White Inventive Flowers of Asian Funk by Arthur Galvao As you walk through the quiet streets of Beverly Hills, under the always-landscaped trees and alongside the ever-lasting Italian restaurants, one would never guess that behind a classic American brick wall you’d find some of the best Modern-Asian-Fusion cuisine in Los Angeles. Of course, we are talking about Mr. Chow. Created in London by Michael Chow, it became a 1970’s Californian staple, and now has made its way across the country, having several locations including prestigious cities such as New York and Malibu. A quick glance at the valet, filled with black SUV’s and neon-green sports cars makes you realize that the restaurant is clearly a celebrity hot-spot, but open the restaurant doors to walk into a sleek, contemporary dinning room setting, with a big white Lilies arrangement. Don’t get me wrong, this is not the frigid-cold opened space architecture we are now - unfortunately- used to; the dimly lit interior highlights the nuanced layout, where 50’s nightclub vibes meet intimate-present-time New York chic, very much like the flowers you walk into. We were led to their private dinning room, tucked away from the main area; here, some of the most important and influential stars in the industry gather every week to enjoy the finest cocktails, such as the newly forged Mr. Mojito, where the conventional cuban Rum gets replaced by sake and Japanese bitters, showcasing their craft in clashing cultures together. If you’re more of a Tequila drinker, don’t hesitate on ordering my favorite drink of the night: the Jalisco;

an unexpected blend of Tequila, Passion Fruit and Chili Pepper. We sat down with Max Chow, as he walked us through the different dishes that were brought to the table, and like a true restauranteur he was eloquent and knowledgable of every single ingredient present in each preparation - and just like that, the meal came in waves of themes and complexity. One can’t help but mention the restaurant’s iconic Chicken Satay preparation - unexpected traditional orange colored chicken, topped with a house made velvet-smooth peanut sauce. Vegetarians are in luck, for Tofu is served to perfection - delicious to the point of turning meat lovers into die hard vegans; be it grilled over stir fried broccolini and mushrooms or as tender noodles with seasonal vegetables. In-between courses, we are treated to a true spectacle, and a Mr Chow signature - a cart is brought in by the chef, and on top a big pile of dough. Seconds after sprinkling flour over the prime matter, he starts to masterfully interlace and open the dough into now what we understand are noodles being shaped right in front of your eyes. Over the course of mere seconds, he now has multiplied what was one, into more than a thousand noodles - true culinary magic; there is no better word to describe it. Said ritual only made me appreciate even more the complex nature of the light Mr. Chow Noodle, completed with beautifully spiced beef - here, don’t for-

get to top it off with some of the restaurant’s iconic Fiery sauce; which finally you can have at home: starting this year, the restaurant has started selling their iconic sauces in select retailers. The perfectly crusted Ma Mignon was cooked flawlessly, with its rosed pink center - have it with the shrimp fried rice for some great surf’n turf and unexpected hints of steamed edamame. And to finish the night was the greatly expected duck. If you enjoy food as much as I do, you know how hard it is to come across well prepared duck it’s usually dry and flavorless; although when done right, it can be the most refined and intense of dishes. As its cut table side, you know whats coming and I knew the Mr Chow Duck would be amazing. One bite in and I already knew it would be one of the best ducks I have had in Los Angeles, if not in the country. You can either eat it simply with rice or make into traditional pancakes, prepared fresh to order. Chef Res Zheng Bing really is a tourde-force in the kitchen, placing edible flowers in seek of healing and internal freshness in the midst of the paradoxic zen that is the restaurant’s tasting menu - holding a strong future in the high-end culinary arts. Don’t let the buzz and fuzz of celebrity sightings dictate your expectations of what’s to come - simply ride the wave and let the chef take you through an intense pallet of traditional asian craft and modern inventive funk.

What makes Hollywood such a fascinating place is how it is filled with more storytellers per capita than any other place in the world. Some of these people are performing the stories, while others are creating them. And then there are the mega talents like Chord Overstreet who can do both. When he first sent hearts aflutter on his debut episode of Glee, fans didn’t yet realize Chord was much more than just a performer. Now years later, the world is getting to know Chord for his true passion -- writing his own music. From his stunning song ‘Hold On,’ to his highly anticipated EP coming out soon, Chord is one of the most exciting singer-songwriters emerging today. BELLO had a chance to talk to Chord about his roots, his inspirations, and the most personal project of his entire career.

BELLO: So you were born and raised in Nashville, but you’ve been living in L.A. since 2009. How often do you get a chance to visit back home? CHORD: I go back home for [my birthday], Christmas, Thanksgiving -- probably seven or so times a year. BELLO: Music’s been a big part of your life, especially with the influence of your Dad (Grammy Award-winning country music singer-songwriter, Paul Overstreet). But your name in particular is very musical as well. Is there a story behind how your parents chose the name Chord? It seems kind of poetic that you would go on to have a successful music career. CHORD: There is actually. The story that they say is, I was the third one born (three out of six), and there are three notes in a chord. BELLO: That’s so nice! So how old were you when you first learned chords on the guitar? CHORD: Hmmm, probably six I think. I got a mandolin when I was three, and then I started playing a guitar when I was around six or so, and the rest is history. BELLO: How old were you when you first started writing your own songs? CHORD: Well (laughing), I was writing terrible songs when I was eight-yearsold. BELLO: And how old were you when you started writing songs that began to mean a lot to you? CHORD: The first real song I wrote I was on the couch on pain meds be-

cause I just had knee surgery. I [was seventeen or so and] was playing video games or something, and my dad walked in the room and said, “Turn that damn game off and write a song!” And in about an hour I had one -- it just kind of came naturally to me. He was in the studio when I called and told him I’d written one, then he came down and helped me finish it. After that I kind of just knew what I was doing and just started writing all the time. BELLO: So fast forward around eleven years to earlier this month and your song ‘Hold On’ takes off when it was featured in the season finale of Vampire Diaries. What did that feel like? Did you feel like a proud dad in a way? CHORD: Yeah, it was interesting because I’d never had a song that I’d written get on TV before. I mean, I’d obviously sang a bunch of songs on TV, but this was a different feeling. As something I had created, I couldn’t help but smile when I saw it. But it was really cool, a really great placement. It was a great platform to feature my music on. It just kind of fit. BELLO: So your next big song ‘Carried Away’ is coming out soon. Can you tell us what that one is about? CHORD: That song’s kind of just about having fun and just getting back to just doing whatever you want to do. Just letting yourself get carried away and not thinking too much. We were in the studio writing one day and we were talking about different ideas, and then we were like, “Hey do you guys just want to drink and cut loose, and not try to write anything and just have some fun?” And that’s what we did. 

BELLO: Stream of consciousness with some help from beer? CHORD: Yeah, it has that kind of spirit about it, and it’s got a west coast kind of vibe too. We were all wanting to go down to the beach that day but we were working. So we just kind of wrote about it. BELLO: May is going to be a big month for you with your new EP coming out. How long have you been working on it, and how many songs did you write in total before you were able to narrow it down to the final four? CHORD: Oh man, I’ve been working on it since we finished shooting Glee. I’ve put pretty much all my time into this project. But I’ve probably written over a hundred songs or more. Then the process is: you’ve got a bunch that you’re really excited about, and they say, “Well, we like these ten out of this batch.” So you go back in the studio for another few months and you try to write another hundred. Then they’ll say, “Alright, well we like these ten,” and you take those to the label and they say, “Well, we like these five.” And you kind of do that over and over, and it’s the kind of process where it’s great to take time and have patience with making your music, because the more you do it, the better you become and the better the songs are. I think the process is very interesting, but it’s the kind of thing you can’t really do on the road. You really need the time. BELLO: Wow, it’s incredible how much volume goes into the making of the final product. CHORD: Yeah, it’s very interesting because you also see stuff you’ve written April 2016 - BELLO

two or three years ago when you were at a different place in your life, so it’s almost kind of like a journal of what you were going through. Every time you listen to something... BELLO: It’s like a time capsule? CHORD: Yeah, it takes you back to where you were emotionally when and where you were writing that song. I think that’s kind of a cool thing about writing music. BELLO: I guess the songs become like a timeline that connects all those key moments of your life? CHORD: Yeah, and there are times when you write a song during an emotional period, and this is when the process can get a little difficult. You might get attached to a song because it’s personal to you, but it might not be the best thing for the project. BELLO: Like any true artist you’re a storyteller first and foremost. Would you say each of the four songs tells their own unique story, or is there a larger story that unites them as a narrative? CHORD: I would say each one tells their own individual story, but I would say the common thread is that they each capture a moment in my life -- whether I’m homesick or going through heartbreak or getting over something, or just wanting to let loose and get back to having fun. BELLO: Who was your producer on the EP? CHORD: I produced each song with whoever I was writing it with, to be honest. It kind of keeps it mixed up a little bit, which gives you a different take from what you would get with just one person. BELLO: Describe that creative process between you as a singer/songwriter and working with a producer. What was that dynamic like for you? CHORD: It’s different everytime. Some people you click with, some people you don’t. But you just go in there and you have an idea like, “Hey what do you

think about this?” And then they will start building the music as you sing. Then I kind of go into my zone and start writing out the lyrics. It usually takes a little while to hit, but sometimes it hits immediately. There are a few people I work really well with and it always just clicks immediately. Then there are those times where it feels forced. BELLO: When it comes to those moments where you are writing on your own, some songs will enter your imagination fully-formed, while others might take weeks or even months to bring to life. Do you tend to put more value on one or the other of those types of songs? CHORD: It’s weird, but when you’re going through an emotion it’s kind of easy to get it out -- to get it out on paper. And it’s not necessarily just ‘there.’ It’s a lot like writing in a journal -- you’re slowly just creating the story. Then you have to make it rhyme, so it can be kind of challenging. But sometimes it seems to just fall out of the sky. BELLO: When was the last time you experienced writing a song that felt like it just fell out of the sky? CHORD: It happened a few weeks ago when I lost my voice and couldn’t really sing. I was going through a bit of an emotional struggle with some stuff, and because I couldn’t sing I started writing a song that was just about myself. Nobody has even heard it yet. And it kind of just happened within 20 minutes. It was something that felt very real to me, so I didn’t have to make anything up or think about a story as much as the emotion. BELLO: I’m going to ask a few fillin-the-blank questions now. If you were traveling for the whole summer and could only bring one album with you for that whole time, what would it be? e at BELLO mag are obsessed by Breanna Yde and we are happy we got the chance to chat with her about Nickelodeon’s School of Rock and more: You’re originally from Sydney, Australia. When did you and your family decide to move to the States? My family decided to move back to the states when I was around 2 years old. So I was still very small and had no clue what was happening! We visit there often though and its one of my absolute favorite places in the world. You star in Nickelodeon’s show ‘School of Rock’ which is now in its third season. Can you tease anything about what is coming up on the show? We haven’t gotten too far into the season yet, but I can say that we have lots of adorable animals this season and specifically in one episode...I can’t wait for everyone to watch! Your character Tomika could be described as the tomboy of the group. Would you say you have any similarities to her? Tomika and I share many similarities- like how we both love music, we both are pretty chill and not re51

ally high maintenance, and we are definitely not girly girls LOL. I understand you play several instruments including piano, guitar and bass, as well as singing. Which one did you start first? I play piano, guitar, drums, bass and I sing. Technically I started singing before I learned any of those instruments, but piano was the first instrument I learned! Is your family musical?Yes, my entire family is pretty musical actually, so my interest in music came naturally because I was surrounded by it! We love having karaoke nights, where we all just have fun and sing. My dad plays both piano and guitar too, it’s always fun jamming out with him. Later this year you’re starring in the Nickelodeon TV movie ‘Escape From Mr. Lemoncello’s Library,’ which has been described as a daring, dangerous adventure of escape. What would you say the most daring thing you’ve done is?I would say the most daring thing I’ve ever done was pursue singing and acting professionally. I left my school, my friends and moved from San Diego to go after my dream. I do

school online now, which is a challenge, but I get to do what I love and that is all that matters. You have been in a lot of Nickelodeon shows and movies, ’The Haunted Hathaways,’ ‘Santa Hunters’ and ‘Instant Mom.’ Out of all the characters you play in these projects, which one would you say is most like you and why?Between all of my Nickelodeon characters I would say I’m a mix between Frankie Hathaway and Tomika. Frankie was very mischievous and I would say I am too sometimes, but I’m also like Tomika because we love music and our personalities are similar. You’ve done lots of covers of songs, what’s your favourite one to sing?My favorite song to sing right now is “What Do I know?” on Ed Sheeran’s new album! Who in the music industry would you love to collaborate with one day?Someone in the music industry that I would LOVE to collaborate with would be Ed Sheeran. Sleep, diet, exercise, and good skin care can trim years off your appearance. Follow these simple anti-aging tips for a young looking, healthier you.

The first thing people notice is your skin. According to one recent study published in the Journal of the European Academy of Dermatology and Venereology, men’s attractiveness and youth are judged largely on the tone and evenness of their complexion. Take years off your face by following these anti-aging skin-care rules:

Maintaining your overall health can make you look and feel younger. These lifestyle choices promote wellness:

Sleep well. Most adults need seven to nine hours of sleep every night. “Getting appropriate sleep is very important for how

you look,” Salerno says. Not enough sleep can result in bags under your eyes and other health consequences that may make you appear older. One study from the psychiatry department at Penn State College of Medicine found that sleep deprivation affected men’s mental acuity more than women’s. And another study from the University of California, San Diego, found that more men needed naps to reinforce learning.

Stay out of the sun. “The sun just beats the daylights out of your skin,” says Francis Salerno, MD, of the Center for Healthy Aging in Allentown, Pa. If you are going to be in the sun, wear sunscreen, Dr. Salerno adds. Over-exposure to the sun can cause wrinkles and age spots that surely will make you look older.

Moisturize. “Using moisturizer and a gentle cleanser every day will help you look younger,” says Frank Shipman, owner of the TC Salon Spa in Allentown. “Dryness exaggerates signs of aging in the face and the body. Moisturizer will help.”

Drink lots of water. Six to eight cups of water a day will help keep your skin hydrated, giving skin better tone and a more youthful looking appearance. “Maintaining adequate fluid intake is very, very important,” says Salerno, author of the book Basic Prevention: A Guide to Healthy Aging. #150 issue - BELLOmag.com

Eat healthy. Eating appropriate amounts of a Mediterranean-type diet — chicken, fish, fruits, and vegetables with a moderate amount of carbs — will keep you healthy as well as looking young and fit.

Exercise. Exercise will help you to maintain your tone and your flexibility,” Shipman explains. Aerobic exercises are good for your heart and, whatever you do for your heart is also good for your brain. Men who are fit and trim will look younger and feel younger than those who are fat and flabby. It’s amazing how putting on those extra pounds can age someone greatly.

Dress Your Age Age is about appearance. You can take years off your appearance if you follow this simple anti- aging dress code:

Avoid clothing trends. When dressing, go with updated classics. If you are middle-aged and go with a trend that is for 18-year-olds, it will not look right. And don’t dwell on trends from your past. If you wore the look before, don’t do it again. For example, bell-bottom trousers from the ’60s will make you look dated — or like you never left that era.

Trim unwanted body hair. As men age they tend to get hair in unwanted places, such as the ears and nose. Keep this growth trimmed and you’ll look younger — and if you look younger, you’ll feel younger. Also, if your body hair is turning gray, the shorter you keep it, the less noticeable the gray will be. That’s true of beards and chest hair. 59
