Christmas Orange Truffles 10oz dark chocolate 160 ml double cream 1/4 teaspoon orange extract zest of half an orange caster sugar or cocoa powder to roll finished truffles in Method Gently melt the chocolate in a bowl set over a pan of simmering water (or use a microwave) stirring occasionally, until smooth.

Whisk in the double cream and continue to whisk until mixture is shiny and smooth.

Stir in the orange essence and orange zest. Cool mixture to room temperature before refrigerating until firm but still pliable.

Remove from fridge and shape the mixture into balls. If the mix becomes too hard let it stand to reach room temperature.

Roll the balls in the sugar or cocoa and store in an airtight container at room temperature.

Note: this recipe is easily interchangeable with other flavours.

I regularly use vanilla essence and the zest of a couple of limes or freeze dried raspberry.
