FRANCE

Château Beauportail

An Ontario native in France? You better believe it. Jerzy Niedojadlo is still a relative newcomer on the rural French winemaking scene, but his wines continue to impress the panel, year after year. We suspect that his secret is that he knows a thing or two about barrel char, because he got into wine after buying a charcoal business in the Dordogne. It is a leap, but then his brother was a winemaker back in Niagara, and he surely has a nose for the possible, having chosen Pécharmant. Little known but capable of greatness, it lies 80km upstream from

Saint-Émilion on the outskirts of Bergerac. Cabernet Sauvignon thrives here, as does Merlot, especially when planted on the blue clay similar to that found on the Pomerol plateau. Niedojadlo has gone full Canadian with it, importing oak from back home to lend his wines a signature flavour.

The magnum is more expensive but worth the splurge: larger formats are less susceptible to oxidation and age more slowly. Expect it to hold up well for 20 years.

Merlot, Cabernet Franc, Cabernet Sauvignon, Malbec

Medium garnet hue. Pronounced, complex and wonderful nose showing both secondary and tertiary notes of black cherry, cassis, plum, fig, tobacco and forest floor. The fruit in these wines always seems to take the alcohol in its stride, creating a vast, aromatic, powerful, and structured red that is equally at home on the dining table or on the patio. Flavours include dark chocolate, cinnamon, clove, vanilla, cooked plum and black cherry. The tannins are fully resolved and well integrated with the acidity, driving a long finish. Deep ruby hue. I don't want to like this quite as much as I do – it's an absolute monster of a wine with masses of tannins, fruit and acidity. There is a stunning nose of cassis, black pepper, bay, black cherry, black plum, vanilla, clove, resin, griottes and tobacco. If you are looking for full-throttle reds, then look no further – this has everything in spades: gobbets of black fruit, firm tannins, avgas levels of alcohol, and enough acidity to hold it all in check. In Defence of Analogue: Wine Where Technology Cannot Follow

A few months ago, when AI dominated every search engine’s landing page and Nvidia soared past USD 4 trillion, a glitch in the Savey Meal bot — meant to help users cook with leftovers — cheerfully suggested adding ammonia and bleach to create “inventive” dishes. Developers were quick to warn about the dangers of relying too heavily on AI, even as they dreamed of the share options soon to come their way.

There’s no doubt digital tools are essential, but as you browse this month’s catalogue, it’s worth remembering technology’s limits. Some human endeavours resist standardisation or automation. Cooking, eating, and drinking remain stubbornly analogue, and this issue — exploring Europe’s viticultural backwaters — highlights wines rooted in that analogue DNA. From the sleepy hamlets of Beaujolais to the quiet reaches of Castilla, there is much to excite. Prices remain friendly, as do the wines crafted by people like Bodegas Concavins, a longtime Opimian partner.

These wineries operate far from screens; deals are made over long lunches, and AI is powerless against weather, soil, human skill, and time. Meaning still comes from human exchange, and wine has lubricated that ancient machinery since Babylon. This Analogue Issue may feature fewer famous names than some Opimian catalogues, but it is no less rich.

I feel “analogue” most deeply in places like Savoie and Beaujolais, where Alpine foothills, ancient varieties, granite soils, and Spain’s arid northern vineyards produce wines of purity, complexity, and true sense of place. Santé.

Viñas De Belesar MAURICIO LORCA

What Mauricio Lorca can do in Argentina, he can do in Spain. The thread here is the varietal profile of the wines, with or without oak ageing. Ribera Sacra is not particularly well-known, lying as it does in the middle of Galicia on the steep slopes of the Miño and Sil valleys. Galicia itself is something of a wonderful world, miles away from the parched interior of Don Quixote fame. It’s rich in local varieties, such as Godello and Mencía, on display here. Mencía is a grape that often manifests as relatively light, redfruited and earthy, but in slowripening areas - especially at altitude - it can reach blockbuster heights. The Camino Empedrado ‘Amandi’ is a blend of 70% Mencía, 20% Garnacha Tinta, and 10% local starlet Sousón, offering a real taste of the possible in rural Galicia. The grapes come from a single block in Amandi, planted on steep terraced slopes with southern exposure, and the wine is aged for 9 months in firstuse oak barrels, 70% American and 30% French. Get your teeth into it.

Deep salmon hue. Pronounced nose of black plum, cranberry, red currant, black cherry, cut grass and green pepper. This is a surprisingly full-bodied rosé, with black-fruit flavours of plum, berry, and cherry, accompanied by floral notes of rose and lavender. The finish makes a splash with a wave of refreshing acidity. 2026-2028 – mp

Pale purple hue. Leapout-of-the-glass nose of black pepper, licorice, cooked black plum and sawdust. On the palate, there are bright fruit flavours of cherry and plum, with smatterings of black pepper and star anise. The finish cracks along nicely with its juicy, come-hither quality. 2026-2028 – mp

Bodegas Concavins

The great unknown? When Priorat burst onto the scene in the 1980s with a flourish, Catalunya was rocketed to vinous superstardom, yet so much of the region remains off the radar. Move inland from the tourist hotspots and gently rolling hills balance the cool nights associated with high altitude and coastal cooling, which makes for a trademark Catalan flavour. D.O. Conca

de Barberà has its own climate, protected by a sweep of Catalan mountain ranges with an average altitude of 500m. Perhaps not much for Spain, but positively vertiginous when compared with Bordeaux or Burgundy. These wines have been firm Opimian favourites for many years, and they offer an unbeatable blend of value and quality. Conca de Barberà’s capital, Montblanc, is a walled town with significant Cistercian heritage, hence the long winemaking tradition: the area was the first in Spain to establish cooperatives back in the 19th century.

Pale lemon hue. The youthful aromas include ripe pear, sultanas and florals, showing plenty of richness. A juicy, forward palate of pear with cantaloupe melon makes this particularly moreish, and there is plenty of zip to balance out the ripe fruity notes. 2026-2029 – hm

SIMPLY SPAIN

Each year, I’m more convinced Spain is the most exciting wine country in the world. The diversity of its landscape allows for the production of refined cavas from Xarel-lo, Macabeo, and Parellada, fresh Catalonian whites of international varieties, Atlantic reds from Galicia, and concentrated red wines from high-altitude regions such as Ribera del Duero. Whereas a few decades ago the work in the cellar was the focus point of Spanish wines, these days most emphasis is put on the vineyard.

The palate lives up to the early promise, with layers of black fruit sublimely melded with sweet spice and framed by silky tannins. There is a velvety, mouth-coating and definitely hard-to-resist texture, leading to a long finish driven by delightfully ripe fruit. 2026-2029 – mp

Medium ruby hue. The nose sets a full, maturing tone with dry leaves and leather notes, alongside cherries and spice. The full-bodied palate combines robust tannins with oak spices to beneficial effect, adding extra weight to the fleshy, red-fruited profile. 2026-2032– hm

The family-owned winery of Costers del Sió is nestled in a quiet countryside area where continental and Mediterranean climates meet, creating ideal conditions for high-quality viticulture. Alongside vines, olive trees, and cereals, the region's rich biodiversity thrives, adding to the estate's biodiversity. The region, Costers del Segre, is known both for typical Spanish varieties (Tempranillo, Garnacha) and international varieties, such as Cabernet Sauvignon and Chardonnay. Whereas the Petit Siós Blanco and Tinto show youthful fruitiness and immediate appeal, Siós Cau del Gat and Alto Siós show greater complexity and concentration, with wellhandled use of oak.

There's a nosegay of lychee, wild rose, quince, rose water and orange peel. Though the acidity is moderate, it all works well together. 2026-2027– mp

Deep ruby hue. Elegant aromatics, notes of nutmeg and clove interspersed with black cherry, plum, balsamic, griottes, eucalyptus, cold ash and cinnamon bark. The palate shows surprisingly high tannins, firm acidity, and a moderate intensity of fruit. There is a lot to get stuck into in this one: baking spice, cinnamon, nutmeg, clove, plus hints of licorice, blackberry and dark cherry. 2026-2028 – mp

Deep ruby hue. The nose offers hearty cooked black fruit, cold tea, strawberry jam, caramel and clove. The palate fleshes out impressively, with warming alcohol pitted against refreshing acidity and mature tannins. There's black pepper, raspberry jam, wild strawberry, cocoa powder and licorice, all driving a most satisfying finish at this price. 2026-2028 – mp

Deep ruby hue. Aromas of ripe blackberries and dark plums enriched by violets and sweet spice. The relatively full body has usefully ripe tannins, making the mouthfeel soft and approachable, so that the overall style is not only flavoursome but supple. 2026-2029 – hm

AUSTRIA

Weingut Höpler

Rarely the most popular wineproducing country on the map, Austria has undergone a serious revival in recent years. Brand Austria has bet the big bucks on its star grape, Grüner Veltliner, selling the world a new alternative to me-too Sauvignon Blanc. Grüner wears many hats but is best understood as the streamlined, white-pepper-and-celery lightweight that dances with bright acidity and an uncanny ability to age. Its success has opened the door to a re-evaluation of what else Austria can do, and there are some gratifying finds. Höpler, a

family company run by Christof Höpler, is based on the northeast shore of Lake Neusiedl, a cult location responsible for some of the country’s most prestigious wines. The style here is crisp and varietally pure with more than a passing resemblance to the Loire’s central vineyards. If Chablis and Sancerre are your thing, then you’ll get on just fine with the wines of Höpler. The K7 Cuvée is also worth a look. It blends Blaufränkisch matured in stainless steel with Syrah and Merlot matured for 16 months in French oak. Think burly Cabernet Franc.

Balanced and focused on the palate, holding its own nicely, with flavours of ripe black fruit including cassis, mulberry, cooked black cherry, licorice and wood smoke. Pale lemon hue. On the nose this is still a baby, with promising hints of almond, peach and nectarine. Lively acidity is the key on the palate, driving along flavours of apricot, almond and walnut, with a salty edge and decent finish. 2026-2027– mp

Million Rousseau

The tiny Alpine region of Savoie is a gourmet lover’s dream, producing aromatic cheeses, world-class charcuterie, diverse milk products from cows grazing in sleepy fields, and life-affirming herbal liqueurs. So, what about the wine? The region benefits from perennial cooling mountain breezes that maintain the freshness of the wines in sunny conditions. Nimble, gracefully aromatic, and of moderate alcohol, they are, in general, delightfully approachable. Whether one is looking for a fresh, unoaked expression of Chardonnay or an herbal, floral white made from the local variety, Jacquère, the Savoie style is usefully gastronomic.

Pale lemon hue. Secretive nose that gives away a few leesy notes and dabbles in white peach. The palate is beautifully fresh and clean, indicating stellar winemaking, with slowly unravelling flavours of yellow plums, blood orange and other ripe citrus. 2026-2028–mp

Far be it from just tasting great in a paper cup, Beaujolais has legs. Let’s talk oak: great when it’s done right, but what about leaving it out every now and then? Beaujolais is the king of uplifting, oak-free glory. It is incredibly versatile; serve it chilled as an apéro or pair it with charcuterie, soups, white meats, duck, and terrines. Comparing the Despres Chiroubles to the Montangeron Moulin-à-Vent (oak alert: this cookie has seen some barrel ageing), one is struck by Gamay’s ability to reflect both terroir and cellar. Opimian has always sold a truckload of Beaujolais and with very good reason(s): it tastes great, works a treat with food, is always affordable and ages better than anyone thinks if you just give it a chance. Forget about comparing it to the Côte d’Or –appreciate Beaujo for its spritely individuality and unequivocal good value.

Domaine De La Revol

Domaine de la Revol family estate is situated in the southern Beaujolais, where the soils are composed of granite and calcareous clay. The region can be seen as the rustic cousin of neighbouring (and aristocratic) Bourgogne, and its honest expressions of Chardonnay, Pinot Noir and Gamay should not be overlooked. The estate’s traditional practices include carbonic maceration and maturation in large, older oak casks, allowing for primary fruit to take centre stage. Their vineyards are managed sustainably, and the wines show both authenticity and typicity.

Yields always decrease when vines age, but the quality of the fruit keeps getting better, proving that vines can hit their stride in what is, metaphorically speaking, their retirement.

The traditional method is, without doubt, the most quality-driven way to make sparkling wines, and to many a wine lover’s joy, Crémants keep getting better. They are made in eight different regions of France from a range of local grape varieties. In Bourgogne, like in Champagne, these are Chardonnay and Pinot Noir. With the same refined style and attractive autolytic character, there is tremendous value to be had, especially from the Chardonnaybased crémants that develop wonderful toasty and nutty notes when aged on the lees. Odin’s Spirit

FRANCE

Odin’s Spirit pays respects to the Viking heritage of Normandy in Northern France. Vikings coming from Denmark and Norway arrived here at the end of the first millennium, settling in the areas close to the sea. Whether they grew apples to any great extent is debatable, as Normandy’s reputation for abundant orchards has much to do with later monastic gardens. Pommeau is made by mixing unfermented apple juice with the local apple spirit, Calvados, to create a unique drink that combines sweetness, an alcohol level similar to many fortified wines, and superb fruit purity.

Medium amber hue. Attractive nose brimming with baked apples, cooked yellow plums, sultanas and woody spice. Though relatively sweet, the palate is far from cloying, offering a certain woody/apply grip balancing the residual sugar. Scrumptous flavours combine oven-baked apples and plum pie, surely making for a novel (and highly enjoyable) finish to any meal. 2026-2034 –hm

Château Bellevue, a part of the Arrivé portfolio, is a 19th-century castle in the Bons Bois zone of Cognac that was acquired by the family in 1972 and became their home. It sits on 108 hectares of land protected by a six-kilometre wall with 70 hectares planted to Ugni Blanc and Colombard for Cognac production – carried out on the estate – and another 30 hectares covered by a number of red and white grapes that go into the production of sweet Pineau des Charentes and table wines. It is also the site of a vine nursery, another Arrivé family venture.

CAMINO EMPEDRADO BLEND DE FINCAS

Highlighting the quality of one of Ribeira Sacra’s subzones, the Camino Empedrado Blend de Fincas takes in three parcels from the Ribas do Miño. These are north, south, and southwest-facing sites, respectively, highlighting, above all, the Atlantic influence. If Mencía’s ability to develop in a bottle was misunderstood, this will certainly settle the debate. Like a Rioja Crianza, Blend de Fincas has spent 12 months in French oak (first fill) and then 12 months in bottle; however, it certainly doesn’t taste like a Rioja. There is plush black fruit, both a mineral and leafy note, and camphor and clove allied to French oak as opposed to Rioja’s American. A bold effort from Lorca, the perennial pioneer who has understood Ribeira Sacra’s inclusion in Spain’s rich tapestry of terroirdriven excellence. This is against a backdrop of renewed confidence in Mencía following the success of Descendientes de J. Palacios and the like in nearby Bierzo, lighting the way for the next generation.

Opaque ruby hue. Pronounced nose with camphor, licorice, tar, cocoa powder, small black berries, black pepper, cloves and cedar. This is a carefully constructed and scented red, offering firm tannins and high acidity. The nascent fruit is tightly coiled, showing blackcurrant, black cherry, crushed blueberry, wet stone, black pepper, licorice and dried herbs. Sinewy and still far too young, this will unfurl nicely after a few years in bottle. 2026-2028– mp

No Opimian catalogue would be complete without a little sprinkling of stardust. Giovanna Ciacci, of impeccable winemaking stock, draws on 175 years of family knowhow in Brunello. Her estate, in the southeast of the region, on the popular road between Sant’Angelo in Colle and Castelnuovo dell’Abate, takes advantage of the particularly warm soils and adds diligent winemaking to the pot. Often, Brunello can struggle to justify its price tag, but under the leadership of her two daughters, its fruit is treated with the utmost respect. They favour a delicate extraction and ferment in temperature-controlled stainless steel, achieving a buoyant, silky Brunello that is matured in large, traditional, 12 to 54 hectolitre Slavonian and French oak barrels for 3 years. This is a winemaker’s wine, and her Rosso is made from the same grapes to exactly the same exacting standards, only spending less time in barrel.

ruby hue. Purebred Sangiovese on the nose with tinned strawberry, red currant, cherry and plum. Sangiovese’s charm is there on the palate, too, with elegant tannins, notes of wild berries and tobacco leaf, and all cloaked in refreshing acidity. There is exceptional density of fruit and an equally impressive finish that thoroughly justifies the price point. This is Baby Brunello in every sense. 2026-2030– mp

Medium garnet hue. Fulsome nose with an extra gear over the Rosso. Lengthy maturation in botte adds notes of coffee, dark chocolate and baking spice and this frames Sangiovese’s heady florals, black and red fruit and complex notes of forest floor and tobacco. A beefy red, this flexes those southern Brunello muscles with layers of fruit and tannins vying for attention, dried cranberry and strawberry seasoned with a savoury edge, liquorice and leathery tones on the top. The high alcohol adds even more power but it floats like a butterfly across the tongue like the proverbial heavyweight. This is an epic red and one that is remarkably enjoyable right now although there is no rush. Enjoy this – I took it home after the tasting! 2027-2031– mp
