INGREDIENTS 4 ears fresh sweet corn 2 ripe avocados, diced 1 cup cherry tomatoes, halved ½ cup crumbled cotija cheese ¼ cup finely chopped red onion ¼ cup chopped fresh cilantro Juice of 2 limes 2 tablespoons olive oil 1 teaspoon chili powder Salt and freshly cracked black pepper, to taste
INSTRUCTIONS Grill the corn over medium-high heat until lightly charred on all sides, about 8 to 10 minutes. Allow the corn to cool slightly, then slice the kernels from the cob. In a large bowl, combine the grilled corn, avocado, tomatoes, red onion, cilantro, and cotija cheese. Whisk together the lime juice, olive oil, chili powder, salt, and pepper.
