The fine wines of Australia and South Africa These two so called “New World” countries continue to evolve, producing quality wines in a diversity of styles. Not only are the wines good, but both countries are full of culture, history and boast some of most beautiful places to visit. The southern Cape, with its backdrops of purple/blue shadowed mountains, its oceans and the old Dutch Homesteads scattered around, has Cape Town within a stone’s throw of Constantia, Durbanville and Stellenbosch. Margaret River in Western Australia runs south of Perth in parallel with the impressive coastline and beaches of the Indian Ocean renowned for its surf. Adelaide in South Australia, buzzing with wine bars and restaurants, is only 30 km away from McLaren Vale, where some of the earliest vineyards in Australia were planted in 1838, close to the Gulf of St. Vincent and the gently undulating hills of Adelaide Hills.

These regions are home to some of the most beautiful landscapes and beaches in the world – distinct, hilly, gently sloping, and rugged. This is no coincidence; the influence of local landscape, the altitude, the distance from the sea or oceans, all have a large impact on the quality, variety and style of the wines produced. It is the passion and drive of the winemakers to explore, experiment and maximize quality that is the common theme between these wines and regions.

About the Cover: This photo was taken at Briar Ridge Vineyard during the hand-picking of the Old Vines Shiraz block at the end of January, during the 2010 vintage, one of the earliest vintages on record. Hand-picking commenced at 5:00 am and at 8:30 am, when the vineyard crew stopped for morning tea or “smoko” as it is called in Australia, the winemaker placed his hat on the post of the vineyard row that was last picked so the team knew exactly where to start.

Semillon, the white variety most typically associated with the Lower Hunter Valley, is grown alongside Verdelho on the sandy loam soils of the valley floor. The Sauvignon Blanc comes from the newly emerging region of Orange at an altitude of 800 metres, on volcanic soils with its cool climate.

2010 was one of the earliest vintages on record and a very good year in both regions. Grapes were picked, pressed and chilled followed by long, cool fermentation using selected yeast. This lively wine, ideal for early drinking, reveals refreshing citrus and tropical fruit flavours with zesty acidity on the palate and a pleasant persistent finish. [01] M7 D8

A portion of the Chardonnay grapes came from the original Rockpile vineyard planted in 1972, where the well-drained gravelly loams consistently produce high quality grapes, and the balance from the Orange region. The grapes were hand-picked and, after pressing, fifty percent of the juice was fermented in small French oak barrels and aged on lees a further four months. The other half was fermented in stainless steel tanks and the two combined to create a wine with fresh fruit and complexity. This is a bright, tropical, fruit-driven style that is rich and flavoursome on the palate. The wine is complemented by subtle vanillin French oak adding complexity and creaminess.. [00] M7 D8

Orange is one of the most exciting newly emerging areas in Australia. One of the highest altitude regions, its boundaries are dictated purely by topography and altitude, the 600 meter contour line. It is dominated by Mount Canobolas which rises to 1396 meters and on whose slopes Briar Ridge planted thirty-five hectares of vines in 1997. The vineyard includes approximately three hectares of Sauvignon Blanc at 800 meters. Suited to this cool climate, the grapes are hand-picked, chilled and then pressed. The clear juice is slowly fermented at low temperature to maximize the delicate Sauvignon Blanc fruit aromas and freshness. A very attractive wine, it displays aromas of passion fruit and gooseberries with a touch of grassy complexity. The palate is rich with a clean, refreshing citrus line giving great length to the finish. [00] M7 D8

This is the top tier of quality from the estate. The Single Vineyard wines are produced in very limited quantities from the best vineyard blocks and only when the vintage year has delivered optimum growing conditions. These wines, rarely sold outside of Australia, are available only through the cellar door or domestic wine club, but a small quantity has been allocated for Opimian. Grown on well-drained sandy loam soils, thirty percent of the grapes were fermented in new French oak barrels with the addition of wild yeast and partial malolactic followed by ageing on the lees for eight months. Seventy percent were fermented in tank and the two components blended and bottled in October 2009. An excellent vintage for Hunter Valley Chardonnay, the 2009 has subtle melon and tropical fruit aromas with a hint of butterscotch. The palate is rich with vanilla oak and a soft creamy texture. The three grape varieties, Cabernet Sauvignon, Merlot and Shiraz, were grown in the warm Hunter Valley region and in cooler Coonawarra, where fruit is harvested two to three months later. 2009 was good in the Hunter Valley with fine growing conditions. In Coonawarra a dry spring with strong winds during flowering in November led to a relatively small, but high quality vintage. Each of the varietals was harvested separately. After crushing and de-stemming the must was cold soaked on the skins for approximately seventy-two hours before being fermented at relatively low temperatures. The wines were aged in two and three year old French and American small oak casks for twelve months prior to blending and bottling. This fruit-driven wine displays layers of ripe wild berry, mulberry and plum fruit flavours enhanced by a subtle background of toasty oak.

The tannins are soft and silky. M8 D8

This Shiraz is produced from grapes sourced from thirty year old vines planted on well-drained fertile red clays over limestone based soils. After crushing the grape skins and juice were left in contact for twenty-four hours at low temperature before being fermented. Fermentation was completed after approximately six days and the wine run off the skins was matured in two to three year old small French (70%) and American (30%) oak casks for fourteen months maturation. This classic, fruit-driven wine is rich and fullbodied. Typical of the variety, the wine displays pepper, spice and layers of ripe berries with a fine tannin structure that is refined and smooth. In red winemaking it is the skins that leach colour and tannin.

Traditionally, this extraction occurs during fermentation when the yeasts are beavering away to transform sugar into alcohol.

More recently, it has been noted that soaking the skins at low temperatures for three to four days prior to fermentation can produce highly concentrated, softer wines. This Cold Soaked Cabernet Sauvignon comes from grapes grown in two distinct and contrasting regions with eighty percent coming from the cool climate regions of Orange, with its rich volcanic soils, and twenty percent from the hotter Hunter Valley, with its clays and alluvial loams. Each element brings a different characteristic creating complex aromas with lifted blackberry and cinnamon and balanced cedary oak. The wine was matured in one and two year old French oak casks for twelve months prior to bottling. M6 D7

Briar Ridge has nearly forty hectares of Cabernet Sauvignon in the Wrattonbully region which is north of and adjoins Coonawarra and which also has Terra rosa soils and a slightly warmer climate. 2008 was a pretty good vintage with ideal conditions early in the season followed by hotter, drier weather in the summer which accelerated ripening. The grapes were cold soaked for seventy-two hours and then fermented at 22-24°C. The wine was matured in new and one year old barrels, seventy percent French, thirty percent American oak, for fourteen months.

On the palate concentrated blackcurrant and blackberry fruit flavours emerge followed by lingering tannins and the rich elements drawn from the high quality oak. M6 D7

Langhorne Creek is a region with a long viticultural history.

Much of this is due to Frank Potts who, having arrived in South Australia in 1836, planted vineyards on either side of the Bremer River and devised a complex weir and channel system to flood irrigate the vines. Geoff Hardy has two hundred hectares at Angas Vineyard where the grapes for this wine are grown. The wine has a slight pinkish hue, with apples, peaches, baked pears, citrus and wild blossom aromas. It is soft and elegant with fresh melon and peach flavours and fine acidity that leaves a lasting impression.

The term Meritage relates to blends created in the “new world” based on at least two traditional Bordeaux varieties; a combination of Cabernet Sauvignon, Cabernet Franc, Malbec, Merlot, Petit Verdot, Carmenère or the rarer St. Macaire and Gros Verdot. The grapes were fermented in traditional open top fermenters and the wine matured in French and American oak barrels. Intensely coloured with violet hues, this wine has ripe cooked damsons, Christmas cake, figs and ginger spice aromas. On the palate there is the fruit sweetness of fresh plums and the richness of blackcurrants and wild berries. M7 D7

The Limestone Coast region was once an inland sea which contracted after a series of ice ages. The base of the area is limestone formed from the abundant ancient marine life. In addition, layers of Terra rosa soil have formed by decomposed limestone with high levels of oxidized iron. The 160 hectare vineyard was planted by Geoff in 1993. In 2009 mild weather generally prevailed except for a heat wave in late January/ early February which caused vine stress. Fortunately, cool conditions returned with rainfall in mid-March. This Shiraz is an intense vibrant plum colour with chocolate combined with black cherries, blackberries and a hint of black olive on the nose, typical of Shiraz. Full-bodied with juicy, rich black fruits it is concentrated, with soft tannins, black cherry flavours and neat acidity on the finish. M6 D7

The Petit Verdot grape variety, originally from Bordeaux, was previously shunned due to its late ripening, as more often than not it did not achieve maturity. More recently interest in it has been generated in other regions and it is proving popular in Australia. Petit Verdot grapes grown in the Limestone Coast with five percent Merlot from McLaren Vale were fermented in open top tanks and the wine subsequently aged in French and American oak barrels for between twelve to sixteen months. It has a deep, intensely vibrant colour and a floral violet nose with herbal notes. The palate is rich and concentrated with grippy tannins. It will mature into something quite special. M6 D6

2008 is remembered by winemakers for a record fifteen day heat wave which began in early March when the vintage was already underway. This was a major event causing sunburn, shrivel and rampant sugar accumulation. It was therefore very much a vineyard management year and Geoff’s skills and knowledge certainly show through in this wine. Despite the heat, this Cabernet Sauvignon has retained its herbal, cassis typicity complemented with spicy toasty oak. Its opulence and fine-grained tannins provide elegant texture. M7 D7

This blend combines Viognier to give generosity and complexity with early picked Semillon bringing crisp, fresh flavours.

The K1 winery, located only 40 km south of Adelaide, was planted in 1986; Geoff was the first to do so in this area.

Sited on a ridge, the vineyards look down over the Willunga Basin to the Gulf of St. Vincent from an elevation of between 300-350 metres. Crop levels in 2009 were twenty to forty percent down due to below average rainfall and a burst of hot weather in late January, early February. However, subsequent mild conditions and some intermittent rain made it a near perfect vintage. This wine has citrus-lime, orange blossom notes with crisp lemon zest flavours coming from the Semillon and weight and complexity from the Viognier. [00] M8 D8

This wine is a vineyard blend using the traditional “old world” technique where a small percentage of the white grape variety Viognier is co-fermented with Shiraz. This practice was originally developed in the Rhône for what were practical reasons; the grape varieties were all planted together and mixed in the same field. The addition of a small amount of Viognier, a practice now often used in producing quality wines, adds complexity and a spicy aromatic lift. The wine was matured for twelve months in eighty percent French and twenty percent American oak with twenty percent new barrels. On the palate there are ripe plums, spicy black fruits and peppery spice with fine persistent tannins.

All the fruit for this wine is grown on the K1 Estate with sixtyfour percent Cabernet Sauvignon giving the wine its backbone and structure and thirty-six percent of Spain’s classic varietal Tempranillo giving juiciness and fruit. The wine was matured in oak for twelve months, seventy-five percent French and twenty-five percent American with twenty percent new barrels. Medium plum ruby in colour, it has a restrained, spicy nose with coconut oak, red cherry and herbal notes. It is juicy and drinkable now with lovely soft tannins. M6 D6

February 2007 in Adelaide Hills was the hottest month ever recorded. This combined with low rainfall and vigour brought the harvest forward by three or four weeks. This Merlot is now showing wonderful development with an earthy, black truffle nose and a cedary, cigar box characteristic. Red and black cherry flavours emerge from the glass to give truly typical Australian upfront fruit and a cool climate, almost “bordelais” structure, with soft texture and bitter chocolate flavours on the finish. This wine was commended earlier this year at both the International Wine Challenge and Decanter Wine Awards in London. M6 D7

Two Shiraz clones produced the fruit for this wine with grapes carefully hand selected and the wines made in small batches. These were aged in eighty percent French barrels and twenty percent American hogsheads for twenty months, with forty percent new oak. The resulting wine is elegant; intensely vibrant plum in colour with dark chocolate, kirsch, smoke and fresh cherry aromas. Full-bodied and rich, it will benefit from further maturity. Bitter chocolate, cherry flavours and roasted coffee contribute to its long, luscious finish. M5 D6

WESTEND ESTATE WINES Griffith, Riverina, New South Wales The Riverina is the third largest wine-producing area in Australia. The climate is hot and dry, vineyards are flat, and viticulture was only ever possible due to the Murrumbidgee Irrigation scheme developed in the early 1900s. The region attracted waves of Italian families after both the First and Second World Wars. One such couple was Francesco and Elizabeth Calabria. Newly arrived immigrants in 1927, they purchased a five acre block on the outskirts of Griffith. Proudly owned by the Calabria family since 1945, it is Francesco and Elizabeth’s youngest son Bill that has brought Westend Estate to the success that it enjoys today as one of the producers of the finest wines in the Riverina. It remains a family affair with patriarch Bill at the helm and his wife Lena actively involved along with the third generation of the Calabria family, daughter Elizabeth and three sons, Frank, Michael and Andrew.

The Riverina region has developed a reputation for producing world class Sauternes-style dessert wines affectionately referred to as “stickies”. Grapes are left on the vine and, under certain weather conditions, the ”noble rot”, Botrytis Cinerea, develops resulting in concentration of sugar, acid and flavour development. 2006 was a good year for this style of wine in the Riverina with early morning dews in late April encouraging the development of Botrytis. Semillon and a small proportion of the Pedro Ximénez grape, used in Sherry, were picked by hand between May 24th and July 10th. After pressing the juice was fermented and aged in new French oak barrels resulting in this intensely fragrant wine with aromas of marmalade, apricots, vanilla and honey. [06] M6 D9

Semillon is the most widely planted white grape in the Riverina and makes a very nice base to blend with other varietals. The red Shiraz grapes are mixed with the white Viognier grapes before the wine is made. The addition of white grapes at this stage is thought to preserve the brightness of the red pigments during fermentation. Typically, between two and seven percent Viognier is added to create a full, fragrant wine. This seems like a small amount, but it is enough to change the pathways of the flavour and colour development during fermentation. In this fine example, the vibrant purple red colour introduces bright, floral aromatics with blood plum and spice. HASTWELL & LIGHTFOOT McLaren Vale It started out as a hobby between friends in 1988 with the purchase of a plot of land and the planting of approximately six hectares of vines.

Today, the Hastwell & Lightfoot vineyard and winery consist of approximately sixteen hectares of vines and an additional hectare of olive trees.

McLaren Vale is South Australia’s second largest grape-growing region with eighty percent being red grapes.

Shiraz is by far the most cultivated, followed by Cabernet Sauvignon and Chardonnay. At Hastwell & Lightfoot these typical varieties are complemented with the less usual Viognier, Cabernet Franc, Tempranillo and more recently Barbera.

Viognier is not an easy grape to get right due to its erratic cropping and susceptibility to disease, but when it is good it can be superb. Originally from the northern Rhône and most famous as the grape that produces Condrieu, in recent years Viognier has become quite fashionable with plantings in most corners of the globe. Hastwell & Lightfoot planted it in 1996. What a great example; this is fresh, ripe, delicate white peach, apricot and honey aromas, with typical broad Viognier structure on the palate and a lingering finish. [01] M7 D7

2008 was not an easy vintage in McLaren Vale. An extended heat wave in February, just around picking, led to even higher alcohol levels than normal and some raisining of grapes in certain parcels. Wines produced were variable and really depended on the vineyard. The Hastwell & Lightfoot Shiraz has an intense, vibrant deep purple colour.

On the nose floral aromas combine with plums, damsons and mulberry fruits. The palate has good weight and concentration with winter fruits, chocolate and smoky influences from the American oak in which it spent twenty months. M6 D7

With less than one hectare of Cabernet Franc planted, this is a small production and is part of the original plantings completed by Hastwell & Lightfoot in 1988. The grapes were fermented in open top fermenters at low temperature and the wine subsequently aged in a mix of new and old barrels to provide complexity. Medium ruby in colour, the nose releases lots of red fruits, redcurrants and cranberries as well as minty herbal notes which develop in the glass. Soft, juicy attacks on the palate with toasty oak flavours are the prime characteristics of this complex wine with fine tannins. SONGLINES ESTATES Milsons Point, New South Wales It was a huge pleasure to meet Martin Krajewski, one of the founders of Songlines Estates, and spend some time with him, Pierre Chanzonkov and Kenneth Christie at the Institute of Masters of Wine symposium in June of this year. Martin is a huge fan of Opimian and was falling over himself to say how much he enjoyed visiting Canada last year and speaking with Opimian members.

Songlines Estates is making absolutely outstanding wines and I’m not surprised! I have known John Duval, since his days at Penfolds where he spent twenty-eight years, sixteen as Chief Winemaker. There are few people with such an intimate knowledge of the vineyards and potential in this area.

Kookaburras are native to Australia and New Guinea and are best known for their unmistakable call which sounds like loud, human laughter. They are carnivorous and will eat lizards, snakes, insects, mice and other small birds

This is the first of three McLaren Vale Shiraz wines produced

by Songlines Estates, each of which are concentrated with ripe black fruits and Morello cherry flavours. Just 40 km south of Adelaide, McLaren Vale has a range of soils and varying climate depending on the distance from the ocean with its cooling influence and altitude. Shiraz produced in this region is densely coloured, richly flavoured and high in alcohol. In 2007, drought conditions through the growing season resulted in very low yields. The Shiraz grapes for this wine come from selected vineyard plots adjacent to those producing the flagship Songlines Shiraz. The grapes are specifically chosen for their ability to produce young approachable wines. Low yields resulted in concentrated grapes which were fermented in traditional small open top fermenters with “pigeage” carried out by hand to gently leach out flavour and ripe tannins from the grape skins. The wine was aged in older oak barrels creating a wine with herbal notes combined with black fruit. It is soft, rich, ripe and concentrated while elegant, mellow and easy to drink. M7 D7

It is the knowledge, experience, attention to detail and passion of John Duval and David Fatches that make Songlines a truly outstanding wine. Forty to 110 year old vines in selected parcels are hand-picked not only row by row, but in some cases vine by vine and winemaking really is micromanaged with each parcel tasted daily and decisions taken based on minutiae.

About fifteen percent of the grapes were fermented in barrel, giving more intense but softer rounder extraction of oak flavour and tannins. Before being assembled, batches were matured for a minimum of eighteen months in new oak barrels, approximately ninety percent French and ten percent American. The Songlines Shiraz is intense in colour. Cooked plums, red fruits, vanilla and complex layers of flavour come through if decanted and left for six to ten hours if drinking soon, but be patient as it will reward with further cellaring. The 2007 Shiraz/Cabernet Sauvignon is one such wine.

The Central Ranges vineyard consists of eight hectares planted in 1994 with vines on their own root which enhances varietal definition. Made from the classic Australian blend of Shiraz and Cabernet Sauvignon, it is medium brick red in colour with purple hues. The nose is blackcurrant fruit with a touch of mulberry and cherry from the oak and bottle maturation. The palate is generous with medium weight and persistent, fine-grained tannins, coming from the Cabernet Sauvignon, on the finish. M8 D8

Since the 1970s Margaret River has established a reputation for producing world class quality wines, the most famous of which were based on Cabernet Sauvignon. In this beautiful region, the climate is cool for Australia, but summers are warm and dry tempered by the onshore Freemantle Doctor wind. Margaret River’s reputation now extends to Sauvignon Blanc, Merlot and Shiraz. Chapman Grove is a relative newcomer to the scene.

Set up by Ron Fraser, it only produced its first vintage in 2005 yet in 2009 it was named

by Australian wine critic James Halliday as one of Australia’s top ten new wineries.

Winemaker Bruce Dukes focuses on the quality of the fruit and the use of French oak to enhance varietal and regional characteristics.

South Africa Less than 10 km northwest of Stellenbosch is Devonvale where Jacques Fourie, an experienced winemaker who has worked in a number of wineries at home and abroad, has made his home at Clovelly. His philosophy is simple, "Never forget that winemaking is feelings, work and that the operative words are look, smell, taste, feel, listen." Clovelly consists of approximately four hectares of Cabernet Sauvignon with a Tuscan-style homestead and magnificent sweeping views of the surrounding hills. Jacques is currently in the process of re-structuring his vineyard while also sourcing grapes from producers in the Stellenbosch and Robertson regions, with whom he has had longstanding relationships. The Wild Fig, The Rosé, and The Berry are made exclusively for Opimian.

The fruit for this wine was sourced from Jacques’ own vineyard as well as two selected sites in the Stellenbosch region.

After de-stemming, the grapes were sent to the fermentation tanks and cold soaked for nine days, with two to three daily “pump overs.” The fermentation was finished on the skins. The juice was then moved to barrel for malolactic fermentation, with bi-monthly topping from specially selected barrels, and remained in barrel for sixteen months. The final blending includes only the best barrels and filtration is kept to a minimum. The brick red colour leads into ripe, dark berries, cherries and cedarwood on the nose. Jacques’ Chardonnay is influenced by his winemaking days in Sonoma County

STELLEKAYA WINERY Stellenbosch An important centre for South African wine, Stellenbosch, founded in 1769, is the second oldest European settlement in the Western Cape Province after Cape Town. Grapes were planted in the fertile valleys around Stellenbosch soon after the first settlers arrived. The town is also home to the University of Stellenbosch where many of the Cape’s winemakers are trained including Ntsiki Biyela, winemaker at Stellekaya Winery since 2004 and South African Woman Winemaker of the Year in 2009. Owned by Dave and Jane Lello, Stellekaya, meaning “home of the stars”, is located in an old brandy cellar on the outskirts of Stellenbosch town centre. Each Stellekaya wine is inspired by and named after a star, this one the brightest star in Taurus, the “giant red”, Aldebaran, known as the “eye of the bull.” The Merlot was grown on the south slopes of Stellenbosch Mountain at 180-200 metres on Tukulu, decomposed granite, benefitting from cool evening breezes coming in from False Bay. The grapes were handpicked and, after cold soaking for two days, fermented in open top fermenters and subsequently aged in French oak.

Malolactic fermentation took place in barrel. With an intense, vibrant dark red colour, the wine has lashings of blackcurrants, plums and cherry menthol. Sweet fruits balance the acidity with soft hints of mulberry while well-integrated, fine tannins provide a soft, round finish. M8 D8

Inspired by the ancient Persian constellation, Capricorn, Deneb Algedi is the brightest star and is known as the “the tail of the goat”. Surprisingly the grapes that go into this wine were only planted eight years ago, just north of Stellenbosch at an altitude of 180 meters on Tukulu. Yet, the wine is tremendously rich and concentrated. Grapes underwent cold soak prior to fermentation with the wine subsequently ageing for twelve months in French oak barrels. The intense ruby colour leads to a red fruits, liquorice, and white pepper nose. It is full-bodied, with bags of flavour and all the elements perfectly integrated with the wood. With a slightly lighter mid-palate than that of the Merlot and Cabernet Sauvignon, chocolate adds the finishing touch. M7 D8

This is the wine that won the judges over and earned Ntsiki, one of sixty-five entries, the title of South African Woman Winemaker of the Year in 2009. According to Marilyn Cooper, head of the Cape Wine Academy and president of the judging panel, Ntsiki sparkled. "Not only did she impress us with her well-made Cabernet Sauvignon, but she is confident and passionate about the wine industry, and eager to share her knowledge and passion with others.” This wine is inspired by the brightest star in Scorpius, Antares, a “giant red” which forms the heart of the scorpion. The colour has started to develop some ruby hues with hints of cassis combining with more mineral smoky notes on the nose. The family-owned and run Nitída Cellars is one of the most consistently awarded boutique wine cellars in South Africa and was named “Top Producer” at the 2009 Michelangelo International Wine Awards.

Cellars in Durbanville is approximately 30 km east of Cape Town and less NITÍDA CELLARS Nitída than 20 km from the Atlantic Ocean and its cooling influence, making the region particularly good for producing refreshing whites and well-defined Cabernet Sauvignon. Nitída Cellars was named after the Protea Nitida found growing on Durbanville the farm. Protea Nitida is a tree native to South African fynbos, a major vegetation type of the small botanical region known as Cape Floral Kingdom.

Bernhard Veller, owner and winemaker, is the driving force behind this winery.

Supported by his wife Peta who is responsible for marketing, the wines produced reflect the cool Durbanville terroir.

The proximity to the ocean brings night temperatures significantly low in the Durbanville area, one of the factors conducive to allowing full flavour development in white varieties such as Sauvignon while retaining freshness and acidity. Produced from 100% Cabernet Sauvignon grown in different Durbanville parcels, after fermentation the juice spent four weeks on the skins before pressing and racking to barrels. The wine was then matured for twelve months in first, second and third fills French oak. With an intense plum colour, the complexity of the nose, still muted, hints at cocoa, redcurrants and cranberries. Silverhurst is a second label produced by David van Niekerk. A blend of three varieties, the Cabernet Sauvignon and Merlot are from Stellenbosch and Darling with the small addition of Shiraz coming from Franschoek. The fermentation process was carried out over a period of fourteen days in stainless steel tanks. 225-liter French Oak barrels were used for the extended maturation process with pumpovers and punch downs to ensure optimum extraction of colour and tannins prior to malolactic fermentation. The wine was racked every three to four months and left to mature in wood for a total of fourteen months.

Dark, rich plum in color, the nose is spicy with a youngberry fragrance and a myriad of broody fruit and jammy nuances.

The firm Cabernet Sauvignon backbone is finely complemented by the finesse and elegance of the Merlot and Shiraz. Elegant yet powerful, the palate is impressively long with beautifully ripened tannins. M6 D7
