PRESENTATION MACULAN, a small company

for great products. And ‘This is the philosophy behind the winery Maculan, a small family winery for 3 generations. Producing quality wines for Maculan has never been a problem with the place is particularly favorable to both the spirit of Fausto Maculan, a lover of good wine and good food. The grapes grow in Breganze, located on the Asiago plateau, where the Alps offer a natural shelter from the cold north winds. Here the climate is mild and luxuriant nature, so much so that he built the magnificent Palladian Villas of the Venetian nobility, which was in these places to unwind and get out of the wet and often unhealthy Venice. But nature is not enough,

in fact, need passion and vision, and these are the main features of Fausto. Determined to improve the quality of wines and their image in the world, she throws herself headlong into an amazing array of activities, without forgetting the work in the vineyards and in the cellar.

From his hard work were created exceptional wines like Fratta and Acininobili, created in the same year they are born two daughters Fausto Angela and Maria Vittoria. These two amazing girls have brought a breath of fresh air that the company can now take advantage of two other expert stubborn and passionate as his father. Therefore, we can only expect great things from the future of this winery.

MACULAN FAMILY It can be said that Fausto Maculan was born to make wine since he was delivered in the very space that is his office today. This is the most likely sign of his destiny. In fact, at the age of 13, during school vacations, he worked in the winery.

Unable to deny his salesman’s instinct, he began to visit customers, while accompanied by a driver of course, since he wasn’t yet old enough to have his own license.

At the age of 14, despite his love of classical studies, his insightful father enrolled him at the school of enology in Conegliano, where he graduated with honors in 1970. He then completed an obligatory year of military service as an official of the Alpine Corps, which is well known to boast a good report with wine.

“Give to Caesar that which is Caesar’s.” And so Fausto found his true calling, managing

the viticultural, productive and commercial aspects of the family business.

His motto was, “A small winery making great products.” In fact, in a very difficult period for winemaking in this part of Italy, Fausto made the courageous decision to improve the quality of his wines, dedicating all of his energy and time to this endeavor.

He studied constantly, traveled to the best winemaking areas in the world, and boldly experimented, at times arousing incredulity in his observers.

These efforts helped to improve the winery’s image and brought the company to the highest qualitative levels enabling Fausto to offer his supporters a complete selection of quality white wines, important red wines and delicious dessert wines. Since 1985, he has been the Course Director for the Association of Italian Sommeliers (AIS). He also collaborates with the magazines

L’Enotecnico and Vin Veneto. He is recognized as an expert taster and has been nominated to judge wine competitions at a national and international level. Because of his gourmet tastes and excellent speaking ability, he is often sought out to speak at food and wine related events throughout Italy and abroad.

One of his most vivid memories is still his first trip to America where, unable to speak English, he felt great shame and described himself as a fool.

Returning home, he plunged head first, as in all of his activities, into studying, having decided to make

English his second language. Even if he hasn’t mastered perfect pronunciation, he has realized a new way to communicate his love of wine to the world and above all to contribute to the ever-improving quality and image of Italian wine.

Another stimulus to his educational efforts fell to him when in 1998 he was named President of the Promotional Commission for the Wines of the Veneto.

At age 62, Fausto Maculan remains enthusiastic about his profession: eager to grow his knowledge, and curious about new experimentation. Even if he travel less around the world, he continues

to speak on wine and to dedicate himself - body and soul - to the wine and winery that were his birthplace.

The Third Generation Born just after the harvest of 1977, Fausto Maculan jokes that his daughter Angela was the best thing to come out of that vintage since it was not a good year for wine. She took her first steps in the winery and proceeded to follow her father’s every move there; indeed she became the mascot of the Maculan winery team!

When she was old enough to use scissors, she started picking grapes for pocket money and as she grew, she continually pressed her father to allow her to help the winery workers in all of their activities: bottling, packing the cases and of course, selling wines to customers.

She has been accompanying her father on his business tours and winery visits from a very young age and has had the unique opportunity to taste wines from the most famous wine areas of Europe and the US.

This is how her passion for wine was formed!

After receiving her high school diploma from Liceo Scientifico, she started attending the University of Padova’s Agraria and continued to help her father and increase her role in the family business. From her father, Fausto, she inherited a passion for wine and also for food. To improve her knowledge in these areas, she became a Sommelier and a Cheese Taster of ONAF (Organizzazione Nazionale Assaggiatori Formaggio).

Today, Angela is fully immersed in the family business. Along with her father she hosts guests at the winery and plans all of the events which take place there. In the cellar, she gives input on the blends of the wines as well as other aspects of the winemaking process. She is also the main contact for all public relations inquiries. Her job takes her around the world, representing the winery on a global stage. However, her first love has always been the United States and she has become solely responsible for this market.

THE WINERY

MACULAN family has been

for three generations selecting and vinifying the best grapes in Breganze, an enchanting village, set like a small jewel at the foot of the Alps in the Veneto region.

The high plains of Asiago offer natural protection and create an extremely mild climate that favors the cultivation of vines and olives.

It isn’t a coincidence that in the 500s, the Venetian nobility already preferred to spend their summers in

this area, sojourning in the splendid villas perfectly designed by the great architect, Andrea Palladio.

The Maculan Farm consists of 15 hectares of estate owned vineyards in the commune of Breganze. 24 additional hectares are leased within the DOC zone of Breganze.

Maculan also works with other growers, managing production of up to 50 hectares in the DOC zone of Breganze.

TERRITORY Breganze is an ancient viticultural center in the Vicenza province of Veneto, north-eastern Italy. The area’s Breganze DOC, awarded in 1969, covers red (rosso) and white (bianco) wines, and the well-respected Torcolato.

The Breganze growing area is located in Veneto’s viticultural no-man’s land. It is entirely distinct, stylistically and geographically, from every other Veneto DOC. Breganze town itself lies precisely 33 miles from Treviso to the east and Verona to the west, almost as if to reinforce its distinction from the Prosecco and Valpolicella/Soave zones respectively.

A wide range of varietal wines are made under the Breganze DOC title, from a combination of local and international grape varieties.

The reds are Pinot Nero (Pinot Noir),

Marzemino, Merlot and Cabernet Sauvignon. Each of these comes in a higher-quality riserva form, for which the wine must come from vineyards managed to lower yield tolerances and be aged for at least two years before commercial release. The white Breganze varietals are Vespaiolo, Chardonnay, Sauvignon, Pinot Grigio, Pinot Bianco and Tocai (now named Tai to avoid confusion with the famous sweet wines of Tokaj).

Standard Breganze Rosso is made from a base of Merlot (at least 50%), while its bianco counterpart is based on Tai (also a required minimum of 50%). These are typically produced in light, dry styles, not so much out of choice but because the climate in this part of Italy is particularly cool and the growing season correspondingly short.

Pairs very well with hearty first corse such as meat ragouts and roasted or grilled meats.

CORNOROTTO MARZEMINO 2011 Location of vineyard in the Cornorotto area in Fara Vicentino Exposure and type of land volcanic and tufaceous hills Grape variety 100% Marzemino Vine layout Grapes are slightly dried for one week, fermentation in stainless steel tanks with frequent punching downs Aging Six months in stainless steel tanks Color intense ruby red with purple notes On the nose rich with notes of black small briies and ripe black fruits In the mouth intense and persistent flavours, soft and velvety with very light tannins.

Perfect pairing with first courses with gamy ragouts, roasted meats and mixted grilled meats.

Perfect pairing with red meats, whether grilled, braised, stewed or roasted.

A versatile wine with food, pair woth anything from stuffed or baked pasta to cured meats and aged cheeses.

CROSARA 2010 Location of the vineyard between the Santo Stefano and the Ferrata properties, one single vineyard of a 10.000 vines per hectar Vineyard planted in 1994 Exposure and type of land volcanic and tuffaceous hill Grape variety 100% Merlot Vine layout manual harvest, tight selection of clusters, fermentation in small open top stainless steel tanks with several punching downs during the eight days of maceration Aging for one year in new French oak barriques and then in bottles for six months Color deep purple in color with ruby reflections On the nose the bouquet is profoundly rich with notes of black small berrei and very ripe fruit, spices, coffee and cocoa In the mouth these penetrating and persistent flavors merge beautifully with the fine-grained tannins and velvety mouthfeel.

Perfect apiring with grilled or braised meats and aged cheeses.

WHITE WINES

BIDIBI 2013 Exposure and type of land volcanic and tuffaceous hills Grape varieties 60% Tai 40% Sauvignon Vine layout cold maceration for two days and soft pressing completely with no oxidation Aging in stainless steel tanks for six months Color straw-yellow On the nose intensely aromatic with refreshing notes of ripe tropical fruit, citrus and fresh cut grass In the mouth dry and well-rounded on the palate with vibrant acidity and pleasantly persistent finish.

Perfect as an apĂŠritif or a compliment to soups, first courses and light fish.

VESPAIOLO 2013 Location of the vineyard the hills of the DOC Breganze Exposure and type of land volcanic and tuffaceous hills Grape varieties 100% Vespaiola Vine layout cold maceration for two days and soft pressing completely with no oxidation Aging in stainless steel tanks for four months Color pale lemon yellow with greenish reflections On the nose it boasts intensely aromatic notes of ripe stone fruit, honey and orange blossom In the mouth dry on the palate it is dry with a lovely balance between its full-bodied mouthfeel and crisp acidity.

Local paring is with “baccalà (stockfish) alla vicentina” or white asparagus “alla bassanese”. In general, perfect with roasted vegetables, such as zucchini or squash, or fish courses.

It is perfect with more substantial first corse, including soups, flavourful fish, poultry or grilled pork loin. You can “forget it� in your cellar for ten yearsa at least!

A perfect pairing with first corse such as buttery pastas and grilled or roasted poultry.

ROSÈ WINES

COSTADOLIO 2013 Location of vineyard Breganze hills Exposure and type of land volcanic and tuffaceous hills Grape variety 100% Melot Vine layout manual harvest, directly soft pressing and immediate separation of must and skins with no maceration Aging in stainless steel tanks for three months Color light colour of peach tree flower petals On the nose intense and fruity aromas of peaches and lychee and with white flower petals In the mouth on the palate, it is fuller-bodied and silky, with a lovely, lingering acidity.

Perfect pairing with pastas and risotto with meat or fish and grilled or roasted fish.

DESSERT WINES

MADORO 2012 Location of the vineyard Breganze hills Exposure and type of land volcanic and tuffaceous hills Grape varieties 80% Marzemina 20% Cabernet Sauvignon Vine layout the grapes are dried in a special room for one month and a half Aging for two years in new barriques, in bottles for one year Residual sugar 100 g/l Color deep red with purple notes On the nose arresting bouquet of ripe red berries ollowed by notes of blackberries, bilberries and dark cherries In the mouth sweet and full-bodied, big structure yet balanced with a very long finish.

A versatile dessert wine that is perfect with anything from dry cakes and wild berrei pies to aged cheeses or strong-flavoured blue cheeses.

Perfect pairing with pastry, fruit tarts, homemade cakes and also rich creamy cakes.

TORCOLATO 2009 Location of the vineyard Breganze hills Exposure and type of land volcanic and tufaceous hills Grape variety 100% Vespaiola Vine layout the grapes are dried in a special room for four months to concentrate flavours and sugar Aging for one year in french oak barriques, 1/3 new and 2/3 second usage Residual sugar 155 g/l Color brilliant gold On the nose intense aromas of honey, flowers, vanilla and touc of elegant wood spices In the mouth is sweet and full-bodied, with excellent balance between acidity and sugar.

Clear and lively finish with a nice persistence.

Perfect pairing with little paistry or local cakes like “fregolota�, aged cheeses, like Asiago Stravecchio, or very strongly-flavoured blue cheeses.

ACININOBILI 2009 Location of the vineyard Breganze hills Exposure and type of land volcanic and tuffaceous hills Grape variety 100% Vespaiola Vine layout painstaking manual selections of stalks with undeveloped Botritis cinerea (noble rot) Aging for two years in new barriques, in bottles for one year Residual sugar 210 g/l Color brillant deep antique gold On the nose great, intense and spicy bouquet of honey, dry fruit, raisins and minerally flint In the mouth sweet yet elegant, this wine is fullbodied, elegant and sumptuous. Very long and satisfying finish: an exciting experience!

As a pairing we suggest fois gras, but also is a perfect occasion when shaerd with a loved one in front of the fireplace - the perfect meditation wine!
