“Try Something New!” The surprising rewards of “no-cuts” athletics By Tutt Stapp-McKiernan

A

t Wakefield School in The Plains, learning to take risks in an environment of safety and support is a core element of becoming capable, confident, and independent—in the classroom and beyond. This belief underpins the “Try something new!” ethos of Wakefield’s Middle School athletics program, in which every student participates in a sport each season of 6th, 7th, and 8th grades. The numbers imply that the methodology is working: a whopping 88% of Wakefield Upper School students choose to participate in at least one sport, a key factor in the strong sense of community and camaraderie Wakefield is known for. Wakefield’s Athletic Director Toussaint “Tee” Summers is in his 17th year at the school and his seventh as Athletic Director, and he is proud of that participation statistic, as well as an idea he believes supports it well: the concept of “no-cuts” athletic teams. “In our Greater Piedmont Athletic Confer-

ence (GPAC), a lot of schools have a no-cuts policy. Because the schools are smaller, it’s sort of a normal thing,” he says. But he also views the policy as more than a simple matter of numbers—and is quick to express his pride in the positive effects he has observed from Wakefield’s particular implementation of its no-cuts program. “The whole concept is centered around the idea that if anyone wants to try out a new sport, they have the opportunity to do that,” he says. “They have the opportunity to, first of all, learn the new skills of the sport—but I think the deeper benefit of trying new sports is the camaraderie and character-building, learning how to be a teammate and to work with teammates, learning how to overcome difficult challenges.” It may seem ironic that a team would be strengthened by the addition of athletes with no experience in the sport—but according to Coach Summers, “that’s what makes our no-cuts program so effective.” He says

Wakefield’s mission is “to foster the character, curiosity, and clear voices the world needs.” The bold sense of adventure involved in confidently trying out a new sport, and knowing you will be supported, is an integral part of the Wakefield Way.

players who are at different levels within a sport support one another—and the result is a better team. “Our boys’ soccer team that went to the State championship game last year was a team of athletes who came from a wide range of different sports,” he says. “In addition to some soccer players, we had basketball players, we had lacrosse players, tennis players, all kinds of different athletes, and they made it that far because they all supported each other. Everyone understood the idea that, I might not be the greatest soccer player in the world, but I can give you hustle, I can give you vocal leadership, I can give you encouragement, and I think what made that team mesh well is that they all brought something to the table.” Coach Summers notes another athletically-diverse team that had a good season this year: the girls’ tennis team. Finishing #2 in the GPAC this season, “they’re a collection of a whole bunch of different female athletes from different sports,” he says. “I think their encouragement of each other, trying to push each other, has been the greatest effect for them of having a team from such diverse athletic backgrounds.”

Stormy Acres Cookies expands into the Boujee Baker Boutique BY PAM KAMPHUIS

C

hristina Cernera always insisted that she’d never open a storefront for her home-based business Stormy Acres Cookies. But now, she said, “It’s crazy how things change, and now it’s a dream come true.” In November, Cernera moved Stormy Acres Cookies to N. 5th Street in Warrenton and expanded her concept to launch Boujee Baker Boutique which includes a commercial kitchen and a retail shop. Cerena, who lives in Midland, started baking and decorating cookies as a creative outlet during the pandemic, starting with Halloween cookies in 2020. By June of 2021, she had started Stormy Acres Cookies, devoting herself full time to the baking business. Her days involved a combination of dough making, baking, and decorating according to the seasons and current holidays. Christina said in July 2022 in a Warrenton Lifestyle interview, “I think the best part of running my baking company is I know I am working for myself ... It’s something I am so passionate about. Working seven days a week for endless hours – I am completely content with that; I love doing it.” The same enthusiasm and work schedule is now devoted to Boujee Baker, where she happily works full time and overtime.

What’s changed:

The big focus is having a storefront which she describes as a “haven for baking enthusiasts and professionals”, which offers a treasure trove of top-notch baking essentials ranging from cookie cutters, stencils, gel and airbrush colors, luster dusts and metallics, tools, and a range of creative packaging solutions. Christina emphasized that the baking supplies were the main reason to open a storefront, because these items are not readily available locally and there is a high demand for them.

What hasn’t changed:

The cookies! Christina will still be producing and decorating cookies for pre-orders, while also offering them for sale in the shop. Flavor options include: signature vanilla, chocolate, chocolate chip, red velvet, churro, raspberry lemon, strawberries & cream, dirty vanilla chai, and s’mores.

Cookie decorating classes will continue, with the base cookies prepared in the commercial kitchen and the decorating instruction in the shop. “It’s a big space,” Christina explained. “There’s room for up to 15 people to participate in a class.” Guests are supplied with six base cookies, decorating ingredients and tools, and step by step instructions in techniques such as outlining, flooding, and wet on wet to make gorgeous creations. Local Authors’ Yuletide Tales

Fauquier County is a special place all year round, but especially magical at Christmastime. No one knows that better than its local authors, whose love of our area shines through their work. Here are four that have written books in the holiday spirit!

Laura Lamb and The Christmas Book BY NORMA THATCHER, ILLUSTRATIONS BY LORALYN NORAGONG, 2023 This heartwarming children’s book prompts readers - young and old alike - to question the concept of perfection and think about what’s truly important. It’s Laura Lamb’s first Christmas when the family’s Mom decides to upgrade her holiday decor to a peacock theme with feathers and new fancy ornaments, relegating the old ornaments to the curbside trash. Riley the dog and some of the farm animals move the box to the barn and tell Laura Lamb the story of each ornament the family has gathered through the years. When Laura Lamb discovers that Mom keeps a scrapbook of Christmas memories, she is determined to see it after the family goes to bed. But her viewing is interrupted when Mom comes back downstairs. As Laura Lamb hides, Mom pages through the book and she realizes how precious the old family ornaments really are. When Mom rushes outside to retrieve them, the box is gone. But don’t worry! The animals, each using their own talents and making use of Riley’s doggy door, work together to pull off a Christmas miracle for their human family. TINSEL THYME PRESS, 2023 Celebrating the bicentennial of the classic poem attributed to Clement Clark Moore, the authors adapt and add to the favorite lines to showcase the beauty of Fauquier while maintaining the rhyme and meter of the original favorite. Starting out “‘Twas the night before Christmas/in the County of Fauquier/Not a creature was stirring/but for one white-tailed deer/O’er the length of the county —— forty miles long/Every inch was filled with nature’s beauty and song,” the book features beautiful illustrations of familiar local scenery. Children will enjoy taking part in the scavenger hunt, searching for the reindeer shoe in each illustration. About the author: Fauquier County resident Nichole Brown is a devoted educator who taught much of her career at Fauquier’s PB Smith Elementary and now continues educating in the homeschool sector. She welcomed the opportunity to partner with Katherine Eppley to highlight their local community in a creative and fun way.

When Mrs. Claus decides to accompany Santa on a planning mission for his Christmas Eve journey, she falls in love with Warrenton, meeting local personalities and visiting well known places like the Fairgrounds and Vint Hill and attending some holiday festivities and the parade in Old Town. During their “time off ”, the reindeer get up to their own antics, and younger readers will also enjoy the mischievous selfie-taking Tinsel the Elf as they all romp through the town. About the author: Katherine Eppley is a longtime resident of Fauquier County and a former teacher at PB Smith Elementary and Warrenton Middle School. Mother Nature’s Christmas Tree BY JENNIFER ARMSTRONG, ILLUSTRATIONS BY MICHELLE HEISER

Jennifer Armstrong’s inspiration for this wonderful children’s book came from her experiences at a local Christmas tree farm, Hank’s Trees at Hartland Orchard in Markham, where she watched many families search for the “perfect” tree. In the story, all the trees are sprucing themselves up in preparation for Mother Nature’s visit when she will choose the most spectacular tree for the holiday. They are cleaning nests from their branches, patching holes in their trunks, and telling the forest animals to find other places to live. This causes a problem for Selena Squirrel, Miss Chickadee, Momma Deer, and other animals of the forest. One tree, however, is willing to help. Little Pine tells the animals that he can be their new home. This fixes one problem, but causes another. Mother Nature does not like messy trees, and Little Pine is messy. But isn’t kindness and generosity better than physical perfection? In appreciation, the illustrations are based on Hank Green and his wife Cheryll as Mother Nature. You have two young children. Are the dogs protective of them?

Huskies aren’t protective or aggressive at all. Some people think they look scary, but it’s only their appearance that deters. They’ll welcome anyone into their home.

Do they bark a lot? What was your inspiration for getting into dog sledding?

When I first got into the breed, I wanted to be active with my dogs and find things they found joy in doing. Given the breed’s original purpose, I researched and started walking and jogging with them for exercise and mental stimulation. I was introduced to racing by Ron Gagne, who lives in Fauquier and trains and races his Huskies. I helped with his dogs and learned a lot from him. My love for the sport blossomed even more from there.

Are your Huskies pets as well as working dogs?

All of our dogs are first and foremost our beloved pets and family members. They just happen to also be amazing athletes who love to work alongside their humans.

Where do you get your dogs?

Either from a reputable breeder or we breed them ourselves.

Huskies don’t bark, they talk. It sounds like something between “Aroooo” and a howl.

Can you describe the process of training and conditioning the dogs?

There are many details for training and conditioning, but a short summary would be introduction to a harness, light physical work in harness, gradually increasing distance, speed and weight. While training, it’s important to properly warm up and cool down the dogs, and make sure they are properly fueled with food and supplements for their activity level. Training is all weather-permitting to ensure our dogs are safe.

or Ashlee Pezzuto, owner of the Dog Spa in Warrenton, her six Siberian Huskies are part of her family. They are also powerful competitive racing sled dogs. Ashlee grew up with a variety of dogs but didn’t get her first Husky until she was an adult. She had a very active lifestyle and loved being outdoors, so she started researching dog breeds that would take joy in the same things she did. A Siberian Husky, a breed developed to work outside, was the answer. But, she explained, “Once I got one, I was hooked. They’re like potato chips: you can’t have just one. Also, they’re pack animals, they’re better with companions.” Ashlee spoke with Warrenton Lifestyle about her dogs and her sport.

When the breed originated, they were out running sleds. Even though they worked every day, they became “nanny dogs” at night, sleeping with the family’s children to keep them warm. Well-bred Huskies are very easy to live with. Mine sleep on the couch, but they’re ready to go any time. Even more than physical activity, though, they need mental stimulation.

Since there’s not always enough snow in Virginia for dog sledding, Ashlee must go where the snow is to race her Huskies. The closest competitions are in Pennsylvania but may also be in upstate New York or up into Canada.

How expensive is the sport?

The entry fees themselves aren’t crazy expensive, but the traveling, gas, and all the gear and upkeep certainly adds up.

Ashlee is also a reputable breeder of Siberian Huskies. She said, “The puppies are not necessarily destined for racing. With every litter, we evaluate the puppies’ temperaments when they are 8 weeks old, and then we can decide how each one will be happiest. They might be show dogs, working dogs, sport or racing dogs, or thrive as a family pet.”

How much time is spent on training?

Lots of very early mornings and late nights on the weekends, and time during the week if it can be fit in. Serious racers ideally run at least 5 days a week.

How do you train in the summer?

In the summer I personally enjoy letting my dogs embark on other sports they also enjoy. In order for our dogs to do sled dog activities, the weather also has to meet certain conditions as far as temperature, humidity, and rain. The dogs’ health and safety are our main priority.

The Siberian Husky

Siberian Huskies are an ancient breed developed originally in Siberia. Their high energy levels and work ethic made them ideal working sled dogs, but their temperament was also suited to be companion animals. With a thickly furred double coat, the breed thrived in the extreme cold and harsh environment of the Arctic. Siberian Huskies played a lifesaving role during the diphtheria epidemic of 1925 in Nome, Alaska. Relays of sled dog teams transported antitoxin 674 miles over the Iditarod Trail under brutal weather conditions. While it was the well-known Balto who led his team 53 miles on the last leg of the journey, arriving in Nome without a single broken vial, Siberian Husky Togo and his team covered 264 miles over more difficult terrain. Success in long distance sled dog racing led to the breed being imported to the US, earning AKC recognition in 1930.

How fast are the dogs?

Do you participate mostly for competition or for fun?

I personally participate to have fun with my dogs. Sure, the placements and trophies are awesome to win but nothing else is better than being out on the trail with your beloved pets doing what they were bred to do and love.

How do the dogs react when racing?

The pure joy and eagerness to run when the dogs are about to run is something that has to be witnessed in person. They truly enjoy being hooked up in harness and running with their team, it is ingrained in their DNA.

What types of races do you compete in?

When we compete, it is typically sprint races where the distance of the race depends on how many dogs you are running on your team. I personally have only competitively raced a few years, earned some placements and miles, and helped some dogs earn their sled dog titles. I haven’t raced in a couple years due to growing our family and running a business, so right now we do recreational running and appear in the Warrenton Christmas Parade.

What else do you do with the dogs?

Our dogs are our pets, so just like anyone else we enjoy your typical walks and outings. We also do other fun sports with them to keep them active and mentally stimulated, such as Fast Cat (a hundred-yard dash with a lure), Rally (a teamwork competition with handler and dog), Obedience, Barn Hunt (a type of dog scavenger hunt), Agility, and learning tricks.

What are your favorite things about dog sledding?

Siberians were bred to pull light loads at a moderate speed for long distances. Their speed ranges per team and at what point they are in their journey. Take-offs can go upwards of 20 mph and a steady pace over a distance ranges from 8-15 mph. By themselves in a sprint the breed can run 2429 mph.

My favorite thing about mushing is the connection I form with my dogs and being out on a nice quiet trail listening to the dogs quietly and effortlessly work together as a team with me. L

The 11th hour of the 11th day of the 11th month: A day set aside for remembrance Moving Veterans Day Ceremony honored military veterans who have served in the U.S. Armed Forces BY ROBIN EARL

T

he anniversary of the date WWI ended, on the 11th hour of the 11th day of the 11th month in 1918, has traditionally been set aside to honor and appreciate veterans who served to protect and defend our country and its heritage. The Nov. 11 Veterans Day ceremony on Hospital Hill in Warrenton almost didn’t happen this year. Larry Washington, commander of American Legion Post 360 said that final details were put in place just three weeks before Veterans Day. About 100 people attended — U.S. veterans and family members, the Fauquier High School Band and Choir and members of the Liberty High School JROTC. and hosted by Fauquier Health. Long-time Fauquier residents Harvey Pearson and Robert Chichester were introduced to the crowd as honored guests. Pearson, who is 98 years old, served in World War II as a left waist gunner in the 463rd Bombardment Group (H) 5th Wing/15th Air Force. He completed 50 bombing missions in 89 days. Born and raised in Frytown, Chichester, 93, served in the U.S. Marines during the Korean War and later in the Virginia Army National Guard in Warrenton and Army Reserve at Vint Hill Farms Station. He completed 25 years of active and reserve service. Saturday was bright and breezy, perfect to show off the new flag that now flies above the Veterans Memorial space in front of Fauquier Hospital. Sarah Cubbage, Fauquier Health’s Director of Marketing and Public Relations, said the old flag was looking worn, but American Legion Post 360 purchased a new one for the memorial and helped her dispose of the old flag appropriately. Washington’s grandson, Kamari Washington, stepped up on short notice to speak on the history of Veterans Day. The 14-year-old Fauquier High freshman is a past winner of Fauquier County’s annual Martin Luther King Jr. essay contest and has served as co-master of ceremonies for the 2023 Juneteenth celebration. He was also a guest speaker at the annual Praise in the Park, hosted by Mount Zion Missionary Baptist Church in Warrenton, where his subject was youth empowerment. Kamari hopes to one day have a career in aerospace engineering. almer Smith spent his younger years relocating on the regular with his family, traveling throughout the United States and Germany with his father who was a Colonel in the United States Army, and as an adult, he’s done a fair share of traveling, too. But now, Smith is settled in on several acres in between The Plains and Warrenton, a beautiful plot of land that’s been passed down through 12 generations. But that’s not where Smith spends all of his time — instead,

His family realized his talents early and enrolled him in classes to help maximize and build his talents. At 15, he was taking art classes at Northern Virginia Community College, and by 17 he was enrolled in advanced placement classes at Virginia Commonwealth University (VCU) where he ultimately completed a bachelor’s degree in fine arts.

Once Smith realized his love of drawing and painting, inspired by other talented family members, his trips to the National Gallery in Washington, DC helped to root his love in Impressionism. “I fell in love with the Impressionists. When you stand in front of some of the masterpieces there, they transport you in a way a photograph just can’t do,” Smith said. Smith developed a deep appreciation for artists that range from Joaquin Sorollo and Edouard Manet to Claude Monet, John Singer Sargant, Edgar Degas, and Mary Cassatt. Their work inspires his own painting that he creates en plein air (outdoor painting), often in Warrenton. He has painted the iconic courthouse many times. “I paint out on site — I love to capture the essence of a scene and I find that you don’t really get a lot of what you’re trying to capture in photographs,” Smith said. While sometimes Smith’s Impressionist and Realist work can be seen on murals, he’s

“I love to capture the essence of a scene and I find that you don’t really get a lot of what you’re trying to capture in photographs” far more known for his work on canvas. Smith is skilled at other work, from carpentry to designing kitchens, bathrooms, and beyond (which he no longer does, but is skilled at from his experience and eye for design), but his heart lies in plein air painting, and Warrenton locals may notice him from his work around town. Regularly painting on canvases in the area, Smith may take from a day to a week to paint a canvas which ultimately conveys his most heartfelt and talented portrayal of the person or landscape he is bringing to life through his art. While Smith did his early learning in the classroom, he has also learned from others. He credits the opening of the Berkley Gallery in Warrenton for bringing in talented painters that he was able to paint with. But he also gives a nod to his art teacher at Fauquier High School, Mrs. Mosby, who set a foundation for the love of art.

Smith creates his artwork on canvases using oil paint, and prefers to work from dark to light, a technique that uses darker colored paint first, before adding the lighter colors. “Oil paint differs by the medium that the pigment is suspended in. It’s in linseed oil so it stays workable for a long time. The Allegro Community Players kicked off the holiday season in November with A Christmas Story, The Musical BY PAM KAMPHUIS

F

or some, the holiday season starts in August. Those in the performing arts, that is. And so it was this year for the Allegro Community Players, cast of A Christmas Story, The Musical which was produced by Allegro Community School for the Arts and performed in the Fauquier High School auditorium three weekends in November this year. The roles were announced in August, and rehearsals began immediately. According to Warrenton resident and cast member Joe Gueck who plays the role of the storyteller-narrator, Jean Shepherd, “You just can’t help getting in the holiday spirit with this production. It’s an excuse to start early.”

A perpetual favorite

A Christmas Story is one of the longtime favorite holiday classic movies, a heartwarming story of family and small town values at Christmastime. It tells the tale of 9-year-old Ralphie Parker’s quest for the Holy Grail of Christmas gifts—an Official Red Ryder carbine-action 200-shot Range Model air rifle, which his mother objects to adamantly and often with the familiar refrain, “You’ll shoot your eye out.” Adapted into a musical, the performance featured a live orchestra of mostly local musicians and a local cast with a large children’s ensemble, and included all the iconic scenes from the original movie that viewers remember: the flagpole, the snowsuit, the bunny suit, the leg lamp, and the department store Santa. Gueck, who is an experienced performer

with the Allegro Community Players, loved his role as Jean Shepherd, who was a radio storyteller “back in the day”. He said, “I enjoy the tale of a boy coming of age and developing a bond with his parents. Jean Shepherd represents one of the greatest storytellers of Americana. It is an honor to represent him.” Cast member Janice Nette, who played the role of Miss Shields, also loved participating. “The movie has been part of my family's holiday tradition since the ‘80s, so I know it well and quote lines from it often.” Thirteen-year-old Justin Balint of Bristow who played the lead role said, “Ralphie is a really fun character to play because he is a typical little boy with a big imagination. I like how it is about family and how Ralphie grows closer to his parents. It is a very sweet story.”

Allegro Community School of the Arts produces at least one production a year, with more in the works for the future. Exposing local kids to the experience of theater is one of the best parts. “We always have local kids in the cast, ranging in age from 8 years old through high school,” said Lachelle Yoder, Program Director at Allegro CSA and director of the musical. The kids range widely in the amount of theater experience they’ve had, and some have experience in music, dance, singing, and acting either at Allegro or in other arts groups or school. Adeline Marshall, an 11-year-old Marshall Middle School student who plays the part of Mary Beth, said, “This is my first musical with Allegro, but I’ve been taking piano and voice lessons there, and I have been cast in my middle school musical as well.” She enjoyed portraying Mary Beth in the musical because the character was funny but spoiled, so it was a challenge. While ACSA has always been known for its exemplary music program, they are starting to expand more into theater and musical theater as well. “That’s what the kids really want to do today. It’s fun for them, they learn acting and dance as well as music.” Lachelle said. And she’s enthusiastic in the new direction. “Theater is so much more than what you see on stage; it’s also about all the life skills that go along with it that the kids learn.” When awarded a role in a production, the first emotions kids experience are

situation. As Halyn said, “One of the hardest things was improvising when something didn’t go the way it was supposed to.” There’s even a little history education involved. “When choosing what to perform, we always try to vary the time periods,” Lachelle said. This musical is set in small town America in the 1940s. The costumes are vintage, as well as the hairstyles. As Raelyn said, after no doubt having been subjected to repeated hair curling sessions, “I learned that no one in the 1940s had straight hair.” Lachelle added, “When we were rehearsing, during the schoolyard scenes the kids were improvising and high-fiving each other. After researching, we realized that high-fives were not a thing in the 1940s, so they had to adapt their gestures. It teaches them versatility in the way they look at the world.”

elation and excitement. Justin said, “This was my first performance with Allegro. I was really surprised and excited. I was not expecting to get the lead. I was in two musicals in the ensemble before this show so this is my first lead!” Then they come to realize that being part of the performance also involves hard work and sacrifice. They learn that to persevere and see their commitment to the cast through usually requires missing other activities. According to 10-year-old Warrenton resident Halyn Kamph, a member of the kids dance ensemble, it was hard to stay committed while missing out on other things, and that the rehearsals that ran into late nights were hard.

Due to the long hours involved in rehearsing, they learn how important time management is, some bringing homework to work on during down times. Other skills that are valuable takeaways from the acting experience include confidence in public speaking, working together as part of a group, listening to direction, and mental discipline. Ten-year-old Greenville Elementary student from Warrenton Raelyn McAlexander who played a member of the Kids Ensemble said that one of the hardest things was remembering the dance choreography. Nette agreed, also mentioning the challenge of memorizing the songs and lines. The experience also teaches actors to think on their feet, a valuable skill in any

A

s the weather in the Virginia Piedmont turns colder with perhaps — or perhaps not — a soft letting of snow, thoughts turn to the approaching holidays. It is time for the barman to shine and present the drinks signaling the merriments to come. Working for years as a passionate bartender, I must say that there’s no excitement quite like the fun of curating a holiday cocktail menu using festive mixes of creams and spices, sparkling wines, or special liquors to craft drinks warmed or chilled. The opportunity to mold the perfect environment is never more present. For, if properly done, the right selection of cocktails has the power to create an ambiance so honestly charming that none can walk away feeling anything but whole, wrapped in the warmth of the season. This is my goal, and I’d like to share three favorite cocktails that I will be serving at special evenings this season.

Tom and Jerry

Tom and Jerry cocktail batter can be purchased ready-made or made from scratch.

6 oz. whole milk 2 oz. Tom and Jerry cocktail batter .75 oz. Remy Martin VSOP cognac .75 oz. Bacardi 8-year rum Garnish: Grated nutmeg Warm the mugs by filling them with boiling water and letting them sit until the outside of the mug is warm to the touch. Discard water. Warm the milk separately. Add all the ingredients except the milk to the mug and stir. Add the warm milk and stir again. Sprinkle with nutmeg.

4 large eggs, separated, divided ¼ teaspoon salt 1 /3 lb. butter, room temperature (11 Tbsp.) 1 lb. confectioners' sugar (3 ½ cups) 1 /3 tsp. vanilla extract 1 /3 tsp. ground nutmeg 1 /3 tsp. ground cloves 1 /3 tsp. ground allspice Beat the egg whites and salt in a large mixing bowl until stiff but glossy. Do not overbeat and allow them to become dry. Beat the egg yolks in a separate bowl. Beat the butter and the confectioners sugar in another large bowl until light and fluffy, then beat in the egg yolks and vanilla. Last, stir in egg whites and spices until blended. Can be stored in the refrigerator if you’re not using it right away.

Christmas is the most delicious time of the year and what better way to enjoy the hospitality, celebration and goodwill of the season than by sharing the love bakers everywhere bring to the holiday. With these simple recipes, it’s easy to invite the world to your table and share the joy of Christmas in so many delicious ways. So, what are we waiting for? Let’s get into the (Christmas) kitchen!

Noche Buena (Christmas Eve) Flan (pronounced - No-chay Bway-na)

It’s “Feliz Navidad” in Spain and Latin America with this classic custard. As it bakes, the hard caramel on the bottom liquifies into a scrumptious sauce. Yule luv it! 1/3 cup water 1 cup sugar CARAMEL DIRECTIONS

In a small heavy skillet, cook water and sugar on medium till golden – about 5 minutes. Pour into ungreased 8” pan. Set pan into the larger pan to harden while making custard. Preheat oven to 350.

8 oz. cream cheese 5 eggs 14 oz. sweetened condensed milk 12 oz. evaporated milk

In a blender or food processor, pulse custard ingredients till smooth. Pour over (hardened) caramel. Add 1“ simmering water to larger pan. Bake custard in the water bath till center is set to a light touch – about 1 hr 15 min. Tent with foil after 50 minutes to prevent excessive browning. Remove from oven. Cool in water bath 1 hour then remove. Cool 30 minutes more. Lightly cover. Refrigerate overnight. SERVING

Cut around flan with a table knife. Dip pan into hot water for 2 minutes. Invert onto a rimmed serving dish to catch the sauce.

You’ll find strudel on the Hungarian Christmas table. This simple recipe will bring “Boldog Karacsonyt” (Merry Christmas) to yours.

Melt butter in milk. Stir in sugar and salt. Set aside. In a large bowl mix flour, yeast, candied fruit, raisins, walnuts. Add milk mixture, vanilla and egg. Dough will be sticky. Cover. Refrigerate 3 days. (Yes, 3 days!!) Dough will not rise much. On day 3, briefly knead dough on a floured surface till smooth – about 2 minutes. Divide equally into two pieces. Shape each into an oval 8” X 3”. Fold the 8” side of each oval 2/3 over itself to create the classic stollen shape. Place on parchment lined cookie sheet. Let rise (lightly covered) till puffy – about 2 hours. It won’t rise much. Preheat oven to 350. Bake till golden – 35 to 40 minutes. Cool on rack. Dust with powdered sugar.

Mix filling ingredients. Refrigerate overnight. Refrigerate filo overnight too. Next day preheat oven to 350. Unwrap filo. Unroll. Cover with plastic wrap to prevent drying. Melt butter and brush pan. Lay 1 filo sheet in bottom. Wrinkles and tears are OK. Brush sheet with butter. Repeat for a total of 8 sheets ending with butter. Spread filling over buttered filo. Top with a filo sheet. Brush with butter. Repeat using all the filo. Wrinkles and tears are OK. End with butter. Bake till a toothpick inserted in center comes out clean – about 55 minutes. Cool in pan. Dust with powdered sugar.

Preheat oven to 325. Line cookie sheet with baking parchment. Using a mixer, beat sugar and almond paste till uniform. Add egg white. Beat till fluffy – about 2 minutes. Batter will be heavy. Scoop dough into Tablespoon size balls. Place 1 inch apart on lined cookie sheet. Push 1 cherry into the center of each yielding a 2” cookie. Bake till pale brown on top – about 15 minutes. Cool on rack.

Using the food processor, pulse butter, powdered sugar and flour until a ball forms – about 2 minutes. Chill (covered) 1 hour. When ready to bake, preheat oven to 375. Line cookie sheets with baking parchment. Using your hands, work dough slightly to soften. On lightly floured surface, rollout to ¼”. Cut dough using the 2 ½” cutter. Place 2” apart on lined cookie sheets. Using the small cutter, remove centers from half. Reroll centers with other dough scraps. Bake 7 to 8 minutes. Bottoms should be light brown. Tops remain white. Cool on rack. Spread bottoms of uncut cookies with 1 Tablespoon chestnut cream. Top with cut out cookies. Dust with powdered sugar.

Meanwhile, prepare topping by chopping figs and stirring into warm rum. Cover. Steep till serving. 7. Pudding is done when bubbling and set in center. Serve immediately or keep warm.
