CELLAR OFFERING The wines of the Rhone, Argentina & Chile In 1973, Opimian’s inaugural offering featured three Spanish wines from Tarragona and five French wines from the Rhône and Languedoc. In honour of this our 200th cellar offering, we have selected a special commemorative cuvée from Crozes-Hermitage, linking us back to all those years ago. This wine has been specially crafted by Domaine du Murinais through Bernard Perrin who has designed a unique label bringing together the past and the present.

With our selection from the Old World we include the New World wines of Argentina and Chile. In 1973, who could have imagined that the world of wine would change so dramatically? Could anyone have envisioned that Argentina and Chile would grow to become quality wine producers challenging the superiority of some of the best wines in the world? Historically, Argentina was known as a large wine-producing nation, its focus in those days was on quantity not quality. It is only in the last five years that there has been an understanding of quality regions and quality wines.

T In the 1970s and 1980s the Chilean wine industry appeared marked for destruction as vines were being uprooted. It would be in the early 1990s that it would begin its slow and steady recovery, focussing mainly in the productive Central Valley, and as the decade progressed, setting its sights on quality wines and the international market. Today there are evermore new, cooler coastal regions being discovered in side valleys and small-scale boutique wineries.

Cellar Offering 200 celebrates the diversity and quality wines with great history coming from the Rhône and those that are now emerging from Argentina and Chile as we look forward to a bright, vinous future which is sure to lead us to new discoveries!

OPIMIAN CELLAR OFFERING 200

BERNARD PERRIN Viticulteur-Recoltant-Negociant The Rhône River has its beginnings in the Swiss Alps, flowing down through the Valais region and into France. Here it travels westwards until it reaches Lyon and takes a turn southwards, down and out into the Mediterranean Sea. On its banks are some of France’s most famous and prestigious appellations. The impact of the strong Mistral wind, the exposition of the banks of the river and the soils all contribute to producing a range of styles. Those of the northern Rhône are based virtually exclusively on Syrah with tight concentrated styles, through to Châteauneuf-du-Pape with its blend of thirteen permitted grape varieties and finally the southern region where the wines are based on the soft, high alcoholic Grenache and where the production is dominated by cooperatives.

We will take this journey in reverse, starting in the south and heading roughly northwards through small wine estates many of which have been in the family for generations. Bernard Perrin knows these wines and their winemakers intimately. Together Bernard, his wife Blandine and I, spent time at his Domaine de Milhomme tasting and sampling these wines with food to confirm the final selection.

Luc Tardy has produced this special cuvée to commemorate Opimian’s 200th Cellar Offering. The grapes were sourced from three specific plots within the Domaine du Murinais estate with vines aged between 18 and 30 years old. Each of the three vineyards has a different exposition bringing diverse characteristics to the final blend. When Luc took on the running of the estate from his parents in 1998, the grapes were being delivered to the local cooperative in Tain. Trained as an oenologist at Montpellier, he has since developed a strong reputation for making top quality Crozes-Hermitage. Who better then to produce this celebratory bottle?! The yields are kept low through pruning, shoot-thinning and severe sorting at picking. After cold-soaking for five to seven days, fermentation started by indigenous yeast followed by a long maceration of five weeks. The wine was subsequently matured, 30% in oak and the balance in tank creating a hugely concentrated wine with great balance, fine tannins and a long cherry and savoury olive finish. M6 D7

The Costières de Nîmes appellation lies in the south, in Rhône Delta country and bordering on Provence, the Languedoc and the Camargue. Here the land is flat with sand and gravel soils and it is where the best wines offer good quality and value for money. Domaine la Roche, south of Nîmes, has been in the family for four generations, but actually dates back to the 13th century when it was established by Cistercian monks. Today, it is run by the Boyer sister and brother team Fanny, who makes the wines, and François who tends the vines. M7 D8

Domaine des Romarins consists of 15 hectares located in the far south of Southern Rhône, west of Avignon. Rich with Roman history, the Domaine is only 12 km from the UNESCO classified World Heritage Site the Pont du Gard, the 50km Roman aqueduct built in 40-60 BC. The soil contains the stereotypical “galets” deposited by the Rhône River over a clay base producing wines with weight and complexity. M7 D7

Signargues is the most southern of the Côtes du Rhône Villages. The quality of the 2009 vintage allowed for the full ripeness of the Mourvèdre which was blended with Grenache and Syrah. The grapes were hand-picked and macerated for 25 days with the Syrah being aged in barrels for 15 months. The flavours of the warm summer and wild herbs express themselves in this wine combined with black cherries and lots of tannin. M6 D7

Tavel, lying to the west of the Rhône River, has a longestablished reputation for quality rosé wines. Château de Manissy, owned by the Pères Missionnaires de la SainteFamille, has been producing rosé wines since the start of the 20th century. It has 30ha of a single plot in Tavel with vines up to 85 years old on a sandy clay soil with typical “galets” (large pebbles). Winemaker Florian André insists on the grapes being hand-harvested early in the morning, while temperatures are low, in order to retain maximum fresh fruit flavours. The skins were left to macerate for 1224 hours to give the wine its delicate pink colour and red fruit aromas. [00] M8 D8

Château de Manissy also has 3.5ha in Lirac on sandy soils over clay subsoil containing rolled pebbles. After the grapes were hand-picked, they underwent cold soak prior to fermentation at 24-28ºC with daily pump-overs. Post fermentation, Florian aged approximately 20% of the wine in new French oak barrels producing a wine with mellow spicy aromas and a soft palate. M6 D7

Châteauneuf-du-Pape is the southern Rhône’s most famous, iconic appellation known for the rounded, rolled “galets” that carpet the ground and its thirteen permitted grape varieties.

Domaine des Cigalons has been in the family for four generations. Situated on the right bank of the Rhône, Grenache, Cinsault, Mourvèdre and Syrah are planted on clay limestone soils with a high proportion of “galets” and are organically farmed. The grapes underwent traditional fermentation and produced a wine with intense coffee, spicy, smokey aromas, the typical softness of Châteauneuf on the palate, and a long, memorable finish. M6 D6

Domaine de la Pigeade, established in the 1960s by Nicole and Claude Vaute, is now run by their son Thierry and his wife Marina. Previous to the installation of a winery in 1996 in the old 16th century building, the grapes were sent to the local cooperative. 42ha of vines are cultivated of which a large proportion are Muscat. The grapes were hand-picked and skin contact carried out before gentle pressing.

Fermentation at low temperatures was arrested through the addition of alcohol to produce a wine with fresh citrus flavours and balanced sweetness. [08] M9 D9

Perched at 400M on the slopes of the Dentelles de Montmirail with panoramic views of the Mont Ventoux, the plateau of the Luberon and the Alpilles, the estate was established in 1955 by Aimé Jullien and is now managed by her son Guy. The cave is located on the site of a 12th century chapel with 35ha of land of which 20ha are under vines including 5ha of vineyards in the Côtes du Ventoux appellation. The two grape varieties are vinified separately with Carignan bunches left on stems undergoing semi-carbonic maceration and the Grenache de-stemmed. M7 D8

White Côtes du Rhône is not my favourite as I often find it disappointing, however there are always exceptions! Michel and André are the fourth generation to manage this Domaine of 25ha with vines up to 110 years old planted on clay limestone soils. In 2010, the white Cairanne benefitted from a cooler summer to produce a wine with exotic fruit, honey and good acidity. The grapes were picked in early September with a proportion being fermented in new oak barrels and the balance in tank. [00] M7 D7

Château de Montmirail in Vacqueyras has 45ha of vines, 20ha in Vacqueyras and 25ha in Gigondas. The estate, established at the start of the 20th century by Gabriel Archimbaud, was the first to bottle wines in the region.

Today, Philippe Bouteiller represents the fourth winemaking generation that is as passionate as ever to produce quality wines. The Le Graminier is produced from 35 year old vines that lie beneath the unusual and aptly named Dentelles de Montmirail on limestone clay soils facing south east. Here the Grenache produces elevated natural sugar levels resulting in wines with high alcohol, but which remain balanced. M6 D7

Four communes, Beaumes de Venise, Lafare, Suzette and La Roque Alric, were granted cru status in 2005 and allowed to append the name. The “Les Terres Jaunes” cuvée was produced from a blend of different parcels in Trias, on clay limestone terraced slopes at 250-500M, all farmed organically. The grapes were de-stemmed, fermented with indigenous yeast and macerated for nearly three weeks with minimal use of sulphur and no filtration.

The majority of the red vines on the estate are Grenache, giving this wine ample red raspberry and cherry fruit flavours, with fine, elegant tannins. “Lutte raisonnée” is practiced in the vineyards with no use of chemical fertilizers and weed removal carried out manually. After picking, the grapes were fermented on skins for an extended period of three to four weeks with daily punching down to gently extract colour and tannin. M6 D6

In the 18th century, Rasteau was one of the largest vineyards in the Rhône known for producing sweet, fortified wines. Domaine des Côteaux was developed by Robert Charavin’s father Elie post war, expanding particularly in 1976 when he started selling bottled wines. Today, Robert cultivates 10ha in Rasteau on soils rich in clay and a further 3ha in the Cairanne appellation. Grapes from 40 to 60 year old vines were hand-picked and fermented with extended time on the skins. With intense raspberry and cranberry aromas, this wine is elegant on the palate. M7 D7

For a “simple” AOC Côtes du Rhône and with yields as low as 25-30hl/ha, this wine has some serious power! The estate, situated in Buisson surrounded by oak trees, wild rosemary, thyme, broom and of course the garrigues, was originally purchased by Vincent’s grandfather 50 years ago.

In 1998, soon after Vincent took over, he decided to go his own way, leaving the cooperative to focus on the specific characteristics of his three different terroirs. All chemicals have been banned and since 2006 he has been employing biodynamic techniques. Vinification too is natural with no addition of yeast and very long maceration, up to two months. Thirty per cent of the wine was matured in oak with the balance in concrete tanks. M7 D7

Visan, about 25km north east of the city of Orange, is one of the 16 villages in the Côtes du Rhône Villages entitled to append its name in recognition of its quality potential. These vines, located to the west of the village of Visan at an altitude of 140M, formerly belonged to Vincent’s grandmother.

Here 7ha of 45 year old vines strive on arid land containing 60% pebbles in a sandy, clay limestone soil. M6 D6

Valréas is the most northern of the southern Rhône appellations. Here the Mistral, the 300-400M altitude and the stony clay soils all have an influence on the maturity and flavours of the grapes. The Bouchard family has a winemaking history dating back to the 17th century in Burgundy. In 1965, it was Romain, the eighth generation, who decided to leave Burgundy and to plant vines and build a winery in this region. His son Emmanuel, a biologist by training, has managed the estate since 1997 using organic viticulture. The wine was fermented in concrete tanks with a relatively short six to eight day maceration period on the skins, resulting in a wine with pure, fresh cassis aromas following through on the palate. Condrieu is the home of Viognier and is where it first proved its potential to produce full, delicate, sophisticated wines. The vines are cultivated on south-facing, granite terraces. After gentle pressing, the juice was fermented and matured in old barrels for 10 months giving it its creamy texture. This wine is typical peach blossom and honey on the nose with floral flavours on the palate and a velvety, long finish. [00] M7 D8

An old Domaine that has passed from father to son since 1806, 7ha of Syrah vines are grown on granite slopes facing south east outside the village of Charnas in Saint Joseph where the appellation meets and starts to intermingle with that of the Condrieu. Like the man himself, the wines produced by Gilles are restrained. Work in the vineyard and in the winery is traditional. The yields are kept low and the hand-harvested grapes and skins are left to macerate in the fermented juice for over three weeks. 2009 was a great vintage for Syrah. M6 D6

From the most northern AOC in the Rhône Valley, this is where our journey ends. Produced in small quantities, the Domaine has less than 0.7ha of Syrah. Old vines cling to the steep granite terraces typical of Côte-Rôtie on the west side of the Rhône River. Domaine Villabea was established in 2006 as a partnership between Sylvie Villano and her employee Beatrice, hence the name. It is now Sylvie Villano’s daughter Christelle who makes the wines and a fine job she is doing too! As is the tradition in the region, a small portion of Viognier was co-fermented with Syrah to produce a softer, rounder middle palate. The wine was aged in old oak barrels for 18 months, producing a wine with impressive black pepper flavours and juicy acidity. M6 D6

Argentina

BODEGAS Y VIÑEDOS MAURICIO LORCA Valle de Uco, Mendoza

Mauricio Lorca is Argentinian through and through. Coming from the small town of Rivadavia, 60km east of Mendoza, he trained as a winemaker at Don Bosco, the oldest school in Argentina, and has a Masters in Viticulture from the National University of Cuyo in Mendoza. In 2003, after having identified the areas of greatest quality potential, he planted high density vineyards around Vista Flores in the Uco Valley and set up a winery 25km south of the city of Mendoza, in the traditional style of Mendocinean architecture. Here he makes a range of wines from both traditional and more recently imported varieties.

The Torrontés variety, unique to Argentina, has delicate floral aromas reminiscent of Muscat. The grapes came from the Famatina Valley in the Province of La Rioja 650km north of Mendoza where Torrontés accounts for 40% of the vineyards cultivated in the area. In a year when most of Argentina suffered from less than ideal climate conditions, in the Valle de Uco a cold winter with abundant snowfalls, followed by a dry spring and summer with above average temperatures yielded fruit that produced greater than normal elegance. The ripe Cabernet Sauvignon grapes were picked under ideal conditions in April. After fermentation for eight days at 24ºC and the completion of natural malolactic fermentation, the wine was aged for 12 months in oak, 80% French and 20% American. 2007 weather conditions in Mendoza were considered unusual. The rain that fell in the later part of the summer could have caused damage to the fruit if it were not for the area’s natural ventilation which quickly dried the grape bunches. Low temperatures resulted in later than normal harvesting which for the wines meant elevated aromas and good structure. The grapes were hand-picked with a second selection carried out at the winery. After 28 days of maceration on the skins, the wine was aged for 12 months in 50% new oak barrels and 50% second use with 80% French oak and 20% American. M6 D7

This top of the range wine is named after a star in the Southern Cross, the Alfa Crux, and was produced in a year with varying diurnal differences in temperature between day and night that led to remarkable colour and tannin development. T. VILLARD FINE WINES LTDA Casablanca Valley In 1989, Thierry Villard was one of the first people to set up a familyowned boutique winery in Casablanca.

For many years, the Casablanca Valley had been considered too cool for viticulture. Located 75km west of Santiago and 35km from the Pacific Ocean with its cooling influence in the foothills of the coastal mountain range, it is now recognized as one of Chile’s premium viticulture regions, particularly for white wines. A number of wineries and many other estates are now either buying or growing fruit here. Over the last two decades, the Villard estate has been consistently recognized as one of the best producers in the region. It is now Thierry’s youngest son, Jean-Charles, who is putting all his passion and energy into producing outstanding quality wines.

Produced from 100% Chardonnay, the wine’s complexity is derived from the varied vinification of the grapes. A portion of the hand-picked grapes were crushed, pressed and fermented in stainless steel at low temperatures. A small part of the wine kept in stainless steel (10%) underwent malolactic fermentation. The balance was whole-bunch pressed with fermentation initiated in stainless steel for 48 hours before the transfer to French oak hogsheads where fermentation lasted for 21 days followed by ageing in barrels for 11 months with regular “batonage”. The wines were assembled and stored in stainless steel until bottling. Jean-Charles’ skills as winemaker really show through in this wine. The result is truly magnificent. [00] M7 D7

This Pinot Noir jumps at you right out of the glass with a medium-plum colour and wild strawberry aromas. On the palate it is medium in weight with a lovely layered texture and lots of fruit flavours. It is easy to drink, but in no way is it simple. The cool climate of the Casablanca Valley is perfectly suited for this variety. The grapes were macerated at cool temperatures for eight days prior to fermentation which lasted for eight days with regular “pigeage” or punching down of the cap. Syrah grapes from the highest point of the Maipo Valley on the foothills of the Andes Mountains were used for this handcrafted wine; only 2820 bottles were produced. It was named after the daughter of Aeolus, king of the wind in ancient Greek mythology, in recognition of the importance of the cooling effects of the breezes blowing in from the Pacific and the production of high quality fruit. The grapes were picked, selected, crushed and introduced into barrels by hand. The entire vinification process from maceration to fermentation to malolactic and maturation for twelve months, all occurred within the same barrels. VIÑA LA ROSA Cornellana Estate, Cachapoal Valley, Rapel Viña La Rosa classes as one of Chile’s oldest wineries, established in 1824

by Francisco Ignacio Ossa y Mercado, a miner from the north of Chile. Don Francisco purchased the estate from the first president of Chile, Manuel Blanco Encalada after falling in love with the beautiful Cachapoal Valley. The property, 120km south of Santiago, consisted of the main house as well as vineyards, barrels and cellars. The estate continues to develop with the current sixth generation led by Ismael Ossa since 1987, supervising over 864ha of vineyards and with the skills and experience of winemaker José Ignacio Cancino overseeing the production of quality wines. They continue to produce a range of modern, fruit-focussed wines offering fantastic value.

The Cornellana vineyard, tucked away in a hidden valley, was purchased by the Ossa family in 1991. While it had great potential, sadly the vineyard had suffered from severe water shortage and needed to be entirely re-planted and irrigation installed. The terrain is rocky and ideally suited to Chardonnay which ripens two weeks earlier than in neighbouring areas. The grapes were hand-picked in the cool, early hours. After skin contact for a period of ten hours and pressing, fermentation was at low temperatures with ageing on lees for six months. [00] M8 D8

The Cornellana terrain is rocky, with its lowest point at an altitude of 350M. The relatively cool season in 2010 resulted in rich, concentrated red wines, saturated in colour with soft, but firm tannins. The Merlot and Carmenère grapes were picked by machine, de-stemmed and crushed.

Fermentation was carried out using selected cultured yeast with the temperature allowed to increase to 27ºC to encourage the leaching of colour and tannins from the skins. French oak was used to add an extra touch of spice.

This is another of the traditional Bordeaux varietals that has found its natural new home in South America. Its susceptibility to “coulure”, resulting in very low and irregular yields in its traditional home, led to its being abandoned despite the potential for high quality wines. Produced in a similar fashion to the Cornellana Malbec, it is an interesting comparison to make between two wines, to evaluate two varieties made using the same winemaking techniques. The Carmenère has floral characteristics with coffee and smokey notes and slightly bitter chocolate on the finish. M7 D8

Even though the wine was aged for 10 to 12 months in barrel, it remains young with notes of fresh coffee, rather than obvious oak, and nice depth on the palate. M6 D7
