OutwoodsViewDirectory Hello again! This month marks the 16th year the Outwoods View Directory has been in existence. Looking at the first edition, it is so good to see so many of those advertisers who were in that issue are still going strong today. I hope you enjoy this issue. We have a new Wordsearch feature on page 28 which will normally just be for fun but this month it is being sponsored by Binend Wines who have kindly donated a bottle of wine for the winner. At last we seem to be getting back to normal with events. I know you have missed the What’s On page but its back on page 30. Our recipe is for Easter Muffins and can be found on page 25. This is a great one for making with children. I couldn’t let this issue go out without mentioning the ongoing issues in Ukraine. I don’t want to become political but what is happening to these proud, fiercely independent people is shameful. We hoped that in 2022, we were beyond such fighting. We sincerely hope a peaceful resolution can be found quickly. May god keep you all safe. Have a great Easter!

Easter Muffins 150g SR flour 1/2 teasp bicarbonate of soda 80g caster sugar 60g melted butter 5 tabs low fat lemon yogurt Finely grated zest of a lemon 1 tabs lemon juice 1 lightly beaten egg For the Syrup Finely grated zest and juice of a lime 25g caster sugar For the Icing 250g icing sugar 125g soft butter 3 tabs lemon juice yellow food colouring 30 Cadbury’s mini eggs
Line a 12 cup muffin tins with paper cups. Preheat oven to 375F/190C/Gas mark 5 In a large bowl mix together flour, bic. of soda, & sugar. In another bowl mix together the melted butter, yogurt, lemon zest and juice and egg. Add the wet ingredients to the dry and mix lightly until just combined. Evenly distribute into the muffin cases and bake for 15 mins until golden and risen. Gently heat the lime juice and sugar in a saucepan until the sugar has dissolved. Remove from heat and sieve to remove zest, Leave to cool. Remove muffins from oven and whilst warm pierce with a skewer a few times and then spoon a little of the syrup over them. Leave in the tin to cool completely. Put half of the sieved icing sugar and the butter in a bowl and mix (with an electric whisk if you have one) Add the lemon juice and the rest of the icing sugar and beat until light and fluffy. Use the mix to decorate your muffins with a nest shape top and place 3 mini eggs on top. Enjoy!
