Dear Readers Easter approaches and makes me think of new beginnings. As I write this it would appear we have light at the end of our tunnel. Easter Blondies 250g unsalted butter cold pinch sea salt 125g caster sugar
2 large eggs
150g light soft brown sugar 300g plain flour 2 tsp vanilla extract 225g mini choc eggs ~~~~~~~~~~~~~~~~~ Preheat oven to 190oc Grease & line 8"sq loose base tin Melt butter on med-low heat. Stir in both sugars & cook for 2 mins until mix becomes a toffee colour & is glossy & smooth. Set aside. Whisk eggs, vanilla & salt in a large bowl. Add the butter mix & whisk until thoroughly combined. Whisk in flour until smooth then pour batter into lined tray & bake for 20 mins. While baking, cut 125g chocolate eggs in half. Take out blondie from the oven and whilst still warm press all 225g eggs into the mix, taking care not to touch hot side of tin. Don't worry if it cracks! Return to the oven until golden brown about 10 mins. Cool for 15 mins before cutting. Can be served warm or cold. Enjoy!
