FLASH FRIED MORROCAN CHICKEN
This was thefirst recipe in the Outwoods View Directory back in April 2006. It was courtesy of Nick White who was the Head Chef at the Printroom Café Bar.
Described as a quick, easy & sophisticated recipe that would be perfect for a tasty weekday supper, or serve with a selection of side dishes for a more elaborate dinner party! Preparation 15 mins (not including marinading time) Cooking time is 15 mins and it serves 2.
Ingredients:
2 chicken breasts cut into 2 cms dice or slice each into into 3 pieces
2 cloves garlicfinely chopped
25g pine nuts
50g raisins
Half a fresh chilli, de-seeded andfinely chopped
1/2 teaspn each of cinnamon and cumin
Juice of 1 lemon
2 tabs olive oil
Mint or coriander to garnish
Method
Combine all ingredients, reserving half the lemon juice. Cover and leave to marinade in the fridge for 30 mins to an hour. Heat a li le oil in a frying pan and cook the marinaded chicken on a medium heat for about 5 mins (a li le longer if using the chicken cut into 3 pieces. Turn up the heat for the last 2 mins to caramelise slightly. Serve immediately garnished with lemon juice and either mint or coriander. Lovely with a tomato, onion, cucumber and green pepper salad and cous cous. - Enjoy!
