INGREDIENTS
4 ears fresh sweet corn
2 ripe avocados, diced
1 cup cherry tomatoes, halved
½ cup crumbled cotija cheese
¼ cup finely chopped red onion
¼ cup chopped fresh cilantro
Juice of 2 limes
2 tablespoons olive oil
1 teaspoon chili powder
Salt and freshly cracked black pepper, to taste
INSTRUCTIONS
Grill the corn over medium-high heat until lightly charred on all sides, about 8 to 10 minutes
Allow the corn to cool slightly, then slice the kernels from the cob
In a large bowl, combine the grilled corn, avocado, tomatoes, red onion, cilantro, and cotija cheese
Whisk together the lime juice, olive oil, chili powder, salt, and pepper
Pour the dressing over the salad and gently toss until evenly coated. Serve immediately or chill for 15 to 20 minutes before serving for even more flavor.
