26 CRISPY GARLIC CHICKEN INGREDIENTS: 2 X 140g skinless chicken breasts 2-3 thick slices of seeded wholemeal bread 1-2 peeled garlic cloves 1 x lemon and 50g rocket leaves 1 tab olive oil METHOD: Place the chicken in-between two sheets of greaseproof paper and using a cooks mallet, (or a frying pan!) bash until it’s about a 1cm thick. Roughly cut the bread and place in a food processor with the garlic and blitz into fine breadcrumbs. Pour the breadcrumbs over the chicken, turning it so both sides get evenly covered. Place the greaseproof paper over the chicken and bash again toensure the breadcrumbs are flattened further into the chicken. Cook the chicken in a frying pan in the olive oil on a medium heat until golden brown (about 3 minutes) Slice the chicken and season with sea salt and black pepper.
