This estate was established in 1824 by the Ossa family who left Spain in search of new horizons.

The founder, Don Gregorio Ossa, travelled throughout the country looking for an opportunity to buy land. He finally settled on the banks of the Cachapoal River where he bought the farm of Manuel Blanco Encalada, the first president of Chile. Later, with vine stocks purchased from France, the family planted vineyards and more recently drilled a pipeline to bring water to the Cornellana Valley to irrigate what had been an arid stock farm. This permitted irrigation of the hillsides where vines have flourished in the exceptional sunshine exposure.

Like many well-established wineries, Cornellana turned their sights to new challenges for their winemakers. For this wine, three red varieties were blended in a clean vat with a yeast culture specifically prepared for sparkling wine; fermentation occurred over a four week period. A secondary fermentation under pressure produced dissolved CO2 to give the wine its delicate sparkle and fizz. After a long period of lees maturation, the sparkling wine was bottled under counter pressure. Being blended from red grapes, it has good substance and weight. It is flavourful, balanced and fragrant. [02] M8 D9

The grapes for this vigorous wine were picked early in the day to ensure that the fruit reached the winery while still cold. After crushing, the grapes were macerated on the skins for 7 hours and then fermented using powerful yeast at very low temperatures to ensure maximum extraction of aroma and flavour. Fresh and youthful, the nose shows sliced green apples with gooseberry and grapefruit.

Winemakers the world over are using the “saigné” method to make rosé wines. This system drains free-run pink juice from vats of red grapes so that the colour of the red wines is deepened. The free-run pink juice is then used to make top quality rosé. Although 2008 produced many summer days above 30° C, cool nights fixed the acidity of the fruit.

This prevented the wines from losing freshness with chilled fermentation over many days. [00] M8 D9

A variety of strategies and techniques are used in canopy management including positioning the shoots vertically to maximize sunlight during the ripening period. Combined with carefully restricted irrigation, growth of the fruit continues in a constant rhythm of development and ripening. An intense, purplish-red wine, it has a rich aroma of cassis with underlying cherry, blueberry, cedar wood and chocolate.

Medium-bodied, the structure is balanced by sweet tannins.

From the start of the year it was clear that 2008 would be a great vintage. Thinning of the shoots after flowering in spring reduced the need for water and restricted the crop, then, before ripening, leaves were plucked to improve fruit flavours. After fermentation the wine displayed intense colour with a complex black cherry and blueberry nose. The palate is harmonious with luscious fruit partnering silky and persistent tannins. M8 D8

Planted in 1960, the vines have developed deep root systems that extract nutrients to create concentration and complexity. This blend has a good, hearty colour, deep and pleasing aromas and a measure of freshness in the red fruit notes. Mellow in the mouth, the sweet fruit shows a structure framed by soft but, grainy tannins. The entry and middle palate show off the fresh fruit but towards the finish there’s an attractive and appealing bite of alcohol. M7 D8

The richness of the fruit at harvest is the result of the deep, moderately fertile silt sandy soils of the Cornellana Valley combined with the climate in which winters are typically cold and rainy and the long dry summers feature morning fogs followed by very warm afternoons and cool nights. The combination of soil and weather extends ripening and encourages the development of intense flavour in Cornellana’s reds. This Merlot is bright cherry-red, the nose an interesting combination of black and red fruits with spice, cherries, blackberries, notes of black pepper, cloves and a light touch of smoke. This variety only emerged in Chile a few years ago but since then it has become hugely popular with committed red wine drinkers. After de-stemming the grape bunches were crushed and cold-macerated for five days.

Fermentation and maceration for an additional four weeks completed the process before racking into French oak barriques, 25% new, for a year's maturation. Now perfectly ripe, it is powerful with complex fruit, spices and oak. Wellbalanced black fruit, coffee and vanilla create an impressive, persistent finish. M7 D7

Although the specific Chardonnay clone is unknown, it is documented that the ungrafted vines were planted in 1992. The 2008 already displays a light, golden yellow colour and offers aromas of ripe fruit with sweet butterscotch, toast, cherimoya and mandarin oranges adding aromatic complexity. A marked mineral note indicates youth while the creamy palate brings forth vanilla and lime citrus acidity with refreshing pineapple, suggesting optimum fruit ripeness at harvest. This is an opportunity to try the three most popular Cornellana red varietals. In each case the grapes were picked with a typical analysis of pH 3.6 with 5, 5 g/l fruit acidity and sufficient grape sugar to produce close to 15% alcohol. In all cases the grapes were treated in the same way, typically by crushing and fermenting the grape juice and allowing natural malolactic conversion, with 50% of each wine being matured in medium-toast French oak barrels for six months. As all the fruit came from the same “terroir” it is fascinating to note the emerging differences amongst the three varieties. M6 D6

After each vintage a small number of the finest barrels of four red varieties are put aside for the production of a traditional blend to be offered when semi-mature. The components were individually fermented and matured in new French oak barrels and blended, bottled and stored at the winery for a minimum of six months. Chief winemaker, José Ignacio Cancino says of his 2007 wine, “It has very deep colour, showing great concentration that integrates mint and red berries with sweet plum, chocolate and fine tannins to produce a great wine”. THIERRY VILLARD FINE WINES Casablanca Valley Recognizing that in the context of Chilean wines “size is important”, Thierry made the decision to sell the vineyard he had established that was less than sixty acres. He has now purchased new acreage in the cool upland Casablanca Valley where his new vineyard will produce grapes for his labels in 2009. Until then, the fruit will continue to come from his previously owned Central Maipo and Casablanca Valley sites.

Thierry earned his reputation as a winemaker in Australia where his Pinot Noir was iconic. The skill needed to work this difficult variety to make it something special came with him when he moved to Chile. This has a crimson red colour with a fragrant bouquet offering cherry candy and mushrooms amid a delicate trace of oak. The entry is fresh and lively and builds up mellow autumn leaf and compost with cherry fruit. Towards the finish the fruit sweetness takes on a tougher level of tannin leaving a bite of fire in the farewell. M7 D7

Born in Paris, as a young man Thierry contributed to leading the Australian wine industry into the 20th Century before moving to Chile, with his Chilean wife, to make his own wines. He is no stranger to huge wines blended from the Meritage Bordeaux varietals. Made from a selection of the best casks of his Bordeaux grapes, it is a deeply coloured, cerise-edged wine, with a full oak-accented nose, rich with stewed plum and cassis and edged with green leaves. The fruit comes entirely from un-grafted clones of pre-phylloxera French rootstock. Over time it has become abundantly clear that un-grafted vines not only live and produce fruit for longer, but they yield juice with more complexity and extract than similar grafted vines. The grapes reach the sorting trays within minutes of picking, so there is no flavour loss before pressing. Now very fine and fragrant, it is filled with kiwi fruit and flowering currants. Harvested by hand before dawn between March 5th and 8th, the grapes went into the press immediately after cutting, with the juice allowed to stand for two days to permit the release of any heavy sediment. In the glass it is a light, straw colour with lemon sorbet and lime fruit nuances that are charged with aroma. The texture is simple, fresh and clean and is backed by sweet fruit, especially apple. The balanced acidity, fruit and alcohol give a final hint of astringency that adds to the finish. [01] M8 D8

Deeply coloured, purple rather than red, this Merlot exhibits a frothy energy that carries the intense aroma of violets and lilies mingling with cherry and jam notes. On the palate, a touch of cedar and cinnamon give the wine depth and concentrated spice which, as it warms in the mouth, softens into buzzing tannins that emerge to a small note of earth, forest floor leaves and a long, smooth adieu. Fermented for eight days until almost dry, to extract colour, this wine never sees a barrel. Roberto’s focus is the powerful fruit and allowing it to show off its potential weight and ripe characteristics. Echeverria’s Carmenère has brilliant colour that distinguishes it from other red varieties. It is deep maroon with thick, almost opaque, shades. In the nose massed ranks of red berries, black plums and tobacco leaf lie alongside a typical touch of dark chocolate. The powerful bouquet carries through to the palate, displaying violets and roses, tea leaves and basil, with the tannins so well-integrated, the flavours are smooth and silken from beginning to end. The heavyweight bottle gives an early indication but it is not until the wine pours in a solid, deep red colour that the concentration can be gauged. Early aromas are intense, emitting a hearty and powerful interwoven combination of black pepper, anise, blackberries and a touch of tobacco.

This wine comes from the smallest of France’s controlled denominations, indeed the smallest from anywhere on the globe. The domaine is a mere one acre, planted entirely with the ethereal Viognier vine, in dark granitic soil; the entire vineyard produces no more than 1800 bottles per year. The vineyard is so steep that spraying is done by helicopter before hand-picking. After fermentation, the wine is matured for ten months in old, neutral, oak casks. The colour is deep golden, the bouquet all flowers, roses, freesias and acacia with honey.

The wine reveals purple and plum colours which lead to a powerful wine with youthful characteristics that build a remarkable bouquet drawn by intangible chords to the ripe fruit. After picking, the grape clusters were macerated at below 12° C for seven days. Fermentation on the natural local yeast for three weeks produced huge colour and stunning complexity which continued to develop during the time spent in small French casks. This is one of the finest wines of this style from the Côtes du Rhône appellation. The vineyard lies on the plateau of Signargues, a terroir covered by rose-coloured “galets” deposited by the river over eons. Decomposition of the stones by rainfall assures steady mineral flow to the vines to enhance optimal maturity. Xavier Fabre asks the pickers to pass between the vines many times, picking only bunches showing perfect ripeness. Crushing and skin maceration for 25 days at controlled temperatures follows.

After fermentation the wine lays in cask on the fine lees for twelve months before bottling. Balanced and harmonious, this is a wine of great quality and structure with hints of leather mingling with luscious fruit. M6 D7

The estate lies in the best part of the appellation, where the entire surface of the vineyards is covered by large pebbles and sharp, sandy soil. This cuvée is produced by the Berthet-Rayne family, exclusively for Opimian, from a blend of three vines selected from the thirteen varieties allowed by regulation. Peppery, smoke-accented Cinsault, with sturdy, tannic Mourvèdre provide spicy aromas with violets and blackberries that offset the richer, jammy flavours of the Grenache allowing the blend to develop opulent fruit, vanilla and liquorice. The vintage was picked by hand, then pressed lightly to restrain any excess tannin so that the wine remains delicate and fruity as it ages. M6 D7

This small, historic vineyard remains the property of the Missionaries of the Holy Family, but it is farmed by Florian André, a young vigneron with the ambition and skills needed to make great wine. The grapes are hand-picked followed by cold maceration to improve the aroma and flavour extraction before fermentation and ending with maturation in oak, with 20% being in new barrels. It is a quintessential fireside red, in a Châteauneuf-du-Pape style with a rich, dark colour, a spicy nose showing close linkage with blackberry jam and opulent fruit and a concentrated flavour. This wine comes from an ancient estate originally developed by the Cistercians in the 13th century. It is from the southernmost appellation of the Rhône where the vineyard lies on a small plateau covered by sand and lime mixed with very large pebbles, known as “galets”, similar to those of Châteauneuf-du-Pape. The region, covering 25,000 hectares, produces almost exclusively red wines. The vineyards are surrounded by thick windbreaks of dense pines which provide the perfect micro-climate to hasten the ripening of the fruit. Although this is still very young, it has already developed wonderful earth and spice nuances with stone fruit flavours supported by warming, sturdy tannins.
