You see, as humans, we try to take control of everything in our lives and sometimes, we mess things up for ourselves. But, if we truly have faith in Him and believe that He wants the utmost best for us...why worry? Live good. Love God.

7 Questions for Shuga! short and sweet, eeh?

For starters, tell us a little bit about your musical journey thus far. I was made known when i entered Digicel Rising Stars in 2009. Since then, I have been working with Donovan Germain to whom i was introduced by Tanya Stephens. I recorded ‘Complicated Love’ the first day we met and he was impressed and gave me two other beats. Later i did ‘9.58’, ‘Give My Soul To Jah’ and ‘Bun Dem Down’. Right now im signed to Penthouse Records and I’m just giving thanks for my journey and my blessings.

Has the journey as an artiste been anything like what you imagined prior to reaching this stage ? Well, since winning the competition, I have been faced with challenges. However, I keep focused on the goal which is to make good music. The journey is not what I had in mind but its not about me it’s about the music.

What type of flavour would you say you add to the music industry? My flavour is sweet like my name suggests. I keep it real and down to earth with class.


Which of your songs would you say is receivig the most love on the road right now? ‘Give My Soul To Jah’ is getting alot of love. It’s a timeless song to which everyone can relate.

What are some of your upcoming projects for 2014? I have some upcoming videos and singles for 2014. ‘Ebony’ - which is the newest song on the Penthouse Records 25 Anniversary cd to be released the 14th of January 2014. I’m also working alongside Penthouse Records and VP Records on my album.

All of that sounds great, Shuga. Thanks for keeping your fans in the loop! Before you go... tell us what you love most about the Christmas season. I love Christmas season because it’s just that time of year that reminds me of my childhood; free time to visit family and friends and just invade without a care because it’s a jolly season.


And lastly, what’s your wish for Jamaica for 2014? I just wish everyone would come to grips with the fact that life comes with challenges. None of us wants them but it is what it is. Just smile at the storm and believe that with hard work and a little more perseverance we can mount the mountains we once said were impossible to get around, because we are champions.

From start to finish, Tessanne represented herself and Jamaica well, proving that hard work, consistency and humility can go a long way. She wooed the hearts of many, bringing the Jamaican and Caribbean Diaspora as well as members of her new American family together, anticipating each note that danced in the air as she sang.


Sealing the deal with an astounding rendition of Whitney Houston’s ‘I Have Nothing’, Tessanne’s vocals expressed in mellow tones that she is indeed...

“We are all here on earth to help each other, and I haven’t forgotten that...” - Corey Lindner


PAJE caught up with Corey Lindner - a recent recipient of a scholarship from Gore Developments Limited. Amid receiving this award, Corey still maintains his desire to help others who are also desirous of benefitting from scholarships but are not sure about the best strategies to employ in order to become an awardee. I decided after completing 6th Form that in the next three years I should sleep comfortably knowing I have my first degree; however, this was more of a fantasy at the time due to the many misfortunes my family was facing at the time. Things got worse at home when I enrolled for my first year at UWI, and at one point I only had God and myself to lean on. But, I wasn’t going to let my dream of being formally educated at the tertiary level die without a fight. After having problems securing a loan the second time, being denied many a major scholarship and seeing many around me advancing with the little they had and knew, I decided that I would raise my GPA, get more involved, polish my image, apply for every scholarship there was and leave it in God’s hands to decided what he wanted to do regarding the situation. I applied via The UWI for a number of scholarships, but administration felt I was most suited for The Gore Developments Limited scholarship, which was being offered at the university for the first time.

Finally, if you aren’t well rounded, now is the time to do so if you are planning to apply for a scholarship. I find that donors are looking for more than grades. They want to see how balanced you are and demonstrating this will signal to them that you can handle the pressures of life well and therefore investing in you isn’t risky. It also distinguishes you from the other candidates vying for the scholarship.

My drive for success comes from varying sources. The first is where I am coming from; the situation I was born and raised in. I also draw inspiration from my family, professionals like Beyonce, Ryan Seacrest & Michael Lee Chin, my close friends (who are all progressive beings), and of course the One who made me and gives me the strength to fight my many battles - God.

I firmly believe that we have everything in our reach to do whatever it is that we were called to get done. It is just easier for some of us to reach it than others, but for those who find it hardest to, you should know that with dedication, positive thinking and hard work- you will reach it. I want to be significant in life. I chose not to allow where I was coming from to limit my abilities to rise up, stand up, stand out and put on a spectacular show. Added to that, I’m a very frugal person; I will find a million and one ways to use what I have at my disposal before I spend my hard earned money to get that which I need.

The first bit of advice I’d give to anyone is not to fix your mind on getting any particular scholarship. Sure it is good to desire a particular scholarship, but often times it makes you myopic in your search and will 8 times out of 10 leave you regretting you didn’t. Secondly, apply for every scholarship, or bursary because they do add up, you are eligible for. Don’t be too caught up with the value of the scholarship, once you are eligible and have enough time to submit a sound application- do it.

Remember this: grades get you to the door, but it’s the other things that will take you inside. One of my best friends is always telling me I am the most resourceful person he knows and many others have said this about me from working with me on various projects. As such, I am willing to assist anyone who wants some more advice.

Everyone needs to be a little more resourceful, probably then we’d start to see how blessed and fortunate we are to not only have what we do, but to simply be alive.

Hey Kim, what made u decide to enter So clearly you can cross this off your Miss Humanities? bucket list - think this is just the I saw the opening and said I wanted to do something at UWI first step for you where leadership is that i’d be remembered for and even if I didnt turn out to be the best, I could look back and say ‘Oh I did this’. concerned? Tell us, what was your best experience on the journey?

My best experience on the journey was the photo shoot, that day you saw ppl for who they really were because it focused on getting that ‘inner you’ out.

What can persons expect from you in your new role of representation? I am a sucker for community service so expect outreach in all forms.

In the future, you’re aspiring to be:

Rich. lol. I want to be known, honestly, known for my work and contribution to society. I’m currently a writer at the Jamaica Observer and so far so good. I want to further develop myself as a Journalist, travel the world and be an Ambassador for our island.

Nice! Any resolutions for the new year?

To achieve much much more. I want a few journalistic awards, I’m eyeing young journalist of the year and mostly to own a car, preferably a VW or Audi.

No, it’s far along the line, it’s a bigger step but certainly not the first.

Tell us something about you that persons wouldnt readily know

Wow, I know I’m unassuming but persons don’t know that I can dance and I love soca music.

Say something to persons who want to do something big just like you did but are having trouble rising to the occasion

Get up and go for it, if you want to do it, you’ll have no regrets, the only persons who can hold you back in life is you!

For many of us it is a time where we unwind, think about the previous year; our blessings and mistakes and the year to come and what we hope to achieve in it. It truly is “the most wonderful time of the year”; the air smells different, people are bubbly, food tastes better (we all put on a little extra pounds at holiday times lol)… but enough of me babbling about this time of year lol, this issue I’d like to focus on how to have the best holiday possible.


We all know we are going through some seriously harsh economic times. Many of us cannot even begin to think about shelling out 20grand for a night out on the town on Christmas Eve… however, I want to share with you three little ways to make your holiday time special without having to break the bank ok, lovies? Here we go: 1) If you plan to decorate your home, make your decorations/ornaments. Turn your home into a fun family display of creativity. Nothing brings a family together like some good ol’ arts and crafts. 2) You know that big family dinner you always have; truly make it a family affair. There is absolutely nothing wrong with asking you family to pitch in and bring some stuff. One family member can bring the salads, one can bring the dessert, one can bring the beverages, etc. After all, sharing IS caring. 3) You don’t have to go crazy with gifting. If you’re into gifting, why not make something? It’s the thought that counts. One really cute idea is making coupons for special favours that your loved one can cash in throughout the year. For example, one coupon can get you a massage, or one coupon can get you a free ride somewhere, or one coupon can even get you a home-cooked dinner. I think that’s cute (especially for couples) I hope these ideas help you make the most of your holiday season. Remember the reason for the season, ok lovies?x We should love one another, be grateful and think positively because you have lived through another year.

INSIDE AND OUT We all know Christmas is that time we all love to go all out and live it up. However, we tend to really overdo it at times and NOT GET ANY REST. Especially for those who are out of school and are so excited to be on holiday break, we tend to go the hardest. Resting the body is completely vital aaamm because we are not robots!! So ensure that throughout the season you remember to; 1) 2) 3)

Keep hydrated Take vitamins, fish oils, etc to keep your system up Get some rest

However, when you do neglect to get some rest and you develop bags or dark circles under your eyes a great trick to get rid of them is the freeze a wet wipe over night and then when you wake, press it under each eye for about a minute then use your fingers to massage the area to circulate the blood. Live it up, but take care of yourselves!


That special someone

SAMANTHA J I’m so happy to bring to you guys this month’s “That Special Someone”.Many of you know her as “The girl inna di tight up skirt” but I’d like to introduce her as the multi-talented and beautiful, Samantha J. This 17-year-old singer/songwriter has been lighting up the music scene both ‘a yawd and abroad with her hit single, Tight Skirt. She just recently wrapped up a radio tour in the States and all imma tell y’all is “look out!!!” because I’m pretty sure that whatever else she has in store for her fans (affectionately known as Js), “yuh a guh like…” Let’s get to know a little something about her, shall we?

What inspired you to venture into music?

When a music teacher in my prep school had me as lead vocalist of school choir. He helped find the voice in me...

Who is your biggest musical influence and why?

I have so many musical influences but if I had to choose one... I would say my biggest influence is singer/ song writer Alaine. I’ve learnt so much from her both vocally and with song writing.


Your fashion style is so young, hip and fresh. What inspires it? Life inspires my fashion style.

If you could have your dream duet or collaboration, who would you choose and why?

My dream duet would be with Justin Bieber because I’ve been inspired by his music, even before he became famous.

Where do you see yourself in 5 years?

In 5 years I hope to see myself influencing the world with my songs and to be recognized in the music industry.

HOME ALONE has you covered for the holidays!



So, clearly we haven’t seen this yet...but it is indeed on the minds of many Fast and Furious fans! Couple weeks ago, it would have merely been because of the sheer anticipation of an epic movie for 2014 as a grand follow-up to Fast6, which some people watched up to ten times! However, the recent passing of beloved co-star, Paul Walker, has left many in confusion...not only because of the fact that he ironically lost his life in a car crash...but also, the major non-conspiracy-theory-subscribing-question is: “Who’s gonna take his place in the movie?” Nevertheless...the inclusion of Jonathan Statham in Fast7 sets the stage for this movie to reach new levels of brilliance! The directors have certainly gone full throttle with this one...let’s see what’ll happen regarding Paul’s slot. It would be sweet not ‘replacing’ him as he was indeed a stamp in the movie’s success..and in the FF family...but...then again...things still need to keep rolling (no disrespect meant at all). So, hmmm...let’s see.


It’s almost creepy that we’re writing about unfortunate passings relating to movies twice in a row but, yup the Nelson Mandela Movie, ‘Long Walk To Freedom’ is slated to debut next week! Actually, we are looking forward to this new Mandela movie (you know one was released with his look alike: Morgan Freeman). This one feels almost closer to home especially since he passed JUST the other day...and also, it means that the movie will facilitate the education of the new generation (too many individuals lamented about the fact that Paul’s passing gained more attention that Mandela’s...and it was expressed that it’s because persons in the younger generation are not quite aware of how much of a valuable role he played in not only his society, but the world). We have no doubt that this movie will accomplish just that, especially since the star is already well loved for his many roles thus far. This role just pushed him up a notch where versatility is concerned. Hmmm, we’re speaking before we even watch the movie. Well...let’s level our expectations and wait and see!


Thinking about what you should buy for your technology-loving loved one for Christmas? Well, here are some ideas!





Questions for Chris! 1) Do you like Turkey or Ham around Christmas time? And why? Well I have never really been a turkey lover, but the succulent aroma from honey glazed smoked hams always have me yearning for more.

2) Do you prefer clear or colourful lights on your Christmas tree? To be honest, I prefer a balance of both lights. The white lights have an advantage of really brightening up that tree and the colourful lights add contrasting colours to the tree and its decorations.

3) What are five things you plan on making this Christmas that you have not done before?

I have been thinking about making sorrel fruitcakes, shortbread cookies, eggnog, Christmas pudding and gingerbread men

4) What is your most memorable experience in cooking?

I have quite a number of memorable experiences but the one I can remember off my head was cooking for specific members of government from different countries. My mother had invited them over and I took this as an opportunity to show off my talents. My dishes were critiqued and were very positive. This experience gave me that extra push to keep moving forward on my goals.


Sweet Potato Pudding Steps: 1)

Preheat oven to 350°F

Cooking time: 1 hour, 10 minutes

2) Sift the flour into a large mixing bowl, then add the rest of the dry ingredients and mix them together.

Recipe

1 ½ lbs Jamaican Sweet Potato, grated ¾ cup All Purpose Flour ½ cup Cornmeal 2 cups Coconut Milk ½ cup Raisins 1 cup brown sugar 1 tbsp Cinnamon 1 ½ tsp ground Ginger ½ tsp Nutmeg ¾ tsp Allspice 1 tsp Salt 2 tbsp Unsalted Butter, melted 2 tsp Pure Vanilla Extract 2 oz Rum

Mix all the liquid ingredients together until fully incorporated

4) Add the raisins to the flour mixture, then slowly pour the liquid mixture in while stirring 5)

Stir mixture until fully incorporated.

6) Pour mixture into greased baking tin; I use a 9-inch x 3-inch deep pan, but you can also use a 10-inch pan. Let stand for 15 minutes. 7) Bake at 350°F oven for about 1 hour, 10mins or until knife inserted into center comes out “clean”. When it’s baked the top will still be soft, but under the surface it should feel firm when the knife is inserted. 8)

Alllow to rest for 30 minutes. Slice, Serve and Enjoy.


Jamaican Sorrel Juice Steps: Recipe

2 ½ cups dried sorrel 3 oz fresh ginger, grated 4 pimento berries 4 whole cloves 12 cups boiling water 2 ¼ cups sugar ½ tsp orange peel, grated ½ tsp lemon peel, grated 2 tbsp lemon juice ¾ cup white rum Makes 12 cups

1. Spread the sorrel out on aluminum foil or a white cloth which will make it easy to spot and remove any debris or unfit sorrel pieces. 2. Place sorrel, ginger, whole cloves, orange and lemon peels and pimento berries in a large pot or mixing bowl 3. Pour boiling water over the ingredients; stir and place in fridge overnight to steep. 4. Using a large strainer, pour the steeped liquid into another container; use a spoon to squeeze more liquid out of the sorrel 5. Add sugar, lemon juice and rum to sorrel and stir until sugar has dissolved 6.

Serve with ice and enjoy.


Chris’s Lemon Herb Roast Chicken Steps I. In a small bowl, add the butter, chopped thyme, rosemary, and sage. Season with salt and pepper, mix together then store in the fridge. II. Preheat oven to 425 degrees F. III. Place the onion quarters, celery and carrot cubes on a baking tray. IV. Season the cavity of the chicken with salt and pepper, add lemon slices, thyme, rosemary, sage and garlic cloves. V. Using your hands, gently separate the skin from the meat of the breast. Evenly spread the herb butter on the meat underneath the skin and 1 sprig of rosemary on both sides of the breast. VI. Using the remaining butter, rub on the skin. Wash hands and season the skin with salt and pepper. VII. Truss the chicken using twine or sewing thread (make sure to overlap thread) VIII. Place the chicken on the aromatics on the tray. IX. Transfer the tray to the preheated oven and roast for 20 mins breast side up at 425°F to brown then base the chicken with its drippings before lowering the oven temperature to 350°F. Base the chicken at 20 minute intervals to continue browning the chicken and for added moisture to the chicken. X. Using an instant meat thermometer, make sure the thighs have reached 165 degrees F. XI. Remove the chicken from the oven. Transfer to a cutting board, tent with foil and let rest. XII. Spoon off as much fat from the pan as possible. Place the pan over high heat and add white wine. Use a wooden spoon to scrape up all the browned bits on the bottom of the pan. Add chicken broth and let reduce to about half, about 4 to 5 minutes. Strain out the aromatics. Add the gravy back to the pan and keep warm. XIII. Cut the twine from the drumsticks and carve. Pour the gravy into a serving bowl and serve with the chicken.

Cooking time: 1 hour, 20 minutes

Ingredients

Herb Butter: 5 tablespoons unsalted butter, softened 1 teaspoon freshly chopped thyme leaves 5 sage leaf tea bags (or 3tsp freshly chopped sage) 2 sprigs fresh rosemary, leaves removed and finely chopped 1 ½ tsp lemon zest Salt and freshly ground black pepper 5 large onions, peeled and cut in quarters 1 (5-pound) roasting chicken, rinsed, dried and giblets removed 3 lemon slices 6 oz carrots, cut in large cubes 4 oz celery, cut in large cubes 2 sprigs fresh thyme 3 sprigs fresh rosemary 1 sprig fresh sage, chopped 3 large cloves garlic, peeled and cut in ½ lengthwise 1/4 cup white wine 1 cup chicken broth
