In our third Cellar this year, we mark our 50th-anniversary celebrations with an exceptional wine from one of Opimian’s most loved winemakers, Mauricio Lorca. It is crafted from Argentina’s flagship red wine variety, Malbec, sourced from high-density vines grown 1,250 metres above sea level. At these heights, a 25-degree variation between day and night temperatures allows the fruit to mature slowly, achieving optimal flavour and balance. The Gran Malbec is a perfect example of how the wines across Lorca’s portfolio exude his passion for excellence. Its deep ruby purple hue foreshadows a wine rich with notes of earthy blue and black fruit. A year of maturation in both 90% French and 10% American barrels adds the warmth of wood spice. The generous fruit core is matched by well-structured tannins and refreshing acidity. Ready to savour and will continue to evolve in cellar. 2023-2029 – lw

Even though South American wines are considered New World, wine has been made there since the 1500s. By the 1600s, the quantity and quality of Chilean and Argentinian wines resulted in prodigious domestic consumption and the beginning of an export business.

There is no denying that the South American wines offered in this Cellar are top quality and very reasonably priced. Opimian's Masters of Wine have tasted and selected some old favourites and some wonderful new wines that you simply have to try. This is always an excellent opportunity to stock up.

Discovered by Michael Palij, MW, Foxtrot is known for its quality Pinot Noir. Michael Palij tasted Foxtrot in the UK at a Canadian wine event and was mesmerized. He declares it amongst the best he has ever had from Canada - and thus the introduction to Opimian. Those, along with Niagara wines from Pearl Morissette, Karlo Estates and Meldville Wines, and Canadian whisky from Harris Beach, bring you the largest Canadian selection in Opimian history.

Climate and Winemaking

Climate is critical to winemaking. The soil and the vine both play their part, but climate is the key to grape and wine quality, as well as yield. Wine grapes are incredibly sensitive to weather extremes. Excessive rainfall, drought, frost, hail, extreme heat, and wildfire smoke can all devastate a crop. As can an ever-expanding array of pest and disease adversaries. Extreme weather events are becoming increasingly frequent in many of the world’s wine regions, and quality and yields are under threat.

Flaming hills, flood-submerged wine regions and hail stone blanketed vineyards have captured a lot of attention recently. Climate change’s impact on the wine industry has been present for some time though, and global warming is well documented through decades of wine production. A look at the trend of alcohol levels on wine labels in classic regions tells this story. Alongside steadily rising alcohol levels, acidity levels in grapes were dropping, tannins were softening, and aromas were moving from fresh, to ripe, to jammy. Wine styles have been evolving right beneath our noses.

Yields have also been impacted by climate change. Many regions have suffered reduced crops due to severe frost, hail, extreme

heat, flood, and drought. Burgundy has seen more than its share of these extremes, resulting in desperate shortages of wine on the shelves. And inflated prices for the bottles that do make it that far. Viticulture has become a risky investment in many regions, and winemaking a vastly more challenging profession than it appears. It’s not all Winemakers’ dinners and glasses of Chardonnay on the patio.

But does Winemaking affect the climate?

It is undeniable that the wine industry comes with a footprint. Viticulture involves the burning of diesel. Winemaking consumes energy for refrigeration and equipment use. The cargo ships and trucks that distribute wine across the globe require fuel for their engines. However, there are many excellent examples of sustainable, organic, and regenerative wine growing across the globe. Producers have found innovative ways to get themselves off the grid, recycle wastewater, incorporate native plants and animals into farming, and reduce or eliminate emissions. International foundations like the Porto Protocol and International Wineries for Climate Action lead the way, showing the industry what is possible through collaboration and commitment to meaningful targets. Despite its footprint, the industry is proactive and innovative, and not shying away from its responsibilities.

So, what is next for the wine industry?

Adaption is the new buzzword. Leaf and canopy management strategies are employed to slow vine growth and cool the grapes. Harvesting earlier helps to reduce sugar levels - and therefore alcohol levels - without loss of quality for some varieties. Overhead hail nets as seen in Mendoza can intercept crop destroying frost nuggets before they cause harm. Adaption is a way to hold on to the status quo for a bit longer. But it is not a long-term solution.

The first thing they teach you in viticulture class is that 90% of a wine’s quality potential comes from the vineyard. In my experience, it is closer to 100%.
ROSS WISE MW is based in the Okanagan Valley, BC, where he works as Winemaker at the iconic Black Hills Estate Winery. In 2020, Ross became Canada's 7th Master of Wine, and during his studies completed a research paper on the implications of climate change on viticulture in the Okanagan Valley.

Longer-term mitigation requires rethinking vineyard establishment, re-evaluating grape variety choices within regions, and in some cases, relocating viticulture to cooler sites at higher latitudes or altitudes. Bordeaux, a conservative region steeped in history and tradition, reacted to the threat of climate change by adding once unthinkable international varieties such as Touriga Nacional to their approved variety regulations. In Alsace, 12th-generation winery Domaine Muré responded to the warming climate with an experimental planting of Syrah – a seismic shift for this white grape and Pinot Noirfocused region. In Chile, driven by a decade of drought, viticulture is moving south from existing regions to find reliable sources of water.

Adaption and mitigation are part of the story, but climate action is vital for the future of the wine industry. While sustainable, proactive viticulture and winemaking practices are increasingly common and impactful, the industry’s largest carbon footprint contributor is glass packaging. Does every wine need a glass bottle? No. There are more sustainable options for wines that aren’t matured in a cellar for a year or more between packaging and consumption. And if we are honest with ourselves, only a small percentage of the world’s wine production needs that. Along with packaging, distribution is also under the microscope. Shipping wine in bulk and packaging in its intended market has been sustainable success story for the industry. Drink local campaigns have strong merit and should continue to gain momentum. Wine growler, anyone?

The wine industry has always been good at telling stories. Climate change mitigation and action is now a part of that story, by necessity. Will consumers enjoy the evolving wine styles and climate-driven innovations in the chapters that follow?

Canadian wines and spirits are as diverse as our country. We first met proprietors Doug Barzelay and Nathan Todd on the recommendation of Michael Palij MW who tasted the Foxtrot wines at the annual Canada House tasting in London, England. We were fascinated by their passion for Pinot Noir and the wine lived up to its stellar reputation. We are thrilled to be able to offer a limited parcel of the 2020 Foxly Opimian Special Reserve Pinot Noir to our Members and look forward to sharing more wines from the portfolio as they become available. A swirl of this delicately hued wine releases a bouquet of cherry, red currant and plum wrapped in the warmth of toasty oak. The palate is notably concentrated with the red fruit profile evolving to flavours of strawberry, cranberry and plum. The barrel influence carries through with hints of cinnamon and clove adding dimension. Light tannins and fresh acidity frame the core as the wine tapers off into a satisfying finish. 2023–2027 –lw

Wild mushroom risotto

The 2021 Pearl Morissette Coup de Cœur captures the essence of the Niagara region in the glass. It is a notably aromatic example of Chardonnay made from vines grown in the red clay soils of the 24-hectare Redfoot vineyard. The property, located in the Lincoln Lakeshore viticultural area, is heavily influenced by the moderating effect of Lake Ontario. Here the mild climate and the long growing season allow the grapes time to slowly ripen while they develop maximum flavour. Elegant from the first aromas through to the extended finish, this wine offers an expressive bouquet of honeydew melon, peach, apple and lemon scents that are reinforced on the palate. Elevage in 10% new oak demi-muid and 90% foudre, in addition to eight months spent on lees, adds depth and texture to the wine. Fresh acidity perfectly supports the fruit creating a seamless balance. This wine is immediately delightful but also has the capacity to evolve in cellar. The best part? Opimian Members now have exclusive access to this small-lot Canadian gem. ARGENTINA

South of the equator, Argentina’s 200,000 hectares of vineyards, stretch from the 23rd to the 45th parallels. With close to 800 wineries, the country is the largest producer in South America and the fifth largest producer in the world. More than three quarters of the country’s vineyard area is located in picturesque Mendoza, situated at the foot of the Andes Mountains. This prime location

allows for the use of the mountains’ mineral-laden snowmelt to water the vines. Sheltered from the humid winds blowing in from the Pacific Ocean and situated a sufficient distance from the Atlantic Ocean, the climate is sunny, dry and continental. As the average temperature drops by one degree Celsius for every increase of 150 metres in elevation, altitudes of 430 to 2,000 metres above sea level

provide growers an opportunity to mitigate the summer heat. The low fertility of the soil naturally translates into low yielding vines that produce high-quality fruit. Mendoza is the top producer of Argentinian Malbec in the country; however, other classic varieties such as Cabernet Sauvignon, Cabernet Franc, Syrah, Chardonnay and Torrontés also thrive in the region.

Mauricio Lorca’s three vineyards –Los Barrancos, Los Inicios and Los Altepes – are located approximately 100 kilometres south of Mendoza in the exceptional region of the Uco Valley. Due to the high-density configuration of the vineyard, the implementation of drip irrigation and the practice of extensive green

harvesting, each vine produces only one to two bottles of optimally ripened, flavour-packed wine. Mauricio refers to his winemaking approach as “minor intervention,” maintaining the high quality of the fruit by omitting any additional or external product. The winery is now vegan certified.

The 2022 Lorca Fantasía Syrah earned high marks in the tasting, making it one of the Masters of Wine’s Coup de Coeur for this Cellar. I appreciated that the fruit was ripe and concentrated but not over the top. This wine also delivers great value which is always a winner in my books. The nose and palate are aligned with notes of pristine black fruit balanced by hints of nutmeg and clove. Good support is provided by integrated tannins. 2023-2025 – lw

A full-bodied wine made from 100% handpicked Malbec. Fermentation took place in concrete tanks at cooler temperatures allowing the fruit to shine through. The bouquet delivers smoky and slightly earthy plum and blackcurrant aromas, while ripe black fruit, allspice and herb flavours decorate the palate. 2023-2025 – lw

A classic expression of slightly minty red fruit pulls through from the bouquet to the finish. Maturation for one year in 75% French and 25% American oak barrel gives impressions of brown sugar, clove and nutmeg on the nose. Firm, interwoven tannins provide a smooth mouthfeel. 2023-2025 – lw

Cabernet Sauvignon is one of the specialties of the Mendoza region, and the Lorca Poético bottling is a great example. Its dense black fruit is matched by generous oak on both the nose and palate, while a hint of mint lingers on the finish. 2023-2026 – lw

Lorca’s Poético range delivers exceptionally concentrated wines. The 2019 Malbec has a bouquet of earthy plum and blackcurrant with notes of clove and cinnamon from time in barrel. The core is balanced with plum, blackcurrant, herb and mocha flavours that are in harmony with generous tannins. A robust wine that would pair well with a hearty beef stew. 2023-2026 –lw

The Espumante Lois Rosé Malbec is made from vines with an average age of over 30 years. It is an elegant sparkling wine with a pretty, pale pink hue and a profile of strawberry, cherry and plum. A pop of acidity balances the fruit, making this a great choice as an aperitif. 2023-2024 –lw

Braised Beef Short Ribs With Potato, Parsnip Purée & Asparagus

This stunning recipe is definitely one for the books. Braised beef short ribs are impressive, yet simple to prepare, especially if you cook them ahead of time. The sumptuous short ribs are melt-in-your mouth and packed full of flavour, perfect for a celebration or a cozy night in. Pair this gorgeous dish with an exceptional wine by Mauricio Lorca. The Grand Malbec by Mauricio Lorca will seduce your senses, with its deep ruby purple hue and flavours of ripe blackberries, plums and wood spice. This recipe truly is comfort-goals. Serves 2

Beef Short Rib

2-3 beef short ribs with bone (about 2 pounds)

2 tablespoons olive oil

2 tablespoons Montreal Steak Spice

• 1 large onion, peeled & quartered

1 head garlic, cut in half

• 1 cup full-bodied red wine

2 cups beef stock

1 large sprig fresh thyme

2-3 bay leaves

*Optional Aromatics:

• 1 carrot, peeled & roughly chopped

2 celery stalks, roughly chopped

• 4-5 mushrooms

Handful parsley with stems, rough chopped

Method for Short Ribs

1. Preheat oven to 375 degrees F.

2. Heat olive oil in a large, heavy bottomed pot. Rub the short ribs with steak spice.

3. Brown the short ribs in the oil until deep golden brown on both sides. Remove from pot.

4. Dump in the aromatics of your choosing. Sweat until lightly browned.

5. Deglaze pot with red wine, scraping up the brown bits from the bottom of the pot.

6. Pour in the beef stock.

7. Put the beef back into the pot. Add enough water to almost cover the beef.

8. Bring to a boil. Cover the pot and put into the oven.

9. Cook beef for 2-3 hours until bones are falling out and beef is super tender.

10. When beef is cooked, remove from pot and set aside. Skim the fat from the pot & discard.

11. Strain the gravy and put back to boil. Reduce the sauce until it is thickened to your liking.

12. Season with salt & pepper to taste.

Potato Parsnip Purée

2-3 Russet potatoes, peeled & large dice

• 2-3 parsnips, peeled & roughly chopped 2-3 oz heavy cream or half & half 2 tablespoons butter

• Salt & pepper to taste

Method for Potato Parsnip Purée

1. Place potatoes & parsnips into a medium pot and cover with water. Add a generous pinch of salt.

2. Cover and bring to the boil. Cook until potatoes and parsnips are very soft (fork tender).

3. Drain water and let the veggies “dry” slightly by releasing steam in the strainer.

4. Mash with butter, cream, salt & pepper to taste. Try not to over mix as the potatoes could become gluey.

5. You can use a stand mixer, potato masher, potato ricer or a fork to make the mash, whatever you are comfortable with.

Roasted Asparagus

10 - 12 asparagus spears

• Drizzle of olive oil Salt & pepper

Method for Asparagus

1. Trim asparagus tails. If you are feeling extra fancy, lightly peel the ends using a vegetable peeler.

2. Toss with a drizzle of olive oil, salt and pepper.

3. Roast at 375 degrees F for 8-10 minutes until bright green and tender with a slight bite.

*Notes

This recipe is very forgiving. It can be made ahead of time, re-heated and served beautifully.

The aromatics listed will add a ton of flavour but if you don’t have them on hand, or want to simplify, just using the basics will be delicious as well. Don’t be afraid to throw in aromatics you have lying around! I have made this recipe on many occasions always adding something different. Whether it’s a dollop of dijon, a splash of Worcestershire or a whack of horseradish, this recipe never fails.

• Always start with the longest process and work your way down to the shortest. In this recipe you would begin with the beef, followed by the puree and ending with the asparagus. This gives you enough time to get all the steps done, do the clean up and have nice, relaxed and stress-free dinner.

If you don’t want to use the classic oven method, using a crock-pot or an instant pot works as-well. Follow the same process until the oven, braise the beef and then follow the steps from #10 onwards.

CASABLANCA VALLEY

While Chile is generally deemed a New World wine region, the country has been growing grapes since the first Spanish settlers arrived in the mid-1500s. Over time, vineyard plantings have shifted from historic Spanish varieties to predominantly French grapes.

Chile hugs the Pacific coast, forming a long, narrow strip of land that runs 4,270 kilometres from north to south. Unlike most wine regions, the climatic differences between Chile’s various wine regions are felt along an east-to-west trajectory rather than north-south.

The vineyards nearest the coast are cooled by the frigid Humboldt Current, flowing north from Antarctica. On the other side of the Coastal Mountain range, the vast Central Valley region is hot and dry. The westernmost vineyards, in the foothills of the Andes, benefit from the moderating effects of higher altitudes and cool mountain air.

Chile is best known for its ripe, full-bodied Cabernet Sauvignon and Carménère reds. Once a commonly grown grape in Bordeaux, Carménère is now Chile’s signature red producing bold wines with intriguing dark fruit and green herbal flavours. Sauvignon Blanc and Chardonnay are Chile’s most planted white varieties. Both grapes produce their most exciting wines from the country’s cool coastal vineyards.

In contrast, in the 2020 vintage, 100% of the wine was aged in new barrique for ten months. The Echeverria family bring elements of both their French and Spanish heritage into their high-quality winemaking practices – embracing both traditional and innovative techniques. The family began growing grapes in Chile’s Curicó Valley almost 100 years ago, but it wasn’t until the late 1970s that Roberto Echeverria began his ambitious project to turn the family’s modest winemaking venture into an internationally renowned winery. Today, the estate covers 65 hectares of sustainably tended vineyards in the Central Valley. Roberto’s four children now manage the winery, crafting compelling wines with a focus on low intervention wines and cool climate terroir expressions.

The Central Valley is a large and highly diverse grape growing region spanning a wide swath of land between Chile’s coastal mountains and Andean foothills, due south of Santiago. This mixed case of three Cabernet blends is an excellent opportunity to taste across its terroirs. 13.5%

For much of its history, the Curicó Valley grape growing area was encompassed within the larger Maule Valley. It is now considered distinct, with a cool mesoclimate in its eastern vineyard area that gives particular freshness to its wines. This Cabernet Sauvignon and Franc blend definitely benefits from lively acidity, balancing its bold, tannic personality. Classic flavours of cassis and plum mingle with subtly oaked nuances of cedar and spice. 2023-2028 –jb

A low intervention wine fermented with wild yeasts in stainless steel tanks at relatively cool temperatures to preserve a fresh, fruity style. Bottled with no added sulphites. Chief winemaker Roberto Echeverría describes this cuvée as “full of ripe juicy fruit from Chile’s fertile sun-drenched soils.” This is indeed an apt description. Cabernet Sauvignon is the principal variety, with small additions of Petit Verdot and Cabernet Franc. Ripe red fruit aromas give way to juicier, tangier flavours on the palate. This full-bodied red has quite muscular tannins. Decant or cellar a year or more before opening. 2024-2029 –jb

The three varietals are aged separately for 18 months in new French oak barrels before blending and a further six months in oak to harmonize. FOCUS ON ALSACE

Nothing Like It

Imagine you are a Master of Wine candidate on Day 1 of the practical exam, facing a flight of 12 white wines that you are tasked with identifying. The question states that the first three wines are different single grape varieties from the same region. Where are we and what are these wines? With only two hours and fifteen minutes on the clock, it’s time to focus.

Aromas leap from glass 1 with floral and fruity enthusiasm – lychee, rose petal, grapefruit. A sip reveals similar flavours, a voluptuous weight and balanced but not high acidity. Most certainly Gewurztraminer. Next.

Wine 2 (you have labelled your glasses with erasable pen, so you won’t mix them up), is equally fragrant but this bouquet is steely and focused with notes of citrus, stone fruit, mineral and a whiff of petrol. That’s the tip-off. As they mature, Riesling can develop an appealing petrol note adding an interesting juxtaposition to the fruit. Its mouth-watering acidity confirms, this is Riesling.

Wine 3 is fruity, but not perfumed. It takes us on a late summer walk through the orchard, with notes of juicy red apple, pear, white blossom and honey. With moderate acidity and a dry finish, this could be a few different varieties. Let’s circle back to

the question of where, to see if that provides any guidance.

It’s true Gewurztraminer and Riesling can be successfully made in a number of places, but these wines have the harmonious balance, the long length and the intricate complexity that speaks to a region with a long history of growing these grapes. Calling on your knowledge bank (there is a lot of theory required to pass the tasting exam),

Alsace and Germany come to mind. You remember that ninety percent of Alsatian wine is white, but some delicious Pinot Noir is made there too. In Germany, two thirds of the wine is white, with the balance made from Pinot Noir and several other red wine varieties. Which one? Knowing the wines of Alsace tend to be weightier than those of Germany, you reason that these curvy wines were made from fruit grown in the sun-soaked vineyards found at the foot of the Vosges mountains.

Now back to wine 3. We know we are in Alsace, what else is grown here? Muscat is highly aromatic - unlike this wine. Strike that. The flavour profile aligns with Alsace’s other grapes Pinot Gris, Pinot Blanc or Sylvaner. (Time for what MW candidates refer to as a funnel.) This wine’s broad mid-palate points more to Gris over Blanc, while its moderate acidity is more typical of Gris than Sylvaner. Final answer, these delicious wines could only be a Gewurztraminer, Riesling and Pinot Gris from Alsace. Personally, I’d welcome the distinctive wine of Alsace on any practical exam, there is nothing else like it.

Cave Vinicole de Hunawihr

Nestled along the German border in northeastern France, the region of Alsace has repeatedly changed nationalities throughout its turbulent history. Germanic influences are distinct here, from the charming storybook houses in its picturesque villages to its tongue-twisting place names.

Despite its northerly location, Alsace is one of the sunniest and driest regions of France. This is largely due to the protective barrier formed by the Vosges Mountains which shield the region from oceanic rain-bearing winds. The vineyards stretch across a long narrow swath of land on the lower slopes of the Vosges, between the mountains and the Rhine River.

Centuries-long erosion from the Vosges Mountain and Black Forest have created an extremely varied patchwork of soils made up of granite, limestone, gneiss, schist, sandstone and more. This complex terroir has given rise to 51 superior Grand Cru vineyard sites, as well as numerous “lieux-dits” (distinctive single vineyard plots).

Alsace makes a wide array of wines, from sparkling crémant to dry whites, aromatic sweet wines and elegant reds. The region’s four most prestigious whites – often referred to as its “noble grapes” – are Riesling, Pinot Gris, Muscat, and Gewurztraminer. Pinot Blanc, Sylvaner and Pinot Noir are also important to Alsace.

ALSACE FRANCE

The Cave Vinicole de Hunawihr is a highly regarded cooperative winery. After the ravages of the Second World War, the wine region of Alsace was struggling to recover. In 1954, a small band of grape growers in the prized terroir of Hunawihr decided to team up to build a shared winery. This collaborative effort allowed them to pool their grapes and make fine wines together. Today, the cave boasts 110 members and over 200 hectares of prime vineyards in Hunawihr and the surroundings villages of Riquewihr and Zellenberg. Their holdings include several excellent Grand Cru sites and numerous top lieux-dits.

One of the most appealing characteristics of Alsatian wine is their richness and depth. Around the world, interest in wines made from grapes grown on volcanic soil continues to increase. This collection of ultra-premium wines hails from the volcanic and mineral-laden soils of the Cornellana Valley, a small patch of land tucked away in the prestigious Peumo region.

As recently as the 1990s, a significant amount of Chilean Carménère was mistakenly thought to be Merlot. Both vines produce full-bodied wines with a smooth mouthfeel. The 2020 Cornellana Volcano Sedimentario Carménère is an excellent example of this supple texture. Its concentrated red-fruit core is upheld by ripe well-integrated tannins. An intriguing nuance of minerality adds complexity to the plum and red fruit of the bouquet, while the palate displays a textbook balance of red berry fruit and herb. 2023-2026 – lw 14.5%
