We meet on the 3rd Wednesday of each month at the United Reformed Church, Frederick St, Loughborough. Our meetings take the form of notices, a tea break, followed by a speaker. We belong to a national movement for the education of retired people. This takes the form of various groups, ranging from walking, craft groups, garden visits, bird watching, Canasta & lunch groups, to name but a few. We also hold regular coffee mornings for members to socialise informally, plus outings & holidays. Soft Fruit Chocolate Pavlova For the base:
6 egg whites 300g caster sugar 3 tabs sieved cocoa powder 1 teaspoon white wine vinegar 75g finely chopped dark chocolate
For the topping: 600 ml double cream 2 teaspoons vanilla paste 500g soft fruit 50g coarsely chopped chocolate
Preheat the oven to 180C and line a pizza tray (I find these are great for pavlovas!) with baking parchment. Whisk the egg whites until soft peaks form and then add the sugar a little at a time whisking until stiff, shiny peaks. Sieve the cocoa powder over the peaks, add the vinegar and finely chopped chocolate. Give a final quick whisk to blend in but do not over whisk! Place onto your lined pizza tray and gently shape into the size of a dinner plate ensuring there is a thick mound around the edge. Place in the oven and immediately turn down to 150C and cook for 75 mins. It should be crisp around the edges. Open the oven door and leave it to cool completely in the oven. Just before you want to serve the pavlova whisk the cream with the vanilla paste until firm and spreadable. Spread over the pavlova and decorate with the fruit of your choice. Sprinkle over the coarsely chopped chocolate. Share with friends and family - at last!
With summer approaching and the thought of family get togethers, I always think of Pavlova. So simple to create and make your own by using whatever fruit you prefer. Here I have used strawberries, raspberries and blueberries. 29
