Dear Readers Welcome to our new readers in the Thorpe Acre area. We hope you find our directory a useful addition to your household. This edition sees a number of new distributors due to the expanding circulation but we also say goodbye to a few going off to university. We wish them well and hope they have enjoyed their time in (for many) their first job! We do not anticipate any delivery issues but should you have one, i.e. magazines not put through letterboxes fully or your magazine doesn’t arrive, please let us know. Our recipe this month is my take on a Scottish recipe for Stovies. It evokes memories of staying with my beloved Aunt Mary who made these with the leftovers from the Sunday joint. I have cheated a little using lamb mince but I don’t think she would mind, I think she would be happy she made such a lasting impression on me. I hope you enjoy Stovies too! You can find the recipe on page 29. I hope Beth enjoyed the Pear Frangipane Cake last month. Beth contacted us, after purchasing the ingredients she found she had mislaid her copy of the magazine. Stovies 500g - lamb mince 1 large onion - finely chopped 3 leeks - roughly chopped 3 large carrots - chopped into small chunks 4 med potatoes - chopped into bitesize pieces 600ml - lamb stock 2 tabs - mint sauce 2 tabs - cornflour & cold water to thicken Using a large, deep frying pan cook the mince for about 8 minutes on a medium heat. Remove the mince and put aside to use later. Leave the fat in the pan. Cook the onions, leeks and carrot in the lamb fat for about 5 minutes or until soft. (Using the lamb fat will give so much more flavour) Add the mince again and cover with the stock. Add mint sauce Add the potatoes and cook on a simmer heat for 40 mins. Mix the cornflour with a little water and add to the pan stirring all the time until it thickens. Cook for a further 3 minutes. Serve with your favourite chunky bread and dream of your next visit to Dunfermline where you can get the real dish!
