Ingredients
Sausage, Pumpkin & Sage Casserole
50 grams Butter
6Sausages (pricked several times with a fork) Lincolnshire
1 Onion (peeled, thinly sliced)
3hallots (peeled, finely chopped) S
2 Garlic Cloves (peeled, finely chopped)
1 tab Fresh Sage (chopped)
1 Small Pumpkin (peeled, seeds removed, cut into equal-sized pieces)
1 tab White Wine Vinegar
1 tp Caster Sugar s
1 tin chopped& 2 tins TomatoesCannellini Beans (drained, rinsed)
500 m Chicken Stock l
Salt2 tabFresh Flatleaf Parsley to serve Pepper to season &s chopped
Method
Preheat the oven to 180C/350F/Gas 4.
Heat half the butter in a large casserole over a medium heat and fry the sausages for 4-5 minutes, or until golden-brown all over.
