Tell us about a dish you're still waiting to see in restaurants here.

- I work amazingly well under pressure.

- I am very updated with the food trends because only I know how much time I spend on researching with blogs.

- I try my best to be consistent so I obsessively measure everything.

It has to be Ramen. I hope I’ve done justice to the one I’ve put on the menu at Xanders.

I also really miss a classic serving of Duck and Rice.

Tell us a little bit about yourself.

I’m a pure Karachi girl, but I was born in Turkey as my mom is Turkish.

Back in 2009, I was just doing odd cooking shows and was miserable as I felt they wanted to stick to the same old local concepts without any experimentation. I didn’t know how to expect a viable career in food over here and since food was all I knew, I knew I needed to be trained. I then found myself a scholarship and spent five months on my application. I didn't expect to get it but I did so off I went to Le Cordon Bleu London for 9 months. I gained some experience at this place called '360' in Turkey for 8 months. When I got back in 2010 I decided to go for my own little business (Fatso). I wasn’t sure if any one was going to like it but I got really lucky. I then started serving my desserts at Espresso. The Red Velvet cake was a game changer for me. That year I got 800 orders for that cake. Since then my business has been established!

Do you like cooking simple food or gourmet?

My style of cooking is more towards comfort food. Although I love gourmet cooking and I was trained in French Cuisine, I’ve realised that food businesses here really just should keep it simple. I mean if I add foes gras to my burger, how much will I sell it for?

Have you been working just as a chef or were you involved in other projects?

As mentioned earlier, Fatso was going on and I was getting decent orders from a bunch of loyal customers and also helped Espresso out. I worked on Lal’s savoury menu as an official food consultant. That’s when I realised that this is a proper profession which wasn’t very time consuming and also paid really well. I ended up doing the bread for both Pantry and Hoagies. I've worked with Chatterbox, Cafe Forty Four which unfortunately shut down, Rowtisserie and Cosmopolitan. Last year after I started working out, I realized that no restaurant serves healthy dishes other than salads and thats when Fitso started.

What ventures have you been involved lately?

Other than Fitso, a (fitter) sub genre of Fatso, I've designed the new menu at the new Xander’s.Sikander is amazing and together we worked well and have added some delicious stuff to the menu.

My next venture would be to bring the Fitso menu to supermarkets for customers on the go.

What is your favourite type of food to eat?

I don’t eat anything I make. I love Pakistani food and would pick it over anything else. However, I would choose Fitso over Fatso because since last year I am trying to live healthier. Also, I would rather have savoury than dessert.

What is your favourite cuisine to cook?

For myself I make Pakistani dishes but for my customers I enjoy making simple soul food such as

Mediterranen or European. I do have a soft spot for Turkish Cuisine.

What do you feel about the fine dining situation in Pakistan?

The only real fine dining we have over here is Okra. It is the only restaurant I know of that truly cares about the food that is on their customers plate. It’s not mass produced and they don’t care about targeting a number of certain dishes out in a day. A lot of restaurants here who did even serve amazing food at one point have dumbed down their menu and just stuck to what everyone else sells.

Who is your mentor in this industry?

It has to be Ayaz, the owner of Okra.

What do you have to say about the bakeries here?

I’ve heard bakers complain about local flour and say that is the reason why something didn’t turn out the way it should have. I don’t know what their talking about because I’ve made sour dough and ciabattas with local flour. They actually add supplements that gives them longer shelf life which for me is the death of bread.

What do you feel about the hygiene issues in most of our restaurants and dhabas?

Well I love eating at some of my favourite spots on Burns Road. I’ve spent all my life here and I honestly feel like I have hardwired my stomach so I don’t think about this when I am eating out here.

However, in my kitchen, with my own team, I fine them each time they have been careless.

If you were to design a springtime menu right now what would it look like?

As of late I am extremely inspired by Asian flavours. I love a bowl of good Ramen and I admire authentic Asian dishes. So my menu would definitely have different types of stir-fries, steamed food and lots of seafood rather than red meats.

You must try the steamed bun dish that I have created at Xander’s. I would also recommend the Sea Bass at Okra that I had last week. I rarely find any dish to be this perfect.

What do you do stay educated about new trends in food?

I love blogs. I don’t buy cookbooks any more but I do get them once in a while as presents. I also take inspiration from Masterchef Australia. I also subscribe to magazines such as Bon Appetite.

How do you ensure the quality of your dishes?

I try very hard to make sure my team follows my recipe strictly. I don’t like it when the staff tries to make their own version of my food.

Have you thought about starting cooking classes?

It’s great and whoever is doing it, that’s amazing but I just don’t have the time at the moment.

How do you manage your ingredients, as we know Pakistan doesn’t have most things available here?

I buy from supermarkets like Agha’s and Farid’s. I love using local ingredients. I have suppliers who bring me things that I really need. I buy stuff that can be stored while I’m travelling and I also often tell my friends to bring me a certain sauce or some kind of cheese.

What dish are you most proud of?

It has to be the sourdough at Pantry as I self taught myself to bake breads by watching insane amounts of bread documentaries. It really broke my heart once

when I overheard a family tell the waiter they didn’t the bread as it was too hard and chewy.

What do you feel other restaurants and chefs lack here?

They aren't original. I have seen Facebook pages of businesses that literally copy my recipe as well as presentation and sell it for maybe a hundred rupees less.

We have poorly trained staff. I really hate when the waiters are a clueless about a dish when a customer enquires about it.

What is your favourite restaurant in Pakistan and abroad?

In Pakistan, it has to be Okra as they are simply the best.

In London, I loved Arancina this simple honest Italian restaurant. I also love Ottolenghi in London, which serves Middle Eastern/European dishes. I feel like Pantry in Lahore is very similar to Ottolenghi.

What would your ideal Sunday look like?

At the beach with my friends where I am making burgers for everyone. I enjoy having small dinner parties where a few of us friends cook. Some of my friends cook really well!

Finally, what advice would you like to give to any one who’s willing to enter this industry.

I would say be original. Your google search should never say “quick xyz” instead you should search for “authentic xyz." Training will give you an advantage but you don’t need it to be a chef. You can get recipes from anywhere so you just need to have the right aesthetics.

Travelling is great fun. You get to explore a new place, meet new people and get wiser! We want to know more and will share with you exciting travel stories from a few special people in our new section, planes, trains & automobiles!

Where did you go and why?

We went to Italy as our destination because of its history, architecture, and sumptuous cuisine. We took a train from Zurich to Lake Como and stayed there for 3 days. We then moved via train to Venice, Florence and Rome and took a fight to Milan back to home.

Whom did you travel with?

Every summer my children are super enthusiastic about the summer travel plans. We usually travel with the kids so that they get the exposure to different cultures, cuisines, and also spend quality time away from the hectic routine. For us the balanced upbringing is of utmost importance.

Where did you stay?

At Lake Como we stayed at renovated 18th Century Hotel very close to the Lake shore. It was so relaxing just to laze around the lake or go cycling in the streets and eat at numerous road side eateries in the old quarters of the city. The Como city center houses the famous Domo (Church). Not to forget the boat ride on Lake Como that's a spectacular treat. Lake Como has shopping around the old quarters of the city opening up to a grand piazza with eateries all around. At Venice - the wonder city - we stayed at the Carlton Hotel on the Grand Canal near the Realtor Bridge. Another lovely place to stay is the Ca'Nigra lagoon resort. The usual spots are the gondola ride, Rialto Bridge and a trip to St Mark’s Square with plenty of eateries to offer. Venice has fantastic shopping in the labyrinth of narrow passageways

with surprise gems of arts and crafts. Florence has its own flavor to offer. Just plunge into the city to discover the Piazza Michael Angelo, Square of the Duomo, not to miss the Uffizi gallery and absolutely loves Ponte Vecchio.

Great gelatos around the area. A drive up the Tuscan Hill is a treat to catch a panoramic view of the city. Rome is never enough. In Rome we stayed at Trevi Hotel near the Spanish Steps. The heart of Rome is St. Peter’s Basilica (Vatican City), Colosseum, Palatine Hill, Pantheon, Navona Square and Trevi Fountain with history conquered, shopping in Rome is modern all around the famous Trevi Fountain and Spanish Steps. Navona Square was our favorite for eating and spending the evenings with artists, music and live shows all around.

Tell us about the sights noone should miss out on Italy has so much to offer. We could not have squeezed in more on the trip but definitely the Amalfi Coast and Tuscan flavor for the next visit.

What can you do over there to relax and unwind?

With kids and husband who gets the time to unwind. We were on the go all the time but I can't complain, we saw a lot.
