Hello readers My goodness, how time marches on! Here we are and it’s August already. Many will be on their holidays and after the last couple of years who can blame us for wanting a little something nice. I hope you all have a fabulous time. The Queens Jubilee celebrations were amazing. We do put on a great show in this country and it was lovely to see Her Majesty in such good form, even if she didn’t manage to attend all of the celebrations. Our recipe this time is for Baked Risotto, one of my favorites. Check it out on page 28. If you find yourself at a loose end and are looking for a nice place for a cuppa and cake (or other goodies) you would do well to check out the Old Wharf at The Basin, Hickling. It is a fabulous Grade II listed building (originally a warehouse) which has been converted into a tearoom which sits beside the very scenic Grantham Canal. Loughborough Lions Club are part of the Lions Club International, one of the largest service organisations in the world. We have been involved in serving the community of Loughborough and surrounding area since 1971. We raise funds for charities locally such as Rainbows, Loros, John Storer House, British Red Cross and St Johns Ambulance and for national charities such at Macmillan and Water-aid. Earlier this year we did a collection at Morrisons for Ukraine and then money raised was sent to our International Foundation to be used for projects in Ukraine and Poland. We recently organised an afternoon tea dance at the Polish Centre and raised £1000 that was given to charity to assist in supporting Ukraine families. Baked Risotto
Ingredients (serves 4)

2 tbsp Olive oil Finely chopped onion 6 slices bacon 200g sliced mushrooms 2 tbsp smoked paprika Crushed garlic – to taste 750ml chicken/vegetable stock 6 skinless white fish fillets Vine tomatoes 250g Arborio rice Parmesan cheese – to taste 1 lime cut in to wedges
Preheat the oven to 180C/gas mark 4. Sauté onions and bacon in half of the olive oil in large casserole on a hob. When onions are softened and mushrooms and garlic. Add rice and paprika and continue to cook for a minute, add stock and bring to the boil. Put lid on casserole and put in pre-heated oven and bake for 12 minutes. Whilst the rice is cooking heat the remaining olive oil in pan and brown the fish fillets on both sides. After 12 minutes remove the casserole dish from the oven, stir the rice and lay the fish and tomatoes. Return in to oven without the lid and cook for a further 10 minutes. Serve with grated parmesan cheese and lime wedges.
