North to South

A tale of “two countries” told through their wines The vineyards of northern France stretch like a string of pearls along the length of the Loire River and onwards towards the vineyards of Burgundy’s Côte d’Or, occupying some of the most expensive agricultural land in the world. These vines are a world away from those of southern France, perhaps a couple of hours by car, but from a wine lover’s viewpoint, a world apart. The north, home to sophisticated reds and whites, produces light, refined, rare wines, while the south, home to the sunny wines of Provence, Languedoc and Roussillon, is a gushing fountain of sturdy and robust characteristics and outstanding value. Our offering introduces the new classification which replaces the Vin de Pays d’Oc designation. The Pays d’Oc IGP (Indication Géographique Protégée) conforms to the European Union’s move to harmonize the protection of local products. There has been a perceived hierarchy of quality among the various regional classifications with AOC at the top of the scale. But, as we all know, wines with the AOC designation do not always deliver quality.

In fact, many Vin de Pays wines are far superior in quality than some of the AOC wines. The IGP designation formalizes the protection of traditional processing methods linked to local terroir and guarantees consistent quality and aromatic profiles.

In addition, wineries that receive certification by the “Véritas Certification France” office guarantee origin. It is earned only after rigorous quality control with proof that the typicity of the Pays d’Oc has been maintained. In addition, a variety of internal and external controls include a review of lab analyses, documentation, production site, and all aspects from grape to bottle.

About the cover: Dudley, the chocolate Labrador at Château Canet, is a real multitasker. He is responsible for the surveillance of the barrels during the ageing period in the cellars and chasing the wild boar from the domain’s vineyards. Dudley is almost two years old and is pretty happy with his job at Château Canet.

Le Page is the palest, most delicate shade, made from the finest free-run juice prior to pressing. The bouquet’s vigour gives it plenty of interest and understated Cabernet Sauvignon qualities. All the fruit came from a twelve acre plot which annually yields particularly concentrated berries. The nose is nicely perfumed with small spring flowers. Attractive, sweet, spicy notes are followed up on the clean, acidic palate by delicate strawberry fruit, ending with a gentle tannin squeeze.

It would be simple to mistake this for fine red Bordeaux as it shares so many similarities, but here, the fruit seems warmer and riper. When the previous owner, David O’Brien, made the wines, he always endowed La Source with his heart and passion, as though seeking a reward in admiration and medals. His legacy lives on; this fine 2008 vintage shows vibrant, spicy-edged fruit on the nose, firm and taut with herbal complexity. The structured palate resounds with bright red berries and blackcurrants. Not long bottled, the fine-grained oaky tannins are still shut in; it has all the components and potential to evolve into an outstanding wine with opulence and elegance. M6 D6

Prices in the market for collectable wines have moved steadily upwards as the quality of this great vintage has become widely appreciated. Although Provence produces wines of similar quality and style to those of Bordeaux, it has never attracted the buying frenzy that pushes Bordeaux prices. This superb wine is dominated by Cabernet Sauvignon. The structure and complexity have benefited from the Provencal soils, a mixture of gravel, clay and limestone, with sufficient natural drainage to provide water-stressing and flavour complexity. The three varieties have married beautifully, the spicy fruit of the Syrah adding an extra dimension. After fermentation, maceration and the malolactic process, the new wine was matured in French and American oak for a year to allow the components to fully integrate. A very powerful wine, there is the promise of further development. M6 D7

Languedoc-Roussillon ALAIN GRIGNON, LGI WINES Carcassonne One can only admire the artistry of vine growers who harness a hostile climate or farm land where the rock strewn surface is hard to penetrate. Yet, success is often rewarded as year after year there is progressive increase in the quality of Midi wines. Established twelve years ago by Alain Grignon and two partners, LGI Wines is based in Carcassonne, the heart of the Midi. The organization develops close, hands-on relationships with their producers in an advisory role that extends from the vineyard to the technicalities of the bottling. This selection represents the producers he believes make the best wines of the region.

This is the combination that gives the wine freshness in the glass with soft and supple tannins. It would be difficult not to be impressed by the sheer quality of this delicious, full-flavoured Chardonnay. The first impression takes the palate on a flight of fancy to the great wines of the Napa Valley, to the richness of Far Niente or to the weight and balance of Clos du Val. Here, a welter of ripe fruit is driven by a solid chunk of citric acidity, punching far above its weight as a simple Vin de Pays. Produced by Eric Roure from fruit grown in the village of Argelières, it is compelling with a complex bouquet, full, herbal and savoury, and lovely tropical notes that fill the palate with rich, broad mineral notes. Winemaker Xavier Roger returned to the same two estates where Opimian bought its initial offer. In the intervening years little has changed with the terroir and micro-climate that was ideal so many years ago remaining. The adjoining properties are relatively warm, a few kilometres north of Béziers where the soil ranges from limestone to silt loam over gravel. The wine has a fresh bouquet, initially subdued and elegant until juicy, ripe gooseberry and lime zest mingle with the background of nettles. On the palate it is clean with lime and grapefruit giving vitality. In the middle palate there are hints of opulence, but the solid core of citrus and fruity acidity draws it back and keeps the finish clean and soft. [00] M8 D9

The fruit comes from the same source as that of the Sauvignon Blanc. The harvest was crushed then macerated under pressure for three weeks before fermentation. After blending, part was aged in oak to enhance the presence of the tannin, a process that improves the complexity of the bouquet and adds a soft, stated vanilla perfume. The colour is medium deep with a wonderful aroma of Morello cherries, juicy mulberry and subtle hints of mint and blackberries. The ripeness in such a young wine is unusual; raspberry with a hint of chocolate is sustained by the spine of supple tannin and crisp acidity. M7 D8

TORTOISE CREEK MERLOT-CABERNET, PAYS D’OC IGP, 2009 Tortoise Creek wines are invariably ultra ripe. This is due to two factors, the southern sun and the talented Xavier Roger who supervises the vineyards from the early season pruning up to picking. This wine has a vivid, crimson colour with a beautiful cassis and kirsch nose, a touch of chocolate and ripe berries. On the palate there is concentration with plenty of extract giving weight and grip. The dark fruit combines with the grip of the tannins, a pure, juicy structure and secondary notes of black cherry and plum fruit to fill the palate before the finish. M8 D8

The vineyards lie among dense pine copses which break the coastal winds and protect the vines. The glaring light off the sandy soil reveals a terroir mixed with lime. There is little rain to top up the water table through the summer months, resulting in struggling vines in arid soil. This is a great location for Syrah which is picked early, but fully ripe before crushing with traditional maceration in concrete tanks. In the nose the aromas are revitalized by sweet fruit, mint and herbal notes which form perfect synergy with the cassis and raspberry fruit emerging alongside dark fruits.

This wonderful Domaine is located close to the Mediterranean on the outskirts of the picturesque village of Cébazan, near Béziers. Saint-Chinian only gained appellation status in 1982, but spectacular technical progress has resulted in the wines achieving year-on-year quality.

Winemaker, Florence Sechet harvests her Grenache and Syrah at perfect polyphenolic ripeness, by machine and by hand before vinifying the varieties separately using low pressure carbonic maceration for the Syrah. This fermentation method promotes the development of full aromas which add complexity in the glass. It has a deep colour and beguiling nose with blueberry, cassis, dark cocoa and espresso nuances. On the palate the smooth texture hints at liquorice and thyme with a rich seam of blackcurrant. M8 D8

Driven by the ambition to produce great wine, André Castan searched for the property with all the right qualities to realize his dreams. The vineyard and its vines are now well-established, being planted thirty years ago on limestone with high iron content, inspiring the mention “Les Terres Rouges” on the label.

Vineyards in this area, close to Béziers, regularly yield more than sixty-five hectolitres per hectare, but André restricts his harvest to forty-five hectolitres per hectare. The juice is vinified following local traditions of long maceration and maturation in cement vats. It has a full, ruby colour and a pleasant nose with warming hints of chocolate and red berry fruit. On the palate the rustic attack of red fruit and bittersweet cherry grip the tongue with a dry, tannic buzz and fine background acidity. M7 D7

This wine comes from the only southern appellation which enjoys the right to blend two southern varieties, such as Grenache, and those of the Atlantic coast, typically Cabernet Sauvignon. The estate is huge with more than 225 acres managed by Frédéric Maurel who employs the talented Anne Marandon as winemaker. In a complete transformation from the old style of the wines, Anne now seeks to trap the freshness and vigour of the fruit using no oak for maturation, but offering deep aromas and the flavours of the freshly picked grapes. After fermentation in vats, a brief period of maturation allows the tannins to integrate with the fruit. The results are huge depth of colour, a nose that is fat and full of piquant spice and shrubby perfumes, and a palate filled with swirling tannin and brambly blackberries. M6 D7

This is another huge estate farmed passionately by Maryline and Philippe Pagès, who purchased it eleven years ago and have since spent every waking moment working to restore the property and its vines to former glory. The wines have been listed for their excellence for more than 500 years, but it is not fanciful to suggest that they have never been better than now. At first sight, the terroir looks daunting; there is no soil, just endless pebbles from which the vines emerge. Yet, with free drainage and a fine southern exposure, the fruit reaches perfect ripeness early. Like many modern wineries, there is no oak used, the short ageing period prior to bottling is in glass-lined concrete vats. M6 D6

The latest production techniques are used to retain freshness by chilling the juice to a low degree to inhibit any enzyme changes prior to fermentation. This chilling over four to six hours precedes low temperature fermentation. The style that emerges when the wine is bottled represents the new face of well-priced French wine developed to compete with New World whites. It is quite rich, broad and nutty on the nose, with warm, tropical fruit. The palate is full with spicy oatmeal that complements the flavours. Dry on the palate and rich in flavour, this is the result of ultra ripe grapes harvested from Mandeville’s sunlit vines.

The grapes were picked cold before dawn, crushed and chilled with the skins to add the body and aromatics which have re-asserted themselves in bottle. Silver white in colour, it has an upfront, zesty, citrus nose with green, herbal notes and plenty of fruit richness. CHÂTEAU CANET Floris and Victoria Lemstra Rustiques, Languedoc Last June, at the close of a long day at Vinexpo, the mega wine exhibition in Bordeaux, Ken Christie with Pierre Chanzonkov paused at a stand of beautifully packaged bottles. The wine turned out to be that of Château Canet, a Minervois property recently purchased by an engaging Dutch couple, Floris and Victoria Lemstra. Members of an international family with a home base in Picton, Ontario, there was the dream of owning vineyards in the South of France. Today, Floris and Victoria run the family estate, a stone’s throw from the medieval city of Carcassonne in the Languedoc-Roussillon. Within a few minutes of tasting the wines, Opimian had secured a new supplier whose wines we introduce in this cellar offering.

The dark-coloured, classy Syrah gives this light pink its structure and fruit. Medium-bodied and aromatic, it is the perfect summer wine. After harvest, the grapes were left in the press for a few hours for maceration before pressing. It was during this period that the juice took on its light colour and fruity aromas strongly reminiscent of raspberries and strawberries. When Floris selected the grapes for this rosé he chose the younger vineyards as his goal was juice with plenty of fruit and good acidity. The nose is cassis and briar adding warming depth to the acidic bite of fresh raspberry and cherry with small reminiscences of roses, damson jam and herbs. The little known appellation of Minervois covers some of the best wines of the Languedoc; the production of white wine amounts to just a tiny percentage of the harvest. This is a 50/50 blend of two local varieties, Roussanne and Bourboulenc, the combination giving a full characteristic profile. The low nutrient, shallow, stony clay and chalk soil is so inhospitable that even vines and olives struggle to exist.

The vintage was picked early and later bottled without malolactic fermentation, straight off the lees to preserve freshness. The Chenin Blanc is a great classic variety that has slipped through the cracks in recent years. As much as any variety it picks up the characteristics of the terroir, in this case chalk and lime. With the chalkiness comes fragrant honeysuckle, gooseberry and hay, and a complexity that becomes waxy and plump on the palate. Enlivened by finely balanced concentration, it ends with youthful vigour and fresh acidity.

As the crow flies across the Loire, Montlouis is only two miles away from Vouvray. However, driving along the southern bank of the Loire, it is impossible not to remark on the cliff-like banks of white limestone into which winemakers have tunnelled out their cavernous cellars. This small, aristocratic estate with eight acres of fifty year old vines, is still entirely manual, the grapes hand-picked, hand-sorted and then fermented in oak barrels, resting for six months on the lees. This is a complex, luscious Chenin Blanc with a clean, green apple and grapefruit nose and pure honey aromas which precede a zesty palate that reveals the typical refreshing acidity of young Chenin Blanc at its best. Produced exclusively from Cabernet Franc, first impressions suggest earthy beans and spring vegetables before the red fruit comes into focus. The structure is full-bodied with masses of easily accessed cassis and cherries. This is the result of modern winemaking using three days of maceration pre-fermentation, temperature controlled throughout the entire process and, prior to post fermentation, a period of ten days under CO2 pressure to leech out every last nuance of flavour. Now showing a brilliant, dark colour, it has a blackberry and cassis nose and supple, elegant, tannins in the mouth, where there is a vivid piquancy, acidity and persistence. M6 D6

The red wine appellation of Chinon lies on the banks of the Vienne, a few miles upstream from the Loire. In this region the Cabernet Franc is King, producing a medium-bodied wine with vivid red colour and a lifted bouquet of cherries, berries and plums. The Charles Pain domaine totals thirtyfive acres, all Cabernet Franc produced from vines planted in 1986. We selected the top cuvée as it shows greater fruit and concentration. The vines, now twenty-four years old, have reduced vigour, but produce wines filled with the flavours of stone fruit, juicy blackcurrant and redcurrant, and end with a spicy, mineral-edge and good acidity. It is clear from the perfectly equal emphasis of terroir and vinosity in Mollet-Maudry’s wine, that they own vineyards of outstanding calibre. Their soil, so white that it shines, is made up of millions of fossilized molluscs with pure limestone content close to 70%, perfect for Sauvignon Blanc.

The vines are ancient, yielding no more than twenty-two hectolitres per hectare, compared to the Bordeaux average of above fifty-five hectolitres per hectare, the clear reason for the wine’s rich concentration. It is pale, green-tinged with a ripe gooseberry nose. The palate ebulliently expresses its ripeness with clarity that leaves crisp, rich harmony. [00] M6 D6

As a member of the Mollet family, long-established Loire vignerons, Jean-Paul Mollet returned to wines after a successful career as a businessman. He bought “Le Clos du Roc”, a great Sancerre vineyard planted in 1450 and owned by the Abbey of Saint Satur. Jean-Paul’s son, winemaker, Florian Mollet, armed with an MBA and a degree in oenology, set about restoring the glory of the family estate, establishing a winery with more technical gadgets than any other in the Loire. This Sancerre is rich, its forward, grassy nose complemented by an herbal edge. The palate is intense with flavours of gooseberry fruit. With ample ripeness, this is a succulent wine. [00] M7 D8

The vineyard soil is perfect for the Pinot Noir grape. It is composed of clay mixed with “caillottes” [chalky stones] and silt. Although it plays secondary fiddle to white grapes, the thin-skinned Pinot Noir produces sturdy wines with interesting complexity. Hand-picked and vinified at their restored winery, the wine is produced from vines planted on the best hillsides of Saint Satur, Ménétréol and Sancerre.

Recently bottled, it is lively and fresh, a typically acidic wine with persistent strawberry fruit freshness, a distinctly floral bouquet and finely tuned balance. M7 D8

This wine first caught our imagination as it was clearly a fine example of its appellation. The vineyards lie a little to the east of La Rochepot, on top of the low hills that give the Côtes de Beaune their name. Partially matured in used oak casks to introduce a touch of complexity, it is the rich Chardonnay fruit that provides style. The wine is pale golden in colour with an apple and lemon bouquet and a hint of white blossom and spiciness. The palate is elegant and vigorous, supported by an edge of mineral and slate.

But for the arbitrary drawing of a boundary line between villages, these vineyards would lie in Puligny and the wines would demand a higher price. The early impressions, particularly in the nose, are of Californian richness, a fullness of aroma and body that owes as much to the quality of the vintage as the winemaking. The bouquet opens with rich, toasty notes and ripe melon and pear. It is classy, already showing an open availability that can only increase with greater maturity. Toastiness leads the flavours with sliced fruits, melon and pineapple with a squeeze of lemon juice.

Although Jérôme’s wine comes from the basic appellation of the Hautes-Côtes-de-Beaune, the finish appears far superior as there is a great presence of the raspberry flavoured, somewhat elusive, Pinot Noir fruit. Clearly the work in the vineyard is finely tuned, as extract levels are high and the wine has good potential to grow. It is from a great vintage, but that seems scarcely sufficient to account for the quality and balance. Maturation in oak barrels, though without the use of new wood, has given the colour a fine, polished tone, while the nose opens up to bright fruit and sweet berry notes with a supple and elegant palate that will soften and develop in bottle. Unlike most of the Côte d’Or villages, this one lies away from the main slope, in a small valley running towards the hills away from the legendary village of ChassagneMontrachet. The wines of Chassagne-Montrachet are scarcely distinguishable from those of Saint-Aubin, especially the Premier Crus which form part of the same southfacing slope. With a fine golden colour, it is still rather lean, the toasty nose has some acidic complexity and refined apple aromas. The first impact in the mouth is savoury, but being recently bottled it is still restrained with a dry centre.

This is a classy, cool climate Chardonnay with sufficient oak tannins to give it plenty of time to mature and room for the complexity to develop. [00] M5 D6

Over the years, the Billards have acquired bits and pieces of a variety of vineyards. Although they offer wines from several villages, the estate is neither large nor widely spread with the furthest a few minutes drive in a tractor from their home in La Rochepot. In some sites, like this one, they own a few rows of vines where the vineyard produces wine with a rich, dense heart of perfumed fruit.

Fermented and matured using 30% new oak, this has added aromatic appeal. It has a dark colour, a sign of the year, with a tight, spicy nose and a weighty presence of ripe red fruit. The palate is still closed, but has fine structure and appealing raspberry fruit. There is promise of elegance to come. M5 D6

Producing similar amounts of both red and white wines, the vignerons followed the allure of Chardonnay which altered the balance in flavour of white wines. However, the red wines, which come from a valley between the two Montrachet villages, are outstanding. Vinification is traditional with maturation in oak casks, 30% new, for several months before minimal filtration and early bottling to preserve the fruit. The quality is superior to many wines that sell at twice the price. A big wine with a spicy cherry and damson nose, the structure is chunky and tannic with good acidity. Although it has good concentration, it is still too young to be harmonious. M6 D7

This wine comes from a tiny vineyard, so typical of Burgundy, where the Napoleonic laws on inheritance broke up large land holdings. The entire site is only two acres, but the terroir is complex, a mixture of marl and limestone with high iron content. In the early years, the Billards were unable to offer any of their small yields, but our loyalty has reaped a reward with an allocation. This youngster has a deep red colour, not thick, but clear and full. The nose is intense, slightly spicy and smoky with eucalyptus and red fruit. The palate is dense, packed with spice and herbs and balanced with ripe, chewy fruit, animal notes and fine acidity. Here is a classic, young red Burgundy from a great vintage. M5 D5
