Local producers & suppliers As any food lover will tell you, that this all down to the quality and freshness of the ingredients that go into each and every dish. Micky and his brigade have focused their attentions on using local producers and suppliers wherever possible: “ Our meat is supplied by Southend-based butchers John Lothian. For example, they make our burgers to my own recipe and using locally reared Gloucester Old Spot pigs to make our amazing Pork and Leek sausages.
Micky Walker may not have his own TV show or series of bestsellers in bookshops across the UK - but the Holiday Inn Southend’s Head Chef deserves greater awareness. The modest 52-year old is delighting customers with his take on Modern British Classics and promises there is more to come: “People do say that we’re serving the sort of food you wouldn’t expect in a hotel of this type.Although I’d say the menu is designed for all tastes, we are cooking for more discerning customers. Recently, the 1935

Our vegetables come from a farmer in Saffron Walden and we’re always looking for new sources of great, local produce as the seasons progress. So in September, I’ll be re-introducing locally caught and shot game onto the menu.”
Heston Blumenthal With British tastes becoming more demanding and adventurous, customers at the stylish 1935 Rooftop Restaurant & Bar can also expect some of the techniques and theatre served up by the likes of celebrity chef, Heston Blumenthal.“95% of our food is absolutely fresh and we’re investing in new kit that means we can create foams for dishes, ice cream in seconds whilst at your table and our own, homesmoked food. That’s why our new menu will feature Home-Smoked Duck with Potato and Celeriac Rosti accompanied by a Pear Puree and Pomegranate Dressing, plus our own Smoked Haddock served with Saffron Potato Salad, Crispy Quail Egg and Haddock Chowder.”
Trio of Duck Walker’s particular love of duck is reflected by the addition of a Trio of Duck (the breast, leg and a confit) presented with Beetroot Mash, Cavalo Nero Cabbage and Berry Sauce. “We’re giving our customers three different types and styles of cooking with one type of meat. As a result, you can enjoy the different tastes and a better culinary experience from one dish.” Lovers of fish will not only be delighted by the afore mentioned Home-Smoked Haddock but also the 1935’s Salmon Mousse Ballantine with Lime Leaf Jelly and Pea Shoots. For those who enjoy the delicate flavour of lamb, then the meltingly tender Duo of Lamb (slow braised belly and a roasted rack) with Dauphinoise Potato, Courgettes and Mint Puree and a jus of Scallions and Rosemary will be well worth ordering.
“It’s definitely not‘ping and ding’cooking,”says Micky, “But there are times when you don’t want anything too fancy, so I’ve balanced the menu to look after all tastes and moods. And if there’s something you really want but can’t see on the menu, please don’t hesitate to ask. We go out of our way to accommodate people.For example, we had one couple who wanted to have some oysters with their meal.They were quite specific about the type and grade of the shellfish they wanted. We contacted our supplier and made an order but were sent the wrong ones, so we sent them back and re-ordered. Again the wrong ones turned up but rather than pass them off as the ones our customers wanted, we again rejected them. It took several more goes before we got the required oysters but we got the right ones in the end and our guests were delighted with them.That story and the new menu sums up what the 1935 Restaurant is all about; giving a better experience.” The fully sound-proofed 1935 Rooftop Restaurant & Bar - a reference to the year that airport opened as a municipal airport for the public - is open daily for breakfast, lunch and dinner. riends of Shoebury Common’s Peter Lovett wrote last month about his concerns over the proposed seawall to be built on Shoebury Common. He was, in fact, highlighting an injustice perpetrated by the former Tory-led Council, which chose to hold back a scheme essentially ready for planning approval last year until the eve of the local elections, in the belief that it would then be a done deal.
On behalf of the new flood forum, I attended the Development Control Committee meeting at which the scheme promoted by the Tory Council was passed. It is common practice for the Council to approve its own schemes, something that needs to be addressed, especially in the light of such public opposition to its plans. The ‘preferred’ scheme to protect Shoebury was passed and has since been described as ‘outline planning approval’, although this is now denied by the Head of Planning, Peter Geraghty.

The material of the estuary facing surface of the wall was not specified. No provision was made for water trapped between the existing and proposed walls. No provision was made for the effects of the bund on land drainage. No provision was made to prevent vandalism on the beach huts, trapped between the walls, or the wall itself. No relationship was drawn between the effect of the agreed lagoon plans and the sea defences. No consideration was given to the effects of defective and bodged repairs to the walls at the Garrison/Gunners Park.
Mr. Geraghty states the application was a ‘full’ one and that ‘the application does not need to include finite detail’, which apparently means that the approval could be granted with the following details not finalised and therefore beyond the reach of the public for comment :J U LY 2 0 1 4

No mention was made of a proposed contribution to the seawall construction costs. No evidence was provided for the silt nature of the cliff slip soil stored at Gunners Park, for use in constructing the bund. A sample I hold shows the material to be clay. No consideration was given to alternative schemes or public objection to the proposed scheme.
All this may now seem irrelevant in the light of publicity suggesting that the newly constituted Council will review the need for such defences, or at least re-visit the details. But the matter still sits on a knife-edge and is further complicated by the rapidly submitted application from the Gunners Park/Garrison developer for hundreds more houses to sell, with only a contribution towards the seawall on the table. No social housing, no infrastructure improvement and properties probably not insurable when you consider the standard questions prospective insurance companies would ask about local flood risks and defences. The walls at this flood plain site further west in Shoebury are in a lamentable condition, no plans exist to improve them and the liability of

a former Garrison developer to maintain them has been bought off for the derisory sum of £120,000. In the name of Great Wakering Councillor Brian Efde, sadly deceased, The new flood forum is born to provide an over-view of Southend flood risk, not just at Shoebury Common, not just to utilise the clay from the cliff slip, but through-out the Borough. Consideration needs to be given to drainage, water table levels and the concreting of flood plain sites in order to make Southend safe. Last August should have been a wake-up call, we can consider ourselves lucky that forecast storms died out before they reached Essex in January, whilst Somerset floundered. The new flood forum therefore asks all 51 councillors to address the flood issues without bias or vested interests, through-out Southend and with serious consideration for the devastation potentially caused by a major incident. This is not a political football, but people’s lives, livelihoods and possessions, things that cannot be replaced by saying ‘whoops, we got it wrong’! By Alan Kristian

Selecta DNA S
ince 1st October 2013, Essex Police has been running Operation Insight, which is aimed at reducing burglary offences and apprehending those involved in this crime. As a Neighbourhood Policing Team we have been identifying vulnerable premises and repeat victims, encouraging the use of crime reducing tools, such as property scheduling and marking, Selecta DNA and increasing Neighbourhood Watch. We have also been on hand to offer an in-depth assessment of properties and give pointers in regard to security measures which could be taken. Through the Thorpe Neighbourhood Meeting process, we have also been looking to raise awareness of Selecta DNA, which is a substance being supported by the Burges Estate Residents Association, who are engaging in the purchase, the non-profit £15 sales with no additional fees and the distribution of SelectaDNA, which comes in a kit form.
What is Selecta DNA?
So, what is SelectaDNA? In simply terms, it is a registered unique number contained within a chip; these chips can be applied to property with the use of a clear adhesive solution and when dry, is virtually impossible to remove!

Film review : Maleficent S
o what does an estimated budget of $180,000,000 get the movie-going public these days? Well, it’s reportedly what this semi live-action Disney reworking of the Sleeping Beauty fairy tale cost to make, complete with Angelina Jolie (and her CGI enhanced cheekbones) as the eponymous ‘heroine/villain’.
King of the Human Kingdom Hailed as Jolie’s in-camera comeback, she is well cast as Good Fairy Turned Bad by the betrayal of her childhood human sweetheart Stefan (Sharlto Copley), driven by his ambition to become King of the Human Kingdom that neighbours the Moors, an idyllic and tranquil land where Maleficent grows up, filled with magical forest creatures, most of whom seem to have wings. Ah yes, wings. They do feature in this film. Stefan’s act of betrayal consists of him hacking off Maleficent’s wings which is the price of replacing the incumbent monarch whom Maleficent and her magical forest creatures (winsome fairies, giant animated trees) have defeated in battle. Plus she has a spooky ability to spout green and yellow swirly lights from her hands. And Angelina Jolie has very big hands.

The Curse
King Stefan goes on to have a child – Aurora (Elle Fanning), whom Maleficent proceeds to curse with the whole She Will Prick Her Finger on a Spinning Wheel and Sleep for Eternity deal so familiar from the original Sleeping Beauty fairy tale. But Lo! During the course of Aurora’s secluded childhood being cared for in exile by a trio of weird fairies (Imelda Staunton, Leslie Manville and Juno Temple), Maleficent watches over Aurora and comes to love her, regretting the curse she had previously inflicted.
Kiss of True Love Happily a handsome Prince comes along in the forest, but alas he is unable to break the curse by kissing the now sleeping Aurora. That takes the love of Maleficent herself, being a kiss of true love. So far so weird. Then there’s a big fight with a dragon and Maleficent gets her wings back – hurraaah! If it sounds messy and incoherent, well, it is. The supporting cast do their best but it’s really the Angelina show – and there is nothing wrong with that. But $180,000,000?? Really?? by Angela Dress

How did it all start?

A quick history then. Our founder, Karen Turrell, had been dealing with her own pain for years, ever since she suffered back and neck injuries as a teenager. After having children, she started to think more about well-being and happiness and was determined to get rid of the pain once and for all. Physiotherapists frequently re- aligned and mobilised her, but she began to notice that it was actually her posture – and how she used her body every day (the way she slept, sat, stood, walked) - that greatly affected how she felt. Karen started to develop and perfect techniques that enabled her to help herself. She then began to help her father who had been suffering from Post-Traumatic Stress Disorder and arthritis.As she spread the word, and invited more people to Stride, it was clear she had invented a very real and very effective solution.

In the Kitchen with Judy Barden
400g fresh forced rhubarb, cut into 4cm lengths Small knob of butter Grated zest and juice of 1 orange 75g golden caster sugar 380g jar good-quality lemon curd 250g tub mascarpone 4 stem ginger biscuits, crushed Icing sugar, for dusting Method : 1. Preheat the oven to 220°C/fan 200°C/gas 7. Scatter the rhubarb in 1 layer on a baking tray. Dot with the butter, drizzle with the orange juice, sprinkle over the sugar and zest and roast for 15 minutes, until just tender. Set aside until cool. 2. Divide between 6 glasses or dishes. In a small bowl, roughly stir the lemon curd into the mascarpone with a kitchen knife to form a ripple effect and spoon on top of the rhubarb.

his is really just a simple dessert that you assemble in minutes once the rhubarb has been roasted. The tangy orange rhubarb works really well with the creamy mascarpone and the lemon curd. All a bit of a cheat but then it is summer and you don’t want to spend too long in the kitchen.
Scatter over the biscuit crumbs and serve dusted with icing sugar.

Men UTD - The Final Instalment
Y
ou may have read in previous issues of the Oracle that a group of ten lifelong friends from Southend were planning to cycle from Land’s End to John O Groats (LEJOG), raising money for Prostate Cancer UK. A year ago, some of them didn’t even own a bicycle and the prospect of having to ride the length of the UK over 2 weeks was very daunting. They completed their epic journey at 16:40 on Friday 13th June, weary but elated, having ridden for fourteen consecutive days, covering a total of 1,082 miles and climbing an astonishing 58,629 feet!!!….there are not enough noughts to calculate how many calories they collectively burnt!
Over £10,000 raised! They will have raised over £10,000 for Prostate Cancer UK and this money will contribute to raising awareness and treatment for this disease. As mentioned in these pages previously, prostate cancer kills more men in the UK than any other and the recent MEN UTD campaign, fronted by the comedian Bill Bailey, is assisting in bringing a greater level of understanding of the disease into the public domain. Our cyclists, with a group average age of 54 years, considered this charity to be the most suitable recipient for all the generous contributions and pledges they have received and should you like to

y name is Ashley Dalton and I have been asked to tell you a bit about my experience of being a school governor at Shoeburyness High School. I have been a school governor for 10 years. First I was a school governor at Thorpe Greenways Infant and Junior schools and was proud to be a member of the governing body that oversaw the schools become a federation and work more closely together for the benefit of all the children. When my daughter joined Shoeburyness High School 3 years ago I became a governor there and was bowled over by the sense of community generated by the school.
Being a governor of an Academy school like Shoeburyness High School means being a director of a company and trustee of a charitable trust. It is a responsible position and requires commitment and attention to detail. It also means that you need to be willing to ask questions, challenge the status quo and seek help and support in order to learn about the school and being a part of the governing body. Yes, there are meetings to attend and governors manage the finances, strategic development, vision and performance of the school.
SHS is all about wider community At Shoeburyness High School community isn't just about the students, teachers and other staff, it really is about the school community in the heart of the local community. Whether it’s engaging with local churches, running the Shoeburyness Debate or getting involved in local arts, culture and sports activities, Shoeburyness High School is all about the wider community and supporting our young people to become active, responsible members of the community. It's also about helping the local community recognise our students as the positive, engaged young people that they are.

By overseeing and challenging budgets, questioning and interrogating exam results and spending time planning strategy and working out how to develop the school further, we work towards the end result of creating a school that supports students and the wider community in which they grow and learn. Being a part of that, attending meetings and visiting the school might seem a bit daunting. Support and training is available to all governors and established governors are always willing to offer help and guidance.
Something to suit everyone There are so many roles to play on the governing body that there is something to suit almost everyone, whatever your interests or skills. You need to have a basic grasp of numeracy and literacy so that you can follow reports and the data that we use to look at school performance and after that it’s a chance to bring your personal skills and experience and use them to help develop Shoeburyness High School and Shoeburyness as a whole. Being a governor means I often attend awards evenings, music and drama performances or competitions in which our students are taking part and I am invariably moved by our students’ achievements and how they represent the school. The privilege of being a school governor is that, by setting the strategic direction for the school, we get J U LY 2 0 1 4
to help make sure that vision, commitment and resources are available to support young people to be well-rounded, mature and independent members of our community.
