Lack of action to address an outdated and costly business rates system is holding businesses back, UKHospitality Scotland said today.
Responding to the Ministerial Statement on non-domestic rates, UKHospitality Scotland Executive Director Leon Thompson said: “The current system of business rates is holding our businesses back, with the punitive rates they pay preventing investment. It’s clear a new approach is needed if we are to achieve the Barclay Review’s aim of a business rates system that supports and encourages longterm investment.
“We’re hearing from hospitality businesses that their rateable values have increased by up to 50%, which makes the report from the Chief Statistician today, that rateable values are decreasing, surprising. The report does not reflect the reality on the ground, as felt by many of our businesses.
“The New Deal for Business Group and details of a subgroup to look at non-domestic rates is welcome news. There is much to do to improve the system and UKHospitality Scotland looks forward to engaging with the Business Group and the sub-group on this issue.”
We also have a host of partners for this year with our headline partner the fantastic Au Vodka. We are very proud to be working closely with Charlie, Alasdair Ben and the wider team on supporting the brand as they engage the industry in Scotland.
Not just that but by all accounts the team and brand LOVE a party so what better than to join forces with THE party of the year for the hospitality industry. We look forward to welcoming & entertaining you all on the night.

DAKOTA EDINBURGH ANNOUNCES THEIR LATEST SUSTAINABILITY EFFORT WITH THE INSTALLATION OF A NEW SOLAR PANELLED ROOF
Dakota Edinburgh has announced their latest sustainability effort with the reveal of a new solar panelled roof, with 207 panels now installed atop the luxury boutique hotel.
In a bid to become a more sustainable destination, Dakota Edinburgh’s solar panels will provide renewable energy for the entire property, based in the picturesque South Queensferry – which boasts 130 bedrooms, a Bar and Grill, and several meeting rooms and private dining spaces.
The Dakota Hotels group have committed to becoming more sustainably accountable, with fundamental goals of prioritizing environmental responsibility and promoting positive change. This installation follows in the footsteps of sister property Dakota Eurocentral; in 2022, Eurocentral added 400 solar panels to the roof, and in
2021, the hotel appointed electric charging points to encourage conscious travel.
Eve McIntyre, Energy Efficiency Manager for Dakota Hotels commented: “Installing solar panels is an extremely positive step for Dakota; we’re incredibly excited about our journey towards a more ecoconscious future. This is just the beginning; this project brings us one step closer to our environmental goals.”
She added: “We strive to be sustainable within our practices inside the hotels, so why not echo this outside, too? This project aligns perfectly with our goal of creating a culture that prioritizes environmental responsibility. Our team members and guests have embraced this initiative with enthusiasm, and we look forward to the next stages in our sustainability journey.”
Take everything you know about kebabs – and forget it. Because there’s a new kebab in town, and it’s found at Der Berliner. Their authentic German kebabs are a million miles from the junk food variety.
Premium meats, fresh salad and veg, fluffy hot breads baked in store and all put together exactly to your liking. There’s no huge vat of salad drowned in oil – instead it’s all crisp, light and fresh elements put together as you choose.
Der Berliner manager CarolAnn Cassidy said: “This is a new concept for the city and it’s one people seem to be really embracing.
“We opened just at New Year as a soft launch and have been tweaking everything about our products, our food and our venue to get it absolutely right since then.
“That’s where we are now and we want to show people how good kebabs can be – this is healthy, nutritious food which is the mind-blowing thing for most as it’s the exact opposite of the usual image of a kebab here.
“We are really proud of our food and the response from people so far has been incredible.”
Der Berliner is for EVERYONE. It is modern, forward thinking, creative, energetic, cosmopolitan, inclusive. Celebrating all that Berlin offers from food to nightlife, friends to great music.
Think the posh nosh of takeaway food, with high-end, locally sourced lamb, beef and chicken, plus quality vegetarian and vegan options.
Der Berliner is serving up these epic kebabs alongside a stunning selection of German beers, plus cocktails and soft drinks.

Venture Into Inspiration in the Sun
In the heart of the beautiful island of Tenerife, a group of young entrepreneurs had a dream - to create a series of restaurants that would bring together the best of local cuisine and international flavors. They called themselves the Venture Group, and over the years, their restaurants became some of the most popular and sought-after dining destinations on the island.
7
The Venture Group’s first restaurant, La Cava del Mar, was located in a small town on the southern coast of Tenerife. It was a cozy, rustic spot that quickly became known for its fresh seafood dishes and excellent wine selection. The menu featured traditional Canarian dishes like octopus stew and grilled sardines, as well as innovative fusion creations like tuna tartare with avocado and mango salsa.
As La Cava del Mar gained popularity, the Venture Group decided to expand their reach with a second restaurant. This time, they chose a spot in the bustling tourist hub of Playa de las Americas. The new restaurant, called La Terraza, was a larger and more glamorous space, with a spacious outdoor terrace overlooking the ocean. The menu at La Terraza offered a mix of international flavors, with dishes like Thai green curry and Spanish paella. But it still stayed true to the Venture Group’s commitment to using fresh, local ingredients and bold, creative flavors. With two successful restaurants under their belt, the Venture Group set their sights on even bigger ambitions. They began scouting locations for a flagship restaurant - a place that would showcase their vision and cement their reputation as one of Tenerife’s top culinary destinations. Finally, they found the perfect spot: a stunning seaside villa in the town of Santa Cruz. They spent months renovating the space, transforming it into a sleek and modern restaurant that still retained the charm and warmth of their earlier ventures. They named it El Mirador, which means “the viewpoint” - a nod to the restaurant’s spectacular views of the ocean and the nearby mountains.
El Mirador quickly became the talk of the town. The Venture Group’s signature style was on full display, with dishes like black squid ink risotto and grilled octopus with paprika and lime. The wine list was carefully curated, with a focus on local and organic wines that complemented the bold flavors of the food.
The Venture Group’s success continued to grow, and they eventually opened several more restaurants across Tenerife. Each one had its own unique style and flair, but all shared
the same commitment to quality, creativity, and passion for food.
As the Venture Group’s reputation spread beyond Tenerife, they began receiving offers to expand their brand even further. But they remained grounded in their roots and committed to their original vision. To this day, they continue to innovate and inspire, pushing the boundaries of what’s possible in the world of culinary excellence.
Now with hugely popular venues like Biancos, and Thai Botanical and new nightclub Magic the group really are an inspiration to what can be achieved with a mix of new, great staff, great food and superb drink offerings.

Skyline Birthday event excels
It was a warm summer evening in Glasgow, and the rooftop of the Radisson Red hotel was buzzing with excitement. The hotel was celebrating the first birthday of their Skyline Events with the backdrop a stunning rooftop terrace with breathtaking views of the city.
Guests were arriving eager to join in the festivities. The space was decorated with its usual attention to detail featuring the vines on the roof , cherry blossom and a splash of neon.
At the center of the celebration was an elite level Dj list including the amazing Mariano Mellino who was playing the venue for the first time and boy did he deliver.
As the evening wore on, the party kicked into high gear. With a set from non other than Radisson Red’s very own Graham Chalmers who lifted the crowd even higher from there the music was the star of the show and guests hit the dance floor to groove to the beats. The skyline of Glasgow twinkled in the distance, providing a stunning backdrop for the festivities.
The birthday celebration was a testament to the success of the Skyline Events space. In the year since it had opened,
it had become one of the most popular event venues in Glasgow, hosting some world class talent , Its popularity due in no small part to the stunning views and impeccable service provided by the Radisson Red staff.
But it wasn’t just the physical space that made Skyline Events so special, It’s the passion and dedication of the Radisson Red team that truly set it apart. From the servers who greeted guests with warm smiles, every member of the team was committed to providing an unforgettable experience.
As the night drew to a close, guests lingered on the rooftop, savoring the last moments of the celebration. The Radisson Red team had created a truly magical evening, one that would be remembered for years to come. Another event smashed out the park or should we say Sky.

Johnnie Walker Princes Street leads green tourism with global sustainability certification
Diageo and Johnnie Walker Princes Street are showing to support our efforts to make Scotland one of the most environmentally sustainable destinations in the world.”
In its review process for the LEED award, Johnnie Walker Princes Street received over 80 points for adhering to prerequisites and credits that address carbon, energy, water, waste, transportation, materials, health, and indoor environmental quality, earning the building the highest possible recognition –Platinum certification.
The certification is all the more impressive for being achieved in the redevelopment of an existing historic building and the many of the challenges associated with restoring heritage and listed buildings.
The eight-storey attraction in the heart of Scotland’s historic capital city has become the first location in Scotland to be awarded the US Green Building Council’s (USGBC) Leadership in Energy and Environmental Design (LEED) v4 Interior Design and Construction (ID&C) best-inclass Platinum certification.
LEED is a globally recognised symbol of excellence in green design and construction, carrying out rigorous assessment and ranking building projects on a number of criteria including energy use reductions, water efficiency, clean construction, and healthy material selection.
The achievement was celebrated with a visit to the building by Small Business, Innovation and Trade Minister, Richard Lochhead, and Chief Executive of VisitScotland, Malcolm Roughead, who unveiled a plaque to mark the award.
Mr Lochhead said: “Scotch whisky tourism has enormous potential for Scotland and we want to see it grow in a sustainable manner, that is why it is so positive to see the Johnnie Walker Princes Street visitor attraction in Edinburgh achieve global recognition for its environmental standards.
“This award comes during Scotch whisky month, with festivals taking place from Speyside to Islay, and we are delighted to see visitors flocking to distilleries and whisky experiences across the country.”
Mr Roughead said: “Responsible tourism is a priority for VisitScotland as we seek to grow our visitor economy in a sustainable way. It is great to see the leadership that
Barbara Smith, Diageo’s Managing Director for Brand Homes, joined Mr Lochhead and Mr Roughead to unveil the LEED plaque. She said: “When we set out to create Johnnie Walker Princes Street, our ambition was not just to create the best whisky visitor experience in the world, but to also lead the way in environmental sustainability.
“We are delighted to have received the highest possible recognition in the global LEED programme, which is a testament to the investment we have made in restoring this famous heritage building and setting it up for a sustainable future.”
Peter Templeton, president and CEO, USGBC, said: “Achieving LEED certification is more than just implementing sustainable practices. It represents a commitment to making the world a better place and influencing others to do better. Given the extraordinary importance of climate protection and the central role buildings play in that effort, Johnnie Walker Princess Street is creating a path forward through its LEED certification.”
The LEED award adds to a growing trophy cabinet of accolades Johnnie Walker Princes Street has accumulated since opening in 2021, including Green Tourism Gold Award, World Visitor Attraction of the Year (Whisky Magazine Awards) and VisitScotland Five Star Attraction accreditation.
Sustainability was a key factor in the Diageo investment programme that created Johnnie Walker Princes Street, which saw the transformation of the former department store building into a flagship visitor attraction for the world’s best-selling Scotch whisky.
Johnnie Walker Princes Street, the leading Scotch whisky visitor attraction, has been awarded one of the most prestigious international standards for the environmental sustainability of its design and construction.

I believe Hydra Pure+ is the perfect treatment solution for the industry hotels who don’t offer any beauty or spa facilities.
With our “Skin Pod” / “Skin Bar” concept, it allows these hotels to open up a whole new guest service/experience in a simple, cost effective way and in a very short space of time. In my own personal experience and social circle, guests who stay at these city centre/boutique hotels usually have a busy agenda (or plans) with little time to worry about changing into robes, having to wash and style their hair again or even if they’ve shaved their legs and have painted toes (as they would in a typical spa environment).
Hydra Pure+ gives instant wow factor skin results in as little
as 30-60 minutes with no fuss of changing, showering or even taking your shoes off. The concept could be compared to “grabbing a quick drink” at the bar before heading onto a special event, night out, business meeting, long journey travelling, to even a hangover cure the morning after. Providing a modern treatment solution for not just feeling good but looking good too.
The beauty of Hydra Pure+ is that there is absolutely no down time so guests can apply make-up straight afterwards and have glowing skin for days. It’s also ideal as a pre/post flight skin solution making Hydra Pure+ loved by Cabin Crew. Whatever the occasion Hydra Pure+ can be your Skin Pure Solution.

Inflation Rates
The surprise news that the rate of inflation remains higher than government estimates at 8.7%, in addition to recently announced mortgage interest rate hikes, are a significant concern to many businesses and traders in Scotland. It had been hoped that a drop in the rate of inflation would afford some breathing space to businesses following the troubles of the last few years. Unfortunately that does not appear to be the case.
David Alexander Partner & Head of Debt Recovery dalexander@gilsongray.co.uk
As we have heard many times, corporate and personal insolvencies are on the rise and with continuing high rates of inflation, supply chain issues and a lack of skilled and unskilled staff, many businesses are on their knees; none more so than in
Craig Darling Partner cdarling@gilsongray.co.uk
the hospitality and licensed trade sector.
It is important that business owners think carefully about their next steps in these difficult times. Early warning signs of financial difficulties are incredibly valuable; and by knowing what to look out for,
a business has more time to be able to react to any problems. Unless the business takes action to address its financial difficulties, problems can quickly accelerate.
If there are issues coming up, like falling margins and overdue invoices, it is far better that a business seeks expert advice early. This can often be the difference maker between riding out the worst of what is to come and struggling and perhaps failing to survive.
Overdue invoices can be dealt with swiftly and usually successfully if advice is sought from specialist debt recovery agents. There is still cash available in the market place, it is just that those in possession of it are not parting with it as quickly as they once did. An experienced agent can make all the difference in seeking payment of overdue accounts, whether at pre-litigation stage, or during the course of formal court proceedings.
Falling margins and staff shortages are not so easy
to fix, and businesses experiencing those difficulties are advised to seek advice sooner rather than later. Time very much is of the essence for businesses suffering those difficulties. We are all aware that these are very difficult times and the last time the Scottish market faced such difficulties was in the financial crisis of 2008/9. It is important to note though that the market place is in a much better place than it was back then.
There is significantly more capital available in the market at this time, and there are more options available to businesses facing difficulties than ever before, including many more sources of finance. Seeking advice quickly on these matters though is imperative.
If a business is suffering, then support and assistance is available, whether through active negotiation with creditors, restructuring, or a formal insolvency process. Whatever requirements a business may have we are here to help.
Gilson Gray is well placed to assist any businesses suffering these difficulties. Our Debt Recovery Department is run by David Alexander and was recently voted the Debt Recovery Team of the Year at the 2022 Law Awards of Scotland. Our Restructuring and Insolvency Team is led by Craig Darling and he is best placed to assist any businesses wishing to seek funding or to discuss restructuring their businesses.
The right advice has never been more important.
We’re honoured to have been chosen as the exclusive partner of OnTrade Magazine Scotland. As one of Scotland’s full-service law firms we’re able to offer specialist legal, property and financial services.
We’re here to help in a time when support and clarity are needed most – offering valuable advice and insight on everything from licensing, business financing, employment and real estate. Different people. Different approach. Different results.

EDINBURGH I GLASGOW I EAST LOTHIAN I DUNDEE

With the cost of living continuing to skyrocket and food and drink price inflation at a record high, this year consumers will increasingly focus their spending where they are likely to garner some type of benefit. As a result, loyalty programmes will play a hugely important role in attracting and retaining customers in 2023.
Using EPoS systems or white-labelling apps, operators can fully leverage these benefits by providing customers with ‘rewards’ and ‘giveaways’ that feel unique to them. This is thanks to the software’s ability to analyse everyone’s purchase history and then promote specific meals and drinks to meet the preference of each customer. This will enable operators to not only stay competitive, but also improve customer service over time, retain customer data for targeted marketing campaigns, and introduce loyalty and reward programmes on an ad hoc basis.
When it comes to the future of EPoS systems, we are already seeing loyalty schemes growing in popularity. We can expect to see a rise in subscription-based schemes –– and sustainability-focused loyalty programs – such as giving points for eco-friendly purchases and planting trees.
At the same time, these capabilities also positively benefit hospitality staff by providing frictionless, convenient, and time-saving transactions for customers. This in turn reduces pressure on staffing during labour shortages that have persisted over the course of 2022 and into 2023, allowing staff to focus on higher value-adding tasks such as interacting with customers and enhancing their experience. This personability element is an important factor when a customer is evaluating whether to return to a restaurant. The next few years will be crucial in the evolution of the EPoS system, with any probability of EPoS being solely self-service channels (app and kiosks) along with the concept of cashiers and queueing reduced even further. As customers’ expectations evolve and demand for quick, convenient, and time-saving transactions grows, we’ll likely see more operators go fully digital in 2023.
Reward your biggest fans with a loyalty app that keeps your clients hooked on great deals.
You make great food that visitors love. But you want to improve efficiency, incentivise high-margin item purchases, and boost positive feelings at purchase to encourage repeat custom.
That’s where we come in.
We build stylish loyalty apps for restaurants that solve common problems. Diners gain custom loyalty rewards on all purchases – and the benefits don’t stop there. Our custom digital products can reduce staff costs and boost profits. We do this by increasing efficiency for orders made in-restaurant and for takeaway.
Unlike other restaurant apps, your 5Loyalty app integrates with your POS across all channels so you can monitor all your orders in one place – and never get caught out.
Rewards at all purchase points
Everyone loves a deal. Give something back to your diners with loyalty rewards that incentivise them to return again and again.
Diners earn loyalty points whether they eat in, get delivery, or collect.
Customise every aspect of the app.
Make the 5Loyalty app work for you. You can customise every aspect of the app.
Set rewards that benefit you, delivery boundaries and minimum spend thresholds to always maximise profit.
Complete POS integration
Keep track of all orders in one place with unique POS integration.
Accurately place orders with suppliers in advance of catering events with up-to-date order information. Everyone benefits with 5Loyalty.
The 5Loyalty app increases your diner’s positive feelings at purchase and looks great while doing it.
Whenever diners pay for their meal – whether that’s an order for takeout, collection, large event catering, or in-restaurant –we remind them of the loyalty rewards they’ve gained. Watching rewards pile up in the app is easy, and this loyalty card is one they can’t lose.
We combine the best contemporary app design with excellence in use. Diners will intuitively navigate the app to make orders, join a virtual table queue, settle their bill and more. You can customise rewards liberally across all purchase points. That way, you can incentivise orders of high-margin items and set minimum spend limits to maximise profit.
When diners have the freedom to order in-app and settle the bills themselves, you’ll reduce staff costs and boost table turnover. Increasing efficiency has never been so convenient. The app is the only one of its kind to offer complete integration with your POS so you can keep track of all your orders in one place.
Rewards for every order
However your customers spend.
Our stylish app allows your diners to order in a way that serves them. They’ll earn loyalty points if they eat in, collect, or choose delivery.
Loyalty rewards incentivise diners to order directly through your app rather than third-party delivery services.
Reward client loyalty
Choose your own offers
Set bonus point rewards for regulars
Allow diners to spend loyalty points like money
