Chicken in Herb & Parmesan Crusts
4 chicken breasts
1 tabsp Dijon Mustard
3 oz fresh breadcrumbs
2 tabsp chopped fresh parsley
2 tabsp dried herbs
1 oz melted butter
2 tabsp Pamesan cheese
salt and pepper to season
Preheat the oven to 180 C
Place the chicken in a greased ovenproof dish.
Cover the chicken on both sides with the Dijon mustard and season.
In a large bowl mix the breadcrumbs, parmesan cheese and herbs together. Press each chicken piece into the breadcrumbs and place back in the ovenproof dish.
Spoon the melted butter over the chicken.
Bakeuncovered for 20 mins or until they are crisp and baked through.
Serve with new, minted potatoes and a light salad, Delicious!
