Vignobles Canet

Vignobles Canet is based at a property in the Languedoc with a long, venerable history that dates back to the Middle Ages, when Lord Bertrand de Canet built a Château on the site. Its current owners, the Lemstra family, are originally from Holland, although they spent a couple of decades making wines in Burgundy before heading southwards in 2005. Initially, they set up in business as négociants, but the wines bottled under the Château Canet label are made from grapes grown in their own vineyards. The Minervois Rouge is a flagship wine for the domain, a blend of 60%

Syrah and 40% Grenache, both grapes that thrive in the region’s warm Mediterranean climate. The grapes are harvested at night to preserve their freshness, and this is further enhanced by long macerations and fermentations at relatively cool temperatures. Around 15% of the wine is matured in French oak barrels for a year, lending spicy complexity to the blend without overshadowing the fruit.

Medium ruby hue. Punching well above its weight, this red shows ample fruit, with blackberry, black plum, black cherry, baking spice and vanilla. I've rather fallen in love with the elegant, sculpted palate that this offers. The finish is neither too bold nor too retiring, showing a smorgasbord of velvety fruit wrapped in ripe tannins and sprightly acidity. 2027-2029– mp Oaked Syrah, Grenache, Viognier. 14.5%, $35

The New Language of Southern French Wine

Floris Lemstra, the owner and winemaker at Vignobles Canet, is the winemaker that everyone wants to meet: passionate, bright, open to new ideas, and yet aware of the weight of tradition that he carries. We absolutely loved his wines at the tasting (a Coup de Coeur AND a Master’s Case) and are certain that his winemaking ‘secret weapons’ help craft wines that prize elegance and drinkability over sheer heft.

‘Secret weapons’ is my phrase, but Floris was the first in France to use ‘Wine Grenade’ technology, which allows for micro-oxygenation in stainless steel tanks. This creates melded tannins with less astringency. Floris also helped pioneer ‘Bio Protection’: adding non-fermenting yeast to allow extended cold soaks, which extract colour and aroma rather than tannins. As Floris writes:

“Overall, we are very sensitive to the evolution of the consumer palate, particularly the growing demand for more elegant and lighter wines. Making wine in the south of France, with its abundant sunshine, especially in recent years, is not an easy task in that regard. Yet it reflects the reality of what consumers want, and it’s something we must keep in mind.”

The thirst for rosé shows no signs of abating. In this issue, we welcome back Château Vignelaure, a resolutely family-run estate with 56 ha of vineyards sited at more than 400 metres above sea level. This fully organic estate first released a rosé in 1992 and is celebrated both for its wines and for an impressive art collection (César, Buffet, Cartier-Bresson, etc.).

The limestone and clay soils give the rosé (equal parts Grenache, Cinsault, Cabernet) a concentrated core of delicious fruit that makes the usual stuff look positively insipid. Aged rosé, anyone?

Where the fizz flows, the sun goes—at least that’s the saying in Champagne. But let that not stop you from enjoying a Canadian summer! Champagne Didier-Ducos, based just outside Épernay, is the small récoltant whose wines put a smile on your face, whatever the weather. These are honest, hard-working Champagnes that reflect the humble origins of founder Adrien Didier, a Resistance fighter who started from scratch in 1950. His grandson, Nicolas, with his wife Clotilde, are currently at the wheel.

As if there were not enough goodies in the Cellar, in Collector’s Corner I would urge you to try the bewilderingly sophisticated Beaujolais from Château du Moulin-à-Vent, an estate that our own Natasha Hughes MW describes as ‘one of the Cru’s foremost estates since its founding in the early 18th C’. If you associate Beaujolais with the bad old days of damp Novembers and toffs in vintage motor cars, then please think again. This is a red wine of supreme pedigree, crafted by Édouard Parinet, a man of unquenchable enthusiasm and technical genius. Santé!!

What is a ‘Puech’ I hear you ask? An isolated hill in the Occitan language, no less. Life at Vila Voltaire is rather distant from Stéphane Yerle’s previous routine, consulting for the big Châteaux like Latour and Pibarnon, although one gets the feeling that he rather likes it here. Warmth, altitude, winds, and the

bonus of calcareous soils derived from crushed oyster shells offer the framework for his authentic blends. If Saint-Chinian to the northwest of Beziers is well documented, Coteaux d'Ensérune is a little-known IGP founded in 2009 to the west of Saint-Chinian. It comprises a limestone patch (with the oyster shells) on a series of foothills of the Montagne Noire rising up from the coast. It’s new and very promising indeed!

Medium ruby hue. Intense, gamey, fecund and slightly wild, with notes of dried herbs, raspberry jam, leather and baking spice. This is an old school Southern French red that wears its heart on its sleeve. There are sinewy tannins, plenty of alcohol and layers of jammy black fruit that drive the finish. Plum, cherry and berry are all here, sewn together with a lick of acidity. 2027-2029– mp Carignan, 14%,

This mixed case from Château Canet in AOP. Minervois features two bold 2023 reds: La Chapelle and Les Evangiles. Both wines are rich, full-bodied, and driven by ripe fruit and pronounced oak, offering flavours like raspberry jam, blackberry, milk chocolate, vanilla, and spice. The La Chapelle shows a robust tannic structure with notes of redcurrant, mulberry, and black pepper, pairing well with duck confit, while Les Evangiles leans into a deep purple profile with coconut-scented oak, juicy acidity, and bramble fruit. Domaine Jones

Katie Jones may have grown up in the UK, but the wild landscapes of Fitou in the southern Languedoc claimed her heart long ago. Originally Jones worked as the marketing director for the local cooperative, but in 2009 she set up on her own, and now crafts characterful wines from the grapes she tends in her old-vine vineyards. With the exception of her AOP Fitou, a classic Languedoc blend of Carignan, Grenache and Syrah, all Jones’s wines are made as Vins de France, which gives her the flexibility to craft her wines the way she wants to. From the zesty, vibrant Rouge Cerise through to the weight and heft of single varietal bottlings of Grenache, Carignan and Syrah, the reds are evocative of the perfumes of the local garrigue (the woody herbs and flowering plants that cover the Languedoc hills). Whites are opulent, without losing their freshness. A real demonstration of the value on offer in this little-known region.

WINES OF THE SOUTH OF FRANCE: Exploring Languedoc and Provence

Southern France is the country’s great wine powerhouse, a sunsoaked stretch of land where grapevines have flourished for over two millennia. Along this wide swathe of Mediterranean coast, Languedoc and Provence sit side by side. Though they share a long viticultural heritage and produce many of the same grapes, they diverge markedly in style, scale, and spirit. Their stories reveal two distinct visions of southern French wine today.

Shared Mediterranean Roots

Winegrowing in both Provence and Languedoc traces back to the 6th century B.C., when Greek settlers arrived in Marseille and began cultivating vines. These early wines were light in colour, precursors to today’s rosés, as grape maceration practices were still rudimentary. Later, Roman rule brought greater technical expertise and winegrowing expansion across the broader “Provincia Romana” from which Provence takes its name.

Today, both regions benefit from a classic Mediterranean climate: long, hot, dry summers; mild winters; and an abundance of sunshine. Wind systems like the tramontane and mistral sweep the vineyards, naturally reducing disease pressure and supporting organic farming. This sunny, breezy setting allows for excellent grape ripening and consistent quality from vintage to vintage. Sun-loving grapes like Grenache, Syrah, Mourvèdre, Carignan, and Cinsault thrive here.

Languedoc: France’s Quiet Giant

Stretching from the Spanish border to the outskirts of Provence, the Languedoc is France’s largest wine-producing region by area. It’s also the biggest contributor to the country’s origin-protected (AOC and IGP) wines—meaning wines made from designated geographic areas with regulated grape varieties and production methods. This system helps preserve regional identity and maintain quality standards.

The Languedoc’s scale allows for enormous diversity in both terroir and wine styles. Vineyards range from coastal plains to foothills and mountains, with soils of limestone, schist, shale, and gravel. This varied terrain supports everything from crisp Picpoul de Pinet whites, to rich red blends from Minervois and Corbières,

to sparkling wines in Limoux.

Much of the production falls under the IGP Pays d’Oc category, which spans a whopping 120 000 hectares and allows for a wide array of grape varieties and winemaking styles. These wines are typically fruit-forward and accessible, often made for early drinking. Meanwhile, the region’s top-tier AOC wines—from crus like La Clape, Pic Saint Loup, and Terrasses du Larzac—offer greater concentration and ageing potential.

The Rosé Wines of Provence

Provence, by contrast, has built its name around one wine style: pale, dry rosé. While reds and whites are produced here, rosé accounts for over 85 percent of output. These wines have become synonymous with the relaxed glamour of Mediterranean life — poolside soirées in Saint-Tropez, yacht decks off Cannes, and beach parties from Nice to the Hamptons. Celebrities, fashion houses, and luxury brands have helped elevate Provence rosé to icon status, but its appeal is grounded in centuries-old tradition and winemaking savoir-faire.

Provence’s vineyard area is compact and relatively unified in focus. Stretching across rolling hills and lavender fields, its terroir is shaped by limestone, schist, and sandstone soils. The best rosés come from the region’s AOC zones like Côtes de Provence, Coteaux d’Aix-enProvence, Coteaux Varois en Provence, and smaller crus such as Sainte-Victoire and Fréjus. Provence rosé is made primarily from Grenache, Cinsault, Syrah, and Mourvèdre. Grapes are harvested early to preserve acidity, then gently pressed or macerated briefly to extract their signature pale pink hue. Fermentation at cool temperatures helps retain delicate fruit and floral aromas. While rosé dominates, Provence also produces other distinctive wine styles. The Bandol appellation, perched above the Mediterranean, is renowned for powerful, age-worthy reds made mainly from Mourvèdre, as well as structured, gastronomic rosés. Cassis and Bellet are two coastal enclaves known for elegant whites with fresh, mineral-driven profiles. They are perfect partners to the region’s seafood-rich cuisine. These wines, though produced in smaller volumes, offer a more complex and traditional counterpoint to Provence’s popular pink exports.

Food Pairings from Land and Sea

Provence rosé shines with a wide range of foods. Classic pairings include grilled shrimp, salade niçoise, or Provençal vegetable tarts. Its light body, savoury edge, and citrussy lift also make it ideal for sushi, Mediterranean mezze, or a summer picnic spread.

Languedoc reds, particularly those based on Syrah and Mourvèdre, are bold and structured, pairing beautifully with grilled lamb, cassoulet, or hearty stews. The region’s whites, made from Grenache Blanc, Picpoul, or Roussanne, can bring zesty freshness or creamy weight, both perfect, albeit contrasting accompaniments to seafood, roast chicken, or cheese platters.

This Jones Vineyard Collection case includes two bottles each of Carignan, Grenache Noir, and Syrah, highlighting expressive Vin de France reds from 2024–2025. The Carignan is dense and fleshy, with smoky undertones and notes of ripe dark plum, fig, leather, and garrigue, making it ideal for hearty fare like lamb burgers or winter stews. The Grenache Noir offers a more delicate take, with bright red fruit, floral aromatics like peony, and a touch of spice, finishing long with hints of dark chocolate. The Syrah rounds out the case with opulent dark fruit balanced by savoury notes of black olive, lavender, and bitter chocolate, supported by lively acidity and ripe tannins—perfect alongside grilled steak. Champagne Didier-Ducos

Adrien Didier and his wife, Yvonne Ducos, set up in business as winemakers in Champagne in the aftermath of the Second World War. The winery is now run by members of the third generation of the family, Nicolas Didier and his wife Clotilde. Their grapes are planted across eight hectares of vineyards in the Marne Valley. Although they grow all three of Champagne’s key varieties –Chardonnay, Pinot Noir and Pinot Meunier – they have largely become known for their work with the latter variety, which lends richness and fruit to the mid-palate of their wines. Maison Foucher started out as a local affair run by cooper, Paulin Lebrun, in the 1920s. In time, son-inlaw Raymond Foucher took the helm and today it remains family centric; Marc Vappereau, who has been with the business for 25 years, is now the chief oenologist. The Loire, on the whole, is a land of crispy whites and lighter reds and M. Vappereau

prefers to keep it that way, working within the natural parameters to produce elegant expressions. Undoubtedly, there are those who enjoy rosé all year round, but for most of us, summer is when it counts. The colour, weight, flavour and serving temperature all appeal when the weather is warm, offering the desired level of refreshment. Moreover, rosé is an unheralded yet convincing pairing partner, accompanying Mediterranean cuisine, fish, barbecues and salads with ease. Though we think it is a modern phenomenon, it is likely that wines produced in Georgia many thousands of years ago bore a resemblance to rosé, as did examples made by the ancient Greeks. It is the cultured person’s drink.

PROVENCE

Although the coast of southern France is best known for its beaches and its glamorous towns and villages, the mountainous hinterland that lies beyond is more famed as the source of Provence’s palecoloured rosés. Delicious as these wines are – and there are some lovely examples in this offer – the region’s whites and reds are also well worth exploring. There’s no standard grape variety or blend linked with the region. Instead, these wines – whatever their composition – share a sense of place, a sun-warmed generosity and a distinctly opulent character. The whites are versatile wines, as much at home with white meats as with the seafood dishes so typical of Provence. The reds are best suited to pairing with heartier winter dishes thanks to the richness of their fruit.

Château Vignelaure

It is terrific to welcome back Château Vignelaure to Opimian after a ten-year absence, last offered in C251—many of Opimian’s long-standing members will fondly recognize this distinguished estate. The iconic, organically certified property, founded in 1960 by then-owner of Château La Lagune, Georges Brunet, is celebrated as a home for artistic expression. The current proprietors, Mette and Bengt Sundstrom, have, since 2007, continued a fine tradition that

once saw luminaries such as Cartier-Bresson and Miró exhibit their work. Once more, the label for the second wine, Le Page de Vignelaure, was designed by none other than Yves Saint Laurent. As might be expected, the wines excel no matter the colour; however, if special mention is due, this is a particularly strong stronghold for Cabernet Sauvignon, grown at 350–400m in a relatively cool area that allows for a long growing season and healthy vines with an average age of 30 years.

The redoubtable Sally Evans is back, now in her tenth year at her boutique, right-bank winery in Saillans. Hers are lively, confident wines that offer an excellent balance between fruit and oak. Having spent many years with a global consulting company in both Paris and Nice, Sally is a skilled communicator who brings Fronsac to life. She is assisted in her endeavours by her oenologists Anthony and Bruno, the latter a former collaborator of the late Michel Rolland at Le Bon Pasteur (which gives an insight into the house style). These are surefire bets that fit a range of palates, although those looking to discover a new style will be entertained by her swashbuckling, oaked white which does justice to the Bordelais tradition of exceptional whites.

For background info, Château George 7 is named after The Duke of Cambridge’s son, who, unless he opts for a different royal name, will become George VII of the United Kingdom, etc. For British-born Sally, the concept helps provide a USP in a sea of similar sounding estates and, as she explains, ‘the origin of George is from the Greek for “tiller of the soil” or farmer’ – so it is two times a fitting name!

Sally had been set on the idea of releasing a ‘grand cuvée’ for some time, although she wanted it to remain exclusive to her very best vintages. She was keen to build a tribute into the concept after the passing of Queen Elizabeth II on 8th September 2022 and considered the vintage good enough. Sally says this bottling is ‘both a tribute to an extraordinary Queen and a wine to mark life’s most meaningful moments, creating memories to treasure’. The label features ‘OR’ (French for gold) embossed in gold, and 2400 bottles only have been produced, each numbered by hand. This is a very special wine that will continue to develop for the next decade.
