Discover how two Portuguese Americans turned their "bifana" vision into reality!
My name is Silvia , and my passion has always been to celebrate and uplift our Portuguese community. As the host of New Friends Podcast, I’ve made it my mission to create a space where Portuguese creators, entrepreneurs, and cultural influencers can share their journeys highlighting their struggles, triumphs, and everything in between. Our stories matter, and I believe in preserving our culture in a way that makes younger generations feel connected, inspired, and proud
PAMA Magazine is an English-language publication created by us, for us a safe place where the children of immigrants can shine without ever feeling like they aren’t “Portuguese enough” to celebrate their roots. This platform is about recognizing those who work tirelessly to keep our Portuguese communities alive across the United States and Canada. Every article, feature, and story is brought to you by the journalists, writers, and creators within our own community, and we encourage you to support them in every way possible.
Whether it’s following them on social media, engaging with their work, or simply letting them know you appreciate their efforts, your support makes a difference These creators are doing incredible work to keep our traditions alive, and together, we can ensure that our culture not only survives but thrives for generations to come
-Silvia Manuela
On behalf of Pama Media, we would like to extend our gratitude to Portuguese Financial Services of America for sponsoring our magazine over the past year. Your support has played a crucial role in bridging the generational divide and has enabled us to thrive in our mission to preserve and promote our culture. Thank you for your invaluable contribution.
A CAPTIVATING STORY OF TWO FRIENDS WHO CAME TOGETHER WITH THE AIM OF BRINGING A NEW PERSPECTIVE TO PORTUGUESE FESTIVALS, COMMUNITY, AND CULTURE!
The initial idea for Battle Of The Bifanas came to me when I was on a plane back to the Bay Area from Boston, MA, where I had just spent 4 days in the Fall River area doing comedy at night and eating as much delicious Portuguese food as I possibly could during the day I was quietly reflecting on the incredibly delicious "backstage bifana" that I had devoured at one of the Portuguese host venues out there when I realized that it was quite possibly one of the "Top 2 or 3" all-time best bifanas that I had ever tasted and that meant something coming from me. Yes, you heard that right. Now I know what you're thinking: "Who crowned this guy?" and why does he think his opinion somehow matters when it comes to the taste of these delicious Portuguese pork sandwiches? Well, although it is true that most Portuguese-American and Portuguese-Canadian people have tried countless bifana recipes at their local festas and fundraisers, what makes me uniquely qualified to have a say on this particular topic is that through stand-up comedy and tour stops in all of these wonderful Portuguese communities, I have had the privilege of trying more bifanas than you can possibly imagine at Portuguese venues all across the United States and Canada, as well as the Azores Islands and Portugal.
I can tell you that most of them have been delicious; of course, they're the same sandwich, so naturally, they all have their similarities But believe me when I say that every town with a Portuguese Club does them a little bit differently. You'll never find out whose bifana is the best in each individual town because when you ask "those houses," you find that every chef, at every club, in every town, from east to west, thinks their bifana recipe is the best one out there! It never fails As hilarious as these conversations and debates between local chefs can get, it really has been just talk and banter up until now, as there has never been a way to truly find out who really is king of the bifana.
I started dreaming up fun and silly ideas and thought how cool it would be to have an open competition to see who out there can cook the best bifana I knew I had to make a phone call and collaborate with my good friend, a fellow Portuguese-American who is a talented foodie and as passionate about food as anyone I know, Brian Flores. We started to piece together plans for an epic cultural event that would be different from anything we had ever seen or hosted in our community Rather than hosting an event related to religion or an existing tradition, as is normally the case, we wanted to instead focus on the vibrant culinary and cultural aspects of our community and host a memorable day full of delicious food, popular cultural vendors, unique experiences, and lively entertainment
After a couple of months of brainstorming and planning, Battle Of The Bifanas was born! Brian and I are still building out the details of this event with every passing day, but we appreciate the support so far and we embrace the opportunity and responsibility of hosting an incredible event for our community to enjoy!
My love for cooking was nurtured in my family’s kitchen, where I stood by my mother’s side, watching her expertly blend flavors and master culinary techniques. This early exposure sparked a lifelong passion for the art of cooking, one that continues to inspire my culinary journey today. During the pandemic, I discovered a deep appreciation for BBQ and decided to turn that passion into a small catering and pop-up venture. With the help of many friends and my mom, I had the opportunity to cater a variety of events and host pop-ups throughout San Jose, sharing my love for smoked BBQ with the community. During this time, our BBQ team competed in local competitions, proudly securing two top-five finishes in the Tri-Tip category.
While I enjoy exploring a variety of cuisines, I have developed a deep appreciation and passion for Portuguese food, particularly bifanas. This seemingly simple sandwich carries a rich history and endless variations, with each cook adding their own unique spin. Everyone has their own unique take on a bifana, and everyone believes theirs is the best!
For me, the Porto-style bifana reigns supreme. The combination of marinated pork loin, molho, mustard, and piri piri sauce, nestled in a crispy-yet-soft roll, creates an unforgettable flavor experience. The slow-simmered molho, packed with depth and richness, is what truly sets this style apart.
With the Battle of the Bifanas, I am excited to celebrate the diverse interpretations of this beloved sandwich while bringing the community together for an unforgettable evening of food, culture, and camaraderie.

What a night it was! These three female Stand up comedians had us laughing so hard! Do not hesitate booking them for your next comedy show!
I’m sitting on the couch. It’s late very late. If it were a weekday, I’d be tucked in bed approaching REM sleep at this time But it’s not a weekday; it’s Saturday The time is 11:25 pm, and the local NBC news affiliate just signed off. My mom walks around the couch after grabbing a cookie from the kitchen. She gives me one and then sits next to me. We’re ready for that magical moment we look forward to all week.
The screen goes dark We hear the sound of a live audience quieting down Then, a set filled with a cast of characters fills the screen. All is right in the world. Why is that? The cold open has arrived the first sketch before the intros and host’s monologue. For this moment, my mom and I are transported from small Lodi in Central California right inside Studio 8H at NBC Studios in New York City. We’re seated among the live crowd, awaiting the hilarity provided by the “Not Ready for Primetime Players” Laughter erupts as we experience every second of the sketch that kicks off the show, leading to that epic moment ingrained in pop culture…
“Live from New York, it’s Saturday Night!”
Saturday Night Live or SNL for the younger viewers as my elder millennial lower back slightly aches as I type was a tradition, specifically with my mom and me Not that my dad wasn’t a fan; he could easily reference moments from the original cast and the casts of the ’80s But my dad wasn’t a night owl like my mom. He’d catch the cold open and maybe the monologue and call it a night. On the other hand, my mom and I were up for it all Failing to last the ninety minutes once in a while, I’d feel her nudge me and say, “Okay, Anthony. Time to go to bed.”
I would return the favor those times Mr. Sandman would visit her
From the early ’90s through the late 2000s, this was our thing Watching the likes of Chris Farley, Phil Hartman, Adam Sandler, Dana Carvey, Mike Myers, Tim Meadows, Ellen Cleghorne, David Spade, Julia Sweeney, Kevin Nealon, and Jan Hooks was my introduction to this sketch show that left me in awe. Then, it was Chris Kattan, Will Ferrell, Darrel Hammond, Rachel Dratch, Maya Rudolph, Jimmy Fallon, Tina Fey, Amy Poehler, and Kristen Wiig, and the list of greats would continue.
Whether I was there with her from the start or returning from a night out, I’d make my way to her, where she would be seated with a big smile and watery eyes from laughing so hard. Even after moving out and getting married, she’d ask if I saw the latest SNL, which I always did. I would go on to share my love for the show with my closest cousins and friends. We’d have laughs and reenactments of our favorite sketches, but my earliest memories and the first image in my head will always be on that couch with Mom.
In 2020, my mom passed away after two back-to-back bouts with rectal cancer Nearly five years passed, and the pain sits in my chest, randomly reminding me from time to time. I’ve learned firsthand that this pain never leaves; you learn to live with it You remind yourself of happy memories to quiet the tough ones. Of the many I have, SNL will always be one of them.
As this epic sketch comedy series reached its 50th anniversary and all the legendary cast members, past and present, and iconic hosts gathered to celebrate, I couldn’t help but think how much she would’ve loved this. Watching them all relive those classic moments while creating new ones with the current crew My wife and I sat back and watched as history was made, and I felt a warmth envelop me inside. An energy that I hadn’t felt in years.
Sitting on our couch, as our television echoed the audience’s laughter at the hijinks performed on the stage, I turned my head to the left With my eyes slightly watery and a smile on my face, I heard it. The sound of her laugh in my ears from decades passed, just like old times.
To Lorne Michaels and all the generations of talent that have graced NBC Studios’ Studio 8H in New York City. From Chevy, Bill, and Gilda to Kenan, Colin, and Heidi. To a series that will always transport me back to that couch next to my mom, no matter how old I get: Thank you. Thank you for giving her some of the greatest laughs of her life. Thank you for inspiring me to make her laugh. Thank you… for being our show. Happy 50th, Saturday Night Live.
Okay, mom. Time to go to bed.

KAYLAH IS A 19-YEAROLD COLLEGE STUDENT FROM GILROY, CALIFORNIA. SHE IS CURRENTLY PURSUING A DEGREE IN HISTORY WITH THE ASPIRATION OF BECOMING A HIGH SCHOOL HISTORY TEACHER
HER RICH CULTURAL HERITAGE SIGNIFICANTLY SHAPES HER IDENTITY. HER PARENTS, DAVID AND MARITZA RAPOSO, WERE BORN IN SAN JOSE, CALIFORNIA, WHILE HER FAMILY'S ROOTS TRACE BACK TO TERCEIRA AND SÃO MIGUEL IN THE AZORES, AS WELL AS TO MEXICO AND EL SALVADOR.
From a young age, Kayla has been profoundly engaged in the Portuguese community, a passion cultivated by her grandfather, Abel Raposo. Some of her most treasured memories involve singing traditional Portuguese songs together, including "Os Meninos de Huambo" and "Dá Cá um Beijo."
At the age of seven, her non-Portuguese mother introduced her to Luso, where she actively participated in Youth Council #2 of San Jose for over a decade. During her tenure with Luso, she served on the Youth State Board for three years, ascending from Trustee to Secretary. This invaluable experience allowed her to perform, lead, and sing the national anthems at the annual convention, where she forged enduring friendships. None of her accomplishments would have been possible without her mother's unwavering support.
My dedication to Portuguese traditions extended beyond Luso I was honored to serve as a sidemaid for IFDES Portuguese Hall of Gilroy at ages nine and twelve, and later, at fourteen, for PFSA Council 16 in Newark. At seventeen, I was privileged to represent Newark’s 100th-year celebration as Rainha Santa Isabel and lastly to serve as the queen for Our Lady of Fatima in Gilroy
Additionally, my love for Carnaval led me to perform dança do pandeiro at ages 9, 11, and 14 with Casa Benfica and Banda Velha, a tradition that remains one of my greatest passions
One of my deepest joys is singing, particularly Fado. My journey into Fado began at the age of ten when I was invited to perform at a POSSO fundraiser alongside talented fadistas (Silvia Costa and Crystal Mendes) and musicians (Abel Martins, Angelo Eiras, and Bob Koch) This experience ignited a lifelong love for the music, and to this day, I sing with the same passion, knowing it brings joy to my biggest supporters, my grandparents, Abel and Eduarda Raposo
In 2024, Luso Youth Council #2 of San Jose took a bold step by stepping into the dance category for the first time at the annual Luso Youth Theatrical Program, pushing beyond their usual comfort zone. After a summer of dedicated preparation, the group ’ s hard work paid off, earning them 2nd place in the Dance Category at the Luso Youth Theatrical Program, held at the Center for Performing Arts in Downtown San Jose this past August.
CATEGORY FOR THE FIRST TIME AT THE 2024 THEATRICAL PROGRAM
The decision to switch to dance was driven by the council’s rapid growth in recent years. With over 65 performers now part of the group, this shift gave everyone the chance to shine and enjoy more time on stage. It also showcased the council’s strong sense of community, which they celebrated by paying tribute to “Little Portugal” in their performance.
Since their performance last summer, the council has been busy bringing their routine to various events across the Portuguese community, receiving an enthusiastic response. They are already gearing up for their 2025 performance debut at the Youth Theatrical Program in Reno, Nevada, this August. One of their biggest upcoming highlights will be performing as part of the Half-Time Show at the San Jose Earthquakes’ Portuguese Heritage Night, scheduled for the weekend following the convention The Council is thrilled for the opportunity to perform under the stadium lights!
The youth members are like family, and the parents are deeply committed to supporting Youth Director Ana Teresa Maciel and the team of youth leaders. Ana Teresa is fortunate to have a solid support system within the local Portuguese community, including the Portuguese Band of San Jose and many lifelong friends who once performed alongside her and now see their children joining the council, continuing the tradition of nurturing the next generation of performers and lifelong friendships.

When you've been to a small country like Portugal nine times, you begin to wonder what could possibly be different the tenth time. This is what I kept thinking over and over as we made our way across the Atlantic via London. I wondered if there was anything left to see or do in mainland Portugal that I had not seen or done already. Well, once again I was not disappointed. We spent the first night in Lisbon at a very modern hotel in the Parque das Nações. It's where Portugal hosted the World Expo in 1998. The promenade and pavilions remain, and that part of Lisbon now showcases many fine restaurants and concerts. We had a great dinner in a Brazilian restaurant right on the water's edge. What's interesting about this area is that it was an industrial wasteland before the Expo. It was totally leveled and then built up to the entertainment mecca that it is today.
The next morning was Easter Sunday, so we made our way south to Serpa where we usually stay. The town holds a large week-long festival every Easter, and this was the first time we were able to see it. The highlights of the festival were the cultural parade and the nightly entertainment in the town square. The parade featured floats depicting the history of the area, starting with the Roman conquest, to the invasion of the Moors, and plenty to acknowledge the agricultural roots of the region.
The town was well-lit and decorated with flower-filled arches. Another aspect to be noted on this trip was the weather. I had never seen the region except for the summer months. This time, the province was green and lush. The fields were all cultivated, and purple and yellow flowers were sprouting everywhere. Young olive groves were abundant. The building of the Alqueva Dam in 2002 has changed the whole countryside, as there was almost no water to irrigate prior to that. It rained a few days while we were there. I had never seen it rain there before. Along with the rain came a couple of serious thunderstorms, and that was amazing, but a little terrifying.
The second weekend of our trip was spent in the Algarve. That's the southernmost province where the best beaches are We were not interested in beaches, so we decided to go to the west side of the Algarve where we had never been before. We stayed in Albufeira but spent the daytime exploring a place that I had always wanted to see: Cape Sagres. It is the southwesternmost tip of Europe. That in itself is impressive, but that's not why I wanted to go there. I was after the historical value. Sagres is where Prince Henry the Navigator had his famous nautical school, Escola de Sagres. From this school came the plans for many of the great explorers. Most notably, Columbus, Vasco da Gama, Cabrilho, Dias, Magellan, and Pedro Álvares Cabral all attended this school, and some even sailed from its cape.
I was very excited to be at the spot where these explorers had set out to discover or claim the Americas, the routes around Cape Bojador in Africa, the sea route to India, Brazil, and even California There is a huge compass made of inlaid stones on the ground at the site. It is about 30 feet in diameter Who knows how many explorers stood on that very spot studying from it? I was in heaven.
On the return to Serpa from the Algarve, we stopped for lunch at a restaurant on a hill overlooking the new dam. It also was breathtaking
Outside the restaurant was a church with a stork nesting atop the bell steeple In fact, all the stork nests were occupied with the mighty birds sitting on their eggs Some of them nest in trees, but many build their nests atop chimneys or power poles. It's an unforgettable sight.
Besides visiting the Algarve and seeing the festival, there were many more interesting things We got to meet some cyclists who were staying at the same Residencial where we were staying Our friends own it. Two teams stayed for a couple of nights because there was a race taking place in the region It's like the Tour de France, only in Portugal The teams were rivals, and it was tricky trying to keep them apart. They were given rooms in different wings, but they had to eat breakfast together We got up very early to make spaghetti so they could have their carbs before the race Each team had its own bus, a masseur, and a doctor Each cyclist was massaged after a race They also had to shave their legs. I guess we learned a lot about the life of a cyclist. We wound up going to the race to give our support
We also went to my husband's village and made our obligatory visit to the cemetery In a scene from the opening of Almodóvar's film, *Volver*, we too cleaned up the graves of my in-laws and replaced the silk flowers in the vase at its base. Then we went around to all the other graves to pay our respects and to right all the vases and flowers that were knocked down by the strong wind My husband and his brother paid close attention to the new graves as some villagers had passed away without their knowledge. Many were young emigrants who were returned home for burial. Their tombstones sometimes read like biographies Some were homages, and many were written in the language of the country where they died.
Thunder clouds quickly gathered over us and rain finally drove us away Our last meal in Serpa was a fish stew. It was made from the "lampreia" fish, which is found in the waters of the Guadiana River and is like a large eel It was delicious We said good-bye to the family at the door of the restaurant under an umbrella and quietly drove back to Lisbon to spend our last night. Lisbon is not what you would call driver-friendly It's hard to find anything because street signs are rare We drove around forever trying to find our hotel Finally, we gave up and drove to the airport to turn in our rental car From there, we took a taxi to the hotel. We spent our last night walking around Lisbon in the area close to the university We went to bed around 10:00, and my husband and daughter fell asleep right away I lay in bed all night thinking about the whole adventure and fretting over the long flight home. One thing I am sure about is that whatever happens, it's always an adventure when we go to Portugal, and I look forward to the next one

Madeira is the Portuguese Island that keeps on giving. With so much to discover, there is always something new to explore. There are so many popular spots to visit; however, the best encounters are always those among the locals That’s where to find the most authentic experience on the pearl of the Atlantic
So if you’re looking for spectacular views with great food, that is something beyond the overstated hiking and off-roading, or the expensive restaurants in the city centre, Tasca Tours are the new popular way to discover the island that’s as real as it gets.
These “tascas” are traditional taverns where locals gather for home-style meals at affordable prices. They are known for their casual, family-friendly atmospheres and are typically found in older neighborhoods, out of reach from the tourist traps Madeira is where these Tascas flourish and there are a growing number of tour operators that share this true taste of the island with friendly conversation and hospitality.
You can expect the day in itself can feel like reconnecting with old friends since the Portuguese approach to hosting feels more buddy-buddy rather than tour guiding. After gathering everyone in a vehicle, there are introductions to get acquainted and prepare the group to have fun together! Then, your first stop will secure a table at a bar that was most likely a family grocer back in the day They’ll serve up some signature cocktails like the famous Madeira poncha along with great food
What they call “dentinhos” are small appetizers of homemade dishes that accompany your drinks. You may have a taste of fried black scabbard, cow tongue, and even tripe, all of which can be exotically tasty. On other days they might have beef stew or chicken wings. It all depends on the menu of the day, which makes it all the more special. At that point, your group will be having a great time before moving on The next stop will be another bar, where there is a serene ambience that may include family photos and interesting wall art. You could potentially meet some fishermen and taste their special poncha pescadore served with something like a tuna or balcalhau (cod fish) dentinho. Remember, there will be locals flocking the space and partaking in friendly conversation. There may even be dogs and cats hanging out. Everybody will be approachable and safe It will actually be surreal and poetic to take in, like there was a party in your mouth and everyone was invited
Depending on your tour guide and your propensity for food and drinks, there could be a couple more stops along the way before capping off the journey with an authentic dinner to soak up all the alcohol in your stomach.
That’s when you reach another spot where you’ll be served a traditional dinner of bread, salad, milho frito (fried corn meal), roasted chicken and espetada (steak on a skewer) with, of course, more drinks By the end of it all you will be walking on a cloud with a full belly and laughing with new friends before realizing there is one more thing! The best tour operators will bring you a special treat to wash everything down. Madeira wine is the perfect digestif for such an occasion. However if you’re really lucky, they will bring you to a vintage cellar where you can taste genuine wine from family casks Ingesting something so exquisite and hearing about the local history behind the old traditions will be the cherry on top of an already amazing experience.
Tascas are a cultural staple in Portugal that Madeira elevates on every level. Regardless of where you find yourself, there’s a nearby place with hearty meals That’s what makes the island such an attractive destination; the best adventures with good food and the greatest people It’s a paradise that welcomes everyone as their own and Tasca Tours are the best way to see the true nature of Madeira.
If you want more quality over quantity, as if your friends are taking you around the town rather than paying for a sterilized, cookiecutter tour, make sure you book your dates in advance These unique offerings tend to fill up quickly and are only getting more popular Help & Share
