INGREDIENTS SALAD 4 cups butternut squash, peeled and cubed (about 1 small squash) 4 cups arugula 1 apple, thinly sliced ⅓ cup crumbled goat cheese ⅓ cup chopped pecans ¼ cup dried cranberries (optional)

INSTRUCTIONS Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

While squash roasts, whisk together all vinaigrette ingredients in a small bowl until well combined.
