Summer is upon us at last!

Firstly I need to let you know the Outwoods View Directory is on the move. We have decided to give up our office and work from home so in future you will see a PO Box address. Our telephone number remains the same.

Sunday June 30th is National Cream Tea Day. In light of this our recipe this month is raspberry and white chocolate scones. Perfect with jam and fresh whipped cream. Enjoy!

Raspberry& White Chocolate Scones

500g self raising flour

125g caster sugar

125g salted butter

125g raspberries (cut into cubes and stored in the fridge)

125g white chocolate drops 2 eggs, beaten

150 - 180ml milk

icing sugar to decorate

Note: the raspberries could be changed for strawberries, blueberries, blackberries or even grated lemon or orange zest

Preheat the oven to 190 C. Line a baking tray with greaseproof paper.

Sift the flour into a bowl and add the sugar, mix well. Add the butter and rub until the mix resembles fine breadcrumbs. Add the white chocolate drops and raspberries and mix to ensure even distribution.

Make a well in the centre of the mixture, add the beaten eggs. Gradually add the milk, a little at a time. The mix should be like a damp dough, not sloppy or wet. Flour your kitchen surface and turn out the mix onto it. Gently roll out to about 4cm thick. Using a fluted cutter, cut out the mix and place on the baking sheet. Gently gather any left over mix and roll out again and cut out more rounds.

Bake for 18 to 20 minutes or until springy to the touch. Transfer to a wire tray to cool,

Before serving, dust with icing sugar (or cocoa powder if you have used dark chocolate drops) Enjoy!
