Ingredients
Dry Ingredients
1 and 2/3 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
Wet Ingredients
3/4 cup vegetable oil
1 cup granulated sugar
2 large eggs
1 cup milk
1 tsp vanilla extract
Zest of 1 lemon
1 and 1/2 cups fresh blueberries, lightly tossed in flour
Optional glaze:
1/2 cup powdered sugar
2 to 3 tbsp fresh lemon juice
Instructions:
Prep: Preheat oven to 350°F Grease a loaf pan and line with parchment paper
Mix dry: In a medium bowl, whisk flour, baking powder, baking soda, and salt
Mix wet: In another bowl, whisk oil and sugar until smooth Add eggs one at a time, then stir in milk, vanilla, and lemon zest
Combine: Add dry ingredients into wet mixture and gently stir until just combined Fold in blueberries
Bake: Pour batter into pan and bake 45 to 55 minutes, or until a toothpick comes out clean
Finish: Cool in the pan 10 minutes, then transfer to a rack. Drizzle with lemon glaze if desired. Slice and enjoy.
