Maple Roasted Carrots

These maple roasted carrots bring warmth and color to a gathering, with crisp edges, a touch of sweetness, and a creamy layer of whipped ricotta underneath. Finished with pistachios, fresh parsley, and a little lemon, this side dish feels special enough for Thanksgiving without requiring an afternoon in the kitchen. It pairs well with a holiday meal or a simple weeknight dinner. Serve the carrots warm over the ricotta just before everyone sits down. The contrast of sweet, savory, creamy, and crunchy makes every bite feel like the season.

INGREDIENTS ROASTED CARROTS 1½ lb carrots, peeled and halved lengthwise 2 tbsp olive oil 2 tbsp pure maple syrup ½ tsp kosher salt Freshly ground black pepper

WHIPPED RICOTTA & TOPPINGS 1 cup whole milk ricotta 2 tbsp plain Greek yogurt 1 tsp lemon zest 1 tbsp fresh lemon juice ¼ cup chopped pistachios 2 tbsp chopped fresh parsley Flaky sea salt, to finish

INSTRUCTIONS Heat oven to 425°F. Line a large baking sheet with parchment. Toss carrots with olive oil, maple syrup, kosher salt, and pepper. Spread in a single layer. Roast for 25 to 30 minutes, turning once, until tender and browned at the edges. Blend ricotta, Greek yogurt, lemon zest, and lemon juice until smooth. Spread the whipped ricotta across a serving platter. Arrange the warm carrots on top and sprinkle with pistachios, parsley, and flaky sea salt. Serve immediately.

Three years in, a new Las Vegas tradition takes shape FROM FIRST RACE TO ANNUAL FIXTURE When Formula 1 returned to Las Vegas in 2023, the city became the track. Cars raced past the lights of the Strip, introducing a new global audience to a place already known for putting on a show. The debut also came with a learning curve. Months of construction and road disruptions affected residents and businesses near the circuit. For the second race, organizers shortened the period of major disruptions and added more accessible ticket options. By 2025, the Grand Prix had completed its third sold-out edition. Formula 1 has since extended its Las Vegas agreement through 2037, giving the city a recurring event with a place on the international sports calendar. The numbers show its scale. Formula 1 reports an estimated $3.2 billion in cumulative economic impact across the 2023, 2024 and 2025 races. That figure measures economic activity associated with the events; it should not be read as profit for the city or a direct gain for every local business.

This November, the story is bigger than a race. It is about how Las Vegas is learning to host a major annual event while making room for the people who live and work here.

The inaugural race attracted a reported global television audience of 59.3 million, putting Las Vegas and its unmistakable skyline in front of viewers worldwide.

For real estate, the connection is broader than a single busy weekend. Major events support the hospitality economy and keep Las Vegas visible to people considering where to visit, invest or live. They also put the city’s capacity to host large gatherings on display. Race week has tradeoffs, especially for businesses and residents navigating road closures near the Strip. Its long-term value will depend on how well the event continues to serve visitors and the local community. As the fourth Grand Prix approaches, Las Vegas has an opportunity to show how a world-class event can become a better neighbor, too.
