with a resident thrush.We also keep hens, and they do a great job of grubbing out pests, providing you remember to protect small, delicate plants before letting them out! I believe that if you grow a diversity of plants then you create an ecological balance by encouraging a diversity of natural predators.

How would you describe your floristry style? One of the things that inspired me to go into the floristry business was the revival of interest in British-grown flowers, and the fact that people nowadays are increasingly drawn to the rustic, cottage garden style of bouquet or arrangement. Although there’s still room for the more traditional, formal style, what I most enjoy is creating arrangements with that loose, fresh, natural look. All my bouquets and arrangements are individual and bespoke. So if it’s for a wedding, for example, I’ll have a detailed conversation with the bride-to-be to find out what her dress will be like, what colour themes will be involved, and what her especial likes and dislikes are. There will usually be two consultations, and we’ll also exchange messages by email and telephone. I’m aiming to provide flowers that are as individual to that person as possible.

What does your typical working day consist of? Obviously there’s a lot of gardening involved, and I try to get outside most days to do something: planting, pruning, making new borders… In spring and early summer in particular everything seems to need to be done at once, and there are always weeds staring at you! Then there may be occasions or funeral flowers to arrange, and brides-to-be to see about their wedding flowers. Towards the weekend I’m usually busy with wedding flowers, and some weekends I hold workshops to teach floristry skills. Tell us some of your favourite flowers. I’m very fond of hellebores – the doubles are especially beautiful – because they’re a harbinger of spring, bringing colour to the garden when there’s not a great deal else going on. They last for ages, and look stunning in arrangements and bouquets. Even the seed-heads are beautiful; I’ve used them as buttonholes in summer. As for plants that flower later in the year, I love peonies, roses, Veronicastrum, sweet rocket, alliums, hyssop, sweet peas and of course dahlias. Some of the late-flowering clematis are good for cutting too, especially the viticella group ones. The list is endless, really!

What’s the toughest part of your job? It’s quite difficult to strike a balance between the floristry side of things and the flowergrowing. Thankfully, because I work from home rather than a High Street premises, I can be more flexible with my hours. In a single day I can switch from, say, planting seedlings or deadheading to making hand-tied gift bouquets or answering email enquiries. And what do you enjoy most about it? To be honest, it’s all exciting, and I feel really lucky to have been able to turn my passion for gardening into a business. I love making people happy, and I get such lovely feedback! Chocolate Cosmos

Tall and elegant, Chocolate Cosmos (Cosmos atrosanguineus) makes an eye-catching addition to any sunny summer border. Whether its dusky maroon flower heads actually smell of chocolate is questionable – some people swear to it, others argue the scent is more like vanilla – but who cares when they look so gorgeous bobbing in the breeze? Plant them in drifts in full sun, and deadhead regularly to prolong flowering. Cosmos atrosanguineus hails from Mexico, so it won’t always survive a British winter. An English summer simply wouldn’t be complete without luscious, freshly picked strawberries, and now’s the time to give your strawberry plants a little TLC. To ensure a bumper crop, water them generously and feed fortnightly with tomato feed. When the fruits begin to develop, place straw or fibre matting beneath them to stop them touching the soil and rotting. Remember to remove this when the plants have stopped cropping, so the air can circulate. Individual plants won’t keep cropping for ever, so replace them every three years. If you are growing the kind of strawberries that send out runners, peg these down with lengths of twig to encourage them to root. Transplant them to their new locations in autumn.

We all love hedgehogs and want to give them a helping hand – but what’s the best way to do it? Many people, with the best of intentions, leave out a saucer of bread and milk for their prickly pals. TREE TIME WE ALL LOVE A WALK IN THE WOODS, BUT HERE IN THE DALES MUCH OF OUR TREE COVER HAS LONG SINCE DISAPPEARED. BRIAN PIKE REPORTS ON A CAMPAIGN TO RESTORE OUR NATIVE WOODLANDS TO THEIR FORMER GLORY

There’s something truly magical about a ramble through unspoiled Dales woodland, whatever the season. In spring you can enjoy carpets of celandines, anemones and bluebells to the accompaniment of near-deafening birdsong. Later, when the leaves have unfurled, the dappled woodland shade – patrolled by jewel-like butterflies – is a welcome refuge from summer’s heat. In autumn our woods are a riot of colour as the leaves begin to turn and intriguing fungi pop up in unexpected corners. Even in winter the woods are full of life; with no leaves to obstruct your view, this is the best time to catch a glimpse of elusive but often strikingly beautiful birds like jays and woodpeckers. Despite the enormous affection most of us feel for woods – and their critical role in sustaining British wildlife – the state of our forests, woods and trees is far from ideal. The UK is one of Europe’s least wooded nations, with trees accounting for just 13% of land usage compared to an EU average of 37%. Here in the Dales we’re especially badly off, with woodland cover of a mere 4.8% – lower than any other National Park in the country. 36 | SUMMER 2017 | Dales Life

What’s more, not all woodland is of equal wildlife value. Conifer plantations, as you might expect, are far less species-rich than ancient, semi-natural woodland. And it is ancient woodland, with its unique communities of plants and animals, that has suffered particularly badly in the UK. During the last century nearly 40% of it was felled and replanted with non-native conifers, according to the Woodland Trust.

Fortunately there is a glimmer of hope for the future. Yorkshire Dales Millennium Trust (YDMT) is on a mission to restore native broadleaf woodlands throughout the Yorkshire Dales, rebuilding habitats for hundreds of species of wildlife and creating spaces that residents, visitors and future generations can treasure. YDMT has already helped plant more than a million trees across the region during the last 20 years. A good example of the work they have been doing is St Joseph’s Wood, one of the first woodlands created under the new initiative. Planted in 1998 and 1999, it adjoins Freeholders Wood, an ancient woodland next to the Ure at Aysgarth. Already bluebells, orchids and primroses have started to colonise St Joseph’s Wood from the older wood next door. Hopefully other plants will soon follow, including one of Freeholders Wood’s specialities, herb paris (Paris quadrifolia). Herb paris is a distinctive, rarely seen woodland plant that flowers in late spring and early summer. The name has nothing to do with the city of Paris, but derives from the fact that most parts of the plant are arranged in pairs (‘par’ in Latin). Herb paris has a ruff of four broad leaves, from the centre of which rises a single yellow-green flowerhead. This eventually forms a large black berry, once believed to be an antidote to arsenic and mercury poisoning.

TINY TRAILBLAZERS

As far as animal inhabitants go, St Joseph’s Wood has already scored a notable success. Dormice, once relatively common but currently extinct across most of northern England, were reintroduced to Freeholders Wood in 2008. They are now breeding there successfully, and these cute, plump, sleepy little mammals have been spreading into St Joseph’s Wood – perhaps not too surprising, given that the two woodlands are separated only by an open-wire fence. A public right of way runs across St Joseph’s Wood, so visitors can enjoy walking through the new wood – providing they stick to the footpath, of course. Not all of YDMT’s projects are on sites with public access; Longridge Wood between Cray and West Burton, 40 | SUMMER 2017 | Dales Life

for example, can only be viewed from the road or from footpaths on the opposite side of the dale. But of course that’s no bad thing. Without public access there is a minimum of disturbance, making the new woodlands a perfect haven for wildlife. Another such refuge, planted with help from YDMT, is Ormsgill Wood near Airton in Malhamdale. Streams forming the headwaters of the River Aire run through this site, so the species that have been planted are ones appropriate to wetlands. Not only will the 20,000 new trees create a habitat perfect for black grouse, they will also help mitigate flooding in the River Aire catchment. These schemes represent just a fraction of YDMT’s many initiatives to improve our local environment; you can learn about some of the others on the YDMT website. Thanks to this hard work and dedication we might just turn out to be the first generation for centuries to leave the Dales in a better state, wildlife-wise, than we found it. Planting of St Joseph’s Wood was part-funded by supporters dedicating a tree to the memory of someone or something special – and you can do the same. the high life Yorkshire’s heather moors are home to many unique and fascinating plants and animals. Professor Chris Baines explains what to look out for 42 | SUMMER 2017 | Dales Life


here are few more glorious sights on a sunny summer’s day than the deep purple haze of heather stretching across the hills as far as the eye can see. One of my earliest memories is of being carried on my father’s shoulders across Yorkshire moorland, with one eye always looking out for gamekeepers. My dad was a dyed-in-the-wool Sheffield rambler, and the class conflict of the mass trespass was still a recent memory.

The dominant purple heather on our moors is Calluna vulgaris. It is generally known by the old Norse name of ‘ling’, and it is Norway’s national wildflower. Bell heather, Erica cinerea, is a more modest plant with larger, bell-shaped flowers, and cross-leaved heath, Erica tetralix, is a close relative that thrives in wetter ground. Look carefully and it won’t take long to find all three. Dales Life | SUMMER 2017 |

Bilberries tend to grow best on thinner moorland soils, and their shiny leaves create a striking contrast to the heather. Their purple berries are irresistible, despite the telltale staining of tongues, fingers, knees and anything else they touch. As a family outing, a day’s wild harvesting would result in jars of jam and mum’s wonderful bilberry pie. Sixty years later a slice of tarte aux myrtilles is still a memory-jogging must on every French skiing holiday. Numerous other wildflowers thrive in the tough, exposed environment of our heather moorland. Crowberry and cloudberry can be found creeping close to the ground, and occasional spikes of yellow bog asphodel can sometimes be seen poking up above the heather. Where the ground is really wet there will often be drifts of cotton grass, providing a splash of ‘snow in summer’ that serves to intensify the purple of the heather. The growing medium for all these acid-tolerant wildflowers is the sphagnum peat that lies below – a black soil that has accumulated slowly over centuries in the waterlogged conditions that support the carpets of sphagnum moss. Where the ground is still saturated, and the sphagnum thrives, you can find other very special moorland plants, including insect-trapping butterworts and sundews. Where the peat dries out, however, the moss dies and the wind and weather quickly blow the peat away. Much of our heather moorland has been drained in recent times to improve the land for sheep, but now there is a move to block the drains, re-wet the peat, restore the sphagnum bog and revive the whole waterlogged landscape.


THE STANZA STONES TRAIL One very pleasant way to experience the grandeur and beauty of the moors is to follow some or all of the 47-mile-long Stanza Stones Trail. The trail stretches from Marsden in the south to Ilkley in the north. The path is easy to follow and not too demanding; it took me four days to complete. It passes across miles of magnificent heather moorland, dropping down into small valley towns for convenient overnight stops. Most memorably, the trail is punctuated by poems, specially commissioned from poet Simon Armitage and carved into slabs of rock along the way. This change of heart is being driven in part by the need to increase natural water storage, reduce the risk of downstream flooding, and conserve the embedded carbon, but re-wetting also benefits the very special wild creatures that call the heather moorland home.

GROUSE PROUD Black grouse are probably the most dramatic of our moorland birds. The males are famous for the courtship display that sees them gathering on their ancestral parade ground, known as a ‘lek’, to battle with one another like medieval jousters, trying to impress the much more modest females that make up their audience. A black grouse lek is a rare sight, and the display is all done and dusted soon after sunrise, but this is a wildlife experience never to be forgotten. There are other moorland birds that can be enjoyed with less effort, and the golden plover is one of the handsomest. During the winter these wading birds gather in flocks in coastal estuaries and put on some of our most breathtaking mass flypasts, but in spring they disperse to the uplands to stake out individual territories and breed. Their simple, high-pitched call is distinctive, and the male birds tend to stand guard on a prominent rock close to the nest, which makes them easy to spot. There are three birds of prey that are heather moorland specialists, and the rarest of these is the hen harrier. Hen harriers have been persecuted to the brink of extinction because they catch the commercially valuable red grouse, but undoubtedly this is one of the most spectacular of Britain’s wild birds. 46 | SUMMER 2017 | Dales Life

The merlin is much smaller, extremely fast in flight, and easy to miss as it skims low over the heather in search of small songbirds. I must confess I’ve never seen one. However, I have seen the third specialist moorland hunter, the short-eared owl. A couple of years ago I enjoyed a magical half-hour on Ilkley moor, watching one of these beautiful birds methodically quartering the landscape in search of its prey. The management of heather moorland is challenging. Over-graze with too many sheep, or let the seasonal burning get out of hand, and the loss of protective vegetation will lead to soil erosion and stormwater runoff. Leave the moor ungrazed and the heather will become a far greater fire risk, and gradually be invaded by birch woodland. Striking the right balance is tricky, but where farmers, gamekeepers and conservationists work in harmony the results can be world class. Well-managed heather moorland really is spectacular, and never more so than on a sunbaked day at the height of summer.

GOOSEBERRIES Everyone with a foot or two of spare space in their garden should consider planting a gooseberry bush. Gooseberries are easy to grow, heavy cropping, and not always easy to find in the shops. Most importantly, they’re absolutely delicious. They may not be the handsomest fruit on the block, but with their winning blend of sweetness and sharpness, gooseberries can be incorporated into pretty much any dessert imaginable. You can use them in ice creams, fools, tarts, crumbles, pies and jams – not to mention the luscious cake featured here. Gooseberries can also add an extra dimension to savoury dishes, where their tartness is an excellent foil for fatty meats like pork or oily fish like mackerel. If you don’t have a garden, gooseberries can often be foraged from the hedgerows, although hedgerow fruit will usually be considerably smaller than home-grown ones. Like apples, gooseberries come in numerous different varieties, some of which are face-puckeringly sour and need to be cooked with sugar to make them palatable. Others, though, are sweet enough to eat straight from the bush – a delightful treat on a midsummer’s afternoon.

Planting gooseberries Plant gooseberry bushes in full sun or partial shade on moist, well-drained soil. Looking after your plants Mulch root area well and feed with blood, fish and bone in late winter. Water only in dry spells. Pruning Prune hard in winter, aiming to produce an airy, open, gobletshaped structure on a short ‘leg’. Harvesting Gooseberries are very spiky, so wear tough gloves to protect your hands. Many modern varieties will sweeten on the bush so don’t be tempted to pick them too early. Storage Store for 2–3 days in the fridge or freeze, whole or puréed, for use during the rest of the year.

Buttery Gooseberry and Almond Cake INGREDIENTS 125g butter, at room temperature 200g caster sugar 3 large eggs 75g plain flour 75g ground almonds ¾ tsp baking powder 350g ripe gooseberries, topped and tailed 35g flaked almonds icing sugar to decorate (optional)

Method Preheat your oven to 190°C/fan 170°C/gas 5. Beat the butter with 125g of the caster sugar until the mixture is pale and fluffy. Beat the eggs well then add them in gradually. Once the eggs are incorporated, sift in the flour and add the almonds and baking powder. Use a large metal spoon to fold the mixture together. Place the cake mixture in a well-greased 20cm loose-bottomed cake tin.

Toss the gooseberries with the remaining caster sugar, adjusting the quantity of sugar according to how sharp or sweet your gooseberries are. Spread the fruit and sugar mix on top of the cake mixture. Bake for 20 minutes. Sprinkle on the flaked almonds and return to the oven for a further 10–15 minutes. The cake is ready when a skewer inserted into the middle comes out clean. Leave your cake to cool in the tin, then carefully remove and, if wished, dust with icing sugar.

illing East is a pretty, well-heeled village on the southern edge of the Ampleforth Abbey estate. Set in the rolling, well-wooded landscape of Ryedale, its attractions include two historic churches and a village hall that stands in the middle of an extensive miniature railway and rather immodestly claims to be ‘the best in England’. The Fairfax Arms is a long stone building parallel to the beck that runs along Gilling East’s Main Street. The Fairfax is set to become longer still later this year, when the works on its new Orangery extension are completed. The interior has been jollied up to 21st century standards without losing sight of the warmth and cosiness of the traditional English country pub. With its muted colours, plump leather chairs, wooden settles and understated décor, it’s eminently relaxed and comfy. And despite majoring on fine dining, management appears to have kept villagers on side. The Fairfax remains a bustling, friendly local, whose bar shades almost imperceptibly into the dining areas, indicated by little other than a change of flooring.

Crocks Away

There’s plenty to choose from on the menu, with vegetarian options that sound like genuinely delicious platefuls rather than grudging concessions to non-meat-eaters. The walnut, goats’ cheese and red onion marmalade spring roll caught our attention, so we decided to give it a whirl. For our other starter we opted for smoked ham and pickled Yorkshire rhubarb terrine. In terms of presentation it was the terrine that stole the show, arriving, as it did, beneath a glass dome full of smoke. Mind you, the smoke was largely a matter of showmanship; once the dome had been removed and the fug had cleared it was hard to tease out any notably smoky flavours from the terrine itself.

It looked a treat, though: a neat slab flecked with herbs and studded with cross-sections of green and pink rhubarb stems. A sweet-sharp Calvados and apple chutney, a pert salad and a brace of gingerbread crisps – bready, rather than sweet – added extra colours and textures. Great fun, and a promising start to the evening’s eating. Our other starter, the spring roll, would have been hard-pressed to compete in terms of visual impact, but tried its best nonetheless. The pastry parcel was sliced diagonally and tastefully posed on a midnightblack dish, along with a vibrant green spring onion and cucumber salad. Inside the wrapper the goats’ cheese, finely crumbled walnut and onion marmalade combined to form a surprisingly rich, meaty-tasting mixture. Pleasant enough, albeit to my palate somewhat soft, sweet and lacking in oomph. More texture in the walnut department might have helped, along with a sprinkle of something sharp and crunchy. On, then, to mains, starting with pan-seared turbot accompanied by roast salsify, samphire and cauliflower purée. Other than the fact that the fish skin could have been crisper, this was a near-faultless plateful: grown-up, subtle and satisfying. The fish was soft and melting and the salsify, with its rich artichoke-meets-celeriac flavour, made a perfect bed for it to sit on. The salty crunch of samphire brought a glint of seashore freshness, and the silky cauliflower purée – along with a lemon beurre blanc – tied the elements on the plate together nicely. It’s a Wrap Our other main, spring lamb Wellington with Yorkshire asparagus and fondant potato, was presented, like the rest of the evening’s dishes, boldly and confidently. Getting the meat perfectly cooked in a Wellington is always a challenge, and ideally I would have preferred mine a shade pinker. That said, the taste of the lamb in its overcoat of crisp pastry and Parma ham was good enough for us to forgive a few minutes too long in the oven. The asparagus had been attentively cooked and the red wine jus was dark and rich. An extra spoonful or two – or even a jug on the side – would have been much appreciated. Our savoury courses had been elegant, inventive and tasty, so we had high hopes of dessert. After an indulgent meal I often yearn for something fruity and refreshing, and both our dessert choices – lemon tart and passionfruit cheesecake – seemed tailor-made to provide just that. For me, the best lemon tarts strike a balance between sharp and sweet, fruity and creamy. Disappointingly The Fairfax’s version seemed somewhat lacking in sharp fruitiness, contenting itself with mere middle-of-the-road sweetness. On the positive side, though, there was also an exquisite raspberry sorbet on the plate. Presumably intended as a supporting act, it proved to be the star of the show. Delicious. Possibly Chef has a sweet tooth, because the story with the passionfruit cheesecake was a remarkably similar one. In the past I’ve struggled with passionfruit desserts so mouth-puckeringly sour as to be well-nigh impossible to swallow. The overall effect in this case, however, was of cream cheese heaviness, with the passionfruit relegated to a shy, unassertive glaze. Fortunately, as with the lemon tart, this ho-hum main act was redeemed by a simply stellar sidekick in the form of a kiwi fruit sorbet good enough to kill for. A couple of wobbles, then, but better to aim high and risk the occasional disappointment than produce the identikit pub food that has become the norm in lesser establishments. The Fairfax is ploughing its own furrow, and, judging by how busy it was on a weekday night, clearly has a number of appreciative repeat customers happy to give it the thumbs-up. Sunny days mean alfresco eating and bright, fresh flavours – perfectly captured in these stylish summertime dishes from star chef Skye Gyngell

Roasted sea bass with lemon and thyme A lovely summery dish to serve when fresh herbs are at their best. To make it easier on yourself, ask the fishmonger to scale and gut the fish for you. Preheat the oven to 200°C/fan 180°C/gas 6. Rinse the fish inside and out under cold running water, then gently pat dry using a clean cloth. Lay the fish in a roasting tin, large enough to hold it comfortably. Slice the lemons thinly into rounds, 3mm thick. Stuff the fish cavity with the herbs and about two-thirds of the lemon slices. Rub the skin of the fish with the olive oil, then season generously with salt and a little pepper. Lay the rest of the lemon slices on top and crumble over the dried chilli. Roast on the middle shelf of the oven for 25 minutes, or until the skin is golden and the fish is cooked through. To test, pierce with a little knife to touch the backbone; the knife point should feel warm when removed and the flesh should be slightly steaming. Set aside to cool. When ready to serve, very carefully transfer the fish to a platter and surround with the roasted fennel. Serve with mayonnaise and green beans with roasted tomatoes and olives.

SERVES 6 1 sea bass, about 2kg, cleaned 2 lemons

Roasted fennel Fennel and fish is a marriage made in heaven. You’ll find it more convenient to roast the fennel separately from the fish, as it needs to be covered to begin with. Preheat the oven to 200°C/fan 180°C/gas 6. Slice off the base of the fennel and remove the tough outer layer. Halve the bulbs lengthways and then cut into wedges. Place in a bowl and pour over the olive oil. Crumble over the chilli, season with salt and toss together, then transfer to a roasting tin. Cover with foil and bake for 20 minutes, then remove the foil and return to the oven for a further 20 minutes. Allow to cool to room temperature. Arrange the fennel around the roasted whole fish to serve.

Green beans with roasted tomatoes and olives French beans are equally good served hot or at room temperature and either way they can be cooked in advance. You do, however, need to keep a close eye on them: undercook and they will be too crunchy, cold in the middle and slightly raw-tasting; overcook and they are likely to be waterlogged and taste rather dull. The idea is to boil them to exactly the right point and then immediately refresh them under cold water – both to stop the cooking process and to retain their vivid green colour. Preheat the oven to 170°C/fan 150°C/gas 3. Wash the tomatoes, pat dry and pierce once or twice, using a small sharp knife. Place on a baking tray, drizzle with a little olive oil and season with salt and pepper. Roast for 15 minutes or until soft, then set aside to cool. Place a large pot of well-salted water on to boil. Top the beans, but don’t tail them – it isn’t necessary and they look pretty with the tails left on. When the water comes to a rolling boil, plunge in the beans and cook for 4 minutes, or until they are just tender to the bite and bright green in colour. Drain into a colander and immediately refresh under cold running water or in a bowl of iced water. Once the beans are cool, drain thoroughly and pat dry with a clean cloth. Just before serving, pour over the extra virgin olive oil and wine vinegar and stir through the tomatoes, olives and Parmesan if using. Taste and adjust the seasoning – you will need pepper for sure, but the olives and Parmesan may provide enough salt.

SERVES 6 handful of baby plum tomatoes splash of olive oil sea salt and freshly ground black pepper 1kg fine French beans 50ml extra virgin olive oil 2 tsp red wine vinegar 20 or so little olives preserved in olive oil (ideally from Liguria or Provence) 40g Parmesan cheese, freshly grated (optional)

Mayonnaise The quickest, most foolproof way to make a mayonnaise is in a blender. The secret is to add the oil as slowly as possible through the funnel – pouring the oil from a jug makes it easier to control the flow. Put the egg yolks into a blender or small food processor and add the lemon juice and a good pinch each of salt and pepper. Whiz briefly, just to combine. With the motor running, very slowly pour in the olive oil through the funnel – a few drops at a time to begin with, then in a thin stream – until it is all incorporated and you have a thick, glossy mayonnaise. Don’t feel disheartened if for some reason the mayonnaise begins to curdle, as this has happened to me many times.
You can usually rectify it by spooning out the mayonnaise into a bowl, washing and drying the blender, then adding a fresh egg yolk to the machine and pouring in the curdled mayonnaise as slowly as possible through the funnel, with the motor running. Finally, incorporate any remaining oil. 66 | SUMMER 2017 | Dales Life

If serving the beans at room temperature, as here, dress them just beforehand. If serving hot, gently warm them in a pan with a little olive oil, a pinch of salt and plenty of pepper, sprinkling over a finely chopped garlic clove if you like.

Mint ice cream The beauty of this ice cream lies in its simple, clean taste – the flavour of the mint subtly shining through and lending character. You can make the custard a day in advance and keep it covered in the fridge until ready to use. For the custard base, pour the milk into a heavy-based saucepan and place over a low heat. Scrape the seeds from the vanilla pod and add them to the milk. Slowly bring to a simmer, then immediately remove from the heat and set aside to infuse for 20 minutes. Meanwhile, whisk the egg yolks and sugar together in a bowl until thick and pale. Gently reheat the infused milk, then slowly pour onto the egg yolk mixture, stirring with the whisk as you do so. Return the custard to the pan and place over a very low heat. Stir with a wooden spoon, using a figure-of-eight motion, until the custard is thick enough to coat the back of the spoon, about 6–8 minutes; don’t allow to overheat or it will curdle. As soon as the custard has thickened, remove from the heat, strain through a fine sieve into a bowl and set aside to cool. For the mint flavouring, put the sugar and water into a saucepan and dissolve over a medium heat. Add half the bunch of mint and bring to the boil. Lower the heat and simmer for 15 minutes, then set aside to cool. Once cooled, remove the mint and add a quarter of the syrup to the custard base. (Keep the rest in the fridge and use as a cordial, or add to iced tea for a refreshing drink.) Pour the minted custard into an ice-cream maker and churn, according to the manufacturer’s instructions, until the ice cream is thick enough just to drop from a spoon. Meanwhile, strip the leaves from the rest of the mint bunch and chop them finely. Add the chopped mint to the ice cream and churn for a few more minutes to distribute the mint evenly. Cover and place in the freezer until the ice cream is thick enough to scoop. Serve piled into ice-cold glasses.

Prosciutto, artichoke, fig and Roquefort salad with balsamic dressing A lovely, light summer salad – sweetness in the fig, saltiness in the

prosciutto, and creamy Roquefort. A really simple balsamic dressing is fine for this one too, as there are already plenty of flavours in the salad.

SERVES 4

Preheat the grill to high.

FOR THE SALAD

For the salad, rub a little butter on all the cut surfaces of the figs, put them on a baking sheet, cut-sides up, and then pop them under the preheated grill for 6–8 minutes, turning once. Let them soften and start to brown, but don’t let them shrivel up too much. Remove from the heat.

60g butter 4 fresh figs (skin on), quartered 4 large handfuls of salad leaves of your choice (Little Gem lettuce is very good for this salad) 125g Roquefort cheese, crumbled 16–20 cooked artichoke hearts, chopped (I use the marinated artichoke hearts sold in jars) 165g prosciutto slices (about 20 average slices) a small bunch of fresh basil leaves (about 5–6 leaves per serving) sea salt and freshly ground black pepper

FOR THE DRESSING 2 tablespoons olive oil 1 tablespoon balsamic vinegar

Meanwhile, make the dressing by combining the olive oil and vinegar in a bowl, seasoning with salt and pepper, and mixing well. Dress the salad leaves with most of the dressing (reserving a little dressing for drizzling on top) and divide between four serving plates, then pop the Roquefort, grilled figs, artichokes, prosciutto slices

(see Cook’s Note) and basil leaves on top, dividing them evenly between each plate. Drizzle the salads with the remaining dressing and serve immediately.

COOK’S NOTE It’s always a shame to tear cured meat on top of salads because it doesn’t look very pretty. However, remember that cured meat like prosciutto doesn’t cut very easily, so if someone is just using a fork to eat the salad, they’re only going to get five big mouthfuls of prosciutto and then no more. Therefore, for the price of a little presentation, I would tear the prosciutto into smaller pieces so it’s distributed evenly for every mouthful.

Lamb steaks with cherry tomato and anchovy sauce This tangy sauce, flavoured with savoury anchovies and garlic, is an excellent partner for griddled lamb. Serve with new potatoes and green beans for a simple but satisfying meal.

SERVES 4 FOR THE SALAD 250g cherry tomatoes 1 tablespoon olive oil, plus extra for brushing 1 large garlic clove, peeled and sliced 4 anchovy fillets in oil, chopped 4 lamb steaks salt and freshly ground black pepper

Begin by scalding the tomatoes. Pour boiling water over the ripe tomatoes in a heatproof bowl. Set aside for 1 minute, then drain and carefully peel off the skin using a sharp knife. Slice in half and set aside. Heat the oil in a small, heavybottomed frying pan set over a low heat.

Add the garlic and fry, stirring often, for 1 minute until fragrant. Add the anchovy fillets and continue to fry, stirring continuously, until they melt into the oil. Add the tomato halves and cook, stirring now and then, until the tomatoes have softened to form a sauce. Season with pepper and keep warm until ready to serve. Preheat a ridged stovetop grill pan over a medium heat. Season the lamb steaks with salt and pepper, and brush with oil. Cook the lamb steaks in the hot pan as desired. Serve the grilled steaks with the warm cherry tomato anchovy sauce.

Orange syrup semolina cake with crème fraîche

This soft, moist, buttery cake contrasts nicely with the tangy crème fraîche and makes an excellent dessert, with a small espresso coffee on the side.

SERVES 8 FOR THE CAKE 150g butter, softened 175g caster sugar grated zest and freshly squeezed juice of ½ orange 2 eggs 100ml crème fraîche 125g plain flour, sifted 1 teaspoon baking powder 125g fine semolina a pinch of salt

FOR THE ORANGE SYRUP juice of 1 large orange 150g caster sugar

Preheat the oven to 180°C/fan 160°C/gas 4. In a mixing bowl, cream together the butter and sugar until well mixed. Add the orange zest and juice, then the eggs, one at a time, followed by the crème fraîche and mix well. Add the flour, baking power, semolina and salt and fold in. Transfer to the cake pan and bake in the preheated oven for 1 hour until golden brown. While the cake is baking, prepare the orange syrup. Place the orange juice and sugar in a small saucepan and gently heat, stirring, until the sugar has dissolved.

Turn off the heat and wait until the pan has cooled, then mix in the orange flower water. Test whether or not the cake is ready by piercing with a fine skewer; if it comes out clean, the cake is cooked, if not, bake it for a few minutes longer. Remove the cake from the oven and place it on a rimmed baking sheet. While warm, pierce the top of the cake all over with a skewer. Pour over the orange syrup, then cover the cake and set it aside to cool and soak up the syrup, a few hours or overnight.

Marton cum Grafton is conveniently situated between York, Harrogate and Boroughbridge, just off the A168 ( junction 47 or 48 of the A1). The theme of this year’s celebratory event will be the Silver Jubilee and a whole range of entertainment will be on offer to include: a local art and crafts exhibition, a beautiful floral display in Christ Church along with plenty of village fête-style fun and games on Grafton Green. Once the stunning gardens have whetted the appetite, guests can enjoy delicious food in the Marton Village Hall, where lunch, cakes and drinks are available, whilst in Grafton the WI will be serving mouth-watering cakes and tea. On Grafton Green BBQ sausages and ice creams will be on sale along with a sensational Pimms Bar. A highlight for 2017 is a fantastic display of Vintage and Super Cars.

Sausage and Beer Festival 2017 Friday 21 July to Sunday 23 July; main event is on Saturday 22 July Spend a relaxing weekend sampling our best locally produced beers and some of Yorkshire’s tastiest sausages against the beautiful backdrop of the Camp Hill Estate. This year we have even more street food stalls, and we have added a Food Hall stocked with quality local produce. The bar will be serving numerous different ales and a selection of real ciders. You can taste-test over 15 different local sausages in our Sausage Tasting Competition, and enjoy fabulous demonstrations by Andy Annat’s BBQ Crackerjack and World Championship BBQ team. And with plenty of extra children’s activities and our new Woodland Kingdom adventure playground, there’s something for all the family to enjoy. Camping is available on Friday and Saturday nights, with a family camping area for those wanting a quieter night and a ‘Festi’ area closer to the action! Camping tickets have sold out in advance for the past three years, so pre-booking is strongly advised.

A courtesy bus service is provided, taking people from one end of the village to the other. Car parking is on offer and wheelchair access is available to many of the gardens. All proceeds from the event will go towards community projects – adults £5.00, children free.

Maker Goldscheider, of Vienna, Austria And it’s not just lovers of Art Deco that it will appeal to, but also to collectors of skiing memorabilia and Date collectors with a particular interest in Goldscheider, circa 1937 the factory that made it. Size “The Goldscheider factory in Vienna was 26cm high founded in 1885 by Frank Goldscheider, and Auction it quickly established itself as one of the most estimate influential ceramics manufacturers in the world, £600 to £900 winning countless prizes at international fairs and For sale at exhibitions. Goldscheider hired many talented Tennants designers, including Stefan Dakon - famous both Auctioneers, for his ceramics and his bronzes - who modelled Leyburn, as part of this piece. The factory continued in business their Summer Sale until the mid-1950s, by which time they had on 14th and 15th produced some 10,000 different models.
