CELLAR OFFERING 204 California, Canada and a touch of European Flair Spain and Italy Revisited April was a busy vinous time in Europe with a visit to Bordeaux at the beginning of the month to taste the new 2010 en primeur wines, swiftly followed by a flying visit to Vinitaly to meet with a number of Opimian’s suppliers. In between it was an absolute pleasure to taste all the wines that we feature in this cellar offering, starting with a great range of wines and styles from California. Representing Canada, Pelee Island Winery appears with four wines. Working with Maribel Gómez at Vinoselección, we offer a selection of exciting Spanish wines from well-established as well as younger regions and another opportunity to order from Italy whose wines are gaining in popularity with each passing year. This is our last offering for delivery in 2011 and includes something for everyone, whether you have had the opportunity to order on the last seven cellar offerings or whether you are a brand new member and ordering for the very first time.

About the cover: It is said that, “The early bird gets the worm”. In circa 1880, the founders of this vineyard were drawn to the site because of their knowledge of great vineyards in Europe. They homesteaded this location when California was only 30-years-old!

Jump forward 100 years and my father, Tom Burgess, was looking for the same thing, long before Napa Valley was “the place to be.”

This foresight and understanding has paid off with wines of distinction, purity, and uniqueness. The steep volcanic soils, elevation, and exposure are priceless.

BURGESS CELLARS Howell Mountain, Napa Valley The French concept of terroir is at the heart of Burgess Cellars’ philosophy. Only estate grown fruit from Tom Burgess’ 45ha is used. The vineyards are sited in three distinct districts within the Napa Valley with the wines being produced at the winery that sits on the western side of Howell Mountain, north east of St. Helena. This gives winemaker Bill Sorenson complete control over the quality of the grapes produced. Burgess’ wines are concentrated with finesse and elegance and represent the sophisticated expression of each varietal.

The Grenache is usually blended with the Syrah to add mid-palate strawberry flavours and to lift the aromatics. But, because of its quality and interesting characteristics, a very small amount was bottled as a single varietal. Only 4800 bottles are produced from four rows of vines in the Triere vineyard. Typical varietal aromas of ripe cooked red fruits, mushy berries, strawberries and mulberries are in evidence on the nose and emerge soft and round on the palate; this wine has more weight and depth than most Grenache.

Aged in oak for fifteen months, its tight structure and finegrained tannins are typical of the Burgess style. M7 D8

The Syrah grapes that were used to produce this wine were grown in two locations, the first on the warmer eastern side of Howell Mountain facing Pope Valley, the other south of Yountville. 2007 was a very good vintage in Napa with low yields and steady ripening. After fermentation the wine was aged in French and American oak for eighteen months resulting in intense concentration with blackcurrants, menthol and smoky aromas. M6 D7

The grapes come from the Triere vineyard south of Yountville, on the western side of the valley floor in the Oak Knoll district. The vines benefit from the cooling influence of San Francisco Bay and are orientated north/south in order to capture the morning and evening sun allowing long, slow maturation. The use of French oak is perfectly integrated giving coffee and cedar notes that complement red cherries and varietal herbal aromas. On the palate, this wine is concentrated with fine texture and good potential to age gracefully. M6 D6

This is a complex, elegant wine. On the nose there are intense, ripe, cooked blackberries and Parma violets. MOUNTAIN VIEW VINTNERS San Rafael In 1978, Kevin Shannon founded Mountain View Vintners as one of California’s first négociant wineries, a concept made popular in Burgundy and Bordeaux. As a négociant winery, Mountain View blends, ages and bottles wines made from grapes sourced from its own managed as well as selected outsourced vineyards. Wellrespected California winemaker Philip Zorn acts as consulting winemaker and head of production. He has been associated with Mountain View Vintners since 1991. A committed supplier working with Opimian for over twenty years, Mountain View Vintners continues to develop and welcomes recently appointed General Manager and Managing Director, Angelo Pera. His tenure in the wine industry dates back to 1991 and his goal is to guide Mountain View Vintners to becoming a stronghold amongst California wineries. Kevin and his team continue to produce wines which offer excellent value for money.

The fruit for our Butterfly Ridge Pinot Grigio comes from Mountain View’s vineyards in the Clarksburg AVA with its 9000 vineyard acres.

The Clarksburg AVA along with the Lodi AVA and Merritt Island AVA are included in the California Delta Region’s 85,000 acres.

Considered thought is given to Opimian’s traditionally made California red and the varietals that will be selected for blending. Beginning with the high proportion of Zinfandel offering lusciousness, the Barbera brings berry flavours and makes this a food-friendly wine. The Ruby Cabernet, a cross between Cabernet Sauvignon and Carignan, adds the backbone and the Grenache warm spice and acidity. California Pinot Grigio is one of the great success stories of the last decade

An Opimian favourite since its first offering of the 2008 vintage, the 2010 is another delight. The grapes are grown at the La Slough Vineyard in the Clarksburg-Delta region which was planted in 2001 on sandy loam soils with clay.

The Clarksburg appellation includes 10,000 acres of vines.

Warm days and cool nights typify the climate during the growing season. Twenty-five varieties benefit from these prime conditions, one of which is the Pinot Grigio. The aromatic nose is highlighted with delicate pears and floral scents and leads to fresh apples and lemon citrus flavours on the palate. [00] M8 D9

The style of the Butterfly Ridge Zinfandel Rosé is drier and more serious than most blush wines. The fruit is sourced from vines planted in 1989 on sandy loam soils. After pressing, the juice was fermented at low temperature and fermentation arrested to leave only a touch of sweetness.

Lake County surrounds Clear Lake, the largest natural lake in California. The vineyards are planted at 1,300 to 2,000 feet in elevation within site of the Mt. Konocti volcano.

Because of these elevations, there is a later start in the growing season. Warm summers ripen the grapes during the day and cooler night time temperatures maintain sugar levels and balanced acidity. For this wine, Merlot grapes from thirty year old vines grown in Lake County have been combined with 10% Cabernet Sauvignon to give the wine additional structure. Deep ruby in colour, with aromatic floral fruits contributed by the Merlot, the wine was aged in American oak for fourteen months giving it savoury flavours and chewy tannins on the finish. M8 D8

Zinfandel was introduced to California during the Gold Rush in the 1850s and was widely planted because it flourished so well in the state’s climate and soil. While the varietal’s origins appear to be Croatia, via Italy where it is known as Primitivo, there is no doubt that Zinfandel is California’s grape. With over 50,000 acres planted, it takes third spot for leading wine grape variety grown throughout California. The Butterfly Ridge Zinfandel lives up to its expectations. Made from the fruit of thirty year old vines, the opulent bouquet reveals raspberries, black pepper and a hint of smoke. Extended ageing in American oak has resulted in a wine of depth with blackberries, ripe plums and earthy tones. Even with the fullness and complexity found on both the nose and palate, it maintains its structure with balanced acidity and soft tannins. M8 D8

Lake County’s reputation as a wine-growing region has been overshadowed by its more famous neighbours Napa and Sonoma even though many of the producers in these regions often source grapes from the area. After Cabernet Sauvignon, Sauvignon Blanc is the second most-planted varietal and although the vineyards are not very old, the wines being produced are of notable quality. The Sauvignon Blanc vines for this wine are grown on sandy loam soils. After pressing, the juice fermented in stainless steel at low temperature and was not allowed to go through malolactic fermentation to retain its crisp acidity. An easy-drinking style, there are aromas of fresh apples and pears with light to medium weight on the palate and a crisp, fresh finish. [00] M8 D8

Working with grape growers long term in order to source great value wines is what Mountain View Vintners does and this Syrah is real evidence of the commitment on both sides. With red berries, cherries and chocolate on the nose, the soft and easy palate emerges with good fruit, concentration and spice interlaced with earthy undertones. The wine was aged four months in French oak to add an extra layer of complexity to the flavour. California Syrah is less powerful than big Australian styles, making it a versatile food wine. M8 D8

Monterey County is renowned for the stunning beauty of Big Sur, the quiet charm of Carmel and the cooling influence of Monterey Bay making it a very good place to grow Pinot Noir.

Due to the cool conditions and marine breezes coming from its proximity to the ocean, harvest may be more than two weeks later than in other regions. This allows the fruit to mature slowly, developing ripe fruit flavours with lower alcohol and acidity. The low ground temperatures limit the crop size, while steep slopes and rolling hills provide good drainage. The Merlot vines planted in 1982 are now nicely mature. The bouquet puts forth attractive floral notes and ripe berries which continue onto the palate with the addition of plums. A juicy middle leads to bright cherries, moderate tannins and a hint of oak on the finish. M7 D7

TORTOISE CREEK WINES Clarksburg, Lodi Mel and Janie Master teamed up with the Sager family of Winesellers in 2008, to extend the range of Tortoise Creek wines from Southern France to include varietals produced in the Lodi region of California. The concept behind the Tortoise Creek wines is to work more with individual growers and less with large cooperatives, understanding that the key to quality wines is low yields. With this in mind, relationships have been formed with growers who understand this philosophy. Lodi was the first in California to introduce sustainable winegrowing standards under the guise of The Lodi Rules for Sustainable Winegrowing. The Lodi Rules consist of seventy-five farming practice standards divided into six chapters which address the ecosystem, education, training and team building, vineyard establishment and soil, water and pest management.

“Jam’s Blend” refers to Janie and Mel Master, the creators of Tortoise Creek. Gravity-flow fruit handling and whole cluster pressing helped preserve the natural acidity present at harvest. The larger part of the blend is unoaked, but a portion is aged on the lees in barrel for six months to add depth and structure with only a hint of oak. Fermentation at low temperature gives a wine with fresh apples, pears and white blossom on the nose. With quite a broad structure, the fruit found on the nose comes through on the palate and ends with firm acidity. [00] M8 D9

2009 was the first Tortoise Creek Zinfandel produced and was very well-received in our cellar offering last year.

Named after the genus Chelonia, to which the tortoises and turtles that Janie and Mel are so fond of belong, a donation is made to the Chelonian Research Foundation for each bottle sold. The grapes were grown in three distinct vineyards in the Clements Hill sub-region and Lodi proper, on soils washed down from the nearby Sierras.

Extended maceration added depth and structure while six months in oak has filled in the mid-palate. True to type, Tortoise Creek Zinfandel has rich dark fruits and smoky aromas with a succulent, sweet palate, filled with juicy fruits and approachability. M7 D8

CALIFORNIA TORTOISE CREEK WINES

KAUTZ FAMILY VINEYARDS Calaveras County, Sierra Foothills In the 1940s, John Kautz was a row crop grower in Lodi. Believing in the potential for growing wine grapes, he started with five hectares in 1948 and eventually became one of the largest grape growers in the Sierra Foothills and Lodi area with over 200ha. In the late 1980s, John and his wife Gail decided to go beyond grape growing to make their own wines and a winery was built on the old family ranch at Murphys. Remaining very much a family affair, John and Gail’s four children are now involved in the business. As growers, their access to grapes enables them to offer quality wines and great value.

Using dynamite, pick axes and shovels, miners worked their way through limestone and Calaveras Schist Rock on Gail’s family ranch in Murphys and shaped the site of Ironstone’s wine ageing caverns which hold up to 1500 French and American oak barrels

Stone Valley is named after the well-drained, gravelly California soils on which the Chardonnay vines thrive. The harvest took place in the early pre-dawn hours of the morning, in order to benefit from cooler conditions, and the grapes swiftly transported to the winery and gently crushed in a pneumatic press. After cold stabilization, the juice was fermented at low temperature in stainless steel tanks in order to maximize fresh fruit flavours. [01] M8 D9

CASTORO CELLARS Templeton, Paso Robles Founded by Niels Udsen and his wife Bimmer in 1983, Castoro Cellars is one of the oldest wineries in the region. Having learnt the workings of a winery from the cellar floor up, they have slowly and diligently built up the business over the years and worked to promote the region; they now own 375 acres both to the east and west of Paso Robles. Despite its 15% alcohol, this wine is restrained in style with red cherries on the nose leading to a rich, succulent palate, concentration and weight without being overblown. Not a grape variety that is easy to get right in this warm climate, Niels and Bimmer purchased the vineyard on a snap decision when the opportunity arose, hence the name Blind Faith. Its history dates to pre-prohibition to 1880 when the stone house and winery were built. Resurrected in 1987 by Cheryl and Kenny Kahn, the 18.5ha hillside vineyard was re-planted with Cabernet Sauvignon, Cabernet Franc, Merlot, Malbec, Petit Verdot and Syrah. Sonoma Coast Vineyards, founded in 2001, produce wines from the “extreme” Sonoma Coast, only five miles from the Pacific Ocean. It has the coldest, wettest climate in the whole of California along with all the associated problems. However, in years such as 2009, when nature is kind, the results are fabulous! Diverse ranges of Dijon clones and the Pommard planted at Bella Sonoma and Petersen Vineyards in 1997, with more recently planted vines at Salmon Creek Block (2007) were hand-harvested over a two week period. The clusters were hand-sorted and de-stemmed, with approximately 25% left to whole cluster to add to the aroma profile. Each lot was vinified separately and then aged in French oak barrels, 60% new, for sixteen months. The result is a superb, complex wine with an herbal, mint and red fruits nose, good balance and a long wild strawberry flavour on the finish. M7 D8

PELEE ISLAND WINERY Kingsville, Ontario With over 200ha, Pelee Island Winery is Canada’s warmest and southernmost appellation. The winery follows the conditions set out by the World Wildlife Fund’s strict Sustainable Vineyard Practice. Therefore, there is limited and controlled pesticide spraying. With a microclimate that is unmatched anywhere else in Canada, vinifera grape growing is met with great success. Managed by viticulturalist Bruno Friesen, the vineyards are on Toledo clay soils with a limestone base two to ten feet below the surface. The winds off Lake Erie limit humidity and hence the development of fungal diseases. The winemaking team is comprised of Walter Schmoranz and Martin Janz. Walter joined Pelee Island in 1985 and his skills have led to hundreds of awards around the world. Martin graduated from the Rheingau Institute of Winemaking in 1996 and began his career at Pelee Island as assistant winemaker and is now responsible for the day-to-day winemaking operations.

Picked early in the day in mid-October, the Cabernet Franc grapes arrive at the winery within hours. The clusters were de-stemmed, crushed and fed into a rotor-fermenting tank.

This modern technology allows for strict temperature control during fermentation. Its gentle agitation extracts more colour and tannin from the skins and allows higher concentration of fruit flavours to remain in the wine. After fermentation at 26ºC, the wine underwent malolactic. This lively Cabernet Franc appeals with typical leafy, herbal notes combined with red fruits and none of the greenness that is sometimes found. On the palate it is light to mediumbodied with juicy acidity and fixed tannins. M7 D7

The cooked fruit aromas of this wine are a result of the hot, dry summer months experienced in Spain in 2009.

On the palate, the wine seems younger with flavours of dark chocolate and cherries with good concentration. Produced from 100% Tempranillo, the grapes underwent cold soak to ensure maximum extraction prior to fermentation in stainless steel for ten days. This wine is made at José Manuel Ortega’s estate at Berlangas de Roa-Burgos in the heart of the Ribera del Duero.

The estate comprises 60ha of vineyards planted at varying times with the oldest over fifty years ago. Tempranillo or Tinta del País as it is known in this region, survives the most challenging situations; limited rainfall, extreme temperatures and poor soils. However, these conditions have allowed the ancient bush vines to yield exceptional grapes. Blasón de San Juan is produced from the fruit of vines ranging from fifteen to thirty years old. After fermentation in stainless steel tanks, the wine was aged for three months in French oak. M7 D8

The Cuesta del Aire is the top of the range of Vino de la Tierra de Castilla y León wines with grapes grown at high altitude on the estate at Medina del Campo. An intense, deep purple colour, it has a northern Rhône nose with restrained dark plum fruit and black olives concentrated on the palate. Because of its great structure it merits bottle age, but it is delicious in its youth. M7 D8

It is truly an outstanding wine as evidenced by the awards bestowed upon it around the world. The fruit was harvested from the higher altitude area of the estate at 800 to 850M. Here the temperature drop between day and night is often up to 20ºC. This diurnal variation and the low yields concentrate the flavours in the berries as they ripen. A cold soak of seven days was followed by extended maceration on the skins for up to forty days and subsequent ageing for twenty months in new oak barrels, 80% French and 20% American. This level of treatment would be the death of anything but the most robust of wines, but the sheer concentration of the berries has been able not only to withstand, but to produce a wine with huge potential for the future. Valduero is located ten miles north west of Aranda del Duero at Gumiel de Mercado in the north of the Denominación de Origen. Planted fifteen years ago using traditional low bush cultivation, the vines are now nicely mature and naturally produce low yields. Hand-harvested into small crates, fermentation was at a maximum temperature of 25ºC with nine days skin contact.

The wine was then aged for fourteen months in American and French oak barrels contributing delightful coconut combined with mulberries, red fruits and vanilla. A fresh, elegant style it ends with a lovely, crunchy cranberry finish. M6 D7

Toro has become somewhat trendy in recent years attracting investment from neighbouring Ribera del Duero producers as well as international personalities from further afield such as Bernard Magrez, the Lurtons and Michel Rolland to name but a few. But this is not the case for Bodegas Fariña founded in 1942 and developed by Manuel Fariña since the 1960s. Limited in production, Campus is made from 70 to 140 year old pre-phylloxera bush vines. After fermentation, the wine was aged for fifteen months in new French and American oak barrels.

Deeply coloured, it has black fruits and savoury aromas.

The oak is perfectly integrated with fine tannins. It remains young and tight requiring further bottle age to express its full character. M5 D6

by Ramón Alzamora, Bodegas Noguerals is located at one of the highest altitude points of the denomination. The grapes for this wine were selected from a plot in La Morera de Montsant, in an area known as Mas de l’Abella, at 400M altitude, on the typical llicorella ( a dark brown slate which sparkles in the sun), clay and limestone soils. After traditional fermentation, malolactic was carried out in barrel and the wine subsequently aged twelve months on lees in French, American and central European 300L and 225L oak casks. M7 D8

A new project born in 2005 with the first vintage produced in 2006, Bodegas Licinia has 28ha of vineyards at Morata de Tajuna in the province of Madrid. The vineyards are cultivated organically with no use of chemical treatments or herbicides. Grape selection is meticulous with the best clusters sorted first, followed by the best berry selection. Intense blackberries, vivid summer fruits and clove spice are apparent on the nose. Aged in French oak for twelve months, the wine needs more time for the oak to fully harmonize on the palate. With nice middle palate fruit, it is slightly chewy with a firm, tannic finish. M6 D6

This well-made, meaty, complex wine best expresses the essence of the Monastrell from old vines, Bodegas Castaño’s specialty. The forty year old bush vines are planted on Campo Arriba to the north of the Yecla DO, where the high altitude and soil conditions, limestone, sand and clay, are more appropriate for the concentration and powerful structure desired for this wine. The fruit was harvested the first week in October.

During Medieval times large chestnut and oak tree forests were replaced with grapevines and olive trees which immediately gained notoriety for the quality produced.
