IN SEPTEMBER 2015, THE ALEXANDER HOTEL GROUP WILL BE CELEBRATING ITS 21ST BIRTHDAY. FOR THIS VERY SPECIAL OCCASION, HOTEL OWNERS AND HUSBAND AND WIFE TEAM, PETER AND DEBORAH HINCHCLIFFE, WERE HAPPY TO SHARE THEIR STORY IN A RARE INTERVIEW. WE FIND OUT HOW IT ALL BEGAN AND WHAT THE FUTURE HOLDS

Tell us about your background and what made you decide to become hoteliers Peter: While we’ve always been interested in travel, hotels and quality restaurants, Deborah is a big believer in the benefits of a healthy lifestyle and quality spa treatments. This interest inspired our original plan, which was to build a destination spa. So, 21 years ago, as this budding idea was taking root, we began searching for a suitable location near London. We viewed many hotels, pubs and estates and eventually found Rowhill Grange, a seven-bedroom hotel in an idyllic location. It was close to major motorway networks, was within the M25 and had the most tranquil grounds; it really was the ideal home for a luxury spa. While waiting on planning permission, we decided to completely refurbish our seven-bedroom abode and, although we never intended to continue as a hotel, it was obvious that a spa hotel would be better suited to this beautiful destination. Amending the planning permission was relatively straightforward and we quickly grew from seven rooms to a more viable 38-bedroom hotel with a spa! Had you ever been involved in hospitality prior to opening Rowhill Grange? Peter: Both Deborah and I have a strong retail background, so we knew the value in quality customer service and believed we could create and deliver a truly high-end product. Our experience wasn’t directly hospitality, but we felt confident that it was a logical step for us. Also, in our first year, we were completely hands on in the running and operations of the hotel. I was maître d’, while Deborah managed functions and weddings. Of course, it was hard work, plus we were also project managing all new building work, while sourcing suppliers and beauty treatments for the spa, but it gave us incredible insight and experience. Did you ever think, “What on Earth have I done?” Deborah: Quite a lot! Working and living in a hotel is incredibly demanding and we quickly realised that the best investment for our small team would be a night porter; that way, we could try and fit in some sleep. But, despite the challenges, we wouldn’t have changed it for the world. We fell in love with the industry and felt like it was the most natural place to be.

Do you have any funny antecdotes or stories from your first year? Deborah: Lots, but I’m not sure they would be suitable for print! Well, okay, just one… In our first year, after we hired our night porter, he asked if he could discuss the behaviour of one of our regular guests. As the gentleman in question had always appeared to be quite lovely, we wondered what on Earth the problem could be. However, it transpired that the guest had taken to sleepwalking around the hotel. It’s not that we minded his midnight ramble, but we felt that wandering around with only his pyjama top on would be a little too much for our other guests!”

Langshott Manor

Following the success of Rowhill Grange, you went on to grow your portfolio with Langshott Manor; with just 22 bedrooms, this is a very different property to your first hotel. Can you tell us what led to the transition from spa hotel to quaint country manor house? Peter: If you’ve ever stayed at Langshott Manor, you’ll understand the appeal of this charming property. When we first went to visit the understated family-run hotel, we were captivated by the incredible beauty of the 16th century building. We also liked the fact that, despite basic furnishings, the owners at the time genuinely cared about the property, plus, being so close to Gatwick, there was huge potential. The restoration process was quite extensive and we added seven bedrooms to the main house and five in our moat mews before building the restaurant, conference room and refurbishing the kitchen. Did you ever live at Langshott Manor and do you have a favourite room? Deborah: No, but we stayed quite a lot and still do. Anne Boleyn and Lewis are still our favourite rooms. The views over the garden are breath-taking and I love the quirky, cosy feeling that each room offers. Five years after Langshott and eight years after Rowhill, you decided to invest in your third property: the now five-star Alexander House Hotel and Utopia Spa. What was it about Alexander House that made you go for a third South East hotel? Peter: Deborah and I now had eight years’ experience and felt it was time to do another serious spa hotel. Alexander House fitted the bill and, despite having just 15 bedrooms, we knew the extensive estate could lend itself perfectly to further developments. The first few years were spent modernising and upgrading the hotel and building new rooms. Once permission for the 20,000 square foot spa was granted, we then proceeded to build our subterranean spa with outdoor hot tub, alongside 19 new bedrooms, Reflections restaurant and courtyard and our Shelley and Wakehurst conference and banqueting suites. Speaking of the spa, the design and style is particularly unique. What inspired this concept? Deborah: I’m not a fan of spas surrounded by glass. The way steam and humidity sticks to glass can be rather unsightly and when it’s dark and gloomy outside, it’s nice to be cocooned in a space that’s consistently warm and welcoming. This is why our spa was built without windows. The idea for the pool stemmed from the concept of a basement monastery. It may sound strange, but I imagined monks relaxing in a zone of tranquillity and from this came the vision for arches and pillars. There’s also a special staircase hand painted on one of the walls surrounding the main pool; if you look closely, you’ll see a black cat perched happily on the stairs. We wanted to make Alexander House different from Rowhill Grange, which is themed around a Roman spa in a Tuscan countryside.

Within all your properties, you have personally designed every room, suite and public area. Where does your inspiration come from and how important is the design to your guests? Deborah: Inspiration comes from bright colours and cheery fabrics. There’s nothing nicer than walking into a room and relaxing into an atmosphere that’s positively welcoming. This is what Peter and I expect from our own home and we believe it’s important to give this warmth back to our guests. When it comes to the actual design, I often start by choosing wallpaper I like, then blending this with complementary tones and textures. My taste is quite eclectic and I do like to be a bit daring.

Peter: While we use design to complement the room style, we’re sticklers for comfort and only use Vi-Spring beds, which, in our opinion, are one of the best quality beds you can buy, plus they’re handmade in Britain. Bathrooms are also incredibly important and have oversized baths, separate showers and double basins wherever possible. When it came to the design of your 19 brand new suites at Alexander House, were you influenced or inspired by a particular designer? Deborah: I like lots of designers. Although, I will share a little secret… When I came across Bob Crooks Glass, one of Britain’s most highly recognised, leading glassmakers, he made a few specific pieces for our new suites, which I fell in love with. The colours were so fresh and vibrant that I went on to source linen, wool and other fabrics that would complement the fabulous glass. Wherever my inspiration comes from, I also understand that it has to be both practical and comfortable for our guests and do try to be seasonal. In the last 21 years, you have developed 99 bedrooms, 19 high-end luxury suites, two award-winning spas, five restaurants, a conference centre and 18 meeting spaces across 138 acres of land. What does the future hold for you? Are there any more exciting developments in the pipeline? Peter: As the size of our properties grow, refurbishment becomes a bigger task. With almost 120 bedrooms, we know it’s vitally important to remain hands on and to continually reinvest not only in our rooms, but also in our services and staff. However, we would never say never… Any final thoughts? Deborah: As much as we’re proud of our achievements, the most important element of our business is our staff; you’re only as good as your team and we’re genuinely thankful to work with such a wonderful group of individuals who feel the same way about the brand as we do! So, our final comment would be to the 370 people we employ; from Peter and Deborah, we would just like to say, “Thank you.”

ith a history dating back to the 17th century, Alexander House is a gorgeous five-star boutique hotel set in 120 acres of grounds at the heart of the Sussex countryside. The suites themselves are generously spacious and finished to perfection. Each Garden and Garden Deluxe suite averages up to 57 square metres and provides guests with a comfortable sofa and dining area. The abundance of leg room extends even further, with most suites offering a private balcony or garden terrace. The interiors, meanwhile, are vibrant, stylish and designed to offer homely warmth and a wonderful night’s rest. Extravagant touches are evident throughout, so expect a giant bathroom with a two-person bathtub, his and her vanity units, bespoke furniture, air conditioning and, of course, an ultra-comfortable bed. Following the philosophy that people can spend more hours in bed than anywhere else, rooms are designed to cocoon you in comfort, as the superior handmade VI-Spring beds are finished with a deluxe mulberry silk filled duvet and super sumptuous pillows. Elsewhere, the Duplex Garden Master Suite is set behind floor to ceiling windows and formed with a large open plan lounge and dining area, cloakroom and private terrace. The suite is approximately 100 square metres, with the upper floor bedroom presenting a large emperor bed and en suite bathroom with an oversized bathtub and separate rain shower.

It has been a labour of love and a momentous addition to their business, enhancing the venue as a whole and bringing a new level of sophistication to the site. To bring this dream vision to life, we’ve worked with some of the industry’s leading suppliers, who have brought unique flair to the development’s design and construction. Built to the highest specifications, the suites’ clear glass balconies, where visitors can enjoy captivating garden views, were supplied by Balcony Systems. Guests in eight suites on the upper floor of the two-storey accommodation can relax in a private, secluded space, enclosed using the Balcony 2 System with aerofoil-shaped handrails in a silver anodised finish. Balcony also supplied two Juliet balconies, each measuring 1.5 metres wide, for two French doors opening off the bedroom of the notable Deluxe Garden Suite. “We are impressed with the quality and robustness of Balcony’s products and how the clean lines of the balustrading complement the contemporary exterior of the new suites,”

comment the hotel’s owners, Peter and Deborah Hinchcliffe, who were delighted with the quality of Balcony’s products and how they enhance the suites’ appearance and experience for customers. “We wanted to keep clear views to the outside, while maintaining plenty of light inside and we feel the balconies and Juliets certainly achieve this.” In a number of our elegant en suite bathrooms, surface specialists Max-Top have installed their striking Quartz surfaces. The recently launched modular quartz product features a patented interior honeycomb structure, making it incredibly lightweight and offering the aesthetic benefits of a solid stone surface, but with the advantage of a deeper 40mm profile. “We have been really impressed with MaxTop Quartz,” continues Peter. “Installation was incredibly simple and the tops have created a luxurious look and feel, which is really important to us. Max-Top Quartz really is unique, combining the beauty of natural stone with engineered enhancements to deliver a revolutionary product.” Further suppliers that have contributed to the overall look at Cedar Lodge include Waterfront Designer Bathrooms, who installed the taps and glass bowls, as well as Mandarin Stone, who provided the venue’s natural stone tiles and flooring, both inside and out. Additionally, Canal Engineering were responsible for the reception’s staircases, while Bob Crooks Glass was employed to create the eye-catching glass features. Peter and Deborah, who have personally managed and styled each of the new rooms, are immeasurably pleased with the results. It has been a labour of love and a momentous addition to their business, enhancing the venue as a whole and bringing a new level of sophistication to the site. “Although we are constantly refurbishing and updating the hotel on a regular basis, the new suites have been quite a project,” explains Peter. “Like all important developments, there have been highs and lows, but seeing the finished piece, both Deborah and I are honestly thrilled. Thousands of us fall at the first hurdle and some of the reason is our obsession with the scales, which we jump on every morning to see the slightest change. When we don’t see that change is when we give up, so my advice is to make a change to your scales and buy a set of composition monitors. Obesity is currently defined as someone having a Body Mass Index (BMI) of 30 or more. However, both BMI calculations and weight scales can be misleading when assessing health and fitness levels. The good news is that body composition monitors don’t just measure BMI and weight, they also categorise weight into body fat mass, fat-free mass and total body water – all in a matter

of seconds. I believe that categorising weight into fat mass, muscle and water provides a better picture of health than weight or BMI alone. This information can add a new dimension to your weight management or overall exercise programme. If you want to achieve long-lasting, healthy weight loss, you need to make sure you lose actual fat and not lean muscle tissue or water. Be realistic and be good to yourself – by working on your body composition rather than focusing on your weight, you will find it easier to make the changes necessary to see a long-term improvement. Aim for a loss of no more than 1-2% of your total body fat per month – this will require gradual changes to your diet and lifestyle rather than drastic action, misery and deprivation. Slowly increase the amount of exercise as you progress and make small changes to your diet; you’ll soon adapt to this new, healthy lifestyle and will find it easy to stick to it.

Remember, fat is essential to life – we all need it to remain healthy. Without fat, our bodies would not be able to perform basic functions, such as regulating body temperature, storing vitamins and cushioning the joints and organs. Don’t forget that when you begin a new exercise routine – particularly if it includes resistance training – your weight may increase slightly. This is because the new muscle tissue you are building is denser than fat, so this will show in changes to your body composition as your muscle mass increases and your body fat percentage goes down. Increasing lean muscle tissue will give you a better, leaner shape and you’ll feel healthier, happier and more confident as a result.

Getting the right picture is essential when capturing the magic of our hotels. If you’re a budding snapper looking for some top tips on how to get the most out of your shots, our professional photographers can help, as we step behind the lens and find out what makes a picture-perfect photo

s a phrase, ‘pretty as a picture’ sounds effortless and simple, but there is much more to capturing that truly perfect photograph than most would imagine. Understanding that good photography is the window into Alexander Hotels, we go to painstaking efforts to make sure our images are a true interpretation of the quality offered by our hotels, restaurants and spas. Finding a good photographer wasn’t an easy task, but for the past six years, we’ve been working with Green Imaging Ltd and believe that MD Dave Green and assistant Gary Noake are certainly among the best in the business. The dream team of two are dedicated to producing shots worthy of awards, and to give an interesting insight into taking the perfect pic, we asked Dave for a few of his top tips for us non-professionals…

LIGHTS

Correctly lighting a room plays a major role in creating a great hotel shot, but before we begin, I look for natural chinks of light and analyse how I can reinterpret the natural colours and beauty of what your eye sees, as this does not often come through on an unlit shot.

Lighting Tip One

We tend to use anywhere up to 12 lights for a small room shot, but in order to maximise textures, fabrics and colours, we recommend trying to light the subject or object from behind and add a small amount of light from the front to fill the shadows.

Lighting Tip Two

Natural light from a window can be quite harsh, so think of something that can soften it. We use specialist screens, but you could use a

voile or net curtain to diffuse unforgiving light.

CAMERA

Our equipment is key to creating great images and for each shoot we go fully prepared. The scale of equipment can appear daunting, as we always arrive with two cameras, two tripods, three cases of lights and up to the minute laptop and software, as well as a myriad of professional diffusers and reflectors. Behind the camera, we have over 20 years’ experience and are always evolving our style to stay at the leading edge of how to maximise the potential of a great photo.

Camera Tip One

Although our camera equipment is top of the range, it’s not necessary to spend thousands to create great pictures. If you are using your phone, for example, just simplify what you see in terms of shapes that appear within the shot and look for details that make a room interesting and colours stand out.

great. A good place for a beginner to start with this is to set up a tripod and experiment with long exposures to see how the ambient light looks and how it differs from what your eye actually sees.

Action Tip Two

A good understanding of shutter speed and aperture are a huge part of shooting successful images; don’t be afraid to experiment with the manual controls of your camera. Showing action or movement will require longer shutter speeds. Use the viewing screen on your camera to see how to balance the exposure between longer and shorter exposure with a bigger or smaller aperture, and what effect they achieve if the camera or subject is moving. Camera Tip Two

If you are buying an expensive camera, think also about the lenses. One of the first rules I learned was that a camera is only as good as the glass you attach to it. Expect to pay as much per lens as the camera body itself – sometimes a lot more!

he main entrance driveway to Alexander House is lined with rhododendron arboretum, which carry trusses of tubular shaped, sugar-pink flowers in early spring. This is quite a prominent sight all over the estate, as you’ll notice when you drive on up; combined with azalea pentanthea, it adds plenty of colour in springtime. Some of the trees you can expect to find on the south facing gardens and lawns include cupressocyparis leylandii (one of which was planted by the Queen Mother last century) and monkey puzzle, which takes centre stage in the middle of the well maintained and stripy south lawn. This tree is around 250 years old and easily recognisable, with its triangular, stiff, dark evergreen leaves, terminating into sharp points. Standing around 100ft tall, the monkey puzzle has a greyish, slightly wrinkled bark, making it the focal point of the south lawn. Common oak, cedar, horse chestnut, ewe and pine trees can also be found throughout the gardens and trekking trails. Magnolia grandiflora line the walls of the old house by the south terrace with their glossy green leaves and large, white, saucer shaped flowers, creating a lovely backdrop in summer and early autumn. Box hedging and topiary also feature in this area. From the south lawn, you can access the sunken garden via the steps opposite the south door or the gravel pathways. In this area, expect to

find forsythia ‘intermedia Lynwood’, which produces deep yellow flowers in early spring, coupled with rubus odoratus (flowering raspberry) and more rhododendron, creating a swarm of colour in the springtime. In the summer, the herbaceous border adds a vivid orange, while buddleia, Alexander roses and red robin shrubs – with their distinctive red and green, glossy leaves – also provide an abundance of colour. Walking on through the sunken garden, you’ll come across the woodland walk, in which lies holly, ewe, oak and beach. These create a canopy overhead, with daffodils and bluebells throughout in the spring, leading to two sets of rustic sandstone steps, which were built with the original old part of the hotel back in the 17th century. These take you back up towards the hotel and wedding terrace. Leading you towards the hot tub in the spa garden are two rows of Italian cypress trees, which also feature alongside the gym windows. Set to a backdrop of laurels on either side of a water feature, the herbaceous borders contain, among others, hydrangea ‘macrophylla’, buddleia alternifolia, red robin and viburnum plicatum, with box hedging lining the path towards the water feature at the bottom of the garden. Spend an afternoon exploring 120 acres of Sussex countryside by taking a walk along the hotel trekking trails, with various wildlife, trees typical of the area, lakes and bridges. And with linkups to the public footpaths, there’s plenty to keep you entertained.

A TASTE of HISTORY At Langshott Manor in Surrey, we’ve been rolling our sleeves up and making the most of the region’s produce by ‘growing our own’. HOW DOES YOUR GARDEN GROW?

Here’s our top 10 easy to grow vegetable seeds and plants for beginners TOMATOES Tomato plants are so quick that you can almost watch them grow, so they’re the ideal easy vegetable for kids. Choose a bush variety like ‘Cherry Cascade’, which can be planted in hanging baskets and window boxes.

Do you dream of harvesting your own home-grown vegetables, but just don’t know where to start? From pots to plots, there are vegetables to suit gardens of every size, meaning growing your own needn’t be complicated. SALAD LEAVES Crunchy, fresh leaves with a fantastic range of textures and flavours. Try sowing easy Salad ‘Speedy Mix’ throughout the summer months, and you’ll be cutting fresh leaves for your sandwiches just three weeks later! Better still, they’ll continue growing, so you can harvest them again and again.

BEETROOT For an easy to grow root vegetable, try beetroot. Often used in salads, it’s equally tasty eaten warm and freshly boiled as a vegetable. Beetroot can be sown directly into moist ground from March to July. As they grow, thin the seedlings to about 5cm apart. From May to September, you can look forward to harvesting your own colourful, succulent beetroot.

SPRING ONIONS AND RADISHES They’re easy vegetables to grow in pots, or you can sow them directly into the ground throughout the summer for a succession of crunchy, colorful crops. POTATOES A really fun crop to grow! Plant potatoes during late February and March in potato bags that are only part filled with compost. When the green shoots begin to appear above the soil, simply cover them with more compost. PEAS Here’s a trouble-free crop that enjoys cooler weather. Sow them directly into the ground from March to June and look forward to the incredibly sweet flavour of fresh picked peas from June to August. All they require is support for their stems – simply erect some chicken wire or netting between supports at each end of the row. MINT If you’re growing potatoes and peas, you might as well grow the garnish too! Mint is so vigorous that it will grow on almost any moist soil, so it’s best to keep it in a pot to stop it spreading too far. BROAD BEANS What could be simpler? Sow broad beans in spring in small 7.5cm (3”) pots of compost, and within a few weeks these quick growers will make sturdy plants that can be planted out in the garden. If that sounds like too much work, sow them directly in the ground. Watch the bees pollinate their pretty flowers and, before you know it, you’ll be harvesting a bumper crop of freshly picked beans from June onwards, with a flavour that puts supermarkets to shame. RUNNER BEANS Almost as simple as broad beans and you can sow them in the same way. Runner beans are climbers, so give them plenty of space and train them onto wires or a plant support frame. Keep them well watered and they’ll reward you with a constant supply in summer. ONIONS AND GARLIC These crops are virtually maintenance free and really are such easy vegetables to grow! Simply plant onion bulbs and individual garlic cloves on well-drained soil in spring or autumn – then leave them to it!

For a number of foodies, June to August is the time to shake things up with a much needed change of scenery. As alfresco dining puts a refreshing spin on breakfast, lunch and dinner, it’s the perfect excuse to immerse yourself in some continental flavour without having to leave the country

verybody knows that we Brits like to have a good whinge about the weather. n her latest film, Wild, Reese Witherspoon tells the true story of Cheryl Strayed, a woman who lost her way after her mother’s death, until she sought to find her path again by walking 1,100 miles of America’s West Coast on the Pacific Crest Trail. Witherspoon, the larger-than-life petite blonde who came to prominence as Hollywood’s southern belle, starring in films like Election, 2001’s Legally Blonde and Sweet Home Alabama, believes her fans won’t be shocked by some of Wild’s comparably adult themes. “I think my audience has grown up too, and the women who saw me in Election or Legally Blonde aren’t 20 years old anymore, they’re 35. They have kids and real-life experiences,” says the 38-year-old, who was born in New Orleans and raised in Nashville, Tennessee. “I’ve evolved as a human being, and also as an actor. You take chances, and you never know whether audiences are going to accept you or laugh in your face. I’ve been really touched that people have been so receptive to me doing something different.” The role saw her pick up a Golden Globe, Oscar and BAFTA nomination (though she lost out on all three to Julianne Moore for her performance in Still Alice), but the actress – who won an Oscar in 2006 for her performance as June Carter in Walk the Line, the film based on the life of country music legend, Johnny Cash – admits she recently had to have a conversation with her 15-year-old daughter, Ava, about the more controversial scenes. “I had to explain it to her, because people are starting to talk,” says Witherspoon, who also has son, Deacon, 11, from her previous marriage to actor Ryan Phillippe, and two-year-old Tennessee with her second husband, talent agent, Jim Toth.

“I said, ‘Ava, I’ve got to tell you something... I’m naked in the movie!’” reveals Witherspoon, laughing. “She was like, ‘Mum, that’s so weird!’ And I said, ‘I had to be brave, and couldn’t just tell the parts I was comfortable with, because Cheryl was brave enough to tell her whole story, so I had to tell the parts that I was scared to do’. But she’s very proud of me.” Strayed turned her experience of tackling the unforgiving three-month trek into a bestselling memoir, which was published in 2012. Nick Hornby, who adapted the book for the screen, has since said that her whole life story, from her difficult childhood to the fallout following her mother’s death, would make a compelling movie in itself. But it was Strayed’s determination to turn her life around that most touched Witherspoon when she read an early manuscript. “It was one of the most profound books I’d ever read in dealing with loss and grief, and the idea that no one’s coming to save you in your life – you have to save yourself,” explains the actress, who was arrested in 2013 for disorderly conduct when she and Toth were pulled over by a police officer (she later admitted she’d had “one drink too many”). As soon as she’d finished the book, Witherspoon – who’d recently launched the production company Pacific Standard with producer Bruna Papandrea – called Strayed with the hope of making a movie about her story. “I found her to be every bit the spiritual and emotional person that you’d expect. She’s no nonsense […] and just tells it like it is – the same things people really responded to in her book.” Herself included. There have been times “when I laid on my kitchen floor and cried a lot”, Witherspoon confesses.

“And then I think you get to a certain point and go, ‘I don’t want to feel like this anymore’. Feeling weak is human, and you can’t apologise for being human. We all feel weak sometimes, and sad and distraught and lost”. She insists she didn’t embark on the project with the intention of playing the lead role – “but then Cheryl said, ‘I really want you to play me”. “I didn’t know if I was capable of it,” the actress admits. “I was terrified of this movie

I tried everything to get out of it, but Jean-Marc [Vallée, the director, who also helmed last year’s Oscar-winning Dallas Buyers Club] and Bruna [Papandrea] wouldn’t let me.” Although she considers herself ‘outdoorsy’, nothing could prepare her for the physical challenges of the shoot. “There was climbing up the side of a mountain and balancing on river crossings, and marching through chest-deep snow and falling into a freezing river… I had no idea it was going to be as hard as it truly was. “But the whole point is, Cheryl didn’t know what she was doing, so Jean-Marc really didn’t want me to be prepared, or go hiking or be in good shape,” she adds. “And he never let me see the tent beforehand. I couldn’t work it out. He must’ve filmed me for two or three hours, so when you see me swearing, that was for real!” Then there was the “monster” rucksack that Strayed, in her naivety, had set out with. “The boots and backpack became a part of me,” Witherspoon notes. “Sometimes the prop master would have to say, ‘You can

take it off’. But as Cheryl says in her book, there’s something amazing about realising that everything you really need in life, you can carry on your back. It is so liberating, a beautiful idea.” The star, who was also seen earlier this year in the crime-thriller, Inherent Vice, with Joaquin Phoenix, and will soon be gracing the big screen with The Good Lie, about a woman who helps Sudanese refugees, hails Strayed as a true inspiration. “She could have made other choices […]. But she decides not to. She pulls herself out, and that is incredibly inspiring for anyone who is struggling with their life in any kind of way. “So many people feel they are alone and have no one to help them,” Witherspoon adds. “This story gives voice to the idea that you can save yourself, and that’s a really powerful thing.” Wild will be released on DVD and Blu-Ray on May 25. The Good Lie is due out in cinemas on April 10.

nlike your typical classroom environment, The Edge Hotel School, part of the University of Essex, is the first hotel school of its kind in the UK. Students enrol for a unique learning experience that combines study with practice in a real-life working four-star country house hotel. To achieve a degree in Hotel Management, students work alongside hospitality professionals in all areas of the business. From housekeeping to reception, kitchen to management, the school paves the way for students to complete their two-year intensive course and enter into the world of hospitality as a fully prepared and highly skilled industry leader. As part of the course, students are required to step outside Edge School and obtain 18 months’ work experience in an environment that will propel their hands-on experience and put their new skills into practice. Student Katherine Norman (pictured right) is one of the first pupils to enrol in the school and, to maximise her potential, she approached Rowhill Grange Hotel as her chosen workplace. “I wanted to work for a hotel that could offer me invaluable experience across a variety of departments and with rooms, conferencing and wedding facilities, restaurants and a busy spa; I knew Rowhill Grange was the perfect fit,” explains Katherine. “I was also eager to work with a venue that would openly support my development, and the team at Rowhill Grange have been fantastic! I have already experienced front of house and you will currently find me welcoming guests at spa reception.” Theory in a practical environment is a unique opportunity for students like Katherine to get out of the classroom and into a real-life industry environment that is interchangeable and challenging. When approached about the nonconventional placement, Hotel General Manager James Perry recognised the potential in the bright young student and agreed to create a role that would offer the training required to progress her skills. “When Kathrine contacted me to discuss an 18-month employment contract, I was already aware of the school and was intrigued to learn more about the course that gives students real experience dipping in and out of departments and expanding their skills while still at university,” says James. “As an independently owned hotel business, we follow the ethos that our people are our stars, and are therefore committed to supporting select initiatives such as Kent Young Chefs and the Rosemary Shrager Cookery School Apprentice Programme. “By helping to support eager individuals in their growth and development, we nurture a team who are truly passionate about our business. Pimm’s and Strawberries The inspiration behind such a fabulously fresh summer dish is the love of Pimm’s! Pimm’s represents everything we enjoy about the warmer weather, including alfresco dining, Wimbledon and spending afternoons in the park with friends and family. Serves four Preparation time: Up to two days

Pimm’s Jelly Ingredients

750ml lemonade 250ml Pimm’s 9 leaves gelatine, soaked in water until soft

Directions

1. Line a very flat half gastronome tray with cling film, making sure to remove all the air pockets 2. Mix the lemonade and Pimm’s in a jug before pouring a little in a pan. Add the gelatine and heat until dissolved 3. Cool before adding the rest of the Pimm’s and lemonade mixture, so as not to lose the fizz 4. Once mixed together, pour into the half gastronome, place in a flat position and allow to set 5. Once set, cut into strips 10cm in length, ½cm in width

Strawberry Meringue Ingredients

20g freeze-dried strawberries 60g egg whites 125g caster sugar

Directions

1. Grind the dried strawberries to a powder using a pestle and mortar

2. Whisk the egg whites to stiff peaks and slowly add the sugar until incorporated 3. Fold in the strawberry powder and pipe very small peaks onto a silicon mat 4. Place in a drying oven for 12 hours until dry

Ingredients

Summer wouldn’t be summer without a refreshing cocktail to enjoy alongside your dish

Directions

Serves one Preparation time: Five minutes

2 bunches mint 150ml rapeseed oil 4 drops mint essence

Strawberry Sorbet Ingredients

500ml strawberry purée 300ml stock syrup 1 squeeze lemon juice

Directions

Mix everything together and churn in an ice cream machine until set

1. Blanch the mint in boiling water for two to three minutes and place in a thermo mixer with the rapeseed oil. Blend for one minute on high, then mix on 60°C for 12 minutes. 2. Pass through a sieve and chill 3. Dot the essence around the plate for a decorative finish

To serve

Cut out the jelly and place under the strawberry meringue on the plate, then place English strawberries, mint leaves and apple blossom as per image. Add the cucumber in marinade and place a few drops of mint oil around the plate. Finish with the strawberry sorbet

1. Bring everything to the boil, allow to infuse for 10 minutes, pass through a sieve and chill 2. Marinate cucumber strips for one and a half minutes just before serving

Watermelon-Mint Margaritas Serves 5 Ingredients 4 cups watermelon, seeded and chopped Fresh lime juice Sugar ½ cup tequila* ¼ cup sugar 1tbsp grated lime rind ¼ cup fresh lime juice (about 3 limes) 2 tbsp fresh mint leaves, chopped Garnish: fresh mint sprig

Directions 1. Place the watermelon in a single layer on a baking sheet. Freeze for four hours or until firm 2. Coat the rims of five cocktail glasses with the lime juice; dip in the sugar 3. Process the frozen watermelon, tequila and next four ingredients in a blender until slushy. Pour into the glasses. Garnish if desired *½ cup orange or apple juice may be substituted for tequila

Ingredients 1 cup vanilla flavour syrup 2 oranges (about 6oz each), thinly sliced 1 lime, thinly sliced 1 cup orange juice 2 bottles (750ml each) dry red wine Ice cubes

Directions 1. Bring the water and sugar to the boil in a medium sized saucepan. Boil, stirring often, until the sugar dissolves. Remove from the heat, add the mint sprigs and let stand for two hours or until the mixture is completely cool 2. Pour the mixture through a wire-mesh strainer into a pitcher, discarding the mint. Stir in the lemon-lime soft drink, lime juice and tequila. Serve over the ice and garnish if desired

Directions 1. In a pitcher, combine the syrup, orange slices, lime slices and orange juice 2. Add the wine to the pitcher, mix and pour into 10 ice-filled glasses

In the 1970s and moving into the 1980s, they tended to focus around a fly-and-flop beach getaway to recharge and indulge one another after all the excitement and stress of a wedding. Today, couples tying the know are slightly older and increasingly well-travelled, meaning the stakes are higher when it comes to this special getaway, which marks a new phase of life. At Kuoni, the average spend on a honeymoon is at an all-time high of £5,743 per booking, slightly higher than the national average of £3,111 per booking*; that’s up from £4,548 five years ago. “Couples are looking for the ‘wow’ factor, more inspiration and greater interaction with their locale in an authentic, non-touristy way,” says Kuoni UK Managing Director, Derek Jones. “Their expectations for food, décor, spas, activities and excursions are all higher than ever before. There is now far more choice when it comes to combining adventure with luxury and more resorts put the emphasis on bespoke experiences, which are also very romantic.”

The lure of a private-island beach escape still dominates and resorts in the Maldives have risen to the challenge with innovative accommodation, memorable romantic experiences and excellent all-inclusive dining options. At just a year old, the small and intimate island resort of Kandolhu is proving very popular for honeymooners.
