And now this! Do you know that in Texas, there are more for-profit prisons than any other state in America? Do you know that the government will pay $40,000 per year to keep an inmate incarcerated, but would not spend $10, 000 to educate one of its citizens?

Worse yet, it is a widely known fact that there is a direct correlation between people in the prison system and a poor educational system. In other words, if you fail to educate the masses, then you will have an accelerated increase in prisoners.

So help me! Why are budget cuts in education a target for politicians in Texas? Yes, it is nice to say that we are cutting expenses across the board statewide. Point noted! However, can we find alternatives to laying-off teachers and cutting the already stretched school budget? The key to a successful America is an educated populace.

This concept of for-profit prisons is completely foreign to us as Caribbean people. Therefore, I have few questions. How are we filling up the prison beds? If a prison is for-profit, then who are the clients? You would be surprised to know that the clients are our children, grand-children, and great grands. The same young men and women that the educational system is failing. There are many traps that our children can fall into which will get them in that system. We from the Caribbean must understand that the prison system is big business and a cash-cow for many cities and their private investors.

My final question is how are we ensuring that our children are not used as a means to gain wealth off their poor misfortune of falling into the justice system? Here are some suggestions: Take an active interest in your child’s education. Don’t leave it up to the teachers and schools to do so, they won’t. Put a high premium on education, and let your children know from birth that you expect them to excel, and you expect them to go to college. When you have made that clear to them, they are less likely to drop out of school, and become just another statistic in the United States justice system, which does not care about them.

On another note, we see some key folks wanting to paint a cloud over President Barack Obama. Yes, I am referring to Donald Trump. For one thing, never in history of the United States of America has a sitting US President had to prove their worthiness to hold the office. Obama has had to do so repeatedly during his presidency. Moreover, we all saw Donald and his birthers touting victory after President Obama produced the long form of his birth certificate.

Not satisfied, Donald now wants President Obama’s college transcripts. He stated in a recent interview that viewing the President’s college transcripts from Occidental, Columbia University and Harvard is necessary. Donald said he wanted the documents because he heard President Obama was not a good student.

Most of us from the Caribbean may not understand the depth of

these words. To be blunt, these are code words to mean affirmative action.

It is a policy designed to redress past discrimination against women and minority groups through measures to improve their economic and educational opportunities. In essence, Trump is implying that President Obama may have received preferential treatment by stating “He was a poor student so how did he (Mr. Obama) get into college.”

Certainly, Donald cannot match Mr. Obama in terms of educational achievements, intellect, and knowledge. Donald wonders how it was possible for Obama to become the first African-American to achieve the office of US President, Editor of the Harvard Law Review and graduate Magna Cum Laude.

These trite comments demonstrate that your qualifications are not good enough if you are part of a minority community especially part of the African Diaspora. We must not only be qualified, but also approved by the majority! The question is who is approving the majority?

As Americans celebrates the death of Bin Laden, let us remember those who died at the World Trade Center on 9-11, especially those of Caribbean heritage. I know of two. I want to remember Bobby Calixte of St. Lucia and Claudia Walters of St. Croix. Bobby maintained the air-conditioned units at the WTC. But even more than that, he was my hangout bubby whenever I visited New York. Claudia was a CPA. Bobby and Claudia are deeply missed.

As such, it has been the dream of Marsha Edward to bring one of these Caribbean pastimes to Houston. Marsha is an event coordinator in Houston. Her premiere project to Houston is a sizzling new Jamaican drama called JUDGMENT, which is set to open on Friday, July 15, 2011 at the Stafford Civic Center in Stafford.

Judgment is a spell-binding story about two best friends who become the target of a man out for revenge. Set in New York, the play looks at how decisions based on poor judgment not only yield terrible consequences but also affect the lives of those we love. In essence, Judgment looks at how the decisions we make always come back to haunt us, and how the people we love often suffer the consequences. The play was written by Dahlia Harris, who is also a featured cast member along with Deon Silvera, and Christopher McFarlane. Judgment is being staged by Mad Events Productions.

According to the Jamaica Observer, Dahlia Harris has been hailed as one of Jamaica’s most diverse actresses and not just for her sterling performances on stage. The twotime Actor Boy Award winner has directed Ras Genie and has also produced two critically acclaimed comedies, Hurricane Lovers and Family Affair. No small wonder she received the Bigga High Achievers Award in April of this year for her work in theatre.

Missouri City Police Gives Home Invasion Prevention Tips

1. Lock all doors, windows, and garages at all times, when you are home. Criminals look for houses with the easiest entry.

2. Secure your home with solid doors and locks. The exterior doors should be metal, metal clad or solid wood, not hollow core.

3. Install a peephole with a 190 degree viewing angle so that you can verify who is on the other side of the door. Never open your door to strangers or solicitors. Most home invaders knock on the front door to gain entry.

Don’t rely on door chains to keep intruders out; they won’t.

4. If you have an alarm system in your home, activate the perimeter doors and windows while you are in the home. If someone attempts to gain entry, the alarm will sound, giving you time to escape.

5. Automatic phone dialers that can call 911, in speakerphone mode, can be effec-

tive in getting police assistance if intruders come in. Every home phone should be preprogrammed with this feature and all family members should be trained on how to use it.

When intruders come in you will not have much time to contact police.

6. Have an escape plan in mind for your family. Train family members on where to go and what to say. This plan should include your children. If someone can escape, the invaders will have lost their advantage of privacy and time.

7. Never stop thinking if you are held captive. Stay calm and take advantage of any opportunities that present themselves.

Baytown Gets New Sidewalks

OLC, May 1: The City of Baytown will begin construction on two new highly-anticipated sidewalks. The project, which is slated to begin on May 9, will consist of 16,405 feet (over 3 miles) of 4’ wide, ADA compliant sidewalks to facilitate and encourage safe pedestrian travel along Massey Tompkins and Pruett Street.

The city received the funding from the Department of Energy’s Efficiency and Conservation Block Grant Program.

Donate Your Books, DVDs, and CDs to Library Many of you may not know that in late October 2010, Hurricane Tomas traveled through the Caribbean and wreaked havoc in St. Vincent, Barbados and St. Lucia. St. Lucia was hardest hit with over $100 million dollars in damages. The island was deluged with rain over a period of twenty four hours.

One of the hardest hit areas as the town of Soufriere, homes, schools, businesses and the local library suffered damage. The people and Government of St. Lucia have moved quickly to get life back to normal, however, there are many areas that need help.

In keeping with encouraging the education of the masses, The One Love Caribbean Educational and Resource Foundation has undertaken the task to re supply the Soufriere library

and some of the local schools with books and computers.

In the vernacular of the Caribbean, we call this “reasoning”. Whether the subject is “US Immigration Policy”, “the arrest, trial, and imprisonment of Buju Banton”, “the Cuban embargo”, “the post-earthquake prospects for Haiti”, or “the demise of West Indies Cricket”, we are never short on opinions, and “reasoning” amongst friends and family is one of many things that makes us uniquely Caribbean. Now what if some of our most important, most substantive, and most thought-provoking “reasoning” sessions were recorded and broadcasted across our GLOBAL Caribbean Community, from Houston to Kingston to London town ?

It was with this mindset, that SoulRebelProductions.com decided to launch and broadcast “Just Reasoning”, an entertaining, informative, and thought provoking program focusing on issues of relevance to Caribbean people and broadcasted throughout the Global Caribbean Community. Caribbean Day to be Held in Baytown OLC, May 1: BAYTOWN (May 3, 2011) – Trinity Episcopal Church in Baytown is hosting their Second Annual Caribbean International Day for the Caribbean communities of Baytown and Greater Houston on Saturday, June 11, 2011. The event begins at 2 pm with food, fellowship, games, cultural presentations, and an ecumenical worship service, ending at 8 pm. This year’s theme will be national dress with presentations by the various island communities of dress and dance accompanied by Caribbean music.

The day of celebration and praise brings together the people of the various Caribbean Island communities and the members of Trinity Episcopal Church. Everyone is welcome and is encouraged to wear your national dress.

Our fundraising effort this year will be focused on raising monies to assist with the rebuilding of a library in St. Lucia which was heavily damaged by Hurricane Tomas in November 2010.

We begin the day with a potluck meal; everyone is invited to bring a meal from their island and as part of our fundraising efforts,

a donation of $10 per meal or $25 per family is suggested. All proceeds will go to the rebuilding efforts in St. Lucia.

City of Houston to Layoff Workers

OLC, May 1: The City of Houston recently announced it would be laying off some city workers in order to meet the massive budget shortfall. The Mayor’s office stated that in order to meet the $130 million shortfall, approximately 2,300 workers would be laid off. The cuts will be primarily in personnel and the cutting back of salary ranges and programs. These layoffs will impact services that residents receive such as responses to fire and 911 calls. The police, fire, solid waste and municipal courts would have to cut about 5 percent of their budget, while the rest of the city would have to cut from 10 to nearly 28 percent of their spending.

Since the police and fire department makes up about two thirds of the City’s budget, they are going to have to figure out how to

absorb the 5% cut.

The local Police Chief Charles McClelland says that everything is on the table, including layoffs. He further explained that cuts in police on the street will further strain an already stretched police department. In addition, over the past twelve months, there have been cuts in overtime and 75 less police patrolling the streets of Houston.

President of the Houston Professional Firefighters, Jeffrey Caynon explained that they are expected to cut approximately $22 million dollars. The budget of the fire fighters primarily consists of salaries -- more than 90%. Therefore, consideration is being given to closing some fire departments.

Nation News - The Barbados National Oil Company (BNOC) will be heading to St John, Barbados for the first time in search of crude oil.

This was revealed by BNOC Chief Winton Gibbs, who said that after completing a productive 2010-2011 oil drilling program, the state-run company would restart the drilling program in June with an exploratory well in Society.

Rising Food Prices Could Trigger Accelerated Inflation OLC, May 1: Washington, USA (IDB): Rising international food prices could trigger an acceleration of inflation in several countries in Latin America and the Caribbean this year, highlighting the need for policies to protect the urban poor, according to a new study by Inter-American Development Bank (IDB).

Net food importers with a greater share of spending concentrated on tradable foodstuffs and with little room to let their currency appreciate will be the hardest hit by higher international food prices, according to the study. The urban poor that do not have access to any enhanced income from selfgrown products are most at risk from the food price shock.

“There is a need to increase and improve targeting of aid, perhaps through reformed conditional cash transfer schemes, to these groups to compensate the effect of the food

price surge,” according to the Policy Note published by the IDB’s Research Department.

“How will the food price shock affect inflation in Latin America and the Caribbean.”

Flexible exchange rates in other countries tend to offset the impact on domestic prices but this raises other concerns. A significant nominal appreciation may affect the competitiveness of other tradeable sectors. The challenge for net commodity exporters is to harness the current windfall and ensure that the economy remains competitive.

The report estimates the potential inflationary impact of higher int’l food and oil prices for 13 countries in the region and discusses policies that can be used to alleviate the impact of higher food prices on inflation. The study concludes that rising oil prices will only significantly affect inflation in a small number of countries in the region this year.

Nine tried and tested wells mainly in the traditional Woodbourne, St Philip area, will be included in the ten-well program which operations manager Gordon Worme expects to end in December. He said the geological tests and economic evaluation had already been completed at Society and “now we are ready to proceed”.

Davis remarked that Montserrat needs to take its place in the international community and that globalization presented enormous opportunities to play a role. He added that the volcano should no longer define the future of Montserrat and the message must be spread that the North is safe and open for business.

The governor wants to see the Diaspora take an active part on redeveloping the island with a more open approach to receiving support from wherever it is offered. Governor Davis said he plans to pursue his new job with energy and enthusiasm.

The St. Lucia Air and Sea Ports Authority (SLASPA) have introduced a US$35 “Airport Development Charge” which is being collected by all airlines.

All air travelers departing St. Lucia, including those making connections in the island, will see the new tax reflected in the cost of their ticket.

Over the last couple of weeks, Trini-based chat rooms have been set alight by talk and posts surrounding a YouTube video entitled, “Jingle PH 2011”. I usually ignore such posts when I get them. So I quickly dismissed the video when someone first posted a link to it on Facebook. However as with all viral videos, too many other people reposted it for me to avoid letting my curiosity getting the best of me.

After watching the video, my mouth dropped, as I could not believe what I witnessed. What greeted me was a professionally done, well produced, video containing what was essentially a Spanish version of JW & Blaze’s 2010 Road March, ‘Palance’.

What really caught my attention was the similarity of “Jingle PH 2011” to “Palance” in all aspects. The rhythm track is essentially the same, the harmony is the same, and people in the video even do the “Palance”dance that dominated every judging point on the streets of Trinidad & Tobago during Carnival 2011.

I then found an article in the Trinidad Guardian newspaper on 4/21/11 titled, “COTT Probes Latin Remake of Palance”. In the article, Kernal Roberts, the producer of the song, laments, “They eh ask for no permission... they have video everything. A certain part of the song they even use the Police in the Session melody.” Clearly unhappy about this sequence of events, Roberts noted that he has asked the Copyright Organization of Trinidad & Tobago (COTT) to investigate the matter on his behalf.

Who is COTT going to investigate? According to their Wikipedia entry, Commando Tiburon is group founded in 2000 consisting of 4 former radio DJ’s: DJ Flecha, DJ Rolo, DJ Andy and DJ Magnetic, with the idea of recording songs and rhythms in order to bring different music to the parties, clubs and radio stations of Panama City. They signed a Central American distribution deal with Sony music in 2004, and another deal with Sony Music Mexico in 2008 to cover distribution in the Mexico and US regions.

Copyright infringement is the unauthorized or prohibited use of works under copyright, infringing the copyright holder’s exclusive rights, such as the right to reproduce or perform the copyrighted work, or to make derivative works. In essence, he who creates the music, controls how it can be used. So if an artist wants to use another artist’s work in his/her creation, he/she is obligated to consult the original creator (and pay the fees established by the creator) for permission to do so. Copyright protection is normally a reactive endeavor, occurring after a song

has already been appropriated. This simply means that many songs will often be pirated, and this piracy can go unpunished.

So while Commando Tiburon is now courting controversy and legal action over “Jingle PH 2011”, this attention has brought some of their other potential copyright infringements to light. One such infringement is their song and video, “Vete Pa’ La Verga”, which is a literal interpretation of the late Blazer-Dan’s 2006 Carnival hit “Somebody”, while another of their songs, “Te Vote”, is also very literal interpretation of Destra Garcia’s popular 2003 Carnival hit, “Bonnie & Clyde”. The most concerning aspect of this situation, is that the three songs noted above, go beyond sampling, which involves using small elements of another composition. These songs have taken entire hooks, harmonies, bass lines, and rhythmtracks from the original compositions. In fact, the only noticeable difference is that the Commando Tiburon versions are performed in Spanish.

I should note that the English-Caribbean world is not without its copyright concerns, as there have been several examples of copyright infringement among these artists as well. Vybz Kartel’s 2009 reggae/dancehall hit song and video, “Romping Shop”, was sung to the rhythm-track of Ne-Yo’s “Miss Independent” and was used without Ne-Yo’s permission. EDITORIAL Twelve States of the Union of America

Throughout the years, we’ve heard a lot said in the media about America’s division along money lines like, “middle class,” “lower income groups,” “rich and powerful,” or “super wealthy.” More recently, we’ve also been hearing about the “upper 2% 5% people” with reference to the amount of wealth these possess when compared to the “rest” of the population. And although it sometimes stirs us to strong emotions, we also hear about divisions in the country along racial lines. But one aspect of how America is divided according to Dante Chinni and James Gimpel in the April 2011 Issue of the Atlantic Magazine is along the lines of entire communities of “winners and losers.” In a longitudinal study, they argue that these lines are so clearly drawn that it makes the idea of “an American economy” look like something belonging to some earlier age in history.

Compiling data across thirty years from a study group, these researchers included demographic, economic, cultural and political factors that separated the country’s 3141 counties into twelve statistically significant “types of place.”

Well, what’s the importance of this kind of information, I asked myself? First, I believe there is relevance just in the sheer knowledge of learning about the country we now call home. And I question the wisdom of living in America or anyplace else for that matter, without learning about the day to day operations of the predominant culture.

Perhaps even more importantly now as we consider the impositions of our current economic state of the nation; I believe that more than a few people might consider relocating to different parts of the country, as a result of job losses or opportunities which may arise. Regardless of the motivating factor, it is clearly beneficial to know where you’re going or what you’re planning to do. In this regard, some of the data gathered during this study may be helpful.

Notice that seven of the twelve county-types experienced declines in their median family incomes over the past thirty years, while we’ve already learned about the consistently rising wealth of the super rich (2% - 5%), even during our ongoing recession and dating back to World War I. Here’s some of what they found descrip-

tively and in U.S. median family incomes in 1980 and in 2010, respectively parenthesized: • Monied Burbs ($55,688 and $59,404).

Higher-than –average family income, educational attainment, and closely divided politically (NH, MT, MI, IN, PA, NY, VT).

• Minority Central ($36,869 and $36,130).

Heavy populations of African Americans and Native Americans. Lower incomes and higher rates of poverty (AL, MS, LA, GA, AZ, NM, NC, SC,).

• Evangelical Epicenters ($38,630 and $37,554) Lower median incomes, younger families and Evangelical Christians, and driven by cultural issues (TX, OK, AK, KY, TN, AL, NC).

• Tractor Country ($42,144 and $39,379).

Rural and Caucasian and scanty populations. Economy based in farming and agricultural business (KS, CO, NE, SD, ND, MT, WY, OR, ID).

• Military Bastions ($45,565 and $46,510).

Located near military bases, middle income, populations include soldiers, veterans, and their families.

• Campus and Careers ($51,524 and $52,193). Younger demographic, highly populated by college students, and people beginning postgraduate careers.

• Immigration Nation ($42,795 and $38,941). Large Hispanic populations located mostly in the Southwest. Lower incomes and higher rates of poverty (TX, NM, AZ, CA, NV, WA).

• Industrial Metropolises ($53,921 and $56,234). Highly dense population, young and diverse, having many rich and many poor (NY, NJ, PA, CA, OH, IL).

• Boom Towns ($49,597 and $51,618).

Relatively wealthy prior to the last recession, experienced rapid growth and rising numbers of minority populations (AZ, NV, UT, AK, HI).

• Service Worker Centers ($44,222 and $41,775). Tourist centers and midsize towns where many workers live without traditional employee benefits (IL, ME, OH, MI, IN, PA, NY, VT, WI).

• Emptying Nests ($46,879 and $45,876).

Older and less diverse than average populations, with large number of retirees and Baby Boomers on fixed incomes (IA, MN, WI, IL, OH).

• Mormon Outposts ($45,266 and $43,591). Grouping s in the Mountain West sparsely populated with lower than average incomes (UT, ID, NV).

Something tells me that the information attained from this study might serve as reference point throughout the projected period of recovery from our current recession.

Let’s not become too concrete as we read and interpret the data. My best guess is that there is a little of everything in most, if not all of the counties studied. The measure in categories described might be most effectively understood in terms of the preponderance of attributes in the given areas.

Keep it handy for ongoing decision making, if not for the simple value of knowing.

In 1 Kings 3:16-28 the story is told of two women who went to King Solomon to settle their dispute as to which of the two was really the mother of a baby. The wise King ordered that the child be divided in two and a half be given to each woman. “Then the woman who was the real mother of the living child, and who loved him very much, cried out, “Oh no, my lord! Give her the child—please do not kill him!” But the other woman said, “All right, he will be neither yours nor mine; divide him between us!”

Then the king said, “Do not kill the child, but give him to the woman who wants him to live, for she is his mother!” A mother protects her child and would rather give up the child than to take its life.

Mother! What a precious gift from God to His creation. She represents the all-sufficient, tender and nurturing and trustworthy aspects of God’s character. Mother! No one on this earth can replace her! so travelers are forced to pay more money out of pocket in order to stay at the resort (with the hopes of recouping their money later from the online agency).

I’ve even had travelers who booked trips online call me for help from the airport because their flight was delayed, cancelled, or inaccurate. They call me because their online agency puts the responsibility on the travel providers when something goes wrong.

6) There are some online agencies that have ‘web-only’ rates which may be lower priced which sounds like a good deal. But, when a traveler calls in to ask a questiBuying a vacation – cruise, resort, tour, or any other type of travel - isn’t rocket science, but there are some vacations that buying online is not a good move in order to save a buck or two.

I’ve heard a saying that ‘the cheapest vacation may be the worst mistake.’ I couldn’t agree more.

Prescription Drug Abuse And Addiction Prescription drugs are the second most commonly abused category of drugs, behind marijuana and ahead of cocaine, heroin, methamphetamine and other drugs. The National Institutes of Health estimates that nearly 20 percent of people in the United States have used prescription drugs for nonmedical reasons.

Some prescription drugs can become addictive, especially when they are used in a manner inconsistent with their labeling or for reasons they were not prescribed. Those include narcotic painkillers like OxyContin or Vicodin, sedatives and tranquilizers like Xanax or Valium, and stimulants like Dexedrine, Adderall or Ritalin.

Steroid abuse is also on the rise. Steroids are prescription drugs that are legally prescribed to treat a variety of medical conditions that cause loss of lean muscle mass, such as cancer and AIDS. Men consistently report higher rates of steroid use than women. In 2008, 2.5 percent of 12th grade males, versus 0.6 percent of 12th grade females, reported taking the drugs in the past year.

In 2000, about 43 percent of hospital emergency admissions for drug overdoses (nearly 500,000 people) happened because of misused prescription drugs. This type of drug abuse is increasing partially because of the

availability of drugs, including online pharmacies that make it easier to get the drugs without a prescription, even for minors.

There may also be a perception, especially among younger people, that prescription drugs are safer than illegal street drugs.

Most people don’t lock up their prescription medications, nor do they discard them when they are no longer needed for their intended use, making them vulnerable to theft or misuse.

Prescription drug abuse is generally the same between men and women, except among 12 to 17 year olds. In this age group, research conducted by the National Institute on Drug Abuse found that females are more likely to use psychotherapeutic drugs for non-medical purposes. Research has also shown that women in general are more likely to use narcotic pain relievers and tranquilizers for non-medical purposes.

The number of teens and young adults (ages 12 to 25) who were new abusers of prescription painkillers grew from 400,000 in the mid-’80s to 2 million in 2000, according to a study by the Substance Abuse and Mental Health Services Administration. Bad Timing: Should it Dictate your Relationship Status?

Bad timing. We’ve all heard this being pinned as the reason why a relationship didn’t work or couldn’t get off the ground.

However, is timing really a b*tch when trying to find love? Or is it just another excuse we use when we’re not up to the task of building a relationship?

When I posed this question to my friends, I received a range of responses: “There are no absolutes. Timing isn’t everything, but it is important.”

“Timing is key. Two people have to be on the same page, head space, place in life or want similar things for a relationship to work… you can’t have it together and be with someone who in a mess (mentally, emotionally, physically, financially, etc); the relationship won’t be balanced and most likely will fail. ” I expected these responses, but I was pleasantly surprised when a few of my guy friends admitted that timing was sometimes used as a cop out. A male friend summed it up by saying: “We tell ourselves that to justify our inability to make decisions because we are all consumed by fear. We sometimes miss the best thing that could probably happen to us, but blame it on bad timing”.

Who’s Cheating Who?

Life happens and none of these situations are ideal, but sometimes you have to take a chance. I have a newlywed cousin who recently got married after being in a long-distance relationship for over five years. You’re thinking that’s just crazy, right? I mean… who would knowingly walk into a situation like that? There’s too much temptation, not enough together time, and, it has to be mentioned, the personal and financial sacrifices that have to be made.

As I brainstormed this article with her, she asked me, “Can you take it when someone comes in and turns your 20-plus years of planning upside down? Can you make adjustments to your five-year plan, or are you so set in your ways that you have to stay on your path?”

Four years ago, the answer to both of these questions would have been “uuuhh hell no”. I had just graduated, was settling into a new job and had a long list of life goals that needed to be checked off. My career is still a priority to me, and I most certainly haven’t checked off all of my life goals, but I’m more willing than I’ve ever been to make adjustments if I meet someone I care about. In fact, for a ‘hot minute’, it looked like my cousin would be joining me in the ranks of single, ready-to-mingle sistahs, during her relationship, so I don’t doubt that there will be rough patches when navigating a less-than-ideal situation.

My own personal views lie closer to this.

The more time I have to reflect on my singleness, and life’s missed opportunities, the more I sense that timing is not so much a b*tch, but an inconvenient truth.

Maybe I’m a hopeless romantic, but I truly believe that relationships can blossom under less than ideal circumstances, like long distances, demanding careers and even children from previous relationships. What matters most in these situations is that both parties are fully aware of the odds that are seemingly stacked against them, and are still willing to take the risk involved in forming a relationship.

Ever been in a place for six months to a year, maybe two and spent every possible spare moment with someone, but never bothered to date because you knew you had to go back to school, or you graduated and they didn’t, or your job moved you to another city? Maybe you met someone, but they had a kid so you automatically put them in the friend category. Maybe you know someone who doesn’t live in the same city or country as you, but you talk all the time, and you’re practically counting down the months to his or her next visit. In fact, you’ll even admit

In the beginning, my ignorance and naiveté lead me to believe that he was being protective, which in turn, meant that he loved me. I knew that I was faithful and that I hadn’t been with anyone. I was curious as to why he was so jealous and insecure.

It is not the intention in this article to convince you to become a vegan or vegetarian.

It is to open your eyes to the source of your foods, to be concerned about the ingredients in the foods that you eat and its effect on you. This article will also try to convince you to be a label reader.

Our grandparents worked on the farm or had a small kitchen garden and a few chickens, 1 pig or a goat in the yard. They walked to work therefore getting their exercise.

They had less stress, ate cleaner foods and their exposure to chemicals in their foods were unheard of. Yet, as more of us are introduced to chemicals in the foods, we have gotten sicker and fatter. Less than a hundred years ago “the big three” – cancer, heart disease and diabetes – were relatively rare. There is not one family that has not been touched by those diseases. Sixty million people in America are obese!

The trans fats, chemicals in foods, white flour, diet foods and diet sodas, nitrates, pesticides and sugar are all sending us to an early grave. Be wary of words on food labels.

“Reduced fat” products usually have less fat and “all-natural” foods often do come from ingredients actually found in nature. But not all health-related words on food packaging are defined by the Food and Drug Administration, leaving certain gray areas open for manufacturers to exploit. “Reduced far” means “increased sugar”. The most deceptive word of all is “healthy.” There is no way to really define it; the FDA has no way to regulate it. The Surgeon General’s report on Nutrition and Health in 1988 (twentythree years ago) estimated that as many as 10,000 cancer deaths annually could be linked to chemical additives in foods. Your guess is as good as mine that it is in the 100,000’s now.

In order for the foods to have longer shelf lives our foods are injected with hormones antibiotics and chemicals. It is also over processed and transported greater distances than before. The family owned small farms are extinct and are replaced by those large corporate factory farms whose main desire is profits at all costs. Even our fruit and vegetables are sprayed to look more red or green with color dyes so that they can look pretty and to have longer shelf lives. Eating additive, nitrite filled foods like hotdogs, sausages and processed deli meats can give the same white blood cell pattern that one

One does not need a huge space to do so; get some organic seeds and start your plants in a planter, as the plants get bigger, transfer them into flower pots. You can grow your own tomatoes, string beans, herbs, sweet peppers at home.

Read labels The US News and World Report in 1990 pointed out that the FDA found 47% of domestic and 76% of foreign foods did not live up to the nutrient billing on the product label. The word “natural” these days can mean almost anything. You have to become your own detective and read labels on the foods you put in your bodies. If you cannot pronounce the words on the food item it should not go into your body. Exactly what is “methylchloroisothiazolinone”? Why should this be in my body? Did you recognize the words chlorine or meth in there!

When reading labels, be conscious of the nutrition facts which will show the serving size, calories, total fat (saturated fat, trans fat), total cholesterol, total sodium and total carbohydrate and protein.

Next steps • Eat real food and clean foods.

• Buy your fruits and vegetables from your Farmer’s Market. Ensure that they are free from pesticides.

• Start your own small garden or participate in a community farm.

• Eat at home more often so you know what you are eating.

• When shopping at the supermarket, shop in the periphery – that is where you will get the healthy foods like fruits, vegetables, dairy, meats and fish.

• Eat the foods that are in season in your area.

• Use safe vegetable washes to remove toxins, chemicals and afla-toxins (a type of fungus that can lead to liver cancer) from your fruits and vegetables or wash it in water and a little vinegar.

• Choose grass-fed beef and lamb.

• Consume organic pork and poultry.

• Avoid farm-raised fish and high-mercury fish.

According to researchers at England’s University of Manchester, your toothbrush is loaded with germs.

Den yuh goin’ to run mi bath water so dat mi can relax, an wen mi finish wid mi bath, guess who goin’ to dress mi an comb mi hair?”

The wife answers calmly:” Darlin dear, di funeral director!! Ah hav him pon di phone right now….Come giv him yuh size so him can measure up yu coffin!”

JAMAICANS TRAVELING ON AMTRAK Three Americans and three Jamaicans are traveling by an AMTRAK train to a conference. At the station, the three Americans each buy a ticket and watch as the three Jamaicans buy only a single ticket. “How are three people going to travel on only one ticket?” asked an American.

“Watch the ride my yute!” answers a Jamaican.

They all board the train. The Americans take their respective seats but all three Jamaicans cram into a restroom and close the door behind them. Shortly after the train is departed, the conductor comes around collecting tickets. He knocks on the restroom door and says, “Ticket,please.” The door opens just a crack and a single arm emerges with a ticket in hand. The conductor takes it and moves on.

The Americans saw this and agreed it was quite a clever idea.

So after the conference, the Americans decide to copy the Jamaicans on the return trip and save some money. When they get to the station, they buy a single ticket for the return trip. To their astonishment, the Jamaicans don’t buy a ticket at all. “How are you going to travel without a ticket,” asks one perplexed American. “Watch the ride my yute!!” says a Jamaican.

DIRECTIONS: Wash fish and place in a baking pan. Sprinkle in salt and pepper. Squeeze lime juice over fish. Pour melted butter over fish. Cover with remaining ingredients. Bake at 400 degrees for 25 minutes or until fish flakes with fork. Garnish with lime slices.

The Trini responds, “A chicken Roti.” The warden serves him his Roti, and then escorts him to his execution.

SMART DONKEY This Kittian from Sandy Point had lost his house and all his crops after a hurricane. He had nothing left but his donkey. After days of being miserable, and not being able to find a job, he took his donkey into the city and put up a sign that read “Betting $10.00 that this donkey could answer any question yuh ask.”

Ingredients: 2 lbs shrimp, clean 1 tbsp Adobo 1 tsp oregano 1 tsp thyme 1/2 cup butter 5 cloves garlic, pressed 1 tbsp fresh parsley, minced 1/4 cup butter

Caribbean Black Bean Soup

DIRECTIONS: Season cleaned shrimp and season with adobo, oregano, and thyme. In a small skillet, add butter and allow to melt (Do not let it get brown). Add garlic and parsley.

Allow to sauté for a minute on low heat.

Add shrimp and continue to sauté for 3 to 4 minutes.

Garnish each serving with a thin orange slice.

Baked Red Snapper

Ingredients: 4 lbs. red snapper fillet 1 lb butter, melted 2 limes, 1 tsp. salt 1/2 tsp. black pepper 1 lb. tomatoes, cut in quarters 2 onions, thinly sliced 2 garlic cloves, crushed 2 bay leaves, 1/2 cup. water

Heat oil in a heavy pot. Scoop and drop banana batter into the hot oil by the spoonful.

Allow to fry until golden brown. Place on kitchen paper towels to drain excess oil.

Ingredients: 2 cups dried black turtle beans, soaked 1 strip bacon, diced. 1 cup diced onion 1/2 cup celery, diced. 1/2 cup green pepper, diced. 1 tbsp scot bonnet pepper 2 tbsp Caribbean jerk seasoning blend freshly ground black pepper 1 clove garlic, minced.

6 cups low-sodium vegetable broth salt to taste 1/4 cup cilantro leaves, for garnish 8 lime wedges, for garnish DIRECTIONS: Drain the beans and set aside. Cook the bacon in a 4-quart pot over low-medium heat for 2 to 3 minutes. Add the onion, celery, green pepper, scot bonnet pepper and jerk seasoning. Season lightly with black pepper and cook until the vegetables begin to soften, about 5 minutes. Add the garlic and cook for 1 more minute.

Add the beans and broth and bring to a boil quickly over high heat. Lower the heat and allow to simmer until the beans are completely tender (about 30 to 40 minutes).

Remove and discard the bay leaf, puree half of the soup in a blender and then add it to the rest of the soup. Season with salt and pepper. Keep soup warm.

Serve the soup in bowls and garnish with cilantro and limes.
