Bethany Volunteer Selected NDLTA Adult Volunteer of the Year
Sarah Williams, a volunteer in the Towers Assisted Living and Basic Care at Bethany on University, has been named Adult Volunteer of the Year by the North Dakota Long Term Care Association. Recipients are selected in three categories: Adult, Young Adult, and Group. She will be honored at the NDLTCA Annual Conference in Bismarck in early May and will be submitted for the National Award.
Sarah began volunteering at Bethany Retirement Living more than six years ago while her father was a resident in Bethany on University’s Skilled Nursing Facility. What started as helping with crafts once a month has grown and evolved into a schedule of several hours every month, assisting with a wide variety of activities for residents in Basic Care and Assisted Living. Sarah is selfless and encouraging, traits she picked up from her mother.
Sarah has a unique vision of what residents would find interesting and fun. Always seeking entertaining and rewarding projects and activities for residents, Sarah now assists with a wide variety of activities in the Towers Basic Care and Assisted Living.
She helps with the monthly resident birthday party, decorating, serving and assisting residents.
Several years ago, she initiated a Christmas gift program; and she and nearly a dozen friends provide gifts to those who might otherwise not receive anything. She organized a monthly Helping Hands program where Bethany residents work with materials provided by the local School District to assemble up to 100 hygiene kits monthly for students in need in the Fargo Public Schools.
Sarah suggested (and has been instrumental in implementing) the annual Women’s Tea around Mother’s Day where she and several friends don aprons and bring vintage teacups and plates to Bethany to offer a traditional tea party for our ladies.
In addition to being creative and thoughtful, Sarah is
detail-oriented. Through her conscientious effort, Bethany Towers residents feel valued and “seen”. Sarah always puts the residents and their needs first. She encourages residents to participate in activities and projects and ensures that the finished crafts are useful by providing, for example, stamps for postcards and hooks for hanging decorations the residents make.
Her dad passed away in 2020, but Sarah’s mother lives in Bethany’s assisted living and she, too, has been recruited by Sarah to help out with various projects. Same with her sister, Karen, who regularly comes to hang out with her mom and sister, and assist with projects and activities. Additionally, Sarah brings her chihuahua, Lexi, to visit from time-to-time and the pup is a big hit with residents.
Sarah is an example of a “successful retiree”. Since retiring from a career in electric utilities, she has filled her time and been a blessing to others by giving her time and talent to residents at Bethany and volunteering at other organizations in the community. Sarah gets others – family members and friends –excited about giving back to organizations that are important to her.
We are fortunate that she volunteers at Bethany Retirement Living. Her passion for serving others, her creativity and the enthusiasm that she brings to our residents’ experience at Bethany are a wonderful example for others, and she enriches the lives of all those with whom she comes in contact.

Dear Friends,
Nationally, the long-term care industry continues a slow recovery, post pandemic. As of late 2024, the average nursing home occupancy rate increased slightly to 80.5%, up from 77.9% in 2023, but still below the pre-pandemic level of approximately 81%. The labor shortage remains critical, with the industry still requiring 148,700 long-term care workers to return to pre-pandemic employment levels. The pace of nursing home closures has accelerated, with at least 774 skilled nursing facilities closing between February 2020 and July 2024, resulting in the displacement of 28,421 residents. Additionally, there are 62,567 fewer nursing home beds than before the pandemic.
Locally, at Bethany, we had strong occupancy in 2024. Our operations averaged the following occupancy: skilled care-98%, assisted living-91%, basic care-96%, and senior apartments-99%. Our employees remain the heart of our operations, and our average job openings have returned to pre-pandemic levels. Our average number of job openings for all departments is down to levels we have not seen in years.
The 69th ND Legislative Assembly is currently in session as I write this letter. This session is important for our basic care operations. Historically, basic care facilities have been given rate increases that are well below inflation levels. The North Dakota Long Term Care Association recently published a study stating that basic care facilities are underfunded by an average of $83.13 per resident per day.
Ethos Homecare and Hospice continues to be a successful partnership between Bethany, Eventide and
Knute Nelson/Vivie (Alexandria, MN). Ethos now has operations in Fargo, Bismarck and Grand Forks, ND. Ethos is a great fit with the Bethany continuum of care.
Other accomplishments of 2024 include USNews rating both Bethany on 42nd and Bethany on University “High-Performing” nursing facilities, earning their “Best Nursing Home” designation. We received five 1st place awards in The Forum’s Best of the Red River Valley contest. In the Family and Community Category, we placed first in Best Customer Service and Best Large Employer. In the Health and Wellness Category, we placed first in Best Customer Service, Best Medical Facility and Best Physical Rehab Facility.
Our skilled care operations at Bethany on University earned The Joint Commission’s Gold Seal of Approval for Nursing Care Center Accreditation by demonstrating continuous compliance with its performance standards. The Gold Seal is a symbol of quality that reflects a health care organization’s commitment to providing safe and quality patient care. Bethany’s Transitional Care Unit was also recognized by earning Post-Acute Care Certification. We will be applying for Joint Commission Accreditation at Bethany on 42nd Skilled Operations this summer. Prairie Business Magazine named Bethany as one of the region’s 50 Best Places to Work in 2024. These accomplishments would not have been possible without Bethany’s hard-working and dedicated employees.

Quality accolades for Bethany Gables! In June of 2024, we received word from American Health Care Association/National Center for Assisted Living (AHCA/NCAL) that Bethany Gables Assisted Living had been accepted as a 2023 Bronze Quality Award recipient. The Bronze Quality award is the first step in a national program that recognizes facility commitment to improving the lives of residents through quality care. Bethany Grace Pointe offers spacious one- and two-bedroom apartments ranging in size from 910 to 1,440 square feet. Grace Pointe features heated under-building parking, beautifully appointed amenities – perfect for entertaining! Amenities include fitness center, arts and craft studio, social lounge and roof top patio, media/library and quite nooks on every floor for games, reading or just enjoying a sunny place to kick your heels up. Neighbors and friendships are an integral part of daily life as well as potlucks, resident led exercise groups, etc.
Bethany Gables continues to be a premier independent and assisted living community. Bethany Gables offers 40 one- and two-bedroom apartments in a quiet, closeknit community with a variety of special events and amenities. Amenities include 1804 Club, Movie Theater, Wellness Center and 42nd St Diner.
Bethany Towers II Assisted Living offers studio and one-bedroom apartments with stunning views of the heart of Fargo! Amenities include 9th floor lounge with a bar height counter, club tables and chairs, 8th floor billiards room, cards and game room, arts and crafts area, computer center, TV lounge, etc. Main floor amenities include Towers Event Center, Towers Great Room, Hair Salon, Gift Shop and University Café. Bethany Towers Basic Care is a much sought after level of care by seniors and their families. When seniors need a little more than Assisted Living and/or they need the financial assistance offered through the state of ND, Bethany Towers is a perfect solution. Residents enjoy all the amenities of the Bethany on University campus and the very busy social calendar, all while receiving the care they need in an affordable setting. Care and Services are “all inclusive” yet allow for –and encourage – the independence of residents.
Environmental Services provides Housekeeping, Floor Care and Laundry services to Bethany on University Skilled Care, Rehabilitations
Suites, Towes
Assisted Living and Basic Care. At Bethany on 42nd services are to Skilled Care, Gables Assisted Living and Town Center.
Bethany on University has a central laundry operation which provides daily personal clothing and linen services to skilled residents and Rehabilitation Suites patients. Daily housekeeping service is provided to all areas in the Skilled, Rehabilitations Suites and Towers common areas. Towers II Assisted Living resident apartments are cleaned on a bi-weekly basis while Basic Care receives weekly service. Floor Care employees perform many duties in all buildings including routine maintenance of floors and upholstery cleaning.
Bethany on 42nd has a laundry within each Skilled household. Environmental Services and other household staff participate in the daily processing of linen and resident personal clothing. Daily housekeeping service is provided to the skilled households, Town Center and common areas in the Gables.
Bi-Weekly housekeeping service is provided to the Gables apartments.
Environmental cleaning is essential for residents, patients and staff safety. We continue to strive for a successful cleaning program, providing consistent education by having regular hands-on training and meetings that revolve on a quarterly basis. Our primary goal is to minimize the risk of infection for everyone. Supervisors observe staff cleaning, and we test the environmental surfaces to ensure the staff are thorough.
Some of our project upgrades for 2024 included replacing bathroom flooring in our Towers II resident rooms that were outdated, we will continue this project in 2025. We started replacing the office carpet on the Northeast end of the main floor. We removed built-in Formica closets in three double rooms on each floor on the Memory Care units and updated them to free standing armories and nightstands.
We replaced the carpet in resident rooms as needed at Bethany on 42nd in both skilled and Gables to keep rooms looking fresh and nice. We also replaced the elevator carpet in the Grace Pointe elevators and landings.
Another year has flown by here at Bethany Retirement Living. 2024 was a busy year in Dining Services. Brooke Gorder continues as the Director of Dining and Nutritional Operations role, overseeing day-to-day operations for both Bethany on University and Bethany on 42nd. Brooke has been an active part of Dining Services since May of 2007, holding many titles, such as DSA, Cook, and Supervisor.
At Bethany on University, Brooke works alongside Assistant Director of Dining & Nutritional Services, Stacy Kolb, and PM Production Supervisor, Kasey Harvala. At Bethany on 42nd, we have Director of Dining Services, Hannah Volk, and Assistant Director of Dining Services, Amy Thorsteinson, who continue in their roles. Together, they are active in the daily staffing and operations of the department, ensuring quality measures, working on performance improvement and overall keeping things running smoothly. All Dining Services employees (approximately 80 at University and 40 at 42nd), are actively engaged in preparing, cooking and serving the meals to all the residents and patients residing at Bethany Retirement Living.
Dining Services management also works closely with the Bethany Clinical Dietitian team. Jordan Hruby, RD, LRD, is the lead dietitian and oversees Kya Welsh, RD, LRD; Sarah Holman, RD, LRD; Stephanie Scott, RD, LRD; and Justine Cadwell, RD, LRD. Together, the Clinical Dietitian team and the Dining Services team work to ensure Bethany provides resident-centered care to all residents and patients by continued care planning, auditing, and brainstorming to improve and streamline processes between campuses.
In 2024, University Dining Services prepared approximately 266,000 meals for our Skilled, Basic Care and Assisted Living residents and patients. Dining Services at 42nd prepared approximately 130,000 meals for the Skilled and Assisted Living residents. Both campuses have implemented a Food Committee that meets multiple times a year to taste-test different food items and go over the menus. The 42nd Street campus received brand new ovens, replacing the two original ovens from its opening in 2010!
The University Café and 42nd Street Diner continue to operate daily, offering many tasty options for our residents, visitors and staff, from the burgers, wraps, grab-and-go and extensive beverage choices. The University Café added a hotdog roller, offering hotdog specials daily.
Like every year, we have had our challenges, but the Dining Services department persevered and ended the year stronger than ever. Brooke would like to thank all the Dining Services staff, management and clinical dietitians for all their hard work and dedication to our residents and patients, providing nutritious meals, and for the flexibility and patience with the continuous changes in the foodservice world.

Yet if you say so, I will let down the nets.” 6When they had done this, they caught so many fish that their nets were beginning to break. - Luke 5:3-6
Spring’s arrival brings with it the warmth of the sun, the beauty of blooming trees and flowers and a return to time spent outdoors. As a child growing up in Walker, MN (on Leech Lake) there was no greater spring day than opening fishing. I loved getting back out on the waters with my dad, spending time in in the boat in search of a catch.
One of my favorite fishing stories is the one found here in Luke where Jesus invites Peter (who has been fishing all night without catching anything) to try again, but this time in deeper waters. As a person who grew up with a love of fishing, I’ve learned that sometimes in order to catch fish, you need to try something else, a different lure or an adjusted presentation maybe even deeper waters.
This past year at Bethany has been a wonderful season of going deeper. As the Pastor here at Bethany, it has been a gift and blessing to be invited to join people in the deep waters of faith and life. Those deep waters maybe in growing closer in relationship with each other and sharing our lives together. Those deep waters may involve spending time together as we wrestle with a recent health diagnosis or a significant change in the routines of life. Those deep waters may even be journeying together into the deep waters of grief and loss.
I am thankful for our continued partnership with our area churches, pastors and volunteers who join us along with Christ in those deep waters providing support, caring and such an amazing depth of relationship. As we continue to follow Christ into the deep waters of faith, may Christ guide us as we follow where he calls. May we be open to the spirits calling to join God in exploring new possibilities in unexplored waters. May the one who beckons us to join him in the boat go before us, in front of us and within us as we journey together into the deep waters.

Building Services
At Bethany on 42nd in 2024, we continued work on ongoing projects and completed several other projects throughout the year. Our ongoing projects consist of TV replacement in skilled resident rooms, wrapping up replacement in two households this past year, , total of 26 rooms receiving up-to-date TVs. Another ongoing project is handrail replacement in the skilled areas with all handrails in the Sterling House household being replaced in 2024.
Facility grounds projects completed include resealing and striping of the Grace Pointe and Gables Parking lots. Also leveling concrete in uneven areas along egress from the building as well as sidewalks around the facility. An awning was installed for the 2nd floor patio in the skilled nursing area, so residents have another comfortable space to enjoy the outdoors.
Additional projects completed inside the facility include completing the audio-visual equipment upgrades in the Larsen Chapel. These upgrades included sound and visual display upgrades. Also upgraded inside the facility were several water mixing valves. These were switched over to digital controlled mixing valves to provide more consistent water temperatures throughout the facility.
At Bethany on University, we had many projects throughout the year.
In the Skilled buildings, we had a remodel of the 3rd floor Willow Lane kitchenette that included new cabinets, countertops, and appliances. On the west side of Willow Lane 2nd floor, we replaced resident room windows. We also replaced some doors and hardware in hallways and upgraded the door alarms. Towers I, we replaced resident room doors on the 3rd floor and upgraded to led lights on the 5th floor. Towers II, we replaced the makeup air unit and added air conditioning to help cool the hallways on the 2nd through 9th floors.
Outside Bethany we replaced sections of city sidewalk and had the parking lots crack sealed, seal coated and restriped to keep them in good condition. We also purchased a new broom for the bobcat to keep the parking lots clean in the winter.

The Bethany Auxiliary is selling geranium plants in 4½” pots for just $6.00 each. These beautiful plants are locally grown from cuttings at Bloomfield Garden Center in Sabin MN. They are available in four colors: red, pink, salmon and white.

The Auxiliary Geranium Sale helps raise money to provide items for Bethany residents – such things as Portals of Prayer devotional booklets, blanket warmers, aromatherapy, Netflix services, heat lamps, aviaries and the Chaplaincy program, just to name a few. These purchases enrich the lives of all residents at both Bethany campuses.
For every plant purchased, $2.65 will be used by the Auxiliary to benefit the residents.

Paper or...?
Some of Bethany’s friends enjoy receiving the Crossroads newsletter in print form (like this issue, for example.) Increasingly, though, readers of the newsletter prefer to receive and read the newsletter on their computer, tablet or phone. It’s convenient for the reader, they can take it with them should they want to refer to something and it can arrive more quickly.
From Bethany’s perspective, sending the newsletter electronically saves printing and postage costs and can reach readers in a more timely fashion.
