One of the things I love about wine is the diversity of styles produced. I am often asked what my preferred wine is; this is one of the hardest questions for me to answer.

Obviously, we all have likes and dislikes, but I honestly don’t wish to drink the same wine, or eat the same dish, day after day. This cellar offering covers an array of wine styles; white, rosé and red still wines from around the globe, Champagne and sparkling wines from Beaujolais and Bordeaux, Sauternes dessert wines and fortified Sherries from Spain. There is a wine style here to satisfy all tastes, occasions and moods. These are complemented with a superior range of Cognac, Armagnac and Malt Scotch Whiskies.

The grapes are sourced by working closely with vine growers who share the same quality aspirations; to express the varietal and the terroir. Winemaker Peter Turner oversees the winemaking at the winery in Auckland where these four wines, great examples that are true to their varietal and region of origin, were produced.

Sited on the east coast of the North Island, Hawke’s Bay, with relatively low rainfall and warmer temperatures than other areas, has a maritime climate and is sheltered from the Westerlies by the Ruahine and Kaweka ranges.

Therefore, the emerging wine is a more tropical, riper style of Sauvignon Blanc, less mineral, but broader with aromas of grapefruit, lychees and balanced citrus on the finish. [01] M7 D8

Tasted as a tank sample just prior to bottling, on the nose there was delicate baked apple with a touch of cinnamon and rose petals. Soft on the attack, it has a genuine vinous characteristic and, in terms of structure, is more like a Pinot Gris from Alsace than a Pinot Grigio from Italy. [02] M7 D7

The grapes are picked and pressed at source in Marlborough. The chilled juice is then transported to Auckland in the North Island where it is fermented in stainless steel tanks at low temperatures, with minimal intervention apart from lees stirring. Typical aromas of gooseberry, lime sherbet, Galia melons and lightly smoky flint combine to give an intense and complex nose. Soft on the palate, it has a tremendous long, lime citrus finish. The fruit was harvested in the cool of early morning, refrigerated and then transported to Auckland where it was macerated in small, open top concrete tanks and the cap plunged twice daily to gently extract colour and flavour from the skins. After fermentation the wine was aged in French oak barrels, twenty percent new. The result is a style of Pinot Noir that is intense in colour with hints of toasty coffee and red cherries on the nose. The palate is concentrated and big with slightly chewy tannins. It finishes with a long, lingering flavour of red fruits and oak. M6 D6

Back then, I can remember visiting it in the original tiny premises with its staff of three.

Since that time, it has developed a quality reputation for innovation, sourcing wines from around the world and specializing in new and different packaging formats; Thierry is very much the driving force.

The vineyards are based at the foot of the majestic Drakenstein mountain range, a wine area that is wellknown for its extraordinary scenery and excellent wines.

This is a great example of South African Chenin Blanc. It is straightforward and intensely aromatic with pear drops and melons on the nose which follow through onto the palate.

With its soft attack, it has nice weight and balanced acidity.

This grape variety is a cross between Cabernet Sauvignon and Carignan. It was originally bred in California in the late 1940s in an attempt to combine Cabernet Sauvignon flavours with Carignan’s high yields and ability to tolerate heat. Intense deep plum in colour, the wine has a typical smoky, brambly nose which follows through onto the palate, with juicy acidity and a bitter cherry finish. M7 D8

Chile has much going in its favour. Natural geographical barriers such as the Andes, the Atacama Desert and the Pacific Ocean means that it has been protected from pests and diseases widely found in most wine regions. It is the only country where vine grafting is not required in order to protect against phylloxera. Sauvignon Blanc grapes from the Central Valley, the main valley running south of Santiago down to Talca, were used to produce this exceptionally fruity wine. [02] M8 D9

A cross between the elegant Pinot Noir and spicy Cinsault, the Pinotage is unique to South Africa. The grapes are grown in the Cape’s sun-drenched valleys and foothills where the vines thrive under ideal climatic conditions.

Gentle pressing gives the wine its salmon pink colour. The aromas and flavours are soft summer berries with a light, tannic structure. Not often made as a rosé, this wine is quite a new sensation. [03] M8 D9

The Whistling Thorn is a type of Acacia tree found on the savannas of Africa which possess three inch long thorns which are home to stinging ants that bore small holes into the bulbous swelling. When the wind blows the abandoned spines act as flutes giving the tree and this wine their name.

BERNARD PERRIN Negociant en Vins Ternand

The Beaujolais region, often considered part of Burgundy is, however, very different. The red wines are made from a completely different grape variety, the Gamay, and the soils are based on acidic granite compared to the limestone soils on which Burgundy’s Pinot Noir toils. Indeed, the northern part of the area known as Haut Beaujolais, home to the Beaujolais crus, is dominated by granite. These gently rolling hills produce ten crus, differentiated according to their soils, aspect and altitude of the slopes. The southern part of the region is where mostly appellation contrôlée Beaujolais is produced on golden limestone soils. Bernard Perrin, viticulturalist, wine producer and négociant was born here at Ternand. After twenty years making wine at his family’s estate, he established his own négociant business and knows the intricacies of this land and its people like no other. Bernard works with producers who share his passion for the region and its terroirs. 2010 was a cooler, more humid growing cycle than is the norm, making vineyard sites with optimum exposure and low yields absolutely key in producing quality wines for drinking over the next few years.

The fruit for this Crémant de Bourgogne comes from small plots within the Beaujolais appellation on clay-limestone and sandy-clay soils. Using the traditional method from Champagne, the grapes are harvested by hand and lightly pressed. After second fermentation in bottle, the wine is aged on the lees for a minimum of twelve months bringing forth the delicious mellow fruit and citrus aromas which give any Champagne a run for its money. Light in body with fine mousse and fresh, clean acidity, it makes an ideal aperitif.

Beaujolais Blanc is relatively rare. Less than five percent of Beaujolais’ vineyards are planted with Chardonnay where the soils are limestone-based rather than the granite suitable for Gamay. The vines are aged between eight to sixty years and were cultivated on southeast facing slopes with clay-limestone soils. The grapes were picked by hand and after a short period of skin contact were fermented at cool temperatures in tank. Post fermentation, the wine was left on the lees, developing greater richness and weight. [00] M7 D8

Although it carries the Vin de Pays designation, this wine has the typical characteristics of the Beaujolais region and the Gamay grape variety; it could easily be mistaken for an AC Beaujolais! The grapes, grown on Bernard’s estate, are destemmed and quickly fermented in tank at low temperatures to produce a light style with captivating berry and red fruit flavours. The Gamay grape, with its thin skin, is ideal for producing, refreshing, easy drinking wines such as this example.

The Domaine de Milhomme is located in the south western corner of Beaujolais close to the medieval village of Ternand where Bernard Perrin was born. His family has been growing vines here since the 16th century. Unlike most of the golden limestone soils that dominate this area, Domaine de Milhomme is planted on steep granite and schist slopes looking down into the Azergues Valley. The result is low yields and concentrated wines. Bernard prioritizes expression of the terroir over fruit using neutral yeast strains and relatively long maceration of eight to twelve days on the skins. It is the quality of these sites and their exposure which have enabled him to produce ripe wines even in cool years such as 2010. M7 D8

DOMAINE DE THULON, AC BEAUJOLAIS-VILLAGES, 2010, CARINE, LAURENT JAMBON $21.33

Domaine de Thulon sits in the Beaujolais-Villages appellation at Lantignié close to the border with Régnié. Owners, the Jambon family, have been vine growers in the region since the mid-1700s! Annie and René are now ably assisted by their children Carine and Laurent who has taken over the winemaking. The wines are made and matured in the old 12th century Château de Thulon which they purchased in 1987. René and Laurent together farm a total of 14.4ha of vineyards including Régnié, Morgon Les Charmes and Chiroubles. This wine comes from vines aged between twenty to fifty-five years planted on granite soils which provide depth and concentration. M7 D8

Vinified in much the same traditional way as the Beaujolais-Villages, this wine has more weight although it is one of the softer and more forward of the crus. Morgon is traversed by the original roman trade route linking Rome to Boulogne in the north of France. Here the soils are rather different to the other Beaujolais crus.

Known as “rotten rocks” or “roches pourries”, the terroir consists of decomposed schist containing iron and some manganese and is the reason for the ochre-red earth.

Domaine Champagnon is run by brothers Patrick and JeanYves who represent the third generation. It totals 16ha with 9ha planted in Chénas on granite and sandy hillsides facing northwest, east and south. The free-standing bush vines are twenty to eighty years old and produce wines with a powerful structure.

After the initial fermentation, the grapes are pressed and this juice, with the free-run juice previously extracted, are blended before a second, malolactic fermentation to soften the wines.

Moulin à Vent is considered to be the most structured of the cru wines. Its terroir was first identified around an old grain mill at the start of the 20th century, giving the area its name. The appellation created in 1924 was the first in Beaujolais. Its structure is purported to be due to the presence of manganese in the salmon-pink granites and sands which provide depth and pungency. Domaine de la Sionnière was established by Thomas Patenôtre’s great grandfather in the 19th century and Thomas and Estelle have built it up to its current 13ha of vines with an average age of sixty years. The family-owned house of Lamblin Fils, based in Maligny in the north of Chablis, is LAMBLIN FILS one of the oldest with a history that goes back twelve generations to 1690. Didier Lamblin, responsible for winemaking, works alongside his brother Michel and they in Maligny-par-Chablis turn have been joined by their sons Clément and Alexandre. The family continues to

develop the company and to look for ways to improve quality, with Alexandre spending a vintage in Marlborough, New Zealand this year. Lamblin Fils is producer and négociant with vineyards in the Petit Chablis and Chablis Premier Cru and Grand Cru appellations. The grapes for La Source come from vineyards planted close to the beautiful Château on a limestone plateau. All were harvested by hand and sorted again at the winery before de-stemming. The skins were left in contact with the juice for several hours prior to pressing. Fifty percent was fermented in new French oak and the balance in two to three year old barrels. The wine was left in barrel on its lees a further nine months before bottling. This is a truly fabulous rosé; there are not many that can pull off the use of oak in this way. It has super complexity on the nose with neither the fruit nor the oak dominating. With great weight and length, it is delicious! [00] M7 D8

The Premières Côtes de Blaye, on the opposite side of the Gironde to the Médoc, is home to Château Moulin de l’Espérance and its 18ha planted with fifty percent Merlot, thirty percent Cabernet Sauvignon, fifteen percent Cabernet Franc and five percent Malbec. The vineyard is split between two plots with 11ha on an unusual blue-clay soil with extensive calcareous deposits which give the wine its distinctive spiciness. Situated up in the north of the Médoc at Saint-Christoly, this estate belongs to the same group that owns Château Patache d’Aux and Château Liversan. 27ha, with a high proportion of Cabernet Sauvignon for this part of the Médoc, are planted on deep Pyrenean gravel overlooking the Gironde estuary. The grapes underwent traditional vinification followed by ageing in French oak of which twenty percent were new barrels. The resulting wine is more approachable when young than many Médocs, yet it will still mature and develop harmony with age. M6 D7

Château Guillou’s fifty-five year old, 4ha vineyard lies on the hillside on the western extremity of the Montagne Saint-Émilion on clay limestone soils. The property of the Saby family for over one hundred years, it was leased out to Moueix until 2003. The grapes were picked by hand and double-sorted prior to de-stemming and crushing.

Traditional fermentation with extended maceration was followed by ageing in a combination of French and American oak barrels, mainly one year old, for eight months. M7 D7

Here the local conditions in late summer, early autumn create mists from the River Ciron that only burn off late morning as the sun tries to break through. This allows the development of the Botrytis Cinerea fungus, or noble rot, which concentrates the grapes and develops specific aromatic characteristics. The grapes are harvested by hand one by one!

CHÂTEAU BASTOR-LAMONTAGNE, AC SAUTERNES, 2004 This is a large property in Preignac with 56ha adjoining Château Suduiraut in one square plot of silicate-gravel soil on chalk subsoil, more like Barsac terroir than that of Sauternes. The wines of Bastor-Lamontagne are correspondingly softer than the more potent versions up the hill, at the culmination of which is Château d’Yquem. 2004 was a great botrytis year with excellent quality, finesse and class. LA FLEUR D’OR, AC SAUTERNES, 2005 Bill’s own blend, he explains how it all started....”As a Sauternes specialist, I spend a lot of time there, and as I go on my rounds, I sometimes stumble across just a few barrels or a small tank of some really fabulously made Sauternes in lesser estates, in too small quantities for the growers to be able to do much with it. So I got into the habit of buying up, and putting all these little parcels of wine together at the end of the year into a single bottling.

There was never a spec to be adhered to, nor a style of richness to be followed. The only condition was that each lot should be exceptional. Then we started adding lots from Cru Classé estates that didn’t quite make it into their Grand Vin, and today these comprise a large part of the final blend”. [08] M6 D8

CHÂTEAU PARTARRIEU, AC SAUTERNES, 2008 This 150 year old property has been owned by the Mercadier family, previous owners of Château Suduiraut, since 1993. Paul Mercadier looks after the 11ha of vines in the commune of Fargues on the junction between the gravel ridges of the First Growths. The lighter, more alluvial soil filters the moisture well and yet the lower-lying nature of the terrain allows for less air circulation, as in Barsac, and contributes to a softer, gentler richness in the wines.

Gardet owns several of their own vineyards, but in the main grapes are sourced throughout the region from growers with whom they have been working for many years. The juice is fermented in an ultra modern, state-of-the-art winery in stainless steel tanks prior to the second fermentation in bottle.

This Tradition non-vintage has a large proportion of 2006 wine and is showing lovely, toasty qualities and the complexity that one can only find in Champagne. [02]

The grapes for this Blanc de Noirs came from Premier Cru vineyards around the village known as the birthplace of Champagne, Hautvillers. It is where the famous monk, Dom Pérignon, developed the technique now known as the “méthode traditionnelle”, to produce fine sparkling wines. This blend is based on the 2004 vintage and, like all the Gardet Champagnes, has a fine mousse and an attractive, textured palate. Some of the richness and complexity is no doubt due to the addition of special reserve wines which are aged in old oak barrels. [02]

Champagne is the only area where it is permitted to mix red wine with white to produce rosé. The white and red base wines were fermented separately prior to blending. Based on the 2007 vintage, unlike many rosé Champagnes this has a relatively low dosage of sugar giving it a delicious, refreshing, crisp palate. [02]

Managed by Christophe Prieux, his intention is to develop the business while respecting the values of terroir, local know-how and “l’art de vivre” which have been engrained in the House over the last hundred years. This is great news as the Champagnes produced by winemaker Stéphanie Sucheyre are truly wonderful! Sherry TOMÁS ABAD Jerez de la Frontera The Sherry market has seen a decline over the years. However, the area is one of the most fascinating; its culture, music, dances and, of course, Sherries.

They are produced in a range of styles from light, dry and elegant to rich, treacle-like nectars. I am pleased to report that there is a slowly emerging, quality-discerning sherry drinker, facilitated by great tapas bars and Spanish restaurants which help to capture the full essence of the region.

In the Solera system, each barrel contains wines of different ages. Wine is drawn from the oldest barrels and is replaced with the next oldest. The final Solera barrel may contain a wine that is more than fifty years old

After initial fermentation the wines are put into a solera system where a “flor”, a film of yeast on the surface of the wine, is allowed to develop in barrel. Manzanillas are light in style with a typical salty tang. This particular Manzanilla was aged for an extended period in oak giving it Pasada status and adding body and complexity. Serve it chilled as an aperitif, with tapas or seafood. [01]

Palomino Fino wines are also aged in the traditional Solera system and are then combined with the rich and luscious Pedro Ximénez to produce a Sherry with a deep mahogany colour and dried apricots, nuts and candied peel on the nose and palate. The Charente in the south west of France is Cognac country. To bear the name Cognac, grapes must come from the designated area which is split into five subregions, each bringing its own characteristics. The distillery and “chais” of Unicognac are some of the largest in the region. Based at Mosnac, in the subregion known as Petit Champagne, it houses sixteen of the traditional copper Alambic stills.

As the Cognac ages, a slow evaporation of the alcohol occurs which dissipates into the atmosphere, about two percent each year, concentrating the flavours and gaining complexity.
