Opimian’s Wine Consultant Jane Masters MW is a graduate of Bordeaux’s famous Institut d’Oenologie and was elected to the Institute of Masters of Wine in 1997.

Fluent in French and English, Jane is currently a member of the Council of the Institute of Masters of Wine, regularly speaks at industry seminars and is a Panel Chair for the International Wine Challenge.

This is a great offering with wines from North America and regions of Spain, with a few Tuscan wines for good measure. Burgess Cellars made excellent wines in 2009, which are now starting to show really good complexity and depth. Vinoselección in Madrid has come up with great wines from Spain including two sherries; look out for wines from the Ribera del Duero region in particular. Despite difficulties with the economy in Spain, producers are as determined as ever to produce top quality wines. In this cellar offering we are pleased to introduce a new producer from Tuscany, Cinciano, set in the Chianti Classico region with views overlooking the valley and San Gimignano. 33ha of Sangiovese vineyards are set in the rolling hills with olive groves and cypress trees – a truly Tuscan terroir.

many Californian wineries which buy-in grapes, Tom Burgess, Burgess Cellars Unlike founder of Burgess Cellars, believes in the concept of terroir and that the varietals must match the vineyard’s soil composition, sun and wind exposure and overall micro-climate. The 2009 harvest in Napa Valley was Howell Mountain, relatively smooth with a mild summer and steady weather. A pair of strong storms hit in October, but had little impact on the majority of the grapes, Napa Valley as they had already been harvested. Burgess Cellars has produced some

California

excellent wines in 2009 which are showing really well now.

Burgess Syrah, Napa Valley, Estate Vineyards, 2009 The Burgess Cellars Syrah 2009 is intense in colour with mellow dark fruit aromas. The palate is concentrated with flavours of smoke, dark fruits and good tannins with great depth and balanced acidity. Burgess Cellars grows Syrah in two locations, on the eastern side of Howell Mountain, on volcanic soils benefitting from the early morning sun, and at the Triere Vineyard, south of the town of Yountville in the Oak Knoll District, where the cooling influence of San Francisco Bay is more pronounced. The wine was aged 40% in French oak and 60% in American oak barrels.

Burgess Merlot, Napa Valley, Triere Estate Vineyard, 2009 This wine is produced from 100% Merlot grown on the hillside of the Triere Vineyard in the Oak Knoll District, south of Yountville. The grapes were picked before the rain hit due to the vines’ north-south orientation. This allows them to capture both morning and afternoon sun and to ripen earlier than those on the valley floor.

Cultivated on gravelly benchland, Yolo clay loam and Esparto loam, the mild stable temperatures allowed full flavour and phenolic development in 2009. The wine has intense berry fruits, cassis, smoke and herbs which are perfectly complemented by a hint of vanilla. The palate is rich and complex with layers of flavour and great finesse ending on notes of chocolate and cherries.

Burgess Cabernet Sauvignon, Napa Valley, Estate Vineyards, 2009 A deliciously mellow nose with spicy flavours of nutmeg and cedar, complement rich dark fruits. On the palate, the 2009 Cabernet Sauvignon from Burgess Cellars is soft and rich with fine texture, ripe tannins and a long finish.

Cabernet Sauvignon was blended with a small proportion of Merlot and Malbec. The grapes were cultivated on both the western side close to the winery and the eastern side of Howell Mountain, achieving full maturity and harvested before the October rain.

Wente Vineyards Livermore Wente Vineyards in the Livermore Valley was founded over 125 years ago, making it the country’s oldest continuously operated familyowned winery. The Wente family is also grape grower in other areas of California. Michael Parr, VP International Sales, has sourced wines from producers throughout the Golden State.

Since 1983, Castoro Cellars has been making some of the best wines on the Central Coast. The estate grown vineyards, located on the east and west sides of the Paso Robles wine appellation, are sustainably and organically farmed, yielding some of the highest quality fruit in the area.

Cabernet Sauvignon

Pinot Noir vines are cultivated in the Whale Rock vineyard.

It is named as such due to the high level of Whale fossils found in the field. The Pinot Noir was harvested and fermented in small lots. Aged for seven months in French and American oak, only the best barrels were used in the final blend. Castoro’s Whale Rock and Cobble Creek vineyards are both farmed organically. For owners Niels and Bimmer Udsen, both outdoor enthusiasts who grew up in Denmark, stewardship of the environment is a priority. They are in the process of transitioning all their vineyards to organic farming.

Castoro Cellars Sauvignon Blanc, Estate Grown, Paso Robles, 2012 Paso Robles sits in the eastern foothills of the Santa Lucia coastal range and is known for its thermal springs.

Indeed, the Salinan Indians lived in the area thousands of years ago and knew this area as the “Hot Springs”. The Sauvignon Blanc has attractive floral aromas. The grapes were grown on Castoro’s Dos Viñas vineyard which lies in the foothills facing south towards Paso Robles.

Castoro Cellars Zinfandel, Estate Grown, Paso Robles, 2011 More than 40 different grape varieties can be found in the region around Paso Robles, ranging from Spanish to Italian, Bordeaux to Rhône, but the area’s heritage variety has got to be Zinfandel. The Castoro Cellars Zinfandel 2011 was a little bit closed on the nose at the time of tasting, but had a soft succulent palate bursting with flavours of black fruits, violets and vanilla. The majority of the grapes come from Castoro’s own vineyards with some sourced from nearby growers in Templeton. 7% of Petite Syrah from Shell Creek was also added for depth and colour, and the wine subsequently aged in American oak for 10 months.

Castoro Cellars Merlot, Estate Grown, Paso Robles, 2011 While many parts of California had a difficult harvest in 2011, Paso Robles was not badly affected by the rain.

The Santa Lucia Mountains shielded the region from cool, damp conditions influenced by the Pacific Ocean so summer was fairly ideal, warm and sunny. Deep in colour, the Castoro Cellars Estate Merlot 2011 is 100% Merlot with cooked berry fruit compote and vanilla aromas. Soft and rich on the palate, it is succulent and juicy leading to herbal and floral flavours. It was aged in French oak for 14 months with fine tannins and a lingering bitter cherry finish.

Cassis and brambly fruit aromas lead to a structured wine with great elegance and balance. A blend of Cabernet Sauvignon with 14% Petit Verdot, it was aged for 20 months in American and French oak barrels giving it lots of cedary flavours and fine tannins, although the oak is not overly dominant. Very pleasant to drink now, it will complement a variety of meat dishes and will continue to develop more complexity over the coming years.

It is difficult to imagine that in the late 1960s just 16ha of this Rhône grape variety remained in the world! Since then, the Viognier has had a remarkable renaissance. It is now planted in France, Italy, Spain, Switzerland, Chile, Argentina and New Zealand, amongst others, and is extremely popular in Paso Robles. With appealing peachy fruits, toasted hazelnuts and vanilla aromas, the Castoro Cellars Reserve Viognier 2012 has a rich palate with good acidity and honeyed flavours.

Each of the vineyards produce intense fruit due to their locations and the skill of the growers.

Hook & Ladder Chardonnay, Sonoma County, Russian River Valley, 2012 Cecil De Loach has been farming Russian River Valley Chardonnay for over 30 years. His grandson, Jason De Loach, is now head winemaker. The 2012 Chardonnay has an intense, mellow bouquet with lime custard, nutty aromas and buttery flavours. After crushing and destemming, the Chardonnay juice was fermented in French oak barrels. Its rich, broad structure is a result of the lees ageing and stirring in barrel for nine months. A wine with depth, it ends long with lemon citrus.

Hook & Ladder The Tillerman, Sonoma County, Russian River Valley, 2010

Cabernet Sauvignon, Cabernet Franc, Sangiovese, Merlot

Its intense colour, leafy herbal nose and traditional, almost Bordeaux style, means there is no mistaking that this is a Cabernet based blend. Produced from Cabernet Sauvignon and Cabernet Franc, these have been blended with Sangiovese and Merlot. The wine has fresh blackcurrant and berry flavours with good, fresh acidity.

The grapes were grown in Hook & Ladder’s Los Amigos Vineyard just south of the town of Healdsburg, in the north east of the Russian River Valley AVA. Each variety was fermented and aged separately for 17 months in European and American oak.

Leafy, herbal notes

Zinfandelic Zinfandel, Sierra Foothills, California, 2011 The Flower Power label pays tribute to the rock posters and cultural movement of 1960s California. One can also imagine Austin Powers enjoying a glass or two!

Zinfandelic 2011 has leathery fruits, a succulent midpalate and a firm finish. Located in the western foothills of the Sierra Nevada mountain range in central California, Zinfandel vineyards are planted on rolling hillsides that range between 350 and 600M. Decomposed granite and sandy clay loams, unique to the Sierra Nevada region, retain a modest annual rainfall allowing the vineyards to be dry-farmed. Many of the Zinfandel vineyards date back to the 1850s and are planted on their own roots.

Baby Blue Estate Bordeaux Blend, Blue Rock Vineyard, Sonoma, Alexander Valley, 2011

The Blue Rock Estate lies hidden in the northern part of Alexander Valley in Sonoma, at Cloverdale. The Estate only produces wines from its own hillside vines to fully express the blue rocks, pebbles and boulders of Serpentine that make its terroir special. The vineyard is planted with five Bordeaux varietals, each present in the Baby Blue 2011: Cabernet Sauvignon, Merlot, Malbec, Petit Verdot, Cabernet Franc, with 5% Syrah added for good measure. While shy on the nose, the wine is more explosive on the palate with toasty oak and vanilla flavours, ripe berries and a long finish. It was aged for 12 months in French oak.

Blue Rock Estate Cabernet Sauvignon, Blue Rock Vineyard, Sonoma, Alexander Valley, 2009 Complex with mellow fruits, vanilla spice and savoury aromas, the Blue Rock Cabernet Sauvignon 2009 is soft and rich on the palate with blueberries, black fruit flavours and a fine elegant texture; the result of severe selection of the grapes in what was a vintage of two halves. The long, cool growing year allowed perfect ripening of the grapes, but rain during harvest meant that the best fruit came from the oldest vines in the earlier ripening blocks. Produced from 90% Cabernet Sauvignon, with Petit Verdot, Cabernet Franc and Malbec, the wine was aged for 22 months, 50% in new French oak and 50% in one year old oak barrels.

Kautz Family Vineyards Calaveras County, Sierra Foothills

With vineyards established in Lodi and the Sierra foothills in the 1940s, John Kautz grew to become one of the top ten grape growers in California. In the late 1980s, he established the winery and made his own wines. Today, the wines are made by Steve Miller, but John and his wife Gail are still actively involved in the family business, along with their four children.

Tim Chappell, John and Gail’s nephew, is one of the vineyard managers. Pictured at one of the Kautz Family Lodi vineyards, he has been working in the family business for 37 years.

Stone Valley Chardonnay, California, 2012 With intense pear drop and melon fruit aromas, the Stone Valley Chardonnay has flavours of passion fruit and galia melon. Named after the well-drained, gravelly California soils on which the vineyard is planted, the growing conditions are ideal with thriving vines producing clusters brimming with flavour. The wine was fermented in thermoregulated stainless steel tanks at low temperature.

Stone Valley Merlot, California, 2012 A touch of Petite Syrah was added to the Stone Valley Merlot 2012, creating a wine with aromas of violets and plums. The grapes, sourced from select Northern California vineyards, were crushed and fermented in rotary fermenters. This moderates fermentation temperatures and allows good colour extraction and flavour, without excessive heat or harsh tannins. The wine was aged for two months with French oak, giving a lingering bitter chocolate finish.

Stone Valley Cabernet Sauvignon, California, 2012

Quite a soft style of Cabernet Sauvignon, the tannins are rounded out and balanced by fruit and spice nuances from a small proportion of other classic grape varieties.

After fermentation in rotary fermenters, the wine was aged for four months with French oak.

Butterfly Ridge Chardonnay, Monterey County, 2011 The cool, foggy climate around Monterey means long, slow-ripening of the grapes and restrained wine styles produced with naturally high acidity levels in the grapes.

Angelo Pera carried out 100% malolactic, providing buttery vanilla notes reminiscent of oak, although it has not been aged in oak, which combine with fresh lemon and lime flavours.

They created what became the “RNR”, revitalizing neighbourhood recreation. To enlist, one had to simply enjoy a bottle of wine with a friend and plan ways to help inspire the neighbourhood to shine.

Cambridge & Sunset, Cabernet Sauvignon, California, 2012 With a noticeably vibrant colour, the Cambridge & Sunset Cabernet Sauvignon has some damsons and black fruit aromas, with a soft body and good acidity.

Cabernet Sauvignon has been blended with 25% other black varieties. All the grapes were handled gently and fermented warm to maximize colour and flavour extraction.

Zinsane Zinfandel, 2011 The wet winter and spring led to a lighter and later than normal harvest in 2011. Zinfandel grapes matured slowly, with warm temperatures returning in the late summer before harvest began. The Zinsane is 100% Zinfandel from the Lodi region, grown on old bush vines. It has ripe fruits, black cherries and a hint of smoke on the nose.

Soft and rich on the palate, it is mouth-filling with a soft, well-balanced and rich finish.

Complex, spicy nose with herbal bell pepper and ripe tannins, this is 100% Cabernet Sauvignon grown on the estate and matured in oak. Vineyard manager Bruno Friesen oversees all the work in the 220 hectares of vineyards. The best vineyards are located in the centre of the island and, as the island is concave in shape with much of the land lying below the level of the lake, drainage pipes run off excess rainfall into the island’s century old dike system. On the rare occasion of a drought, this water can be used to irrigate the parched vines.

The Private Selection Meritage is a classic blend of Cabernet Sauvignon, Cabernet Franc and Merlot with cumin spice, fruit and herbal aromas. It was matured in French and Hungarian oak for 16 months and has black fruit flavours, good weight with firm tannins. The vines are cultivated on Toledo clay soils over a limestone base at two to ten feet below the surface. Wind off the lake ensures air flow, thus limiting fungal diseases. Leaf removal is practiced to expose bunches to the sun and ensure full ripening of the fruit.

Each year Enate separates the best barrels produced and sets them apart for a special occasion. On this occasion, to commemorate Opimian’s 40th anniversary as well as the 20th anniversary of Enate itself, they produced this special wine from 100% Merlot grapes from the El Plano vineyard. The soil in El Plano is a sandy, loam texture with a higher percentage of clay compared to the rest of the Enate Valley, which suits Merlot well. 2006 was one of the earliest vintages in Enate’s history, with the first Merlots being harvested on August 22nd. With developed complex notes, earthy fruits and bell pepper, the wine has a succulent mid-palate and a long, bitter chocolate finish.

It was aged in new French oak for 18 months and will continue to mature for some time to come.

Finca La Colina Sauvignon Blanc, DO Rueda, 2012, Vinos Sanz The first Sauvignon Blanc vines to be planted in Rueda were at the Finca La Colina estate in 1980, in fact, the same year that the DO itself was established. The 2012 was produced from a selection of grapes, 100% Sauvignon Blanc, from these now fully mature vines.

The 2012 explodes from the glass with aromas of gooseberries, galia melon, limes and floral notes. It is concentrated, a reflection of the age of the vines, ripe and full of flavour. Vinos Sanz regularly wins awards for its wines and this wine will be no exception.

Briego Vendimia Seleccionada, DO Ribera del Duero, 2011, Bodegas Briego A special selection produced by the Benito Hernando brothers: Fernando, Gaspar and Javier. Full of ripe, crushed berry fruits and coconut, the wine is produced from 100% Tempranillo and was aged for eight months in American and French oak. Juicy on the palate, with more cooked fruits and oak, it is very moreish indeed and at a great price!

Viña Sastre, DO Ribera del Duero, 2011, Bodegas Hermanos Sastre Jesús Sastre’s motto is “caring, for the sake of caring”.

All use of chemicals is rejected by him and the vineyards are worked in a traditional way. The moon and its cycles are considered vital to the process of making wine and the biodynamic calendar is followed in the vineyard where grapes are cultivated at La Horra and Roa, between 800 and 840M in altitude. The wine has lovely cooked berry fruits with zippy acidity and fresh raspberry tang. Aged in French and American oak barrels for 10 months, it will benefit from a little more time in bottle.

Protos Tinto Fino, DO Ribera del Duero, 2011, Protos Bodega The new Protos winery, designed by Richard Rogers, opened in 2009 and has become the most visited winery in Ribera del Duero, receiving more than 35,000 wine tourists. The stunning building sits on low-lying land at the foot of the Peñafiel hill. Not only does it look good, it produces top quality wines too. The 2011 Tinto Fino has mellow, dark berry fruits and cedary notes. Concentrated and rich with long, lingering bitter cherry and vanilla flavours, it is produced from 100% Tinta del País, the local name for Tempranillo, and was matured for 10 months in oak barrels, 40% American and 60% French.

Cinema Crianza, DO Ribera del Duero, 2009, Bodega San Roque de la Encina Cinema wines was created in 2010 by a group of friends devoted to the art of film and wine and who were looking for a means to merge these two worlds. Behind the project is a diverse group of people led by Spanish actor Juan Echanove and winemaker Juan Ayuso, consultant to some of the most prestigious wineries in Ribera del Duero. 100% Tempranillo, the wine was aged in French and American oak for 12 months and has cooked apple and berry compote, vanilla and cedar aromas. Ripe fruit flavours are balanced with a firm cherry finish.

Carmelo Rodero Selección de Pagos, DO Ribera del Duero, 2010, Bodegas Rodero Carmelo Rodero is a fourth generation vine grower with over 100 hectares of vineyards around Pedrosa de Duero.

His great-grandparents used to make wine in a very old, traditional winery. They founded the local co-operative and for many years Carmelo sold his own grapes to the world famous Vega Sicilia. He is now joined by his daughters Maria, and Beatriz, who studied Oenology in Bordeaux, to run the family estate. Selección de Pagos is produced from 100% Tinta del País from 40 year old vines. The wine was aged in French oak barrels for 24 months, imparting an intense smoky bacon and savoury characteristic.

Becquer, DOCa Rioja, 2010, Bodegas B. Escudero The Escudero family has been making wine in Grávalos, Rioja Baja, since 1852. The family owns 150 hectares with an average age of 50 years. Most of these are located on the Cuesta de la Reina estate on the southern slope of Mount Yerga, at altitudes of 400 to 800M. Soils are clay-calcareous, with an abundance of large boulders.

The wine is a blend of Tempranillo and Garnacha. Deep purple in colour, it is aromatic with notes of violets, dark fruits, blueberries, prunes and a hint of treacle. It was aged for 8 months in American and French oak and has a lovely, silky texture, fine tannins and long flavour.

Fariña Gran Colegiata Crianza, Roble Fránces, DO Toro, 2008 Bodegas Fariña is one of the oldest wineries in the Toro region, dating back to 1942. It was founded by Salvador Fariña in the deep dark depths of an underground cellar in the village of Casaseca de las Chanas. Manuel Fariña inherited the winery from his father Salvador in the late 1960s, and has been a promoter of the Toro DO ever since. Today, it is his son Bernardo who makes the wines.

The 2008 Gran Colegiata has mellow dark fruits and a fine texture with crunchy, red berry fruit on the finish.

The grapes come from Tinta de Toro vines aged 40 to 70 years old. The wine was aged for 11 months in new French oak barrels.

Initio Garnacha, Las Moradas de San Martín, DO Vinos de Madrid, 2007, Viñedos de San Martín Initio was produced from old vine Garnacha grown on decomposed granite and Gneiss soils from the region south of the Gredos Mountains. In 2007, the harvest was small due to frosts, an unusually cool summer and low annual rainfall. Despite this, the slow ripening process produced ripe fruit with high sugar levels, which were perfectly balanced with good, natural acidity. The grapes were hand-picked and sorted, then underwent a week-long cold maceration before natural, spontaneous fermentation. The wine was aged in French oak barrels for 14 months, and has a herbal earthy nose and soft, succulent palate with red fruit flavours balanced by the wine’s natural acidity.

A fine example of a Manzanilla produced in Sanlúcar de Barrameda, it has a smoky, fresh apple aroma, characteristic of Fino style sherry. It is elegant with great balance and a long smoky, slightly salty, finish. Its origins link back to the original bodega founded in 1810 by José Pemartín.

Produced from 100% Palomino grapes, after fermentation the wine is fortified to 15% alcohol and is aged for three years in American oak barrels called butts, in Sanlúcar de Barrameda. The natural conditions in the bodega lead to the development of a veil of yeast, known as flor, on the surface of the maturing wine, which protects it from oxidation and imparts the typical smoky, nutty characteristics.

How to describe the Pedro Ximénez: rich and opulent, intense, smoky, treacle, a raisin bouquet, syrupy texture and flavours of Christmas cake. It is sweet with good acidity adding balance. As the flavour suggests, the Pedro Ximénez grapes were left to dry in the sun until they became raisins. After pressing the dried berries, the juice is partially fermented and then fortified to 15.5% alcohol.

It was aged for 12 years in 500L American oak butts.

Ideal with desserts or simply used as a sauce poured over vanilla ice cream, it is for anyone with a sweet tooth.

Cinciano Bianco, IGP Toscana, 2012 A delicious blend of three grape varieties, Viognier, Sauvignon Blanc and Grechetto, this wine has great appeal with intense fruit aromas on the nose: melons and pears, combined with hazelnuts. On the palate, peachy flavours introduce a long, lingering passion fruit finish. The vines are cultivated at 200M with south-east exposition. After picking, the grapes were de-stemmed and left to macerate on skins for a few hours before pressing and fermentation at low temperature.

Cinciano Rosso, IGP Toscana, 2011 Sangiovese vines are planted on Alberese based, stony compact soils composed of shale, schist and limestone with 5000 vines per hectare. With south-west exposure the vines benefit from the afternoon sun. The grapes were harvested by hand at the end of September 2011.

After fermentation in concrete tanks, the wine was aged in large Slavonian oak casks for five months prior to bottling, giving it weight and depth to complement the vibrant red fruits.

Cinciano Chianti Classico, DOCG, 2011 Older vines are used in the Chianti Classico with the Sangiovese grapes picked at the end of September – early October 2011. Fermented in concrete tanks for 10 days, the temperature was allowed to rise to betweem 28 and 30°C and was followed by spontaneous malolactic fermentation. The wine was aged in 25 to 50hl Slavonian oak tanks for eight months and has a complex truffle, earthy characteristic combined with red fruits.

Cinciano Riserva Chianti Classico, DOCG, 2010 The Cinciano Riserva Chianti Classico is produced from the oldest plots of Sangiovese vines on the estate, Camponi and Lunghe, with an average of 40 years of age. Medium ruby in colour, earthy fruits and berry aromas lead to a succulent palate with good balance.

Very approachable with attractive mellow flavours, it has the potential to develop further. The vineyard lies at 300M altitude facing south west. After picking, vinification was carried out in concrete tanks followed by maturation for 18 months in large Slavonian oak vats.

Cinciano PietraForte, IGP Toscana, 2011 Produced in small quantities, the PietraForte is the only wine made by Cinciano that is not 100% Sangiovese.

Sangiovese dominates the blend, but it is complemented with Merlot and Cabernet Sauvignon from 10 year old vines. Leafy, herbal aromas from the Merlot and Cabernet Sauvignon mingle with blueberries and other fruits. Concentrated, with good weight and balance, the PietraForte 2011 will mellow with more time in bottle. After traditional fermentation in concrete, the wine was aged in medium-toasted French oak barrels for nine months.
