About the cover: Sphinxlike amidst the Mâconnais vineyards, the Roche de Solutré seems to lie in wait for visitors.

Solutré rock, at 493 meters, is registered as one of the “Grand Sites of France”. Archaeological excavations have revealed traces of prehistoric life, one of the largest such finds in Europe.

In the departmental prehistory museum located at the foot of the rock, one can view the historical remnants left behind by the Palaeolithic nomadic hunters. Also located at the foot of the rock are the grapevines of Pouilly-Fuissé. The majesty of this magnificent location adds to this well-known wine’s unique character and authenticity.

Opimian’s Wine Consultant Jane Masters MW is a graduate of Bordeaux’s famous Institut d’Oenologie and was elected to the Institute of Masters of Wine in 1997.

Fluent in French and English, Jane is currently a member of the Council of the Institute of Masters of Wine, regularly speaks at industry seminars and is a Panel Chair for the International Wine Challenge.

Spain, the larger portion of the Iberian landscape, continues to develop its wine culture.

Part of its strength is the number of old vines that have been “re-discovered” in areas such as Montsant, Priorato and the most widely known, Rioja. What comes to mind when we think of Portugal - mournful Fado music, blue and white ceramic tiles, “Bacalhau” and of course, the fortified wines of Porto. Ports have been exported around the world for hundreds of years. In fact, the Douro Valley was the first wine region to be established, defined and protected in 1756. Yet, only recently has Portugal started to develop notoriety for table wines produced mainly from its many indigenous grape varieties. Both of these countries, with their combination of history and innovation, have great potential for producing high quality red wine. We complete this Cellar Offering by travelling from the opulence of the great red wines of the Peninsula to the effortless complexity of the fine white wines of France. The Mâconnais, at the southern end of Burgundy, is world-renowned for its Chardonnay while Alsace, the most northerly region of France, is completely unique in its wine style and culture.

Parxet has been producing Cava from their 200ha estate in the Alella region north of Barcelona since 1920. Macabeo, Parellada and Xarel-lo, known locally as Pansa Blanca, are the traditional grape varieties used for Cava production; they are planted alongside the more recently introduced Pinot Noir and Chardonnay. The region is a mass of granite soils, poor in nutrients with low water retention, but presents ideal conditions for the production of Cava. The traditional method from Champagne is used to produce this sparkler with ripe apple fruits, broad structure and a firm apple and lemon finish. [01] M8 D9

The DO Rueda is located approximately 170 km northwest of Madrid and is famous for the production of dry, fresh white wines. Verdejo and Viura grapes grown on the gentle slopes of the Sanz estate, in existence since 1870, are used to produce some of the best of what Rueda has to offer.

The plateau’s high altitude means that there is a great drop in temperature at night, allowing the grapes to accumulate maximum flavours of gooseberries and white fruit. [00] M8 D9

This relatively new winery in the Salnés sub-region of Rías Baixas was constructed in 2003. This is the coolest and dampest region in the often forgotten northern corner of Spain, sitting above Portugal and lying on the Atlantic coast.

Albariño grapes are sourced locally and the wines produced reveal ripe stone fruits, mango and mineral aromas. The high acidity from the cool climate is offset with ripe apricot and mango flavours. [00] M8 D9

This is certainly a modern style wine, packaged in a modern design. The focus is on fruit rather than on the more traditional animal, earthy flavours that this grape variety often displays. The Bodegas Sierra Salinas, built in 2000, is situated on the lowest part of the Sierra Salinas Mountains in the south of Spain at Villena, inland from Alicante. Petit Verdot is “à la mode” in Spain, since first planted by the Marqués de Griñón at Toledo in 1992. It forms an integral part of this wine, blended with Cabernet Sauvignon and Tempranillo. The grapes were grown at an altitude of over 900M on the 178ha vineyard which forms part of the larger Los Aljibes estate in Albacete, in south eastern Spain. The warm 2009 vintage allowed for full ripening and flavour development resulting in dark ripe fruits with a juicy palate and a fresh cranberry and blackberry crunch on the finish.

The wine was aged for six months in French oak. M7 D8

Bodegas Enguera, based at El Chalet del Rio in southern Spain, has 160ha of vineyards. This is rugged, mountainous terrain with deep ravines, broad valleys and underground aquifers. Produced from organically grown grapes, the wine has dark fruit with some meatiness on the nose. Although it was matured for four months in barrel, the oak is not obvious. M7 D8

Sonsierra meaning “under the mountains” sits beneath the Sierra de Cantabria mountain range in the Rioja Alta region.

This wine, produced from old Tempranillo vines, is a deep ruby colour. Black fruits are enhanced with a touch of green eucalyptus spice to create a complex bouquet. On the palate the old vines show through in the concentration with good middle weight, slightly grippy tannins and a vanilla finish, the result of twelve months ageing in new American oak barrels. The wine was aged for twelve months in second use Allier French oak barrels. M6 D7

The O. Fournier estate in the heart of Ribera del Duero has 60ha of vines, all at an altitude of 700 to 800M. Here the climate is extreme with summer temperatures routinely dropping by 20˚C between day and night. Rainfall is low and the soils rocky, calcareous and sandy. Produced from 100% Tempranillo, known as Tinta del País in Ribera del Duero, the wine displays all the characteristics of the stressed environment in which the grapes were grown.

Matured for twelve months in French oak barrels, it has chewy tannin on the finish which will soften over the next few years. M6 D7

This is a traditional, typical and powerful wine, the antithesis of the previous wine from the same winemaker. It is produced from the Tinta de Toro grape variety, a specific local strain of Tempranillo. Already six years old when selected, this wine shows no sign of tiring. It is complex with aromas of treacle, olives and meaty savoury notes. It was aged for eighteen months in a complex blend of American oak barrels; Bernardo Fariña experiments with seventeen different types of oak and toasts. The wine has layers of texture. This family-run winery is set in the small village of Gumiel de Mercado, in the heart of the Ribera del Duero region.

Tempranillo bush vines are cultivated on very dry, poor, clay-limestone soils at over 800M in altitude. Since its inception in 2005, the Terra de Verema vineyard project set up by Ester Nin Llort, winemaker at the legendary Clos Erasmus, has been attracting attention. All vines are farmed biodynamically and, as in other forms of organic agriculture, artificial fertilizers, pesticides and herbicides are strictly avoided. Produced from old vine Cariñena blended with Garnacha and Syrah, this wine is intense and concentrated. Blackcurrant and smoky aromas follow through onto the palate. Although Cariñena is not a grape variety generally known for its quality, under the right conditions it can produce something very special. M5 D6

This is produced from old bush vine Garnatxa, aged between 55 and 80 years old. The nose is complex, mellow with ripe forest fruits, cooked summer fruit pudding and vanilla. Bags of fruit give way to a layered, soft and fine palate with length and wonderful fresh acidity. The DO Montsant, often overlooked in favour of neighbouring Priorato, shows every bit its potential in the wine produced by Albert Jané at Acústic Cellar. The vineyards range from 300 to 700M in altitude with a diversity of soils. This wine was matured for twelve months in new and one year old French oak barrels and was bottled unfiltered in order to retain its full flavour and body. M5 D6

The concept of the single vineyard is new to Rioja, where previously famous houses bought and blended grapes from vast areas across the region. The Tempranillo grapes for the Cisma come from the 0.8ha plot “La Valcavada” planted in 1925 on clay limestone soils. The project is the brainchild of Carlos San Pedro who pays every attention to detail. The grapes were de-stemmed and fermented in oak vats with extended maceration. The wine was subsequently aged for twenty-two months in new French oak giving it spicy, cedary notes. This requires further bottle age to reveal itself and should be kept for several years prior to drinking. M4 D5

in the north of Catalan country, the DO Conca Bodegas Concavins SA Based de Barberà sits on limestone hills north of the town of Tarragona. It was always known for the quality of its Cava production and has more recently been developing Montblanc, Barberà de la a reputation for quality still wines. The Clos Montblanc winery lies in the centre of the DO, close to the fortified Conca, Catalonia town of Montblanc and the Cistercian monastery of

60 year old Macabeo vine – “Macabeu” is one of the traditional indigenous Catalan grape varieties. Due to Conca de Barberà’s altitude, the variety is well-regarded for the freshness and acidity it brings to the production of Cava

The region of Barberà de la Conca was always reputed by those in the know as the best source for grapes destined for Cava production due to its high altitude, cool climate and limestone soils. The second bottle fermentation is followed by ageing on the yeast lees for another two years to add richness and structure. This is a blend of the indigenous Viura grape and Chardonnay, both grown on well-drained limestone soils. The Viura vines are on average 40 years old. Combined with the relatively cool weather conditions in the summer of 2011, they produced a wine with aromas of white grapefruit and pear. This, of course, is complemented by the smoky, nutty, fruit flavours of the Chardonnay. The blend of the two varieties produces a medium-bodied wine with ripe fruits and balanced acidity. [00] M8 D9

Previously a cooperative, the Clos Montblanc winery was purchased by the Carbonell Figueras family in the late eighties. It was then completely transformed into a modern winery with investments carried out in the vineyards. The fruit for this wine came from plots of old vine Tempranillo and Cabernet Sauvignon grown on limestone soils. After a short maceration period, the wine was aged in new oak barrels for three months. M8 D8

Deep plum in colour, this wine has complex, earthy and leathery aspects coming from the Monastrell grape. Each of the four varieties contributing to the blend ripens at a different time, starting with Samso picked in mid-September and ending with the late ripening Monastrell, picked in October. The varieties were aged in oak for approximately twelve months and subsequently blended to produce flavours of dark fruits, marmite and bitter chocolate, all with a vanilla seasoning. Not many places in the world still manually tread grapes; the Douro Valley remains the exception. At Quinta da Gricha the original granite “lagares” built in 1852 are still used to extract maximum colour and flavour. Situated on the south bank of the Douro River, between Pinhão and Tua, all the vineyards have Grade “A” status. The decision to declare 2009 a vintage by the major Port houses has not been consistent, but there is no doubt that it was a very good vintage and that the single Quinta wines have great potential.

Riesling vines in the Grand Cru Rosacker vineyard which owes its name to the wild roses growing around its edge

Based in Hunawihr, in the heart of Alsace, the Cave Vinicole de Hunawihr is one of the finest cooperatives in France. Winemaker since 2003, Nicolas Garde works closely with 130 member grape growers, owners of 200ha of prime vineyards. This is the most northerly viticultural region in France, protected by the Vosges Mountains to the west. The region has a continental climate with the lowest rainfall in the whole country. It is no wonder Alsace makes wines like no other region in France. At a recent tasting in Montreal we enjoyed several cellar-aged wines from the Cave Vinicole de Hunawihr matched with Asian cuisine. Examples of developed Riesling and Gewurztraminer matched perfectly the ginger, lychee and citrus flavours found in many Chinese dishes.

The number of bottles of Crémant d’Alsace produced each year is small in comparison to those produced in the Champagne region. For Cave Vinicole de Hunawihr, 13ha of vines are dedicated to the production of sparkling wine.

Despite the relatively small amounts, Crémant has become a passion for winemaker Nicolas Garde. Four varieties of the permitted six in Crémant d’Alsace are used in this Brut.

As in Champagne, each variety is hand-picked and fermented to produce the base wine. A second fermentation in bottle captures the bubbles, followed by twelve months on the yeast lees, giving the final wine a fine mousse and rich flavours. [02] M8 D9

The ancient Sylvaner variety produces fresh, crisp wines with delicate flavours best enjoyed young. Pinot Blanc is well-rounded and delicate, fresh yet supple.

Fermentation at low temperature has produced a wine with white fruits and spicy, white pepper aromas. It is wellbalanced and soft with a fresh finish. Unlike many of the other varietals typical of Alsace, yields of Pinot Blanc were relatively unaffected in 2010, producing an average crop in terms of quantity. [01] M8 D9

The popularity of this grape has grown enormously worldwide over the last few years. This version is a typical Alsatian style, fatter and richer than its Italian counterpart Pinot Grigio. Riesling is considered by many to be the greatest white grape variety in the world. It produces wines which reflect the terroir on which the grapes are grown while retaining its own distinct varietal character. The”7 Talents” Riesling is produced from grapes sourced from seven growers whose terroirs are typical calcareous clay of Hunawihr. A pale and elegant style, this Gewurztraminer offers delicate aromas of rose petals, green leaves and fresh lemons. Soft on the palate, it has delicious balance and elegance with fine texture. Although the sugar level at 20g/l is quite high, the elegance of this wine gives it a drier impression. Parcels in Rosacker, Muehlforst and Hinterkirch in Hunawihr contributed to this blend. One of the best vintages of the decade, the wines from 2009 show the ripeness and concentration from the hot and dry August and September that followed a stormy July.

This Riesling has already developed fine honeyed characteristics and has the potential to develop for a further three to five years. The lieu-dit Silberberg, meaning Silver Mountain, dominates the village of Rorschwihr, just a few kilometres from the Cave Vinicole de Hunawihr. It consists of deep, chalky, siliceous soils known as Muschelkalk which resist drought conditions and produce lemon citrus fruit Rieslings when young. [01] M6 D7

This is a deliciously light and refreshing example of the Muscat grape. Fresh lemons with a hint of mint on the nose lead to a more zesty, lemon flavour on the palate. It is quite low in alcohol at 11,5% with a just a touch of sweetness, very different from the sweet Muscats produced around the Mediterranean. It is a blend of two varieties of Muscat grown in the area. Muscat Blanc à Petits Grains arrived in Alsace as far back as the 16th Century while the Muscat Ottonel is a more recent introduction. Gewurztraminer is considered a noble grape variety in Alsace and is the second most planted. It reaches its finest expression here, producing wines with relatively high alcohol and structure. Fruity aromas of lychees, rose petals and lemon grass are combined with an herbal tarragon edge.

This is a broader and richer style Gewurztraminer. It is a little closed on the nose at the moment, but it has richness and structure on the palate with more obvious sweetness. This is a fairly big wine which will work well with richer, honeyed dishes. Not an easy grape variety to grow, it is an erratic yielder which is one of the reasons it is shunned by German viticulturalists in favour of more productive varieties. [03] M8 D8

The depth, minerality and ageing potential of this wine testify to its breeding. Coming from the Grand Cru vineyard Osterberg, it is pale in colour and restrained on the nose.

With aromas of fresh limes, green apples and mineral notes it could not be mistaken for anything other than Riesling.

Balanced with good depth, acidity and a long finish it will develop for years to come. Osterberg, meaning eastern slope, refers to the orientation of the site; it is set on medium to steep slopes above the town of Ribeauvillé, with stony clay soils over marl subsoil. [01] M5 D6

Gewurztraminer Grand Cru Rosacker is reputed to be very aromatic; this is no exception! The Cru lies close to the village of Hunawihr, on steep slopes facing east and south east. The soil is clay and limestone with dolomite pebbles and a few siliceous screes of sandstone from the Vosges Mountains, conditions that give texture and good acidity to the wines produced from the grapes grown here. The wine has an intensely honeyed nose, apricots and cream with a rich, sweet honeyed palate. [05] M6 D7

The clement weather in October 2008 made for great Vendanges Tardives wines, although the crop was low due to poor weather at flowering time. The good weather allowed for the team to wait for the grapes to over-ripen; they were picked on November 17, a full forty days later than the main Gewurztraminer harvest. During that time, the grapes shrivelled, sugar concentrated in the berries and flavours evolved. Distinctly Gewurztraminer with its characteristic rose petal and lychee nose, it has added burnt orange peel and candied fruits. The palate is sweet with long bitter marmalade flavours. [06] M6 D8
