Lemon Pudding Cakes
3 large eggs separated
250ml milk (low fat or whole)
Lemon zest from 2 lemons
6 tabs lemon juice
2 tabs of melted butter
pinch salt
6 tabs of all purpose flour
200 grams of caster sugar
Fresh blueberries for decoration
Spray 6 ramekins with non stick spray Mix together the egg yolks, milk, lemon zest and lemon juice, melted butter and salt in a large mixing bowl. Add the sugar and flour and whisk until smooth. In a separate bowl whisk the egg whites until soft peaks form then add a little to the other mixture to lighten it. Gently fold in the remaining egg white mixture until foamy, light and liquidy. Ladle the mixture into the ramekins to the top. Place the ramekins in a 9 x 13 in deep dish and fill with room temperature water to halfway up the side of the ramekins. Place in the oven and bake for about 45 mins or until light golden on top. Take out and leave for 20 mins before serving with some blueberries and a sprinkling of powdered sugar.
