Rosé: it alone accounts for 80% of all wine production in Provence. Rosé wine is one of the oldest in the world. It’s also the most difficult to succeed, because it needs careful attention, like milk on the hob… Rosé is made with red grapes. When the fruit is pressed, the skin soaks in the juice. By halting this operation when the “robe” becomes perfectly rose-coloured (24 hours maximum after it was placed in the vat), one prevents the colour from evolving further. It’s then said that the vintner bleeds the vat, meaning that he recovers part of the grape-must. Perfectly filtered, it begins its fermentation (transformation of the sugar in alcohol) without undergoing any further change in colour.
