INGREDIENTS
SALAD
4 cups butternut squash, peeled and cubed (about 1 small squash)
4 cups arugula
1 apple, thinly sliced
⅓ cup crumbled goat cheese
⅓ cup chopped pecans
¼ cup dried cranberries (optional)

INSTRUCTIONS
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper
Toss butternut squash with olive oil, salt, and pepper. Spread in a single layer and roast for 25 to 30 minutes, flipping halfway through, until tender and caramelized.
While squash roasts, whisk together all vinaigrette ingredients in a small bowl until well combined.
In a large bowl, combine arugula, apple slices, roasted squash, goat cheese, pecans, and dried cranberries (if using).
Drizzle with vinaigrette and toss gently to coat
Serve immediately and enjoy!
