PASSÉ, PRÉSENT ET FUTUR PAST, PRESENT AND FUTURE The year 2015 will go down in history. La Palme d’Or was inaugurated in 1985 and will be celebrating its 30th anniversary this year. The hotel’s double Michelin-starred restaurant (the only one in Cannes) has spent three decades putting smiles on the faces of foodies.

Christian Sinicropi, the Executive Chef, is an exceptional director with an artistic streak, and always knows how to make the best of the finest produce.

Autumn 2015 will see the launch of major work to renovate Grand Hyatt Cannes Hotel Martinez. The New York based design house Georges Wong Design has been chosen to make the space as beautiful as possible, while keeping its Art Deco spirit. The revamp will bring the hotel exquisitely into the third millennium.

Against the backdrop of Cannes and La Croisette, the hotel is surrounded by beauty. Both tourists and celebrities flock to the town for conferences, festivals and the summer season every year. It’s not unusual for sightseers to bump into the biggest names in cinema, real estate, publicity and fashion while on holiday.

Inaugurée en 1985, La Palme d’Or a fêté cette année ses trois décennies. Trente ans que le restaurant doublement étoilé de l’hôtel (le seul à Cannes) fait le bonheur des gourmets et des gourmands. Christian Sinicropi, le chef exécutif, est un merveilleux metteur en scène, doublé d’un artiste sachant tirer le meilleur des meilleurs produits.

C’est aussi en 2015, et plus précisément à l’automne, que débutent d’importants travaux de rénovation au Grand Hyatt Cannes Hôtel Martinez. C’est le cabinet d’architectes New Yorkais, George Wong Design, qui a été choisi pour embellir les lieux tout en y préservant l’esprit Art déco. Ce chantier de grande ampleur fera entrer l’établissement dans le IIIe millénaire de la plus belle des façons...

annes est sa deuxième maison. Pendant le Festival du film, de la montée des marches à la Palme d’or en passant par son magasin, Chopard est chez lui sur la Croisette ! Entre le plus grand festival de cinéma du monde et la prestigieuse marque de haute joaillerie et horlogerie, les affinités électives, en effet, ne manquent pas à l’appel du glamour, de l’éclat et de l’art d’être unique. À commencer par la Palme d’or, la distinction suprême de la manifestation cannoise, réalisée dans les ateliers Chopard depuis 1998. L’an dernier, celle-ci était ciselée pour la toute première fois en or « fairmined », label garantissant une extraction du précieux minerai respectueuse des hommes chargés de ce travail et de l’environnement. Ici, à l’œuvre, toute l’éthique écoresponsable développée par Chopard, pour faire scintiller sous son nom un prisme du luxe aussi magique qu’éclairé par un engagement total en faveur de la préservation de la planète. C’est en 2013, lors du 66e Festival de Cannes, que l’horloger-joaillier a décidé d’intégrer cette approche dans ses codes maison, à travers « The Journey to Sustainable Luxury ».Un projet initié par Caroline Scheufele, coprésidente et directrice artistique de Chopard, avec Livia Firth, l’épouse de l’acteur oscarisé Colin Firth et fondatrice d’Eco-Age, un site web où l’équation luxe et défense de l’environnement est à l’honneur.

Cannes is its second home. Chopard is in its element on La Croisette, from the opening moments of the Film Festival to the Palme d’or award ceremony, not to mention in its own store! For there is a true affinity between the world’s greatest film festival and this prestigious brand of fine jewellery and watches, in which glamour, vibrancy and the art of being unique play a large part. This is reflected firstly in the Palme d’or, the supreme accolade of the Cannes Festival, which has been crafted in Chopard’s workshops since 1998. Last year, for the very first time, it was made from fairmined gold (certification that this precious mineral respects environmental sustainability and fair trade standards).

Chopard’s eco-responsible ethos is employed to create dazzling and magical luxury, illuminated by a total commitment to preserving the planet. It was in 2013, during the 66th Cannes Film Festival that the jeweller and watchmaker decided to include this approach in its corporate DNA through The Journey to Sustainable Luxury.The project was driven by Caroline Scheufele, Chopard’s Vice President and Artistic Director, with Livia Firth, wife of award-winning actor Colin Firth and founder of Eco Age, a website combining luxury and protection of the environment.

Green Carpet, Red Carpet

Outre une Palme d’or répondant désormais à des critères de développement durable, Chopard a également concrétisé ce projet par la création, dès 2013, de bijoux équitables, dans le sillage d’une ligne de haute joaillerie baptisée Green Carpet. Déclinée cette année en quatre nouveaux modèles exclusifs (montre, bague, pendentif et boucles d’oreilles), les motifs de cette collection « capsule » sont inspirés par les volutes de la Palme d’or, ses folioles et sa tige qui se finit en forme de cœur. Une nouvelle illustration des liens qui unissent Chopard et le Festival de Cannes et, grâce à ce clin d’œil, l’occasion de célébrer cette année le 60e anniversaire de la première remise d’une Palme (car le Festival à ses débuts attribuait un Grand Prix aux cinéastes récompensés). La collection Green Carpet s’inscrit dans le prolongement d’une autre collection Chopard emblématique, Red Carpet, elle aussi dédiée à l’univers du cinéma et à la beauté des actrices. In addition to a Palme d’or which now represents the values of sustainable development, Chopard has also implemented the project by designing sustainable jewellery for a fine jewellery collection named Green Carpet. Extended this year with four new exclusive models (watch, ring, pendant and earrings), the designs of this capsule collection are inspired by the curves of the Palme d’or and its fronds and stem with a heartshaped base. This further example of the bond between Chopard and the Cannes Film Festival also offers an opportunity to celebrate the 60th anniversary of the first Palme d’or award (a Grand Prix being awarded to winners for the first years of the Festival). The Green Carpet collection is an extension of another emblematic Chopard collection, Red Carpet, which is also dedicated to the world of cinema and the beauty of its actresses. A master of colour and volume

This precious, creative combination was reflected in the most aesthetically premium jewellery crafted using the most incredible gemstones: black diamonds. This movement gave way to the series of milky white Ice Diamonds. The jewellery house reinforced its identity by flitting between models, refining its image as master of colour and volume, inventing incredible creations thanks to the expertise of its artisan jewellers, and drawing on the noblest of traditions and an innovative mindset. The jeweller then added audacity into the mix, with elegant classicism in stunning combinations of shapes, contours and precious materials, exalted by Gruosi’s quest for perfection as he forged the brand’s peerless character.

Christian Willer a, depuis, passé le relais à Christian Sinicropi, le cannois. En trente ans, La Palme d’Or a surfé sur la vague d’un succès jamais démenti. ZPLAGE, “NIGHT AND DAY”

n 2014, elle fêtait ses dix ans avec un enthousiasme communicatif. En route vers sa deuxième décennie, la Zplage revient, comme chaque printemps, sur le devant de la scène. L’espace de quelques mois, ce rendez-vous les pieds dans l’eau vit «night and day». Pendant la journée, place au farniente, face à la Grande Bleue. Au menu, transats, baignades et réjouissances culinaires au restaurant (saveurs du monde, BBQ grill, four tandoori). Durant les mois de juillet et d’août, le restaurant Zplage est également ouvert tous les soirs. DJ Maggy Smiss s’installe de nouveau aux platines dès 18 h, distillant son répertoire pop et électro funk. August 1944, the liberation of Cannes. The general staff of the US army set up base in the Hotel Martinez. Memories of a bygone time…

C

ette année-là, il y eut d’abord le débarquement de Normandie, le 6 juin. Un peu plus de deux mois plus tard, le 15 août très précisément, les GI’s arrivaient en Provence. La Côte d’Azur allait résonner de conversations dans la langue de Shakespeare et les rues de Cannes accueillir les libérateurs comme de véritables héros. L’étatmajor américain investit alors l’Hôtel Martinez. Avant la guerre déjà, l’adresse faisait rêver et attirait le gratin d’outre-Atlantique. Luxueux, idéalement situé sur la Croisette, face à la Méditerranée et à quelques encablures des îles de Lérins, l’établissement était devenu the place to be pour l’aristocratie et les nantis du monde entier.

Just over two months later, on 15th August to be precise, the GIs arrived in Provence. The French Riviera was to echo to the sound of conversations in English, and in the streets of Cannes locals welcomed the liberators like true heroes. The general staff of the US army moved into the Hôtel Martinez. Before the war the name already fired imaginations and attracted the élite from across the Atlantic. This luxurious hotel, ideally situated on La Croisette, looking out over the Mediterranean with the Lérins islands just a stone’s throw away, had become the place to be for the world’s aristocracy and wealthy classes.

Pendant un an, de décembre 1944 à décembre 1945, quelque 6 000 GI’s bénéficièrent d’une semaine de permission sous les cieux cléments de la Côte d’Azur. Si les militaires du rang et les sous-officiers durent se contenter d’hôtels niçois, les officiers, eux, posèrent leur sac à Cannes… et pour les plus chanceux à l’Hôtel Martinez. Sept jours salvateurs où ils purent profiter d’un confort optimum, dormir dans des lits confortables (avec des draps propres), donner leur linge à la blanchisserie et s’installer au salon de thé dansant pour une pause récréative. Le couvre-feu, établi à 2 heures du matin, leur laissait tout le loisir de dîner, d’assister à une séance de cinéma puis de finir la soirée (seul ou en bonne compagnie) dans les clubs de nuit de la ville. Après l’enfer de la guerre, cette semaine de permission avait comme un goût de paradis.

For a year between December 1944 and December 1945, some 6,000 GIs were allowed a week’s leave under the balmy Riviera skies. If the ranks and non-commissioned officers had to be content with hotels in Nice, the officers stayed in Cannes – and the luckiest of them stayed at the Hôtel Martinez. During these seven life-saving days they enjoyed maximum comfort, sleeping in comfortable beds (with clean sheets), giving their washing to the laundry and spending time in the tea dance salon for recreation.

The curfew, set for 2 a.m., left them plenty of time to dine, go to the cinema and round off the evening (alone or in good company) in the town’s nightclubs. After the hell of war, this week of leave felt like a foretaste of paradise.

В течении целой недели у них была возможность насладится комфортом отеля, спать в удобных кроватях, отдавать одежду в прачечную, посещать чайные салоны. Комендантский час начинался в 2 часа утра, оставляя им время для ужина, посещения кинотеатра или ночного клуба. После ужасов, пережитых на войне, эта неделя отпуска казалась им раем на Земле.

l paraît qu’avant de devenir l’actrice reconnue que vous êtes aujourd’hui, vous avez connu des débuts difficiles ?

dessinions, ce n’étaient pas des roses mais des scènes de guerre. Tous ses amis sont devenus mes amis.

Fatalement, je n’ai jamais connu de période « girlygirl ». Les ongles vernis et les belles robes roses à dentelles ne m’intéressaient pas.

Je me moquais éperdument de mon apparence physique. Ce n’est que vers l’âge de 20 ans que j’ai commencé à troquer mes vieux jeans et mes tee-shirts contre une jupe et un chemisier. Et mes bracelets en cuir cloutés contre des perles !

C’est vrai, j’ai vécu des périodes assez sombres. Parfois, je réussissais à décrocher un petit rôle qui me permettait de subsister. Ma vie a vraiment changé le jour où j’ai rencontré David Lynch. La suite du conte de fées, vous la connaissez, c’est « Mulholland Drive »…

Ces attentes à côté d’un téléphone muet ne sont-elles pas le lot de toutes les actrices ?

Oui, sauf que pour moi cela s’est éternisé ! J’ai quand même attendu dix ans avant qu’on ne me propose un bon script ! Je ne vous raconte pas le nombre de « fins de nonrecevoir » que j’ai essuyées. Lorsque vous débutez dans ce métier, vous idéalisez inévitablement. Vous vous dites : « Je tournerai tel rôle avec tel metteur en scène ! », et puis la réalité vous rappelle à l’ordre. En 1999, j’ai failli être expulsée de mon appartement. J’avais trois mois de loyer en retard de paiement. Quelques mois après, la chance m’a enfin sourit. Je commençais le tournage de « Mulholland Drive » sous la direction de David Lynch.

Est-il vrai que vous demandez toujours conseil à vos enfants avant de choisir une robe pour une première ou un grand événement ?

D’un côté, vous semblez très fragile, de l’autre, on sent bien qu’en vous sommeille un tempérament de feu.

Oui, parfois. Ce que j’aime chez mes enfants - et chez tous les enfants en général -, c’est qu’ils ne prennent pas de chemins détournés pour vous dire ce qu’ils pensent. Le plus jeune de mes fils est tellement honnête qu’il lui arrive de m’avouer, avant que je ne parte : « Je n’aime pas ta robe ! »

C’est assez vrai ! Ce côté force tranquille me vient de mon « background » familial. J’étais un vrai garçon manqué et avec mon frère aîné, nous jouions à G.I Joe. Lorsque nous

You’re right, there were some really dark times. I occasionally got little parts which meant I could get by, but my life really picked up when I met David Lynch. And you know how that fairy-tale ended; with “Mulholland Drive”.

But isn’t waiting for a phone call that may never come a reality for all actresses?

Yes, but it went on forever for me! I had to wait ten years before getting a good script! I can’t tell you the number of rejections I received. When you start out in this job, you inevitably idealise everything. You think “I’ll play this part with that director”, and then reality brings you back down to earth. I was almost kicked out of my apartment in 1999. I was three months late on my rent payments. A few months later I finally got my break, and started filming “Mulholland Drive”, directed by David Lynch.

You seem to have a really fragile side, but we also get the impression you have a fiery temperament!

There’s a lot of truth to that! I get this “quiet strength” from my family background. I used to be quite a tomboy and play GI Joe with my older brother.

And when we did drawings together it was never flowers, but warzones!

All of his friends became my friends, and I inevitably never had a “girly” period. Painting my nails and wearing pink dresses never interested me, and I never cared about my physical appearance. It was only when I turned 20 that I started swapping my old jeans and t-shirts for skirts and shirts, and my studded leather bracelets for pearls!

Is it true you always ask your children’s advice before choosing which dress to wear to a premiere or a big event?

Sometimes. What I love about my children, and all children in general, is that they don’t mince their words when they tell you what they think. My youngest son is so honest that he sometimes tells me “I don’t like your dress” just before I walk out the door!

You’ve been in lots of films. Now you’re an ambassador for L’Oréal Paris, in which film did you feel the most beautiful?

King Kong, without a doubt! It’s far from being the most glamourous film I’ve ever done because of a physical exertion! I’ve always loved the Roaring Twenties and Thirties.

It was an incredible era for fashion and the overall look for women.

L’Oréal has been an incredible adventure…

You’re telling me! And I just love France. I’ve always thought Parisians were the most stylish women in the world. They know how to dress, how to do their hair, how to do their makeup. It’s always tasteful, always classy.

What’s the secret behind your perfect skin?

Vous avez tourné dans de nombreux films. Aujourd’hui que vous êtes ambassadrice de L’Oréal Paris, quelle est la production dans laquelle vous vous êtes sentie la plus désirable ?

I’ve stopped asking myself “What can I do to keep my youthful looks?” Otherwise it becomes an obsession.

Instead, I now ask myself “How can I bend the rules?” I drink a lot of water and I use Revitalift to hydrate my skin. I also take vitamins with Omega and fish oil.

J’ai toujours aimé les Années folles. C’était une époque incroyable pour la mode de la beauté. C’était une époque incroyable aussi bien pour la mode en général que pour la garde-robe des femmes.

Quel est le secret de votre peau parfaite ?

Je ne me pose plus la question : « Que dois je faire pour ralentir la vieillesse ? ». Sinon, cela devient une idée fixe. La question que je me pose plutôt, c’est « Comment puis je contourner les règles ? » Pour ma part, je bois beaucoup d’eau et je m’hydrate avec Revitalift notamment. Et je prends aussi des vitamines à base d’Omega et d’huile de poisson.

There are a few things I don’t compromise with: sleep, water, moisturizer and deep cleansing.

Don’t ask him if he’s hair stylist to the stars, because of course John Nollet is the man who actresses call on to make them beautiful. But that’s not all he is – it would be to considerably diminish his talents.

ÊTRE PRÉSENT À CANNES, CHAQUE ANNÉE EN MAI, RESTE UN PLAISIR, UN HONNEUR…

a première fois que vous avez été attentif à une coiffure ?

Je devais avoir quatre ans et c’était dans l’hôtel-restaurant de mes parents. S’y déroulait un mariage, la mariée était divinement bien coiffée ; ses cheveux étaient tellement longs qu’ils lui composaient un voile. Ce fut une image marquante.

Votre vocation a-t-elle été précoce ?

Oui, à huit ans j’avais déjà pris ma décision. J’avais d’ailleurs demandé pour Noël la panoplie complète du coiffeur professionnel. Ma grand-mère me l’a offerte et, à l’intérieur, il y avait aussi un abonnement à un magazine de coiffure parisien qui m’a beaucoup inspiré.

When did you first pay attention to a hairstyle?

I must have been four years old and it was in my parent’s hotel-restaurant. A wedding party was taking place and the bride’s hair had been done superbly; her hair was so long it formed a veil. It made a very striking picture.

Quelle a été votre rencontre professionnelle déterminante ?

Cela se passait à Montpellier. J’ai rencontré Dominique Bagouet, le grand chorégraphe de danse contemporaine par l’intermédiaire de mon voisin de palier qui était danseur dans sa compagnie. Dominique Bagouet m’a proposé d’imaginer une création de coiffures pour l’un de ses ballets.

You chose your profession early on?

Puis il y eut le cinéma…

What was your most decisive professional encounter?

Yes, I’d already decided at the age of eight. I even asked for a professional hairdresser’s kit for Christmas. My grandmother gave it to me and inside there was also a subscription to a Parisian hairdressing magazine which inspired me greatly.

Oui, Montpellier a accueilli le tournage d’un film en costumes. La production avait besoin de renfort et c’est ainsi que je me suis retrouvé embarqué dans cette nouvelle aventure. Parmi les productions marquantes pour lesquelles j’ai ensuite travaillé, figurent La cité des enfants perdus de Jean-Pierre Jeunet et Marc Caro, Le fabuleux destin d’Amélie Poulain, La Fille sur le pont, Ridicule, Pirate des Caraïbes, Nine… Ou encore L’Appartement avec Monica Bellucci. C’était en 1996 et, depuis, nous travaillons ensemble, Monica et moi. J’ai créé les coiffures de son personnage dans le James Bond de Sam Mendes qui sortira en novembre prochain.

It happened in Montpellier. I met Dominique Bagouet, the great contemporary dance choreographer, through my neighbour who was a dancer in his troupe. Dominique Bagouet asked me to design a hairstyle for one of his ballets.

Then came film…

Yes, a costume drama was filmed in Montpellier. The producers needed extra help and that was how I found myself involved in a new adventure. Major productions I worked on after that include Jean-Pierre Jeunet and Marc Caro’s The City of Lost Children, Amélie, Girl on the Bridge, Ridicule, Pirates of the Caribbean, Nine and The Appartment with Monica Bellucci. That was in 1996 and since then Monica and I work together. I designed hairdos for her character in the Sam Mendes James Bond film which will be released in November.

On vous doit également une collection Couture de bijoux de cheveux. Répondelle à une demande ?

Cette collection est née parce qu’une amie résidant à Los Angeles m’avait demandé de réfléchir à une coiffure que je pourrais lui proposer… à distance. A partir de là, j’ai créé une collection d’accessoires que j’ai réalisée avec les ateliers des métiers d’art Lemarié ainsi que Lesage.

Pendant le Festival de Cannes 2015, serez-vous le coiffeur exclusif d’une star, comme il y a deux ans avec Nicole Kidman ?

Oui. Je m’occuperai exclusivement de chaque comédienne l’espace de trois jours. Je multiplierai donc les exclusivités ! Je travaille toujours en amont, je pense à des accessoires qui pourraient accompagner leur tenue. Je crée des pièces uniques pour les actrices qui font appel à moi.

Vous êtes un habitué du Festival. Y venir vous enthousiasme-t-il toujours autant ?

Bien sûr ! Etre présent à Cannes, chaque année en mai, reste un plaisir, un honneur et l’occasion de sublimer les femmes et de les mettre en lumière. Donc je ne suis nullement blasé.

On vous prête l’intention d’ouvrir une école. Info ou intox ?

You are also behind a couture collection of hair jewellery. Is there a demand for this?

This collection happened because a friend living in Los Angeles asked me to give some thought to how I could do her hair…. from a distance! That led me to design a collection of accessories which I produced with the craftsmen at Lemarié and Lesage workshops.

Je travaille en effet sur un projet d’école qui concrétisera mon envie de transmettre. Mais je suis très occupé actuellement. Je vais davantage m’atteler à ce projet dans les années qui viennent. De là à vous donner une date…

Avez-vous des projets d’ouverture de nouvelles cabines ?

Je prévois l’ouverture d’une cabine à Los Angeles en 2016.

Yes. I will devote myself exclusively to one actress for three days. So there will be more than one exclusivity! I always do a lot of preliminary work; I look for accessories which will complement their outfits. I create one-of-a-kind pieces for the actresses who call on me.

You are a regular at the Festival. Do you still find it as exciting as ever?

Of course! Being at the Cannes Film Festival in May each year is still a pleasure, an honour and an opportunity to enhance women’s beauty and make them shine. So I’m not at all blasé.

It’s said that you intend to open a training school. Fact or fiction?

Fact. I’m working on a project for a training school which will make my wish to transmit skills come true. But I’m very busy at present. I will spend more time on this project in the coming years. So we can’t really mention dates…

Do you have any projects for opening new salons?

I’m planning on opening a salon in Los Angeles in 2016.

C’est un secret de Polichinelle ! Le chef est un «art addict» qui entretient des liens privilégiés avec nombre d’artistes. Tour d’horizon de ces personnages hauts en couleurs avec lesquels la connivence coule de source.

In his life, as in his cuisine, he focuses on mixtures of ingredients and tastes to create completely new and contemporary recipes. “This pushes him to be open and curious about everything, including the world of 3D and the urban art scene. He is an artist who, like me, seeks to broaden his horizons and take on new fields of possibilities in which he harvests the art of the future.” Thus spoke…

Patrick Moya, describing Christian Sinicropi. The Cannesborn chef met the ceramicist, performer and digital artist in 2009. The two men knew it takes just one click to turn the real into the virtual, and they set sail for a virtual island in Second Life, chef’s hat in hand. Sinicropi has always been passionate about creating a gastronomic cuisine of the future. Back in the real world, Sinicropi and Moya both worked on developing new dishes, the most famous of which may well be “La Main Tendue.”

It’s hardly a secret! The chef is an art addict who enjoys close ties with a number of artists. We take a look at the flamboyant characters who share an easy complicity with the chef.

A history of meeting people

We often talk about chance meetings. Whether decided by the fates or not, Steph Cop and Sinicropi met each other in the port of Cannes on a summer’s day in 2012. Cop was exhibiting his Wooden ARO figures, while Sinicropi was discovering and admiring them. “I think we are compatible on a very human level”, says the sculptor. “We work in the same way, based on instinct and feelings. We will probably bring out more pieces following on from what we have already created together.” As for Laurent Mô, the chef first saw one of his canvases while visiting mutual friends.

Eighteen dishes later, the painter is gearing up for new artistic adventures. “There’s no pretending with Christian”, he says. “What you see is what you get, and he knows what he wants.” Mutual friends were also the reason for another chance meeting between the chef from La Palm d’Or and Scotie in 2013. The female graffiti artist seduced him (artistically speaking!), and he happened to work in a sphere she adored. Their shared passions led them to launch a project based around a new dish. According to Scotie, “Christian is unorthodox, obsessive and humanly enriching.

ans sa vie comme dans sa cuisine, il compte sur le mélange de différents ingrédients et saveurs pour créer des recettes totalement nouvelles et contemporaines, ce qui le pousse à être ouvert et curieux de tout, en particulier des univers de la 3D aussi bien que de l’art urbain. « C’est un artiste qui, comme je crois l’être, cherche à étendre son univers et à investir de nouveaux champs de possibilités, dans lesquels se récoltera l’art du futur.» Ainsi parlait… Patrick Moya de Christian Sinicropi. Le chef cannois rencontre le plasticien, performer et artiste numérique en 2009. De la réalité au virtuel il n’y a qu’un clic que les deux hommes franchiront, direction Second Life, une île virtuelle qui accueillera la cuisine et sa toque, très investie dans la création d’une gastronomie du futur. Dans la vraie vie, Christian Sinicropi et Patrick Moya œuvrent de concert à l’élaboration de plats, le plus célèbre restant peut-être « La Main Tendue ».

Une histoire de rencontres

On parle souvent de hasard des rencontres. Hasard ou pas, Steph Cop et Christian Sinicropi se retrouvent un jour de l’été 2012 sur le port de Cannes. Le premier y expose ses Wooden ARO, le second les découvre et les admire. «Je crois que nous sommes humainement compatibles» explique le sculpteur. Qui ajoute : «Nous travaillons de la même manière, au feeling. Il y aura certainement une suite à ce que nous avons déjà produit ensemble.» De Laurent Mô, le chef a d’abord vu une toile, chez des amis communs. Dix-huit assiettes plus tard, le peintre est prêt pour de nouvelles aventures artistiques. «Avec Christian», précise-t-il, «pas de faux-semblant. Il est tel qu’on le voit et il sait ce qu’il veut.»

C’est encore grâce à des amis communs que la route de Scotie croise celle du chef de La Palme d’Or, un jour de 2013.

La graffeuse le séduit (artistiquement parlant) ; lui évolue dans un univers qu’elle adore. Leur intérêt réciproque les pousse à mettre sur pied un projet d’assiette. «Il est atypique et habité, humainement enrichissant. C’est quelqu’un qui transmet.»

Meeting of artists

In 2014 Christian Sinicropi met Alëxone, a contemporary artist who had already worked on a joint-project with Steph Cop. They all set a date, and met at the Grand Hyatt Cannes Hôtel Martinez. “We dreamed up a first ceramic piece showcasing the Penguin, the artist’s emblematic character.

Applying generous brushstrokes of quick wit, Alëxone added that they were both on the same wavelength as the chef.

And for the 2015 Autumn Collection on the menu at La Palme d’Or, Sinicropi is also working hard on a project with Shaka. Watch this space…

Moya, Steph Cop, Scotie, Laurent Mô, Alëxone and Shaka are just a few unique characters led by art into the world of a Michelin-starred chef’s kitchens.

Entre artistes

En 2014, Christian Sinicropi rencontre Alëxone, artiste contemporain ayant réalisé une œuvre commune avec Steph Cop. Rendez-vous est pris pour une entrevue dans les murs du Grand Hyatt Cannes Hôtel Martinez « Nous avons imaginé un premier support en céramique mettant en scène le Pingouin, personnage emblématique de l’artiste ». Maniant l’humour comme le pinceau Alëxone n’hésite pas à dire qu’ils sont sur la même longueur d’onde avec le chef.

Et pour la Collection Automne 2015, à la carte du Restaurant La Palme d’Or, Christian Sinicropi travaille également activement sur un projet avec SHAKA. À suivre…

Мы часто говорим о случайных встречах. Совпадение или нет, но Стеф Коп и Кристиан Синикропи встретились в один прекрасный день, летом 2012 года в порту Канн. Первый проводил там свою выставку Wooden ARO, второй - восхищался его работами. «У нас один и тот же метод работы, по интуиции, говорит скульптор. - И у нашего успешно реализованного сотрудничества обязательно будет продолжение.» Все началось с того, что шеф-повар увидел у друзей картину Лорана Мо. 18-ю тарелками позже, художник готов к новым творениям. «В сотрудничестве с Кристианом не бывает притворства, - говорит он. - Он такой, какой он есть, и он знает чего хочет.» Также благодаря общим друзьями Кристиан Синикропи встретил художницу граффити Скоти в 2013 году. Их общие интересы воплощаются в новый проект атипичных тарелок.

a façade aux proportions harmonieuses affiche un air de respectabilité hérité de l’époque où ce beau bâtiment fin XIXe siècle abritait la Banque nationale d’Autriche. Un style architectural qui ne dépare pas l’environnement de ce 1er arrondissement de Vienne, quartier historique classé au patrimoine mondial de l’Unesco. L’entrée dans le majestueux lobby le confirme : les espaces du Park Hyatt Vienna sont vraiment exceptionnels. Marbre blanc veiné de gris sur les murs, somptueux parquets vernis, épais tapis… Le mobilier associe les éléments du design le plus contemporain aux codes subtils de l’Art nouveau : boiseries, sculptures, verre gravé... On ne reste pas indifférent devant une telle débauche de luxe et de raffinement. Un luxe qui sait se faire cosy du côté du bar, lequel invite à prendre un verre dans une atmosphère feutrée propice aux échanges. Spacieuses elles aussi, les 143 chambres et suites combinent une décoration contemporaine avec quelques touches très viennoises.

Elles offrent toutes de jolies vues sur la ville, plus particulièrement les studios à l’esprit romantique, nichés sous les toits. Avant de dîner au restaurant The Bank, qui sert une cuisine à base de produits régionaux, il faut trouver le temps de se détendre au Spa Arany, l’un des plus beaux espaces de soins de la ville ou faire quelques longueurs dans la piscine.

Its gracefully proportioned façade reflects an air of respectability inherited from the time when this fine late 19th century building was home to the National Bank of Austria. This architectural style is not at all out of place in Vienna’s first district, a historic quarter which is listed as a UNESCO world heritage site. Entering the majestic lobby confirms that the interior of the Park Hyatt Vienna is as exceptional as its exterior. The walls are clad in grey-veined white marble and the floors in luxurious parquet with thick carpets. The furniture is a fusion of cutting-edge contemporary design with subtle Art Nouveau themes: panelling, sculptures and engraved glass. We can’t remain indifferent faced with such an abundance of luxury and refinement! This opulence takes on a cosy mantle by the bar, beckoning the passerby to have a drink in a snug and friendly ambience. The 143 guest rooms and suites are also spacious, and combine contemporary decoration with some very traditional Viennese touches. They all offer fine views of the city, particularly the romantically-decorated studios installed on the top floor. Guests should be sure to make time to relax at the Arany Spa (one of the city’s most spacious treatment centres) or swim a few lengths in the hotel’s pool before dining at The Bank, a restaurant serving cuisine based on regional produce.

Une capitale aux deux visages

Idéalement situé non loin des boutiques de mode et de créateurs de la rue Kohlmarkt, le Park Hyatt Vienne invite à partir à la découverte des richesses de la capitale autrichienne.

Il suffit de quelques minutes à pied pour rejoindre le Ring, le fameux boulevard circulaire qui vient tout juste de fêter ses 150 ans. La création de ce grand boulevard, qui remplaçait les anciennes fortifications de la ville, restera le plus important projet urbanistique de toute l’histoire de Vienne. Un siècle et demi après son inauguration, le Ring, bordé de parcs et de jardins, demeure le meilleur exemple de la diversité architecturale de la capitale autrichienne. Aux côtés des bâtiments officiels plutôt pompeux dans l’esprit des Habsbourg, il déploie aussi nombre d’hôtels particuliers comme le palais Ephrussi. C’est également le long du Ring que l’on trouve les traditionnels cafés où il fait bon lire en dégustant une pâtisserie sous les ors des hauts plafonds : le Landtmann, le Schwarzenberg, le Prückel. Plus moderne, l’Albertina Passage illustre à merveille la dualité de l’esprit viennois. Un lieu multiple, à la fois restaurant, salle de concerts live et cocktail bar où les Djs mixent en fin de soirée. Avec ses palais, ses hauts immeubles bourgeois, ses édifices baroques et Jugendstil, Vienne a plutôt la réputation d’être une cité tournée vers le passé. Today, there is undoubtedly a fusion between baroque Vienna and the Vienna of contemporary design. ominique Vion est un homme de l’art. L’art du vin. En glissant nos pas dans les siens, on s’engage dans un formidable voyage au pays des vignes, des vignerons et de leurs précieux nectars. Tout commence à quelques encablures du Grand Hyatt Cannes Hôtel Martinez, sur l’île Saint-Honorat où des moines produisent avec un savoirfaire reconnu de divins breuvages. Un peu plus loin, à Roquebrune-sur-Argens, voici le Domaine des Planes, « un site merveilleux qui domine la baie de Fréjus et où la famille Rieder propose des vins de très bonne qualité. » Le Château de Fontblanche, à Cassis, est - paraît-il - à l’origine du vignoble provençal. Si l’on va jusqu’à Saint-Cyr-sur-Mer, il faut s’arrêter au Domaine Luc Sorin, à Bandol. « Le propriétaire est un Bourguignon, venu s’installer ici voici vingt ans. J’admire sa grande technicité et ce petit plus qu’il apporte à chacune de ses productions. » Reste l’incontournable Domaine des Terres Blanches, à Saint-Rémy-de-Provence. « Une adresse, une âme et des vins ! »

Dominique Vion is a man of art. The art of wine. We followed in his footsteps and set out on a formidable journey through lands of vineyards, wine-growers and their precious nectar. It all began a short distance from Grand Hyatt Cannes Hotel Martinez on the Île Saint-Honorat. The island is home to a community of monks who use their renowned expertise to produce exquisite tipples. A little further on, in Roquebrunesur-Argens, we found the Domaine des Planes. “This exceptional site dominates the Fréjus Bay, and is also where the Rieder family offers fine wines”, says Vion. Next we moved to the Château de Fontblanche, in Cassis, said to be the origin of the Provencal vineyards. And we couldn’t travel to Saint-Cyr-sur-Mer without stopping at the Domaine Luc Sorin, in Bandol. “The owner moved here from Burgundy some 20 years ago. The things I admire most about him are his technical skill and the little extra he adds to each production.” To round it all off we visited the Domaine des Terres Blanches, in Saint-Rémy-de-Provence, surrounded by the Alpilles Mountains. “A great location, soul, and fantastic wine!”

Then when they have received the funds in their bank account, between one and three months later with a success rate of 100%, we ask for a commission of 3-5% calculated on the total amount. It should be noted that if there is any last minute disagreement by the Bank on the terms of the agreement the contract is terminated and the fee is refunded, but if the client refuses the offer it is not.

Michael Benamou: Yes, in France and also Italy, Spain and Portugal. Our goal in France, and for the rest of the world, is to have several agencies under franchise by the end of this year.

We have also developed a branch for our investor clients: Bank Invest Solution in Asia, London and now France offers a new way of investing, governed by a profit-driven model of 8% – 15.8 % per year, but in complete safety.

Ensuite, à réception des fonds sur son compte, soit entre un et trois mois avec un taux de réussite de 100 %, nous lui demandons une commission comprise entre 3 et 5 % qui sont calculés en fonction du montant global de l’acquisition. A noter qu’en cas de désaccord de dernière minute de la Banque sur les termes de l’accord, le contrat est résilié, mais les frais sont remboursés mais si le client refuse l’offre dans ce cas ils ne le sont pas.

Vous avez aussi pour objectif de vous implanter dans toute l’Europe, dont la France…

Michael Benamou : Oui, en France, mais aussi en Italie, Espagne et au Portugal. En France, notre objectif est d’avoir plusieurs agences en franchise d’ici la fin de cette année comme dans le reste du monde. There’s no denying the Michelin-starred chef has an artistic streak. He creates a dinner for the jury of the Cannes Film Festival every year, just as a director creates a film. Each menu is dedicated to the jury president’s filmography. We talked to Christian Sinicropi about the process…

iriez-vous que la cuisine, c’est comme un film : un scénario, des acteurs, un metteur en scène et au final, un chef d’œuvre… ou pas ?

Would you say that fine cuisine is like a film, with a screenplay, actors and a director all leading up to a masterpiece?

Christian Sinicropi: Yes and no. It’s a job with a lot of emotion, but we aren’t playing a part. Our personalities always stay sincere and complete. The likeness is found in the dreams, the pleasure and the escape. I personally think there are more similarities between fine cuisine and theatre.

Christian Sinicropi : Oui et non. Nous sommes dans l’émotion mais nous ne jouons pas un rôle. Nous restons dans la sincérité et dans l’intégrité au niveau de notre personnalité. La similitude tient au rêve, au plaisir, à l’évasion. Je dirais qu’il y a davantage de points communs entre la cuisine et le théâtre.

Chaque année, au mois de mai, vous recevez les membres du jury et leur président, la veille de l’ouverture du Festival ? S’y habitue-t-on ? Quel est votre état d’esprit là, maintenant ?

CS : On ne s’habitue pas, car chaque année, le président change et tout va dépendre de sa personnalité.

L’excitation reste toujours très présente ; je crois même qu’elle augmente un peu avec le temps ! C’est un événement qui n’a lieu qu’une seule fois par an, il faut donc savoir l’apprécier à sa juste valeur.

Every year in May, you receive the jury members and their president the day before the Festival opens. Do you ever get used to it? How do you feel right now?

Cette année, le Festival compte deux présidents. Qu’est-ce que cela va changer pour vous ?

CS: We never get used to it because the president changes every year, and everything depends on their personality.

We’re always excited! I’d say it gets more intense every year actually! The event only takes place once a year, so you really need to step back and appreciate how special it is.

CS : Pas grand-chose, parce que les frères Coen sont complémentaires. Ce qui est toujours très intéressant, c’est d’étudier leur identité cinématographique, et d’en faire ressortir la substantifique moelle.

CS: I certainly remember David Lynch. He loved the foie gras with wild rocket ice cream. He even brought his teams into the kitchen to write down the recipe! Tim Burton also stood out. He was the one who thought of the idea to dedicate dishes to the jury presidents in 2010. In general I like people who have their own personal worlds. David Lynch and Tim Burton fall into that category.

CS : Je me souviens de David Lynch. Il avait adoré le foie gras à la glace à la riquette et il avait fait descendre ses équipes en cuisine pour noter la recette. Il y a eu également Tim Burton : l’idée du dîner avec les assiettes dédiées aux présidents vient de lui. C’était en 2010. D’une manière générale, j’aime les personnes qui ont un univers.

uel est le secret d’un cocktail réussi ? Un sirop + un jus de fruit + un alcool + une liqueur +… un zeste de créativité… Au Bar l’Amiral, cette formule, si elle est appliquée à la lettre, ne résume pas à elle seule le succès du lieu. Référence cannoise pour son ambiance live toute l’année, son piano-bar ou encore ses soirées très branchées « I love Food ’N Mix », avec DJ Uncle Jim’s qui crée la synergie entre la gastronomie et la mixologie, l’équipe accueille personnalités et anonymes avec le même professionnalisme et le même sens de l’hospitalité. La preuve : les habitués (célèbres ou non) ont, pour certains, une plaque gravée à leur nom sur le comptoir. David Palanque, double champion de France (son dernier titre date de 2014) se souvient de ce jeune couple qui, récemment, lui a demandé de le prendre en photo avec son bébé, lui expliquant au passage qu’il s’était rencontré à cet endroit précis, lors d’un congrès. Les anecdotes ne manquent pas et Olivier Blanchard, le chef barman, Michel Loué (champion du monde 1998), Olivier Pillon, Guillaume Cotin, Christophe Dandelot, Vongvilay Southichak, gardent en mémoire quelques beaux moments. C’est au Bar l’Amiral que Tarantino a goûté son premier Mojito ; c’est là que George Benson s’installe incognito. Là encore que l’équipe du Grand Journal de Canal Plus décompresse pendant le Festival de Cannes. « Ce qui est important, ce n’est pas seulement ce qu’il y a dans le verre, mais ce qu’il y a autour du verre », a coutume de dire Olivier Blanchard. Dans le verre, place aux créations cocktails aux noms évocateurs - chacun légendé de sa petite histoire, Martinez, Moma, Pink Floyd, Palme d’or, Péché Mignon… - , autour du verre, une « dream team » dont le nombre oscille entre six et douze personnes et qui, tout au long de l’année, offre à ses hôtes une parenthèse de détente sous le signe du bien-vivre. © Didier Bouko

The place is a Cannes benchmark, with its year-long ambiance, piano bar, and chic “I love Food ‘N Mix” evenings, boasting DJ Uncle Jim’s who spins synergies between gastronomy and mixology. Whether you’re a red-carpet star on a night out, or just a guest dropping by, the team will welcome you with the same professionalism and sense of hospitality. The bar top is adorned with plaques inscribed with the names of regulars – bearing witness to the bar’s reputation. David Palanque, award-winning barman and double French champion won his latest title in 2014. He remembers a young couple who asked him to take a photo of them and their baby. The happy pair told him they had met each other in the bar at a convention years before. The anecdotes flow fast, and head barman Olivier Blanchard, 1998 world champion Michel Loué, Olivier Pillon, Guillaume Cotin, Christophe Dandelot and Vongvilay Southichak all have a collection of fond memories.

The Bar l’Amiral was where Tarantino tasted his first Mojito, and where George Benson goes to get away from the crowds.

The bar has also been known to host Canal Plus’ Grand Journal television team as they chill out during the Cannes Film Festival.

“The most important things aren’t just in the glass. You have to think outside of the glass!” says Olivier Blanchard. In the glass, visitors will find cocktail creations with iconic names such as Martinez Moma, Pink Floyd, Palme d’Or and Péché Mignon, each bearing a little story. And outside of the glass, a dream-team of between six and twelve people provide guests with a veritable moment of relaxation all year long.
