When Joey Soltes was in sixth grade, he was diagnosed with Crohn’s disease — an inflammatory bowel disease that has affected his energy, ability to hold down food and has hospitalized him several times. “I was on a mission to help him get better,” said Joey Soltes’ mother, Jodee Soltes. The family started to eat healthy, whole foods, and they noticed a difference in Joey Soltes’ condition. “When you’re younger and you have Crohn’s, you just think it’s unfair,” Joey Soltes said. “You still want to eat what you want to eat. Until you get older and a little more mature, you don’t realize that eating better will actually help you. It took me a while, but probably 16 or 17 I realized I wanted to cook for a living.” Now at age 26, he’s working toward a culinary degree from Daytona State College and recently opened Clean Eats Kitchen in City Marketplace with Jodee Soltes in March. The restaurant is a meal prep service, dedicated to cooking meals made with locally farmed ingredients, so that people who don’t have time to cook or don’t want to still can have healthy, heat-up-at-home options throughout the week. “That’s the one thing with meal prep: You get bored of eating the same thing over and over,” Joey Soltes said. “So, we’re trying to target having a different menu every week so people don’t get bored.” There are three meal prep plans for people to choose from: clean light (in calorie count to lose weight), clean traditional (a full, balanced meal) and clean athletic (for those who are working out more and need additional calories). The meals change each week. Before opening the shop at 160 Cypress Point Parkway, Unit A106, the pair collected survey results from about 115 around town at gyms, weight loss centers and salons. What they suspected was accurate: People want more

By the time symptoms occur, lung cancer is usually beyond treatment. If you’re 50 or older and have a history of heavy smoking, Low Dose Computed Tomography, or LDCT, is a screening exam that can catch lung cancer early, while it is still highly treatable. Caught in time, lung cancer can be overcome. So don’t wait. Ask your doctor if LDCT from RAI is right for you.

healthy options in Palm Coast. “People have to understand that eating right, you can feel better,” Jodee Soltes said. Their main demographic so far has been people in their 20s and 30s, but Jodee Soltes said some older customers who just don’t want to cook are also taking advantage of the new service. “For young professionals, it’s easier to grab a meal than it is to sit home on Sunday and cook — because they’re out doing things,” Joey Soltes said. Joey Soltes preps, cooks and packages up the meals on a weekly basis. They’re fresh for up to five days after they’re prepared, he said. Clean Eats Kitchen serves packaged lunches and dinners, a variety of vegan baked goods, and they have nitro cold brew and kombucha on tap. They are planning to start offering delivery Sunday, April 28, for orders placed by noon Thursday, April 25. Why shop at a farmers market? Port Orange Farmers Market vendors choose to make food their own way for their children’s health.

or two independent vendors at the farmers market in the Port Orange Pavilion, healthy eating became the cornerstone for their businesses.

Carol Mugo serves Brenda Detweiler at the farmers market in the Pavilion in Port Orange.

Carol Mugo developed a passion for crafting wholesome treats when her niece was diagnosed with autism at the age of 2. She wanted to create recipes that her niece could enjoy, and, ultimately, that’s what she did. It helped with her niece’s symptoms, Mugo said. The recipes focused on organic and non-genetically modified ingredients without inflammatory foods such as wheat, dairy, soy, corn and nuts. “I started meeting a lot of others in the Port Orange community that had allergies or other health issues that wanted treats but could not find them,” Mugo said, That’s how her business, The Healthful Baker, was created in Port Orange. Mugo said she is starting off at the farmers market to gain some recognition for her company. Eventually, she wants to get a commercial kitchen. “I believe small vendors at the farmers market encourage people to eat healthier because we provide one-on-one interaction, unlike the big supermarkets,” Mugo said. Mugo believes that sharing her history and personal story will encourage people to move from a conventional diet to one that will better support their health. Brenda Detweiler comes to the farmers market every weekend to purchase treats from The Healthful Baker because of her diet restriction. “Treats like hers are impossible to find in the area,” Detweiler

said. “Take the time to invest in your diet instead of investing in medicines.” Zachary Harman, owner of Harman Farms in Ormond Beach, and butcher Jason Taylor chose to start a sausage business for similar reasons as Mugo: They wanted healthy foods for their kids. “We found that we could make chicken thighs taste similar to what you can find in the store without all the extras like nitrates and extra seasonings,” Harman said. Harman started out by making just a few pounds of sausage for family and friends, and eventually grew to making 300 pounds to sell at the farmers market. “We do this as a hobby and for the love of the product and our kids,” Harman said. Not only do the independent vendors encourage customers to eat healthier, but the fresh produce also attracts Port Orange residents like Ted Perarsall, who was at the farmers market picking up various types of lettuce. “[The farmers market] absolutely encourages me to eat healthier,” Perarsall said. “The produce is cheaper, better, and fresher.” For Rocky and Karen Collins, of Port Orange, the farmers market is about more than just the food. “I want to support local vendors and farmers,” Collins said. “We come here every week ... It’s great for the community.” Visitfacebook.com/PortOrangeFarmersMarket/

Ormond Beach resident leads ketamine infusion treatment in Port Orange Founders Bill Self and Dr. Carlos Montalvo are hoping to treat depression with a new form of medicine. JARLEENE ALMENAS NEWS EDITOR

Ormond Beach resident Bill Self has dealt ketamine virtually all of his professional life. As a nurse anesthetist who worked in local hospitals, he used to administer the drug to patients via anesthesia. However, it wasn’t until he started teaching at the University of North Florida that he started studying all of its potential benefits. Then, when his son came home from college during the 2016 Christmas break with depression, Self was further pushed into his research on ketamine. “That’s when the drive really started, for me, for what else is out there that we could do to look out for treatment for our kid,” Self said. A year later, Self, a Mainland High School alumnus, and Dr. Carlos Montalvo jointly founded a ketamine infusion center, and started seeing patients in 2018. Based in Port Orange, “Life is Ketaful” is one of fewer than 10 clinics in the state. Self reports a 70% success rate in his patients, which include his own son who now owns his own business in Ormond Beach, Self’s Vapor and Taproom. Recently, Self met a woman who initially had post-partum depression. Self met her after she

had been taking antidepressants for a decade. He said that after her infusion treatment, she told him she was back to feeling well, even attending her children’s sporting events. Another woman he treated had depression and an average of 15 migraines a month. Following her infusion treatment, Self said she told him her migraines have lessened to one or two a month and are easily treated with ibuprofen or caffeine. “When we get those kinds of successes, it makes this really kind of worthwhile,” Self said. WHAT IS KETAMINE?

Ketamine is classified as a dissociative hypnotic, Self said. That means it works on NMDA receptors and antagonizes glutamate, a neurotransmitter in the brain. Ketamine interrupts the connection between glutamate and the NMDA receptors, which is meant to allow neurons to stop the current “loop” of communication in the brain of someone with depression. It’s typically used in people with treatment-resistant depression, Self said, or when someone has taken two or more classes of antidepressants without a successful response. If someone is interested in ketamine infusions, first he or she

would have to see a primary care physician or mental health provider to obtain a medical history. Self needs to see this to evaluate patients. Should patients want to go forward with the infusions, they would receive a sequence of six over two weeks. The dosage is controlled, and is calculated based on weight. Each infusion takes 45 minutes to complete. “It can definitely make you feel strange or funny, but not scared,” Self said. “It’s not a scary thing. A lot of people like being in that place. It’s comfortable.” HOW MUCH?

There are a few misconceptions regarding ketamine, Self said. Some people are concerned about the fact it is also used in veterinary care, and has been used as an illicit drug. While this is true, Self explained, ketamine infusion is different. It’s being administered in a controlled environment, and isn’t meant to sedate you. It is considered off-label by the Food and Drug Administration, which doesn’t allow for insurance companies to cover the cost. A two-week treatment of ketamine infusions at Life is Ketaful costs $2,500. One day, Self hopes insurance companies will re-evaluate their coverage, as depression affects many people. He’s seen it firsthand with his son, and seeing the success rate in his other patients

Keep your heart healthy with these 5 keto-friendly foods The low-carb, high-fat diet known as keto has Americans looking at healthy food consumption in a whole new light. Keto programs have proven effective for weight loss, but how heart-healthy are they? As with all things, moderation is key. To get you started, the experts at South Beach Diet — a more accessible version of the keto diet — recommend these five ketofriendly, heart-healthy foods: 1. Full-fat dairy: “Full-fat dairy is healthy,” says Dr. Arthur Agatston, creator of the South Beach Diet. “For example, you should be eating full-fat yogurt, not low-fat yogurt.”

With zero net carbs, items such as butter and cream are rich in healthy fats. While large amounts are associated with obesity and may cause heart disease, according to many experts, the opposite is true when consumed in moderation, as shown in studies published by the “European Journal of Clinical Nutrition.” 2. Eggs: Despite receiving a bad rap for high cholesterol content, eggs are low in carbs and high in protein and amino acids. Egg whites contain no cholesterol and are high in protein; while the yolk provides the majority of the egg’s nutritional content. Eaten sensibly, eggs are both keto- and

heart-friendly. 3. Shrimp: Shrimp is a versatile superfood, high in protein and contains more than 20 vitamins and minerals, including selenium, which reduces inflammation and promotes heart health. Seek out wild-caught shrimp to avoid antibiotics. 4. Flaxseeds: Flaxseeds are high in omega-3 fatty acids and have been proven to lower the risk of heart attack and heart disease. Flaxseed also contains 800 times more of a cancer-fighting phytochemical called lignan than any other food. For maximum nutritional benefits, choose ground flaxseed and refrigerate for

longevity. Try mixing it into olive oil-based mayo or blending it into your favorite protein shake. 5. Olive-oil or avocado-oil based mayonnaise: This oftenmaligned condiment is high in heart-healthy, monounsaturated fats, and is a keto staple with its zero grams of net carbs. For more information on the South Beach Diet and its ketofriendly options, visit www.southbeachdiet.com. When adopting a keto-style diet, think beyond weight loss. Be sure to include a range of foods that are great for heart health. — STATEPOINT

Why breakfast really is the most important meal of the day Y

ou’ve probably heard the saying, “breakfast is the most important meal of the day.” While there is some conflicting research that questions the importance of eating breakfast for weight loss, many other researchers conclude there are, in fact, many benefits for starting your day with a morning meal.

BREAKFAST BASICS “Breakfast literally means ‘breaking the fast,’” explains Briana Rodriquez, a registered dietitian with Jenny Craig. “Blood sugar, also known as glucose, powers your muscles and brain. After 7-9 hours of sleep, blood sugar is naturally low and you need to replenish your energy stores.” But what if there’s no time to spare in the morning? Rest assured, there are quick, easy breakfasts you can grab on-thego. WHY BREAKFAST MATTERS Although skipping meals or eating very little in the morning may seem like a sure-fire way to lose weight, Rodriquez explains it’s not so simple. “When you skip breakfast, you’ll likely overcompensate later, eating your largest meal at night because you’re extremely hungry. And that’s not good if your intention is weight loss.” Making breakfast your largest meal of the day, also known as “frontloading,” can lead to a healthier weight. “Since digestion slows during sleep, late-night calories are less easily metabolized and will likely be stored instead of used as energy,” Rodriquez explains. “A balanced, substantial breakfast works with

HOW SHOULD YOUR DAY LOOK? The quality of food you eat also matters. Here’s an example of what Rodriquez suggests a typical day look like:  Breakfast and lunch should be satisfying, protein-rich and include a small amount of healthy fats and carbohydrates. Think: an egg and veggie scramble with a piece of fruit for breakfast or chicken with veggies and pasta alongside a green salad for lunch.  Dinner should be light and include a lean protein and lots of non-starchy vegetables. Rodriquez suggests decreasing carbs in the evening. Think: meatloaf with veggies or

something like Jenny Craig’s Three Cheese Macaroni with Broccoli and Carrots.  Snacks are an important part of the equation too. Rodriquez recommends snacks under 200 calories, spaced between meals. Choose something with protein and fiber to help keep you feeling full. Think: a small apple with a teaspoon of nut butter, or nonfat Greek yogurt with a handful of berries.

“When you skip breakfast, you’ll likely overcompensate later, eating your largest meal at night because you’re extremely hungry. ” BRIANA RODRIQUEZ, a registered dietitian with Jenny Craig

your metabolism at its peak, helping support weight loss efforts naturally.” An added bonus? Weight loss isn’t the only potential benefit of having a good breakfast; a 2013 study published in “Obesity” suggests other health gains in addition to weight loss, such as decreased risk of heart disease and Type 2 diabetes. Consider weight loss programs that embrace the science around

the body’s natural circadian rhythm. Also, look for programs that offer satisfying breakfasts with just the right amount of proteins, carbohydrates and fats. Eating breakfast may improve your health in more ways than one. The next time you’re rushing out the door in the morning, don’t forget to grab something good to eat — your body will thank you! — STATEPOINT
