Hello readers Outwoods has a New Accessible Trail at Lower Beacon Hill. Created by adults with learning disabilities in collaboration with Charnwood Arts as part of their ongoing partnership with Charnwood Forest Geopark.

Working alongside the rangers teams from Leics Country Parks, the final plans were put in place and the trail was installed in May 2023. It was noted that the group involved in its creation, experienced a huge growth in confidence and a real positive impact on their wellbeing. The trail is well worth a visit to see for yourself.

I see LAOS are putting on Phantom of the Opera from 5th to 9th Sept. It promises to be a great show so don’t miss the opportunity to see it. Check out page 27 for details.

The recipe on page 26 is for my aunts Fruit Loaf, which is amazing and so easy to make. I know I may be a little biased but I hope you try this very easy loaf. During the weeks in the lead up to publication she keeps me supplied in all manner of foods because I’m inclined to forget to eat so this is my thank you to her. I hope you enjoy it as much as I do.

Ingredients

6 oz sultanas 6 oz caster sugar 2 oz butter or margarine (I used Asda’s Best for Baking) 200 ml semi skimmed milk 8 oz SR. Flour 2 tsp mixed spice 1 tsp cinnamon 1 egg

Preheat the oven to 180C fan/gas mark 4.

Place sugar, sultanas, margarine and milk in a saucepan and bring to the boil. Turn off the heat and Leave to cook for 10 minutes Beat an egg and put to one side Sieve flour and spices into the saucepan and mix well Add the beaten egg and mix again Pour into a greaseproof lined 2 lb loaf tin and place in the centre of the oven for 40 - 45 mins.

Test with a cake tester to ensure its cooked.

Turn out after it has had 15 mins cooling in the tin. Enjoy!
