EDITOR’S LETTER Welcome to your January issue of SO

2016 was probably what I would call ‘interesting’. With Brexit, Trump and those pesky people at Toblerone shrinking the size of their gaps, the year was nothing if not tempestuous. I know plenty of people breathed a huge sigh of relief when the clock struck midnight and 2017 arrived. But, (and sorry to get all philosophical here), the New Year will only be different if we make a difference. We all strive to better ourselves in January; taking up new hobbies, giving up foods we love and locking ourselves in the gym, but outside of ourselves, what are we improving? I’m certainly guilty of thinking a new outfit will fix a bad day, and while it might temporarily, I’m sure there are plenty of things I could be doing that would make me feel better but also help others at the same time. That’s why I’ve been so inspired by the amazing people in our New Year’s Honours list. All of these individuals go above and beyond to help others and their local community, and they’re making a real difference. Read more about what they do on page 43. January’s got a reputation for being a bit miserable, but we’ve packed this issue full of articles to help combat the blues – on page 74 Amanda Dicker from The Chapel tells us about her inspirational journey, on page 81 we’ve got mood-boosting tips, and if it’s just a bit of sunshine you need then check out our article on Santorini (page 92). You might notice that in keeping with ‘out with the old and in with the new’, we’ve had a bit of a makeover. We’ve still got lots of your favourite features, but we’ve also introduced some exciting new ones too – let me know what you think of our new look. taplehurst residents’ hopes of being able to head to their local Natwest branch have been dashed – after it was revealed that the bank in the village will ‘never re-open’. Natwest recently made the decision to close nine branches next summer, due to an increase in online banking. However, the Staplehurst branch has been closed since July after a ram raid where thieves smashed into the building and stole the cash machine, and now won’t re-open at all. Despite usage in Staplehurst only being down 18% since 2011, residents will now have to travel to Cranbrook, Tenterden or Maidstone to visit their nearest branch.

I spend it at home, as I’m so infrequently there; it’s such a treat to have time in the garden and bliss after spending most of the week faffing about with sheet steel.

Sunday stroll?

Probably The Three Chimneys pub between Sissinghurst and Frittenden.

I love walking in the woods around Scotney Castle whenever I get the chance.

Are there any nice views nearby?

Peace and quiet, it’s a real haven.

The whole area is so pretty, but I think I prefer the woods and lanes to the big open spaces.

MY RANT

NO CHANGE Laura from Cranbrook’s only resolution this year is not to make one… I hate resolutions. There, I’ve said it. I hate the way that just because we’ve entered a new year and we’re one digit different on the calendar, we’re expected to become completely different people. As if, by turning midnight on December 31st we enter into a Cinderella situation where we’re suddenly unrecognisable from the person we were 60 seconds before. Sure, I’m all for wanting to better yourself, but this shouldn’t be exclusively saved up for January. If you want to join the gym, cut out sugar or take up a hobby, don’t put it off until it’s time for a new calendar, do it when inspiration strikes. Otherwise, you’ll be one of the thousands of people who decide they’re going to shed the pounds, only to try one spin class, and then the only pounds you’ve lost are from your bank account. My hatred for resolutions has been heightened in recent years, as friends become more and more self-righteous. I’m happy to support someone who wants to start a diet or take up

fitness – to a certain extent. But when they refuse to meet for dinner because they don’t want to consume any calories after 5pm, or when the first thing they tell you is how many hours they’ve spent in the gym (while you were spending those hours cleaning up after children), it does get a tad tiresome. I used to relish the change of the new year and the chance to challenge myself, but after one too many knitting failures, I realised that setting yourself unrealistic goals just makes you miserable, and January is already the most depressing month of the year – why add to that? Last year, I tried to set myself little goals as I went along – rather than promising myself I’d be fluent in French by the end of the year, I instead decided to set myself small tasks that were easier to accomplish. Going back to work after maternity leave meant that I felt a bit out of my depth, so I signed up to do an online marketing course so I

could learn a few new skills and get back up to scratch. Some months I tasked myself with bigger challenges, and other months it was just to drink more water and less wine on weekdays. Of course, everybody deserves to be happy, and if losing a stone or giving up complex carbohydrates is going to fill you with joy, then go ahead and commit. But, if you’re really serious about your new passion, you don’t need to start in January. Why make a rush decision to upturn your life, only to be back to your bad habits by Valentine’s Day, when with a little more consideration you could actually make some real differences? Also, if you are feeling virtuous, don’t be smug. Nobody wants to see another picture of you drinking tap water at a party or doing a downward facing dog. Especially when they know that in a few weeks’ time you’ll be back on the gin and dancing on the tables. Or maybe that’s just me? Either way, make a change if you want to, not because the calendar dictates that you should.

GENEVIEVE POLLOCK, TENTERDEN After losing a number of relatives to cancer, Pilates instructor Genevieve trained for eight months with Macmillan and achieved her level 4 cancer rehabilitation certification so that she could help others who were suffering. Now, she runs ‘pink ribbon Pilates’ sessions in Tenterden – for free. These classes, which take place in the Town Hall help women who are in various stages of breast cancer to stay mobile and motivated, and Genevieve hopes that in the near future she’ll be able to run the sessions weekly. www.stalwartwellness.co.uk

PAT DOWNING, SEVENOAKS West Kent Mind president Pat Downing has volunteered for good causes for over 40 years, having begun in 1976 when she was a restless housewife who wanted to help the community. She set up the Beach Mont Club in Sevenoaks, a day centre for people who were physically and mentally handicapped, offering them craft clubs and events to bring them together. Since then, her passion for charity has never wavered, and last year at 82 she became the deserving winner of the Lifetime Achievement Award at Sevenoaks District Council’s Voluntary Awards. Pat wants to encourage other people to volunteer for good causes, saying: “Do it for the love of doing it, that’s the only way you can do it. You can’t do it because you are forced to. You do it because you want to and it really is so worthwhile. POLLY TAYLOR, TUNBRIDGE WELLS As co-founder of the Pickering Cancer Drop-In Centre, Polly Taylor has been helping those touched by cancer since 2004. The Tunbridge Wells-based charity helps around 3,000 people a year, providing holistic, therapeutic and emotional counselling, and is run entirely by volunteers. In 2013 Polly was awarded a British Empire Medal (BEM) for her voluntary service to people in Kent affected by cancer, and in 2015 she was recognised at the Women of the Year awards. Every day she continues to inspire and bring positivity to those who might be struggling to find some. While she’d be the first to commend her wonderful team of volunteers, we thought it was about time Polly got some recognition, too. www.pickeringcancercentre.org.uk

CAROLINE BAKER, TENTERDEN What began as a way to show her daughter Mollie that there are children less fortunate, ended in a hugely successful project for Caroline Baker, who co-ordinated The Big Wrap and Foodbank Appeal in Tenterden. When she discovered that there wasn’t a shoebox or gift appeal to go to families in the local area, she decided to organise one herself in time for Christmas. Joining with St Mildred’s Church on their Christmas Cheer fundraising campaign, by the end of the drive they’d had almost 200 gifts donated to give to disadvantaged local children, as well as collecting items for the Ashford Foodbank, and seeing £3,775 in donations to the church, which were used to buy Tesco vouchers for the families. Now, Caroline plans to make the appeal an annual event.

DANNY LUCAS, WROTHAM Creator and founder of Littergram, Danny Lucas from Wrotham has had a busy few months. As well starting a war on waste by launching his popular app where users can report rubbish to councils, he’s also had another battle on his hands. Instagram, the photo-sharing app owned by Facebook attempted to make Danny change the name of his brand, saying it was ‘not acceptable’. Throughout 2016 he fought with the social media giant over the usage, and thankfully at the end of the year he finally received the news that the case had been dropped. Tonbridge and Malling Borough Council became the UK’s first local authority to adopt the app’s free portal connecting them directly to users in the district, and the initiative has been widely praised. Danny’s idea to tidy up Kent is one we’re supportive of – let’s hope in 2017 we see even less litter on our local streets. www.littergram.co.uk

DAVE PRODRICK, TUNBRIDGE WELLS Not only does Dave support families as a Family Liaison Officer at St Barnabas’ School, he’s also heavily involved in the local community, as the Chair of CREATE (the Camden Road Education, Arts and Theatre Enterprise) and the annual Winter Lantern Parade. From CREATE’s inception seven years ago, which began with a community play, there is now a community choir, book group and theatre projects. fellow guests Anna Kendrick and Justin Timberlake couldn’t stop laughing and a genuine TV moment occurred. “As a kid, I used to watch Freddie Starr on Des O’Connor’s show, or George Best or Oliver Reed on Wogan, and no one knew what they were going to do. I’d be sitting there with my crisp sandwich and mug of tea thinking, ‘How do I get to do that?’” Despite the experience of revealing a bit more than he should to Norton’s viewers, Williams, now 42 and rich enough to never need worry about another interview ever again, still seems hugely excited about promotion and the process of releasing an album. “I think interviews can be boring and no one on them wants to give too much of themselves or divulge a secret, so I do the opposite. Gandhi said, ‘Be the change you wish to see in the world’, so there we are,” he says, beaming at the ridiculousness of mentioning Gandhi and his slightly vulgar story in the same sentence. The Heavy Entertainment Show, released a few weeks ago, was three years in the making, and sees Williams working with former songwriting partner Guy Chambers, after their somewhat acrimonious parting of ways following his fifth album Escapology. They did reunite for Williams’ previous release, 2013’s Swings Both Ways, but that was largely a collection of covers. The pair working together again on a new album of all-original pop is big news. The five albums they made, from Williams’ 1997 debut Life Thru A Lens to the aforementioned 2002 release, sold the best part of 30 million copies and bookend what Williams refers to numerous times as his “imperial phase”. It’s hard to explain now, in an age when sales in the hundreds of thousands are rare, but for a time, Williams was a bona fide phenomenon. In 2003, he broke all boxoffice records when he sold 375,000 tickets

obbie Williams might be a lot of things, but never let it be said he’s not a great conversationalist. Publicly, the former Take That star – who has just become the third recipient of the BRIT Icon award – is a record-breaking solo artist, among Britain’s biggest-ever exports, singer, songwriter and, as he is at great pains to emphasise, an entertainer. Privately, he’s agoraphobic, an Olympiclevel depressive and is – his words not ours – a self-obsessed egomaniac. Despite the latter – perhaps unfair – description, he loves to chat. At several points in our interview, which ends up running almost four times longer than was originally scheduled, he has to be reminded the interview is about him and that our chat isn’t supposed to be a two-way street. But the questions keep coming about anything and everything and resistance to the charm offensive is futile. “I try so hard,” he says. “On my passport, it says entertainer. It doesn’t say singer, or songwriter, but entertainer. Because that’s what I do. I do these interviews and go on these chat shows and, with the meagre talent and skills that I’ve got, try to do something entertaining.” He says chat shows are generally bland affairs and in the weeks leading up to an appearance, he’ll suffer extreme anxiety about coming over likeable and interesting, so perhaps overcompensates when the time comes. “It’s like being in a bar fight. It could be an international shame fest but I want to be compelling and I grab for the first thing I can to get me through it, whether it’s an ash tray, a pool cue or a joke about a cleaner,” he says, referring to the tabloid headline-grabbing tale he told on Graham Norton’s chat show recently about receiving a sex act from a female stranger who sneaked into his room and whom he presumed was a cleaner. Norton was speechless,

for an unprecedented three-night stint at Knebworth in less than eight hours. By 2006 he was so famous, he says, that life in the UK became unliveable. “It was so out of control, with the papers especially,” he says. “But I’m so unbelievably competitive that I looked at all the photographers outside my house and thought, ‘watch this’, and just stopped going out. I just stopped. By 2008, I’d come through it, went outside and thought ‘oh, they’ve gone’ and the media spotlight shifted. With that came an end to the imperial phase, but life became 30 or 40% more enjoyable. Record sales dipped but quality of life went up.” He, along with wife Ayda Field and two children Theodora and Charlton, relocated to the UK about a year ago and recently moved into the house they bought. The house was subject to a long, drawnout and public battle with neighbour Jimmy Page of Led Zeppelin, over building work. That’s now settled and Williams and his family are in. “I was here a lot, but London’s going to feel very different for us now. Our stuff is here, we’re sleeping in our bed, we’re not renting any more.” He still doesn’t think he’ll go out much, although he does join Field, an actor and occasional panellist on Loose Women, on acting jobs. “She’s been my trailer buddy for years, so now I’m hers, but I can’t really go out as such,” he says. “I mean, I could, but I wouldn’t have the time or patience for everything that would be asked of me - ‘sign this’, photo, photo, photo, ‘will you speak to my mum’? But at the same time, if I didn’t do all of that, I’d be mad at myself and I’d feel guilty for weeks. I’m sort of diet agoraphobic, not full-fat – I’m not terrified of going out, I just don’t want to and can’t be bothered.” When it’s put to him he may have been misdiagnosed – that he might just be lazy – he laughs and suggests it’s not the first time that’s been said. We then wander around the offices of his record label. He nips into a room to tell one person to turn down their music, he pops up at the desk of another to compliment their dress, having fun surprising people. It’s very easy to work out Williams’ enduring, massive success from spending a little time with him. He’s beyond charming, hugely talented, strikingly handsome but slightly broken and a little dangerous, meaning people fancy him, want to be like him, idolise his music, or want to fix him, possibly all four at the same time. And there’s little sign of that changing. His recent single, Party like a Russian, limped into the UK singles chart at No 68. And while his imperial phase is most definitely over, the low chart figure doesn’t suggest he should hang up his microphone just yet. “Yeah, I felt it, but the rules have changed. I thought ‘oh’, rather than ‘ow’. Albums are the main game in town for someone my age, and I’m being judged against everything I’ve done before. “My worst day is still a lot better than most other people’s best.” Robbie Williams’ new album, The Heavy Entertainment Show, is out now. I

t's not long since the Danes transformed our TV habits, Scandi style has been steering our fashion choices and honing our home decor for the best part of a decade, not to mention the Copenhagen foodie weekends and Northern Lights trips now topping our dream holiday wish-lists. Now, another Danish export is emerging – and this time it's our approach to wellbeing that's being given the Nordic treatment. Hygge – pronounced 'Hoo-guh', if you're wondering (don't worry, nobody's really sure how to pronounce it) – is already all over the blogosphere. Expect to see hygge-themed books taking pride of place in bookshop displays this year, and you may already have caught Meik Wiking on Channel 4's Sunday Brunch chatting about it. So what exactly does it mean? As Wiking explains in The Little Book of Hygge: The Danish Way to Live Well, the English language does not have a direct translation for 'hygge'. Chances are, though, most of us are already well acquainted with the concept – we just didn't know the Danes had a name for it. That internal glow you get when you turn the big light off, light a candle and snuggle up to watch an old movie with a steaming mug of hot chocolate? Hygge. The way stripping off

those constricting work clothes and pulling on some super-soft joggers and bed-socks somehow soothes your soul as well as your knot-filled limbs? Nice bit of hygge right there. And the ultimate hygge? Curling up with a cheese board and your favourite red wine in a cosy, sheepskin-filled cabin, crackling fire, snowing outdoors... It's all about harnessing that feel-good factor, not only through mindset but through our approach to everyday behaviours and rituals, and creating ambience and comfort in our surroundings. There have been a few attempts to define hygge, including, as Wiking notes, 'cosiness of the soul', 'the art of creating intimacy', 'cosy togetherness' – but how would he best sum it up? "I think the essence of it is the pursuit of everyday happiness. Trying to build a little pleasure and gratitude into your daily routine. That's my favourite definition of hygge." As CEO of Copenhagen's Happiness Research Institute, this is a subject he's studied extensively, as well as something he practices. He says he's not surprised hygge's in the spotlight, though the rate at which the trend's booming is "overwhelming". "Right now, not just from the UK but globally, there's a large interest in Scandinavia,

Denmark in particular. I think [the interest in hygge] is intertwined with an understanding that some of the ambitions and goals we've had for development and society are not necessarily the best ones, or adequate," Wiking explains. "It's part of the paradigm shift away from measuring profits in terms of GDP, but more measuring success in society through quality of life, or happiness and wellbeing." In the four years the United Nation's annual World Happiness Reports have been running, Denmark has famously been ranked number one three times. It's easy to dismiss this as quirky headline fodder, but it's far more important than that – especially as it's increasingly acknowledged that our happiness, health and productivity (which equates, on a very base level, to how much we 'cost' our businesses and governments) are closely linked. Wiking and his colleagues are frequently approached by the media about what it is that makes the Danes so happy, and he says they're visited by a lot of global delegates, keen to

discover the happy Danish way and export it back to their own nations. "People are starting to acknowledge the gap between wealth and wellbeing and starting to look elsewhere to try to achieve wellbeing. Scandinavia can maybe achieve some answers in that area," he adds. He doesn't think the concept is uniquely Danish, however. Some other languages also have their own similar words for it – Dutch has 'gezelligheid', Norwegian has 'koselig' – but it's only in the Danish language that it exists as both an adjective and a verb. This might help explain how it's become a mainstay of Danish conversation and, Wiking points out, something the Danes can confidently claim a monopoly over is how much they talk about it. "It's ingrained in conversation: I will invite you over for Friday evening and then during the week we'll talk about how 'hyggeligt' Friday is going to be, and on Friday we'll be very explicit and verbal about how 'hyggelig' this is, and then on Monday we'll talk about how

'hyggelig' Friday was." We Brits arguably already have a fair few 'hyggelig' traditions. Chatting over a long Sunday roast with loved ones, cosying up in a country pub on a cold day, and everybody appreciates the mood-soothing simplicity of a candlelit dinner. In fact, in his book, Wiking reveals that if hygge was a person, he'd pick our very own Hugh Fearnley-Whittingstall. "With a casual, rustic and slow approach to life, he embodies many of the key elements of hygge," he writes, "and he also seems to understand the value of good, hearty food in the company of good people." But the lack of an official word for all this does make a difference. Sometimes, naming something can make it more meaningful, more valid (consider how we name our pets, they become part of the family, loved, and this is acknowledged not just in our own hearts but by wider society). Wiking agrees, and thinks the effect of labelling a wellbeing philosophy goes even further.

"It's also a testimony to the way that language shapes our behaviour. If we have words for something that will also influence the way we behave," he says, "we have a word for it and it's something we pursue on an everyday basis." Indeed, Danes don't just create hygge at home, they seek it out in restaurants and coffee shops, and even, for some, the way they design their office spaces. It isn't just a lovely idea that they might get round to, or give themselves permission to 'indulge' in on holiday. It's a legitimate part of everyday life. There may not be an English word for 'hygge', but thankfully, in the spirit of cosy togetherness, the Danes are happy to share: "We should have a name for it, right?" says Wiking. For my New Year’s resolution, I want a total re-vamp. Out with the old and in with the new me – and the place I want to start is a new hairstyle...but where do I begin? How do I know what will suit me?

GARY: Well done to you for making a decision to put 2016 behind you. A new image gives us a newfound confidence and that filters through our everyday lives. My recommendation is to ditch your regular stylist for now and find someone new. You can come back to him/her, but having someone with a fresh pair of eyes will help break routine. Be honest. Tell them all of your hopes, fears and motivations and listen to their advice – but be brave. Remember, you’re looking for something new and that’s very scary sometimes. Ask lots of questions and make sure you both agree on what the finished result will look like so there’s no huge surprises. Just don’t forget to enjoy yourself – a revamp is a fun experience! Please don’t stop at your hair. Finish the process and go and see a new makeup artist, and maybe even a stylist who can help with your wardrobe.

shampoo first before you shampoo your hair normally. If that is still not working, invest in a deep-cleansing/clarifying shampoo designed for oily hair types. Clarifying shampoos can be quite drying so make sure you are always following with a good conditioner or a treatment mask. Don’t do this any more than twice a week. Use a moisturising/balancing shampoo if you shampoo your hair anymore throughout the week.

Winter is bad enough without my makeup looking terrible! At this time of year my makeup just doesn’t sit properly on my skin or look right in photographs. What am I doing wrong?

DAVID: Unfortunately, we live in Britain and winter light is grey, grey, grey! Dull sunlight makes bronzers look ashy and casts shadows all across our face. Throw in some freezing cold temperatures that strip your skin of its natural glow and makes it flaky... even Rosie-Huntington Whiteley would look like a stale piece of toast. But, fear not! Follow my ‘five easy steps to gorgeous winter makeup’ and you will be skipping pretty all the way to spring.

I like a styled look and am a regular hairsprayer throughout the day. Lately, my shampoo doesn’t seem to be getting rid of the feeling of product on my hair. The hairspray seems to be making my hair dull too. How can I stop this?

GARY: Sounds to me you just have a build-up of product on the hair, which can be hard to remove. Try applying a dry

1. Exfoliate As a result of the cold air stripping our skin of surface moisture, the dead skin cells build up twice as fast. Invest in a good scrub and use twice a week. There are abrasive scrubs for those that like to put a bit of elbow grease into their cleanse, and for sensitive skins there are gentle, enzyme-based

exfoliators available that dissolve the glue binding your dead cells to your skin with no force needed. 2. Shield Stop the cold air from dehydrating you with a protective shield applied through your moisturiser. Find one that’s high in antioxidants and vitamin C. An SPF will help with this too. 3. Balmy base Now with clear, smooth skin, there is no need to use a heavy, cakey foundation. Find something moisturising and balmy to give your skin an all-day glow. If coverage is an issue, apply a little concealer to the under eyes and your areas of concern but don’t overdo it. Skip powder, unless you’re extra shiny and even then, only apply to the T-Zone. 4. Ditch the bronzer Bronzer looks grey and unnatural this time of year. Go for a blush in a natural tone. Apply it in exactly the same way as your bronzer or just stick to the apples of the cheek. 5. Don’t smoke When you want to go a little further with your face, hold off on dramatic eyes. Smokey eyes are just going to look dark during winter daylight. My New Year’s Resolution?

PUTTING ME FIRST As we welcome a new year and vow to do a whole host of things most of us won’t follow through on, Amanda Dicker from The Chapel is taking a simpler approach

T

he successful hairdresser and owner of The Chapel Salons in Tunbridge Wells, Sevenoaks, London and Verbier won’t be signing up for a fad food regime or an expensive weight loss club this year but she will be putting herself first for a change, and she’s hoping others might try it too. After years striving to be the best at everything and to everyone, Amanda reached a crossroads in her life two years ago. Juggling so many balls had left no time for herself and, realising she was becoming someone she really didn’t like or want to be, she downed tools one day and walked out of the boardroom to reassess her life and everything in it. “Too often these days we mistake a hectic schedule for a full life,” says Amanda. “If we’re not working and putting our energy into something, we believe we’re wasting time and that taking time for ourselves won’t accomplish anything, but in my experience this couldn’t be further from the truth! “I let the stress and anxiety build up, running round doing things for everyone else, trying to be the best mum, wife, friend, daughter and woman, and feeling selfish taking time for myself, but the reality is that if you run yourself into the ground you’re not going to be much help to anyone. “All of a sudden I was at home during the day and wasn’t used to it. When you’re always busy and always at work, it suddenly feels really alien – like you’re a naughty child playing truant from school but I remember the first thing I did was paint the

garden fence and it actually felt fantastic.” Walking away was a huge game changer for the 46 year old who, having been diagnosed with dyslexia as a teenager, had spent years competing and comparing herself to others, and feeling less of a human being. Now with time on her hands and a clearer head to think more about ‘being’ rather than ‘doing’, she realised how living in the moment was making her so much happier than reflecting on the past and chasing the future, things that have been key to getting her life back into balance. “It wasn’t until I read up on things that I realised I’d reached burn out, probably a bit of an overused phrase now but definitely everything I was reading summed up exactly how I was feeling and the point I’d reached in my life. After painting the fence I made a conscious decision to just slow down and pause. “I started exercising with a great gym teacher and began yoga and meditation with an amazing teacher in Tunbridge Wells, and both have really inspired me in life. “The main thing I realised in all of this is the importance of giving yourself some time, even if it’s just a small pause in the day and how this can make a big difference, not just how you feel in yourself but how you are around your family, friends and work team.” Amanda worked with leading perfume expert Fran Brown to develop her new range that includes candles, hand cream and pulse point fragrances in three different scents. “I might not be the first person to

create these types of products, but what I want to be different is how people think and feel when they use them,” she continues. “I would love for people to take a small pause just to ‘be’ and to think about little things to be grateful for each day, which can be really powerful.” This shift towards living in the moment has transformed the way Amanda now lives and works and she admits she’s a much better person to be around too. “It’s taken me three years to realise who I am and what I want from life and work. Thinking about the past and the future, whether positive or negative, makes me anxious and I realised living in the present, taking each day as it comes, can be much more beautiful. There’s no thought around it, it’s real time, the here and now, and it’s a far more positive place to be. I took my watch off straight after I finished painting the garden fence and it hasn’t gone back on. The ‘now’ tattoo in its place is important to me and reminds me to stay in the present.” Of course there are times when she needs to be somewhere and then she’ll glance at the clock on her phone just to keep on track, but Amanda’s certainly no slave to timekeeping. “You can tell what time of day it is by your surroundings and lighting, you don’t need a watch and these different vibes for different times of the day are important in the new range too. I’ve created three different fragrances inspired by times of the day that reflect how I feel at home and work.” Her advice to anyone else struggling to keep on top of everything? “Pause and be kinder to yourself. Accept that the more time we take the more life gives us. Follow your own drumbeat, stay true to yourself and your own values. Whatever you do now will affect you later.” And her last piece of advice? “I would just like to encourage people to take a pause and be more of a human ‘being’ rather than a human ‘doing’. Well we’re not like a gym which makes this such a nice place to come and train. Everyone is friendly, the equipment is top notch, its never too crowded and most importantly, our trainers know what they’re talking about. We are a personal training only gym so you just book in with your trainer and come when it suits you. Being right above the train station we train a lot of commuters so we start from 6am and we work till 10pm. What do your trainers specialise in?

We have a team of 6 amazing trainers here so we have most angles covered. We have

really fine tuned the process of weight loss but we can also go above and beyond what a ‘normal’ trainer can do. We assess injuries / back problems, build strength programs, work on nutrition, improve sporting performance and deal with pre/post natal. Plus, four of our trainers have a ton of martial arts experience so we can even even build some boxing into your sessions which makes it fun! What’s the best way of losing weight?

We are really hot on nutrition at TWPT, that’s why we get such good results with clients. However I think the key is realising two things. Firstly, not overcomplicating nutrition to the point that it becomes impossible to follow. Secondly, rather than

taking a standardised approach, for each client try to work out what 2 or 3 changes will have the biggest effect and work on those first. A

ntonio Carluccio’s home is brimming with personal touches, and as he shows me around, it isn’t long before even the most innocuous item prompts a trickle of anecdotes. “Those grapes out there are from a cutting I brought to London 41 years ago,” the 79-year-old declares proudly, gesturing towards a branch heavy with black fruit, which I’m encouraged to try and informed it’ll be used for making wine later. Then there’s the pot of quince jam he presses into my hands and explains was made yesterday with fruit fresh from his garden, the stacks of notes for his first children’s book (about two mushrooms), and his friendly dachshund who doubles up as a foot warmer, and whose likeness was captured by a fan in a wooden chopping board, hand-crafted for the Italian cook’s last birthday. It’s a homely house, full of rustic paintings, photographs, cushions and books, and just like the man himself, not ostentatious. “I like to have money, because money is good,” he says, crinkling his eyes. “But it’s not too good, you know? “If you have enough, it’s fine. It solves many, many problems, but there are people that are avidly attached to it. It’s balance. My mother used to say, when God created Italy and looked from above, he said, ‘It’s too beautiful, I have to balance it and create Italians!’” Brought up in the country’s north-west region, one of six children, Carluccio briefly worked as a journalist in Turin before moving to Vienna and then Germany, and eventually to London to work as a wine merchant, before devoting himself to food with the opening of his Neal Street Restaurant in 1981, followed by the first Carluccio’s Caffe in 1998. Although he’s since sold his interest in the now famous restaurant chain, he’s still involved from a distance, and clearly proud of its success, using a mosaic from the restaurant as his doorstep and sealing his home-made jam with a Carluccio’s stamp. Next on the menu is his new book, Vegetables, within which roots and greens

take the glory (although some meat and fish dishes are included). “Italians love vegetables as much as they love meat or fish, there’s no difference,” he notes. It’s easy to draw the conclusion that this is a man who knows how to live well. While he takes food seriously – and is clearly chuffed with Vegetables, his 23rd cook book – he’s not fond of aggressive chefs. “I respect very much Raymond Blanc for what he does, Giorgio Locatelli, Brian Turner, Pierre Koffmann, Marco Pierre White, but not Gordon Ramsay. I don’t like him,” he says. “Not even his cooking, he’s just pretentious. The very fact that he has to

swear, and to bring a regime in the kitchen. They are not military. Come on! You achieve much more in a lovely atmosphere.” With frequent marriage proposals from fans, a string of celebrity devotees (not least Jamie Oliver) and a real pride in hospitality, it’s hard to imagine Carluccio bawling someone out for not reaching his standards. “My philosophy is to be happy and to make people happy,” he reasons. “And by result, if you make people happy they make you happy.” Fancy bringing a bit of Carluccio’s homeliness into your own kitchen? Preheat the oven to 180C/350F/gas 4. Boil the beetroot in slightly salted water for one and a half hours, until the centre is soft.

★ 4 very large beetroot, about 750g ★ 150g smoked ham, in thin slices (optional) ★ Freshly ground black pepper FOR THE SPICY CHEESE SAUCE:

★ 70g unsalted butter ★ 50g plain flour ★ 500ml milk, warmed ★ 90g Parmesan, freshly grated ★ Freshly grated nutmeg ★ A pinch of chilli powder ★ Salt and freshly ground black pepper

Make the sauce. Melt the butter in a medium saucepan, then add the flour, and stir to amalgamate the flour with the melted butter. Add the warm milk slowly, stirring constantly to avoid lumps, until the sauce is thick. Add 80g of the Parmesan, some nutmeg, chilli powder, salt and pepper to taste. Peel the cooked beetroot and cut into thin slices. In an ovenproof dish, build a layer of beetroot, followed by a layer of ham, then cover with some of the sauce. Build up these layers until you finish the ingredients, ending with the remainder of the sauce on top. Add a final sprinkle of the remaining Parmesan and black pepper. THOUGHT FOR FOOD This month, our celebrity chef Rosemary Shrager is talking parties, prunes and putting off exercise…

I

do hope you all had a wonderful Christmas; I spent it with my family and then went off for a short break to unwind! I always find New Year’s Eve parties such an anticlimax. You have to stay up and see the midnight in, and by then I am normally way past my bedtime and exhausted. One of the best parties was when I cooked a Chinese steamboat. For those who don’t know what this is, it’s a copper or metal funnel with a channel going around like a cake mold, in the channel you pour in chicken stock, then inside the funnel you put hot charcoal to heat the stock. You are then meant to start with small pieces of fish that you all cook yourself, then on to prawns, slivers beef, vegetables, anything you want, you have the usual dips etc. Then you end up drinking the stock with the most wonderful flavour. I also make lots of Dim Sums with it like dumplings, spring rolls etc. Our local Tunbridge Wells Chinese restaurant, Dragon Tan does it, if you ask them and give them good notice. Also Steamboat is incredibly healthy, which brings me onto another subject – the

DIET. I hate the word diet, as people already know if they read my column regularly, it automatically conjours up failure. To me it’s your mindset and just feeling healthy and eating the right thing. I started eating prunes to fill me up at that crucial time of feeling peckish and also yearning for something sweet. I cannot tell you how much it has helped; I also use it in sauces and smoothies. How it started: I am one of the ambassadors to the Californian prune

“One of the best parties was when I cooked a Chinese steamboat” board, representing 900 prune farmers in California. Through my testing and working for them I have discovered the benefits of prunes – apart from the obvious one! They really are a wonderful product. I can guarantee it will help anybody to lose weight as part of his or her new regime. I will be bringing out some healthy prune recipes soon.

In the meanwhile, exercise, is a bad word for me, I am so lazy with this. This is the area that I fall down on, I love my yoga, but again I’m always busy. I find the discipline hard for this, work always seems to get in the way and overtake. One day I will change. Even Mr Motivator tried to help me; we were having Skype calls together trying to get me going. He didn’t give up on me, I gave up on me. The one thing I do love is swimming, but I have yet to find a warm pool nearby where I could do some water aerobics. Watching some of I’m a Celebrity at the end of last year brought back so many memories, it’s such a wonderful opportunity to do weird and wonderful things. It does seem rather a long time ago. This has been a bit of a strange article – just putting my thoughts on paper! The book will come out one day… Happy New Year and speak next month.

Honeymoon

THE SECRET’S OUT Charlie Bond heads to Santorini to be romanced by this beautiful Greek island

B

efore our plane has even landed in Santorini, we know we’ve made the right choice of ‘mini moon’ destination. From the sky, the island looks like paradise – whitewashed walls, sparkling sea and sun-soaked shores, and once we land, it continues to romance us. Trying to plan a honeymoon at the same time as planning a DIY wedding complete with ‘surprise the groom’ mini golf is a logistical nightmare, so we decide that instead of three weeks in the Maldives after our wedding, we’ll head off on a mini moon for a few days of R&R. Which is how we find ourselves on the ‘island for honeymooners’ headed to the northernmost point – the village of Oia. The Greek island, which is the remnant of a volcanic caldera, has been voted as one of the ‘world’s most beautiful islands’, and, as our taxi wends its way along with our driver stopping to let us take in the breathtaking views – it’s easy to see why.

We arrive at Santorini Secret, our home for the next few nights, and are immediately offered a welcome cocktail while our room is finished. Manos, the restaurant and bar manager greets us warmly and tells us that here, he treats everyone as family. Then, he seats us where we can gaze out over the Caldera, and presents us with chunks of homemade bread and taramas while we enjoy the views. The hotel is made up of 17 suites, all carved into the side of the cliff and beautifully furnished. We’re shown to our room – one of the Pure suites, and it’s stunning, somehow striking the balance between being stylish,

modern, traditional and tranquil. Each suite also has a private terrace overlooking the Aegean, and ours boasts a hot tub. We haven’t even unpacked and I already never want to leave. We spend a few hours wandering the streets of Oia, discovering what’s on offer. The village isn’t vast, but it’s packed with boutiques, restaurants and stunning buildings which make for some fantastic photos. Then there are the view points – you barely have to walk a few steps and you’re presented with another stunning aspect – from Oia you can see for miles across the sea, and spot the twinkling lights of neighbouring Imerovigli, which is the highest point of the island. As the sun sets, we make our way to a tiny tavern, 39 Steps, tucked under a stairway, and sample local wines and beers, before stumbling across traditional restaurant Karma, tucked away in a small street, where we decide to have our evening meal. This turns out to be an excellent find – the restaurant is cosy and inviting, and full of locals as well as other

holidaymakers. We order traditional Greek dishes – souvlaki, paidakia marinated lamb chops and tzatziki, as well as a carafe of local white wine, before walking back to our hotel admiring Oia’s beauty at night. Despite our large dinner, enjoying breakfast with a view is something we can’t refuse, so we don our fluffy white robes and sit out on the terrace, enjoying a selection of local meats, breads and fruit which are all brought to us on a platter. Each day, guests are given a menu to select from and there’s a huge array of choices – everything from pancakes to salads are available, made all the more delicious because of the accompanying backdrop. Our plan for our first proper day is to relax by the pool with a cocktail in hand, but faced with a slightly overcast and breezy day, instead we decide to hop on a bus to the island’s capital Thira and complete a 10k coastal walk back to Oia. Although incredibly beautiful, the walk turns out to be more of a hike – complete with climbing at times what feel like vertical inclines. The spectacular views across the caldera more than make up for the aching thighs however, and a brief stop in Avocado, a restaurant in Imerovigli, provides some respite before our journey begins again. Eventually, we do make our way back to Oia, where our first port of call is the hot tub, to relax our weary legs which weren’t quite over dancing at the wedding, let alone climbing clifftop inclines. Then, it’s back out to find another local eatery – we’ve definitely earned our dinner today. Thankfully, we wake the next morning to glorious sunshine, so our day of pool lounging and cocktail sipping is able to commence with ease. Other newlyweds are also spending their first post-wedding days here, lazing in the sun, and Manos helps the celebrations to last that little bit longer by providing us all with different cocktails to try while we watch the world go by from the edge of the infinity pool. Santorini is famed for its sunsets, so just

We don’t have to wait long before the sky is awash with vibrant reds and oranges, and the buzz of chatter falls silent as everybody shares these magical few minutes. As sunsets go, this is pretty spectacular, and well worth waiting for. In the height of summer, when the sunsets are later, there are plenty of sunset view restaurants and bars too. Oia is nothing if not full of stairs, but take them and you’ll always discover something beautiful. This is certainly the case for our last day, when we venture down to Amoudi Bay. There’s some 200 steps between us and the crystal clear water below, but when we arrive (having been overtaken by several donkeys) the walk is worth it – taverns line the waterfront selling fresh fish and local

produce, and boats sail past. We tentatively climb some rocks, and there discover a little cove with a few sunbathers making the most of the warmth. We sit for a while, watching the world go by with the water lapping at our feet, then make our way back to one of the taverns to enjoy a sangria in the sun. Of course, there’s then the small matter of the 200 steps back up to Oia, and as we begin our incline, we begin to wonder what happened to the four days of relaxation we’d envisaged. The trouble is, as appealing as ‘doing nothing’ sounds, when you’re staying somewhere as beautiful as Santorini, there’s only so many chapters of your novel you can read before you’re itching to go and explore. That said, tired from all the steps and rock climbing, we take full advantage of our sunny terrace and hot tub in the afternoon, and while away the hours winding down before our final evening arrives. Over our last breakfast the following morning (lots of pancakes – thankfully I don’t have to worry about squeezing into a wedding dress any more), we muse over the favourite parts of the trip. It’s a hard call between the balcony views, the sunset or the amazing chocolates the maid brings every night at turn down, (again, thank god the diet’s over). Either way, there’s no doubt we’ll be back – we’ll just probably pack some walking boots next time. JERSEY SHORE Pippa Park forgets a far-flung beach break and opts for something a little closer to home…

H

ere are a few things I didn’t know about Jersey. Firstly, they have their own money that Topshop will question if you bring back and try to spend on jeans. Secondly, most people seem to speak French thanks to its close proximity (a mere 14 miles to be exact) to Normandy. Thirdly, and most importantly for my sun-worshipping soul, it promises much nicer weather than we can ever expect back in the Weald, being the most southerly portion of the British Isles. Jersey hadn’t really been on my radar before; I usually spring for far-flung destinations and exotic beaches, but in fact it is a surprisingly excellent option for a close-to-home culture shock. The travel time is minimal – after just an hour flight I arrive on the tiny island with my guest (my mum – another Jersey newbie) in tow. Thanks to a charming blend of British and French influences, Jersey is a quaint medley of verdant scenery, fishing villages,

rolling waves, cream teas and friendly locals, linked by narrow country roads, historic sites and some of the finest restaurants on British shores. Its cosmopolitan harbour town, St Helier is the real focus, so that’s where we point our feet.

While my mum (convinced that the aforementioned is George Clooney) dashes to the bathroom to reapply her lipstick, I take in the sweeping country views and dreamy streams of purple wisteria that adorn the stone walls of this five-star manor. A sophisticated yet homely service is provided here, and our decadent day of relaxing begins with coffee and pastries, then progresses to an enjoyable walk around the grounds, where we discover a pictureseque lake, bee hives and the most excellent kitchen garde. By the time we arrive back at the main house we’re delighted to find the temperature has hit 30 degrees – not bad at all given the rain we left behind in Tunbridge Wells! From sipping Pimms on the sun loungers and enjoying intermittent dips in the heated outdoor swimming pool, we move into the restaurant for the most fantastic three-

course lunch before waddling over to The Cottage Garden Spa. Here we’re treated to the de Mamiel Rhythm of Nature Holistic facial – a unique concept that bases skincare on your personality, and this is the only spa in the UK to offer it. My therapist identifies me as ‘fire’, which apparently means I have an outgoing, warm personality with hot-headed tendencies. She adapts my facial based on this, using cooling agents to ‘combat my fire’ during the 1hr 45-minute treatment (£145), while I lay comatose on a heated bed with the sounds of birds chirping around me. Heaven indeed. When I resurface I find my mum relaxed from her own treatment and enjoying the last of the afternoon sunshine in the Jacuzzi – no doubt keeping an eye out for George. While Longueville is no doubt the place for peace and privacy, The Club Hotel & Spa offers a more modern approach in a thriving location. A spa and swimming pool in the basement provides a welcome respite from the town, while just minutes away are the pedestrianised shopping lanes of King Street and Queen Street, which house plenty of boutique offerings and high street favourites, plus a couple of department stores. The central market here is fantastic for fresh food, fudge, fabric and all sorts of interesting offerings.

After a day’s shopping, we stop for a coffee and a refuel at the St Malo Crêperie. Waffles and crepes are piled high with cream, jam, syrup and so much fresh fruit that we have to abandon our plates at the halfway point. If you fancy a day on the water, you can either charter the impressive Princess 42 from Longueville or, if you’d rather put your feet up and leave the hard work to someone else – like us – take a headland tour. It’s £30 for a two-hour tour, where you’ll bob blissfully along the coast and get to grips with the area, spotting Elizabeth Castle, Belcroute Bay and the Noirmont Point Headland. Try a tour with Jersey Yachting, skipper Nigel has a good supply of local wine on board from the La Mare winery, which incidentally is also a great place for a day trip. Buses are easy in Jersey and fairly regular, but ideally you’ll want to hire a car for ease. On warm days you can’t beat the beaches here, but one of the most enjoyable things we do is hire a couple of bikes and cycle along the beach from St Helier to St Aubin. If walking is more your thing there are plenty of self-guided routes available online, or join a tour; either way the scenery is too good not to explore. When it comes to dinner you’re in for a treat. Downstairs at The Club Hotel & Spa is the wonderfully decadent Bohemia. With excellent

local flavours and leading chef Steve Smith in the kitchen, it’s thoroughly deserving of its Michelin Star. From the freshly baked bread rolls and amuse-bouche that resembled works of art, to the dimly lit, moody décor and enjoyable ambience, it’s a meal I won’t forget. Another great dinner to be had is waiting at the Atlantic Hotel, which has also been awarded a Michelin Star – see, I told you food was good here! Arrive early, order cocktails alfresco and watch the splendid sunset over the golf course. The restaurant overlooks St Ouen’s Bay at La Pulente and offers the best cheese trolley I’ve ever had the joy of demolishing. Not just a tax retreat, Jersey is also one for the soul. It’s the perfect place to take a step back in time and enjoy a simpler life of good food, excellent wine and better company. Best enjoyed over the summer months and ideal for a ‘no-fly’ break. With all this so close to home, who needs the Balearics? THE SECRET DIARY OF A (NOT SO) YUMMY MUMMY In her first column, our mum-to-be spills the beans on the unglamorous side of the first pregnancy trimester…

F

or most, finding out you’re pregnant is a blessing. An overwhelming moment in your life where you’re both excited and nervous. Nothing has really changed in that split second, and yet it somehow feels like already everything is different. The overriding feeling for me was elation, months of disappointment and longing instantly quashed in those two happy little blue lines. Wide awake in bed one night, counting the days in my cycle backwards and slowly realising I might be pregnant I took a test at some ungodly hour. I remember waking my husband up at 3am to tell him the good news, only to get a sleepy “that’s amazing” before he rolled over and resumed his snoring, whilst I did a merry jig around the bedroom. However, this elation was soon overtaken by a different feeling…sickness. Constant sickness. All day, every day. Even at night it would wake me up. Working my nine to five office job during the first trimester has given me a newfound respect for any woman who has a physical or manual occupation and also suffers from morning sickness. My tiredness and nausea at work made it increasingly difficult to concentrate; I’d find the

simplest tasks took me twice as long as usual and I became exceedingly irritated by everyone around me. In fact when I announced my pregnancy one colleague said “ah, so that’s why you’ve been so cranky”. I refused to call in sick thinking everyone would guess – how many ‘tummy bugs’ lasted 8 weeks? So I powered through and spent many weeks looking green and grumpy, and rushing to the bathroom on a daily basis. Now, it seems I have mainly moaned about how awful the first trimester is, which is not actually the point of my ramblings. I understand that all of these symptoms, both hormonal and physical, are necessary as you’re growing something amazing inside you – my main gripe is that nobody prepared me for how awful it can be. It’s astounding how little people talk about it. Had female friends and family members been a little more forthcoming about this less-than-fun period I might have been better prepared. I appreciate not every mother I encounter will have suffered from morning sickness or any other symptoms – in fact I’ve had friends tell me they had no symptoms at all throughout the first 12 weeks. But many of those I’ve since mentioned this to (including my own mother,

best friend and sister) have responded with ‘oh yes it’s awful, did nobody tell you?’ Obviously we’ve all heard the term ‘morning sickness’, but little did I know it could be crippling all day sickness, the morning being the least of my worries. We endure a whole host of other symptoms all day – cramps, spotting, bloating, exhaustion – you name it – and it might pop up in those first precious 12 weeks. I found myself constantly asking a friend who had recently given birth, ‘is this symptom normal?’, ‘did you feel like this?’, ‘should I call the doctor?’ I’m far from a hypochondriac, but your body throws so much at you that you start to question every twinge and cramp. My poor husband had to put up with my constant googling and would leave the room to make a cup of tea only to return to me in floods of tears claiming the worst was inevitable. So, in light of thankfully getting to the 12 week scan and everything being fine, now with my eyes wide open, this is my first step to ensuring I talk more openly about the positives AND the negatives of pregnancy. And I encourage everyone else to do so too – if anything just to save a newly pregnant woman’s sanity! JA N UA RY 2 0 1 7

SEAMLESS STUDIES

A multi-academy trust has been launched in Tenterden, comprising the four schools in the town – St Michael’s CE Primary School, The Tenterden Primary Federation (Tenterden CE Junior School and Tenterden Infants School) and Homewood School and Sixth Form Centre. The schools will now be able to share resources and facilities, and will be better connected in the way they operate. Primary children will have access to Homewood’s science labs or theatre to further their studies. The idea is to provide a ‘seamless’ education for pupils from birth to the age of 19.

Crista led a session on the astro pitch for the school’s senior players before meeting parents, governors, alumni and staff during an afternoon reception, where she spoke about her journey to the London and Rio Olympics. “I am delighted that Crista Cullen visited us to open our new pitch and that our girls have had the opportunity to train with one of the country’s leading sportswomen. At Kent College, we provide our girls with personalised training and development to help them become the best sportswomen they can be,” says headmistress Julie Lodrick.

A student at Bethany School has raised over £3,000 for charity – by wearing shorts for a whole year. Back in October 2015, while living in Switzerland, Max Brown placed a bet with a friend that he could keep wearing shorts throughout the cold Swiss winter. Succeeding, Max set a new challenge: to continue wearing shorts every day for an entire year. The winter chill really brought home the plight of the homeless, who without proper clothing struggle throughout winter. Recognising this, Max’s simple bet evolved into a year-long fundraising task for homeless charity, Centrepoint. One room where storage is essential is the bedroom, and while many of us dream of a walk-in wardrobe, most homes donâ&#x20AC;&#x2122;t have space for one. The next best thing is built-in wardrobes, as they provide acres of space and are a more flexible storage solution than freestanding wardrobes. Fitted storage is particularly useful in awkwardly shaped rooms, such as loft bedrooms, where built-in wardrobes can

make the most of the space, especially in the eaves. They are usually made to measure, so all the available space is used, and the interiors can be customised with drawers, shelves and hanging rails, etc, depending on your needs. The main downside is the price - fitted wardrobes typically cost thousands of pounds from a specialist company, although a carpenter will often make them for a lot less.

In the kitchen, lack of storage can drive you to distraction. A larder is ideal, but may not be an option in a small kitchen, where it’s really important to have clever storage and a well-designed layout. Kitchen showrooms and DIY stores can offer ingenious ways of making more of the space, including pull-out worktops, pull-out shelves/racks in larder units, carousels so you can easily access the back of corner units, and tall wall units that provide extra storage in kitchens with higher ceilings.

If your bedroom already has fitted wardrobes but the doors belong to another decade, simply replace them with more up-to-date ones (as long as the wardrobe interiors are fine). It’s easy to get standard-sized or made-to-measure replacement wardrobe doors, especially online, giving you a great new look for a fraction of the price of new wardrobes. Alternatively, get a carpenter to make new doors for you.

Away from the kitchen, there’s potential to create storage space all over the home. Ideas include turning an under stairs space into a cupboard, window seats with built-in storage, stairs that contain drawers, a vanity unit for extra bathroom storage, and built-in bookshelves and cupboards in alcoves; even a desk. With a bespoke home office, the space can be tailor-made for your computer, printer, files and more.

Some of the best storage is, of course, your home’s loft. If you need to access it often, fitting a large loft hatch with a built-in ladder will make it much easier. You’ll also need to board the loft (if it’s not already boarded) before storing things up there. Use sheets of chipboard, or chipboard loft boards, which slot together. ‘Soft’ insulation (in rolls), such as mineral wool, shouldn’t be compressed, though, so use loft legs to raise the floor level above the insulation - the recommended depth for mineral wool is 27cm. Another option is to lay rolls of insulation between the joists, but rigid insulation over them and chipboard on top - some rigid insulation has a chipboard top layer. JA N UA RY 2 0 1 7
