American Thanksgiving

LOOKING Past the prettY picture

Words by Cadaxa Chapman-Ball Do you remember learning about Thanksgiving in elementary school? Everyone would make construction paper turkeys from hand outlines, and teachers would explain what happened when the Pilgrims came to America. From what I remember (and keep in mind that I was six, so my memory may be a little off), I learned about a group of Pilgrims that came to America on the Mayflower in 1620. After a hard journey they met the Native Americans, and the two groups got along very well. The Pilgrims settled there and invited the Natives to a feast of Thanksgiving, to celebrate the successful crops, where they had a joyous, friendly dinner. I assume most of you grew up with similar explanations, if not the same one. I’ve since learned that this story is so simplified it is insulting — and saccharine at the expense of leaving out some particularly horrific details.

Whats Wrong with the Story?

Besides the ambiguity of how Thanksgiving really came about and what happened back in the good ol’ 1600’s, there are a few other issues with the common lore spread in elementary schools. One of these issues is the generalization of Native Americans. When I was a little kid, I only knew the names of two tribes: the Navajo and the Cherokee. The only reason I knew these names was because I knew Navajo people and my great grandparents were half Cherokee. I certainly didn’t know any tribe names from the standard issue Thanksgiving. The tribe in most Thanksgiving stories is the Wampanoag tribe, but we’ll get to that later.

Another issue is that the story emphasizes the peace between the colonists and the natives. While there may have been days of peace between colonists and natives, why focus on these when describing the brutal process of colonization? A picture is painted of harmony where there was mostly war, oppression, and Europeans forcing people off of their land — the essence of colonialism. Essentially, the focus on these days of peace is akin to propaganda.

The Real Story. . . sort of Like many events in history, the true story of Thanksgiving is disputed. There was indeed a feast attended by the Mayflower Pilgrims and some Wampanoag Natives, but this event was not called Thanksgiving until 1830’s, and there is no evidence to suggest that this feast was the “first Thanksgiving,” as both Europeans and Natives had previously held feasts based on successful crop yields and hunting. There is also no evidence that the Wampanoag were even invited to the feast, as we have no record of why the two groups would have dined together.

While this feast is the basis on which most accounts of Thanksgiving are founded, there was another event that occurred in 1637 that mentions a Thanksgiving celebration. This event was a celebration following a horrific massacre of the Pequot people. Was this the first “real” Thanksgiving? Maybe. But even if it wasn’t, the fact that almost every American can say something about the “origins” of Thanksgiving, but probably doesn’t even know about the slaughter of the Pequot people, says a lot about what this country chooses to remember about our history. Just saying.

The Take away So, what’s the point of this article? Do I want you to walk away with a bitter taste in your mouth from the mistreatment and stereotyping of Native Americans? Well, maybe a little. It’s important to recognize these things and learn to address them. But I also want to provide some insight on what you can do to create a more informed and kinder culture for the future.

First, you can stop teaching children the tale of Thanksgiving as it was told to you. If you have children in your life, make sure they understand whose bodies this country was built on.

Second, you can get involved with the Native American Student Union on campus. They have a Facebook page where you can find events and contact them for more information.

Third, you could learn how to cook an authentic native dish to prepare, to truly give thanks. Classic and tasty recipes include acorn bread, buffalo stew or even baked pumpkin.

Finally, get informed. See what’s happening to native groups in the United States today. Learn the names of the local tribes. Remember on Thanksgivings, but also during the rest of the year that we live on native land, and that it should not be forgotten.

Do I really need to explain Starbucks? It’s a Starbucks. Go to the one on the first floor of the EMU or the one on 13th to satisfy your basic coffee cravings.

This museum café is popular meet up spot for students and professors outside of office hours, and it has a selection of soups, salads, and sandwiches in addition to coffeeshop staples (coffee and pastries).

It’s attached to the Jordan Schnitzer Museum of Art, but you don’t have to be admitted to the museum to enjoy the café.

Do you like being physically near a lot of books? If you do, you should check out the Daily Grind! It’s beneath the Knight Library on the basement level, and it’s a great place to grab some breakfast while you finish that paper that’s due in an hour. Plus, when you’re done, you only have to go upstairs to print it out!

Hamilton’s very own Common Grounds is the place to be for breakfast. Or, if you’re not really a breakfast person, this dorm cafe is there for you too with a nice cup of coffee or tea. It’s also open until 11pm every night, so if you’re staying up to cram for finals it’s not too late to get your caffeine in.

I bet if you’re not a STEM major, you’ve never even heard of this café. I only happened on it last year by chance and now it’s another bright spot on campus in my mind. It lives above the Allan Price science library surrounded by large windows and lots of seating for the avid studier.

Tired of the campus cafés, but don’t want to actually walk off campus to get your morning cup o’ joe?

Café Roma lives on 13th street, which is basically campus, and it has many delicious pastries and coffees to choose from.

Fortunately, there’s a café out there that caters to those living in or around Barnhart, so those students don’t have to trek so far to find coffee. It has all the comforts of campus away from campus.

On the second floor of Lawrence, there is a wonderful little café called the Hearth Café. Easily one of the most #aesthetic cafés on campus, the Hearth Café has large, long tables, a high ceiling, and warm lighting (none of those awful fluorescent bulbs). It also has a comfortable bay window with a nook to sit in.

Located at the heart of the Lillis Business Complex, the Lillis café has everything any tired college student needs: coffee and big comfortable chairs and couches to snooze on.

The clocks are an hour back, the trees are bare. The name “Fall Term” has lost all meaning and the grey rainy sky has officially started to get me down.

When the stress of college already looms over students’ heads and the sun has said farewell, maintaining mental health can be difficult. Seasonal Affective Disorder (SAD) is a type of depression that comes and goes with the seasons, typically starting in the late fall and early winter and lasting until the spring, as defined by the National Institute of Mental Health. If you feel like you may experience SAD or know someone who does, I’ve outlined some suggestions of how you can best combat it this season.

Ask For Help One in three students have felt so depressed it has affected their ability to work, according to the National College Health Assessment, a record of data published by the American College Health Association. Here are a list of resources available on campus you can use in order to help cope with SAD or other mental health struggles this winter:

Diet Your diet is quite literally food for thought. It’s always stressed that sugary foods and carbs make you feel sluggish, whereas a diet of fresh produce rich in leafy greens will encourage higher energy levels. As seen in an analysis of dietary patterns and depression published in The American Journal of Clinical Nutrition, subjects who consumed a healthier diet had lower odds of experiencing depression. You wouldn’t feed a Ferrari diesel, would you? You’re a Ferrari. Maybe swap out the Takis for hummus and vegetables the next time you buy groceries, you beautiful sports car you.

Exercise The mind and body are a team - if one isn’t happy, more often than not the other isn’t either.

Exercising stimulates the body’s natural happy hormones (endorphins and enkephalins), which can automatically reduce feelings of depression and anxiety. Try starting your day off with 30 minutes of exercise before studying or class to increase energy.

The Student Recreation Center seems a bit daunting sometimes, but I remind myself I’m paying for a membership in my tuition so I may as well get my money’s worth.

Yoga is my go-to when my schedule gets crammed and I need to de-stress. While it works on core strengthening and muscle development, the mindfulness element helps relax the mind, which is especially useful in the midst of heaping piles of schoolwork. Most studios will give discounts for your first visit - Balanced Hot Yoga offers a $10 first-time fee or a $45 unlimited pass for two weeks with a variety of classes.

If you’re wanting to take advantage of the great outdoors surrounding us despite the cold, you’re not wrong. Spencer’s Butte is a quick 1.4 mile hike not far from campus that rewards you with lush views of Oregon at the top. Be careful on the stone steps during the wet season, and always take a buddy on winter hiking trips.

Sleep A huge challenge I’ve had in college is balancing academics and a social life. In order to maintain both I have often sacrificed sleep. According to the National Heart, Lung and Blood Institute, sleep deficiency can cause difficulty in decision-making, problem-solving, controlling emotions or behavior and coping with change. It has also been linked to depression and risk-taking behaviour. You get what we’re saying: sleep is important.

While you may be feeling pressure with deadlines coming up, prioritize a good sleeping pattern as best as you can to help your brain function. That extra hour of studying at 2am probably won’t pay off, so you may as well catch some rest. Sometimes living in a college setting is also extremely disruptive. If so, a sleep mask, earplugs or white noise can help muffle the outside world and get those full 8 hours of REM.

It’s the Little Things These foundations are critical for your wellbeing, however, sometimes you may need a little extra TLC. It’s easy to get caught up in school, but we’re more than students. Indulge in the things that make you happy, whether that be your favorite book, TV show, cup of tea or a new recipe. I use light therapy to combat SAD, which uses a device that replicates natural outdoor light to improve disposition. While these lamps average $45 on Amazon.com, the Duck Nest, a wellness center for students located in the EMU (which you should check out at least once), has one. Another way to fight vitamin D deficiency are supplements, which can be found at your local grocery or nutritional store.

Greetings from the

Graveyard

The Eugene Pioneer Cemetery has an unusual location with the University of Oregon surrounding it on three sides.

You might assume that the University owns the graveyard, but the graveyard is actually on the National Register of Historical Places. This means that the graveyard is federally owned, and run mostly by volunteers. Although some of us might not see all the life contained beneath the somber gravestones at first glance, each one has an interesting story behind it. Especially helpful (and alive) staff members, Quentin Holmes and Dorothy Brandner, provided me with insightful information on honorable mentions buried there to help us get to know the graveyard we walk through every day.

Judge J.J. Walton Jr. (1838-1909)

His family came over on the Oregon Trail in hopes of taking advantage of the Donation Land Act, and they ended up being placed in Eugene. He graduated from Columbia College and quickly passed the Bar exam to become a lawyer. Shortly afterwards, Judge J.J. Walton Jr. was elected to the position of County Judge. While holding office, he was granted $50,000 worth of land to erect a university in Eugene. Citizens supplied monetary donations and manual labor, but they ran out of funds just before finishing the roof. Judge J.J. Walton Jr. raised the remaining money it would take to complete the first building on campus by going around door-to-door asking for any sort of donations he could get. Without Judge J.J. Walton, the University of Oregon would not exist as we know it today.

Paul F. Brattain (1801-1883)

This well-written gentleman is also a prominent figure in Oregon’s history. Paul Brattain was a person seeking refuge from the exhausting overexposure to society. However, in his escapist travel efforts, he instead ended up helping different states with drafting their Constitutions. He first assisted Indiana, then Illinois, later Iowa and finally he arrived in Oregon. He is known as the main author of the Oregon Constitution that we recognize today. His involvement with the drafting of the Constitutions of so many different states is a large reason why most of them read in similar tones.

Adelaide V. Lake (1897-1970)

Great-aunt to volunteer Holmes, Adelaide particularly stood out to him with her strength and confidence. She was born in 1897 with a large purple birthmark covering half her face — during a time when people didn’t have the option to change things like that, even if they wanted to. She overcame the adversity of discrimination from others her whole life, not only from her birthmark but also as a woman. She later went on to get a degree in Journalism from University of Oregon in 1916 (exclusively men majored in things like that), traveled to Turkey (unaccompanied), and became the editor/owner of a well-known newspaper called the Sheridan Sun — yet again in a period when only men were allowed to hold such jobs. She never married and serves as a trailblazer for women’s opportunities in the professional field.

As we prepare for the holiday season, we anticipate the things we love the most: spending time with our families and friends, giving and receiving presents and most importantly, the wide variety of delicious foods and desserts. From the honey-roasted ham, to the tangy smell of gravy followed by loaded sweet potato casserole, the aromas can overwhelm the Thanksgiving newbie.

After the initial rush of Thanksgiving dinner, the next day our baggiest and comfiest clothing make an appearance. Tis’ the season to eat, eat, and eat, but we all get tired of the same dish after a while, and the tupperware full of mashed potatoes will start to look bland. Fear not! There are ways to revamp those leftovers into a brand new dish that will excite and renew your taste buds without letting the mountain of turkey and gravy in the fridge go to waste. Although we all have different tastes, here are a few of my favorite recipes to revitalize those Thanksgiving leftover dishes:

Turkey Enchiladas Ingredients:

Shredded Cheddar/Monterey Cheese Onions Corn Tortillas 1 - Can of Enchilada Sauce Pulled Turkey

Cuban Midnight Sandwich

‘Adios, Turkey’ Casserole

Mayonnaise, Mustard & Italian Dressing Hoagie Rolls Turkey Ham Sliced Swiss Cheese Dill Pickle Slices

Diced Turkey 1 - Can of Cream Soup 1 - Can of Diced Tomatoes 1 - Onion Shredded Cheese Sliced Mushrooms Tortillas cut into Strips

Ingredients:

Directions:

1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease the baking dish that you will be using.

2. In a small bowl, combine and mix the black olives, onions, and cheese.

3. In a small skillet, heat enough oil to glaze the tortilla, and cook until soft and moist. Then, slowly lower the tortilla to be dipped into the enchilada sauce.

4. Add turkey and cheese mixture to center of tortilla, roll it up and place in the prepared dish.

Repeat this process until the bottom layer of the dish is covered and then fill the pan with the remaining enchilada sauce.

5. Repeat process with a second layer; spread remaining sauce on top and sprinkle with remaining cheese mixture. Bake 20 minutes in the preheated oven, or until cheese is melted.

Directions:

Ingredients:

1. In a small bowl, mix together the mayonnaise and Italian dressing. Spread together the mixture on the hoagie rolls. Smear each of the rolls slightly with their own coat of mustard.

2. On each of the rolls, nicely package the various layers of turkey, ham, and cheese. After tucking in the various meats, place the sliced pickles in and close the sandwich. 3. Slightly glaze the bottom and tops of the hoagies.

Heat a non-stick skillet over medium high heat. Cook sandwiches for 2 minutes, pressing down with a plate covered with aluminum foil.

4. Flip, and cook for 2 more minutes, or until cheese is gooey and stringy.

5. Slice sandwiches to fit mouth accordingly and enjoy!

Tip to the Thanksgiving novice: It is a marathon, not a sprint!

2018

Directions:

1. Preheat oven to 350 degrees F (175 degrees C).

Lightly grease a casserole pan worthy enough of this challenge.

2. Mix together the turkey, chicken soup, tomatoes with green chiles, onion, bell pepper, 1 cup Cheddar cheese, mushrooms, garlic, and chili powder together in a bowl.

3. Cover the bottom of the casserole dish with half of the tortilla strips that were sliced; pour the turkey mixture onto the tortilla layer. Top with remaining tortilla strips. Cover dish with aluminum foil.

4. Bake in the preheated oven for 1 hour. Sprinkle with the rest of the cheddar cheese on top.

5. Return the pan to the oven to melt the rest of the remaining cheese for about 15 - 20 minutes.

6. And to top it off, we finish our main course with a sliver of refrigerated pie paired with an ice cream scoop that is sure to satisfy and solidify the food coma.

As the days get shorter and colder, many students get the urge to cozy up inside. Winter break may be the perfect time to catch up on all the Netflix series you had no time to binge during the term, but that doesn’t mean you should spend every day cooped up inside. This is a beautiful time of year in Oregon, and there are plenty of winter activities for you to enjoy.

Bundle Up for a Hike

Eugene Holiday Market

A little cold never gets in the way of enjoying the great outdoors. Cure your cabin fever by trekking 12 miles of interconnected trails, including Spencer Butte Trailhead, along the Ridgeline Trail of south Eugene. The Sweet Creek Falls Trail is about an hour’s drive away, but it boasts 11 gorgeous waterfalls. Remember to be cautious and bring a friend on rainy days, as trails can get slippery and muddy.

It’s the Saturday Market, holiday edition! Find the perfect Christmas gift from an array of local artisanal crafts and enjoy a wide range of cuisine at the food court, all inside the Lane Events Center. Ring in a colorful New Year at Eugene’s Psychedelic Ball, featuring a light show by Mad Alchemy, for just $12 at historic WOW Hall.

Spend a day in Portland. . .

Escape the valley and head north, starting your day with service at the Oregon Food Bank to help feed families this holiday season. Head up to the historic Pittock Mansion for its annual Christmas decor extravaganza. Next, warm up with a Spanish coffee at Huber’s downtown, a Portland staple served with fiery, choreographed theatrics. End the day at ZooLights, the Oregon Zoo’s annual winter festival.

More than 1.5 million lights will illuminate the zoo this year from November 21 to January 8. Tickets are just under $18, but the dazzling display and Insta-worthy moments are totally worth it.
