Chicken & Cashews Hoisin Style
4 tbsp Hoisin sauce juice from half a lemon
1 tabs runny honey
1 tbsp fresh ginger (grated)
2 tbsp olive oil
120g cashew nuts
4 spring onions sliced at an angle
salt and pepper freshly ground
3 boneless chicken breasts cut into strips
Place the hoisin, lemon and honey in a bowl and stir well. Add the chicken strips and season. Stir well until the chicken is covered and then cover and place in the fridge for at least 2 hours or longer if possible.
Add the oil to a large frying pan or wok and heat. Fry the chicken until golden brown and just cooked through. Remove from the pan and set aside. Using the same pan, add a splash of oil and add the cashews and spring onions and fry for a couple of minutes. Return the chicken and juices to the pan and toss until all warmed through. Serve immediately with rice.

On 29th June Central Meditation Group is holding a“Super Sunday Meditational Spirituality”event from 2pm to 6pm at Charnwood Rd Community Centre in Shepshed, LE12 9QE. The afternoon will consist of meditation guided by an expert teacher, plenty of discussion and free tea/coffee during a break. Everyone is welcome and there is no need for advance booking. Nothing unusual is involved (no chanting and we sit on normal chairs)
