This month I have felt more like a slave than a mum, but hey, I guess it comes with the territory! I have a further appreciation for good health, and can’t wait til Mother’s Day to celebrate making it through the year. Mums are amazing - no matter what life throws at us, we still get through. It’s a tough gig dealing with all those decisions, tasks and priorities everyday whilst existing on very little sleep, the least quality food out of the whole family besides the pets and a social life where the wheelie bin goes out more than you! But there’s no doubt it’s also the most fulfilling job we’ll ever have so I hope all the mums out there take a moment to enjoy being appreciated this month. Enjoy this edition. I hope to see you at our Mad Hatter’s Tea Party. Happy reading, and don’t forget to tell everyone you read it in PakMag.

PUDDING: • 200g pitted dates, chopped • 3/4 cup water (200ml) • 1 level teaspoon bicarb soda • 60g butter, softened • 160g light brown sugar • 2 eggs • 200g self-raising flour CARAMEL SAUCE: • 300ml pure cream • 1/2-cup brown sugar • 80g butter

• 1 banana (mashed) • 2 eggs • 2 tablespoons cream • ½ teaspoon vanilla essence • Pinch of nutmeg

Method Pudding: Pre- heat oven to 180oC. Place dates in saucepan with 200ml water and cook over medium heat until just boiling. Add bicarb soda and stir well. Remove from heat and cool for 10 mins. Beat butter and sugar together with whisk until creamy. Add eggs one at a time, beating well between additions. Add flour and whisk to combine. Add date mixture, stirring until completely combined. Pour mixture into muffins cases. Bake for 20-25 mins or until cooked. Caramel Sauce: Combine all sauce ingredients in saucepan. Stir well and bring to the boil. Cook for 2 mins. Serve with ice-cream or cream.
