Small Steps The American Academy of Pediatrics recommends children participate in 30 minutes of physical exercise per day. To ensure your child is reaching his/her daily requirement, turn family time into fitness time. Boys Town Pediatrics has several tips on how to make fitness a family affair: • Run or walk for charity. Pick a walk/run geared toward families with kid entertainment and activities for extra fun.

• Plan a family sports tournament. Have the child pick the sporting activity and make the prize a day of no chores.

• Go on a bike ride or hike at a local park. Record everyone’s mileage with a pedometer and hang the progress on the refrigerator to encourage them to keep up the good work.

• Take a class together, such as dance, yoga, swimming, or martial arts. Choose a class that you and your child can do together.

• Plant a garden. Let your child pick out his own flowers that he can take care of and watch grow.

Set aside activity time right after school or dinner to help with consistency and accountability. Make sure to mix up the activity and keep it simple in the beginning. The goal is to help your child form healthy habits at a young age that will continue with him as he grows older.

Making Fitness a Family Affair

any parents struggle with how to fit exercise into their family’s

routine. By slowly incorporating physical activity into daily life, staying active will become more enjoyable, strengthen relationships, and form long-term healthy habits.

Make sure to talk to your child about the long-term benefits of staying active and how it helps develop and build healthy bones, muscles, and joints and can prevent certain health problems.

When to Consult a Physician If your child is refusing to exercise, losing or gaining an unhealthy amount of weight, or is experiencing pain or discomfort when exercising, consult your child’s pediatrician. By working together, family exercise will become a natural habit and create longterm lifestyle changes that will promote quality family time.

the pool, evenings in the backyard, fun on the go, and lots of snack requests from active, hungry kids.

Snacking isn’t bad for kids. Nutrition experts agree that a wide assortment of healthy snacks, served in moderation, can be an essential part of a child’s diet. Children need calories from food for energy, and vitamins and minerals to foster healthy growth and development. Snacks can provide kids with up to 20 percent of their daily energy and nutrient needs.

Healthy Kohl’s Kids, a partnership between Children’s Hospital & Medical Center and Kohl’s Department Stores focused on educating children and families on the importance of good nutrition and fitness, recommends encouraging children to eat small snacks, spaced between meals throughout the day.

Cinnamon Chips • 1 Tbsp sugar • 1/4 tsp ground cinnamon • 4 fat-free flour tortillas (6-inch diameter) Salsa • 1 cup raspberries • 2 peaches, peeled and chopped • 2 kiwifruits, peeled, sliced and quartered • 1 tsp lime or lemon zest • 2 tsp lime or lemon juice • 1 tsp sugar

Preparation 1. Preheat oven to 350°.

2. In a small bowl, combine sugar and cinnamon.

3. Spray tortillas lightly with water, then sprinkle with cinnamon-sugar mixture.

4. Using a pizza cutter, cut each tortilla into 8 wedges.

5. Place in a single layer on a baking sheet.

6. Bake for 8 to 10 minutes or until lightly brown and crisp.

7. Transfer to a wire rack and cool completely.

8. In a bowl, combine all salsa ingredients and mix gently.

9. Serve with tortilla chips.

Yield: 4 servings

May is Bicycle Safety Month

B

icycling is one of the most popular ways to get around,

whether for recreation, sport, or transportation. With millions of cyclists on the roads, the National Safety Council believes that defensive driving applies to cyclists as well as motor vehicle operators.

Approximately 800 cyclists were killed and more than 540,000 visited the emergency room with injuries in 2010. Taking precautions in traffic and wearing protective equipment are a cyclist’s best shields against injuries.

The Council offers the following tips for safe and enjoyable bicycling: Obey traffic rules. Get acquainted with ordinances. Cyclists must follow the same rules as motorists.

Ride in single file with traffic, not against it. Bicyclists should stay as far right as possible, watching for opening car doors, sewer gratings, soft shoulders, broken glass, and other debris.

Make safe turns and cross intersections with care. Signal turns half a block before the intersection, using the left arm straight out for left turn; and forearm up for right turn. When traffic is heavy, it is best to dismount and walk the bicycle at the crosswalks.

Never hitch on cars. A sudden stop or turn could send the cyclist flying into the path of another vehicle.

Always be seen. During the day, cyclists should wear bright clothing.

Nighttime cycling is not advised, but if riding at night is necessary, retro reflective clothing will make cyclists more visible.

Make sure the bicycle has the right safety equipment. A red rear reflector; a white front reflector; a red or colorless spoke reflector on the rear wheel; an amber or colorless reflector on the front wheel; pedal reflectors; a horn or bell; and a rearview mirror. A bright headlight is recommended for night riding.

Wear a helmet. Head injuries cause about two-thirds of all bicycling fatalities. A properly designed helmet has four characteristics: 1) a stiff outer shell designed to distribute impact forces and protect against sharp objects; 2) an energy-absorbing liner at least one-half inch thick; 3) chin strap and fastener to keep the helmet in place; and 4) it should be lightSPECTRUM weight, cool in hot weather, and fit comfortably.

Here are some useful tips for sensational summer grilling: • Keep beef refrigerated. Grilling times are based on beef being taken directly from the refrigerator to the grill, not at room temperature.

• Go lean. There are 29 beef cuts that meet government guidelines to be considered “lean.” Choose from traditional favorites like flank, tenderloin and T-bone steaks, as well as 95 percent lean ground beef.

• Trim, if necessary. Remove visible fat from meat and poultry before grilling to help prevent flare-ups and excess smoke formation.

• Marinating mantra. Always marinate in the refrigerator. Tender beef cuts can be marinated for 15 minutes to 2 hours for flavor, and less tender beef cuts should be marinated at least 6 hours but no more than 24 hours.

• Grilling temperature matters. Grilling over medium heat ensures even cooking and flavorful, juicy meat. If beef is grilled over toohigh heat, the exterior can become overcooked or charred before the interior reaches the desired doneness.

• Turn properly. Use long-handled tongs for turning steaks and spatulas for burgers. A fork will pierce the beef, causing loss of flavorful juices. And don’t be tempted to press down on burgers—it only releases the juices and creates flare-ups.

• Internal temperature matters. Cook burgers to at least 160°F. The color of cooked ground beef is not a reliable indicator of doneness.

Cook steaks to at least 145°F (medium rare).

With them since 2008, Dut has made leaps and bounds since coming into the Harts’ home. A refugee from Africa, he had been in previous foster homes and was angry about not having a “normal” childhood. He was also having problems adapting to a new culture, which led to struggles in school and relating to his peers.

ake nearly 200 kids, add in a loving home, 16 years of classes and training, and the surface of the experience Todd and Kim Hart have as foster parents might be scratched. An equation that equals excellence and expertise.

Like many people, the Harts originally knew nothing about foster care.

Kim had always wanted to help kids. When she found out her neighbors were foster parents to a friend of her teenaged son, she jumped at the chance. And they never looked back.

Todd continued to work outside the home while Kim became a full-time foster parent. This allowed the couple to specialize in high-level cases— kids with behavioral or attachment disorders, or who have been unsuccessful in other placements, like Dut.

Now, more than four years later, Dut has completely turned his life around thanks to the patience and guidance of the Harts. He has faced his problems head-on, and learned the value of education. Not only is Dut on track to graduate, but his high school career has been filled with a newfound love of sports.

Most importantly, Dut now has a home to call his own. The Harts have obtained guardianship of Dut and are able to give him the care and support every teenager needs.

Grilling season has arrived!

Challenge your taste buds with this spicy burger!

Total Recipe Time: 30 minutes Makes 4 servings

Ingredients

1 pound ground round ¼ cup prepared thick-and-chunky salsa 4 frozen cream cheese or Cheddar cheese-stuffed jalapeño peppers ¼ cup prepared salsa con queso ¼ cup chopped fresh plum tomato 2 Tablespoons sliced pitted ripe olives Prepared thick-and-chunky salsa

Instructions

1. Combine ground beef and 1/4 cup salsa in large bowl, mixing lightly but thoroughly. Lightly shape into four thin patties. Place one stuffed pepper in center of each patty; wrap beef around pepper to enclose, sealing seams and forming ball. Flatten balls into patties about 4 to 5 inches across and 1 inch thick.

2. Place patties on grid over medium, ash-covered coals. Grill, covered, 15 to 16 minutes, until instant-read thermometer inserted horizontally into center registers 160°F, turning occasionally.

3. Spread 1 tablespoon salsa con queso evenly over top of each burger.

Sprinkle evenly with tomato and olives. Serve with salsa, as desired.

Young Hero: Jack Militti

ack Militti, 14, goes to Beveridge Magnet Middle School. He has three older siblings, Elizabeth, 26, Nick, 24, and Tom, 22. “Jack is the youngest by quite a margin, which has been a mixed blessing,” says his dad, Tim. “He is sometimes introduced to the world through his siblings a little early.” But Tim adds that Jack is quick-witted, so he’s pretty good at keeping up with the fast-paced, mature conversations around his brothers and sister.

Unlike most kids in middle school who only have to worry about homework, the pressures of adolescence, and getting involved in extracurricular activities, Jack has the additional stress of living with cancer.

“Jack once mentioned that he was a little down due to [his] heavy chemotherapy schedule, but he quickly turned and said, ‘About the time I think it’s okay to have a pity party, I realize there are kids out there that have it much worse than I do.’”

Tim believes his son has really grown through the trials of cancer and has really become an even better person because of it. “He never gives into the fear of treatment and what it does to his body…

He [is] always kind to the other children in the treatment center at the hospital…[And] he always bounces back from the chemo with a smile on his face…He really goes with the flow.”

Although Jack has on more than one occasion mentioned that the “hand” he’s been dealt isn’t the greatest, Tim believes Jack is great role a model for other kids because he always plays his hand very sensibly.

“Jack has a great attitude,” he says. “He’s the genuine article when you describe a nice person. He endures the treatment largely in silence and without complaining, even though the treatment really makes him sick.” Tim adds that his son inspires him every day because he is capable of finding the good in the unfortunate things that happen to and around him.

“I am his father, and I hope some of his qualities rub off on me.”

Mom on the Rocks Sports Craze

hen my kids are full-grown, I should be the shortest of the bunch, standing at 6’2”. My husband, Chris, and I each had wonderful collegiate athlete experiences, so the natural parental push would be for sports. But what we want for our kids is for them to have their own experiences—whether that’s volleyball, architecture, or chess. Our job, as we see it, is to expose them to as much as we can and give them as many options to try as possible.

Max has taken to sports. And he’s a natural. Perhaps I’m just that loud mom in the stands who thinks her son is perfect (for the record, he is).

But we also want him to have options to explore science, music, health, and so on.

Lucy’s passion for dance is a little more difficult for me to digest. When I jump up and scream, “Yeah! My daughter TOTALLY NAILED IT!” and then go to high-five the other moms, well, that’s a bit frowned upon. The point is, it doesn’t matter how I like it. What matters is that Lucy enjoys it. And Lucy is stunningly graceful when she dances. This coming from two parents who were forced to dance at their own wedding. We’re not dancers, but Lucy is.

With boy/girl twins, the sports they can both participate in are scarce.

But we found one and discovered a family passion of ours—track club.

Track club keeps us all active over the summer break. The kids high jump, and Chris coaches. Again, I take my place as that loud mom in the crowd whose kids can do no wrong. It turns out “loud mom” and high jump don’t quite go together, I’m learning. There are several track clubs in the Omaha area, each proving to be a healthy, positive place for kids to find something they enjoy and do it.

It’s fun watching my kids try new things. Keeping them interested and curious keeps me interested and curious. It’s worth it for the sake of letting my kids discover their interests, not mine. Either way, they’re still SPECTRUM perfect, and I’m still loud.

MEET THE DINOSAURS! WHAT’S IN A NAME? A LOT if you are a dinosaur!

I will call you Dyoplosaurus!

Most dinosaurs get their names from the ancient Greek and Latin languages.

And I will call you Mojoceratops!

And sometimes they are named after a defining feature on their body.

Their names are made up of word parts that describe the dinosaur. The name must be sent to a special group of people called the International Commission on Zoological Nomenclature to be approved!

Let’s Analyze Our Results! ? Out of all the ways that the dinosaurs used to protect and defend themselves, which was most noticeable to you?

THE CARNIVORE VS THE HERBIVORE There are many physical characteristics that animals have which allow us to guess what behaviors they may exhibit. For example, when we look at the teeth of an animal, we can predict if they are a carnivore or a herbivore.

A carnivore is an animal which eats meat.

A lion is an example of a carnivore. They have very sharp teeth which help them rip meat apart.

A herbivore is an animal which eats plants. A zebra is an example of a herbivore.

They have teeth that are flat, which help them grind up plants and leaves.

By making observations, such as those above, paleontologists are able to make educated guesses about how dinosaurs acted millions of years ago.

As you explore Dinosaurs Alive! at Omaha’s Henry Doorly Zoo & Aquarium, keep track of the physical characteristics that you see on the dinosaurs and other animals (record observations for at least 3 dinosaurs and 3 zoo animals).

Have you ever wondered how fossils are formed, or what makes a fossil different from a bone?

A fossil is a bone that isn’t a bone anymore.

After being buried for millions of years, bones absorb surrounding minerals and become rock-like. This is why fossils look brown and bones look white.

Did You Know?

One way a paleontologist can figure out the age of a fossil is by using radioactive dating.

Everything on earth has a small amount of radioactive material and scientists can measure this. By comparing how much radioactive material is in the ground and fossils, paleontologists can determine how old fossils are.

An animal must be quickly buried once it dies. Mud or other material begins to quickly cover the animal. #2

More and more material (mud, sand, or other) piles on top of the animal and begins to harden. The bones are now surrounded by stone and begin to be dissolved by groundwater.

This leaves a cavity which is in the shape of the original bone.

Water, which is full of minerals, begins to fill the cavity. The minerals are left behind and a cast is created. The cast has the same shape as the original bone!

WHAT DID DINOSAURS LOOK LIKE? Does anyone really know what dinosaurs looked like?

Often, the only thing scientists have to go by are fossils.

Unfortunately, fossils don’t tell us what color dinosaurs were, or what type of body covering they had. Nearly everything we think we know about what dinosaurs looked like is due to an artist’s interpretation. Scientists who study extinct animals (like dinosaurs) often work with artists to recreate what the dinosaur may have looked like in real-life.

Omaha Parks & Recreation Connecting the Community with the Outdoors

S

ince the addition of the Bob Kerrey Pedestrian Bridge to the Omaha landscape in 2008, it seems Omaha is constantly increasing the availability of public, outdoor recreation each year for its community. In fact, that’s exactly what Omaha Parks & Recreation wants.

“Childhood obesity is on the rise, and children are spending more time with electronic media,” he says. “It’s important to introduce kids to the value of their neighborhood parks and outdoor recreation opportunities, [as well as] keep them engaged with other children at outdoor facilities and after-school and summer programming.”

“Our goal is to improve the quality of our services and continue to provide and make the Omaha community aware of the many opportunities we offer,” says Brook Bench, acting director of Omaha Parks & Recreation.

Local mother Effie Cockell and her kids, Anthony, 8, and Breanna, 7, regularly take advantage of the recreation opportunities at Saddlebrook Community Center and Hummel Park Nature Center. Anthony and Breanna have participated in art classes, soccer, basketball, movie nights, and archery, and Cockell has taken them to holiday park events.

The organization boasts more than 250 parks over approximately 10,000 acres with 120 miles of bike trails, seven public golf courses, 18 pools, five water playgrounds, 221 tennis courts, an indoor ice arena, 13 community centers, a brand-new nature center, three boat marinas, a greenhouse, and two dog parks.

“At the Halloween function, there were decorations and a scavenger hunt for the kids. For the Christmas function, they had tractor rides and a visit from Santa. The kids also got to eat donuts off of the [Christmas] tree, so that was probably one of their favorite events,” she says with a laugh.

Bench explains that Omaha Parks & Recreation is committed to encouraging healthy, positive lifestyles in comfortable, relaxing environments. In his opinion, parks not only make a community more livable and desirable, but they also connect us to our childhood memories and family traditions.

Even though her kids utilize the available recreation more often than she does, Cockell has found benefits from visiting the public spaces as well. “It’s a great place to meet people and neighbors. I’ve met great friends through the kids’ activities.

It’s wonderful, not only for my children but for me as well…One time, the kids and I were at Hummel Park, and we saw a trail and were like, ‘Hey, wait. We can hike here!’ It just really opens up a bunch of new doors for us.” continued on page 34

Cockell believes the community needs public parks and recreation programs because they’re economical for families. “Kids can try a bunch of [activities] for a very good price before they get lopped into something permanently, so it provides them with a well-rounded opportunity.”

to enjoy music along with Missouri River views and a walk across the bridge. Bench says that information about the music series is accessible at bridgebeats.com for anyone who is interested in learning more about the free music series.

A few such opportunities are the Learn to Swim classes, lifeguard training, and water aerobics offered year-round by the organization. In 2003 and 2008, Omaha Parks & Recreation received the National Excellence in Aquatics Award, which honors organizations that demonstrate excellence in the management and development of public swimming pools and other aquatic facilities.

During the summer, there are also low-cost youth programs available for kids. Rec’s Kids Club runs Monday through Friday from 12-4pm starting in June. Weekly themes determine the club activities, and kids get the opportunity to visit Omaha’s Henry Doorly Zoo & Aquarium, go on a field day, and enjoy other special events. “This program is free but benefits from tax-deductible donations of any amount,” Bench says. Hummel Park Nature Center also has a youth program—a 9-week Day Camp that kicks off in June and runs through August, where kids will enjoy hiking, nature identification, archery, arts and crafts, outdoor cooking, fort building, compass treasure hunts, and wilderness skills.

Omaha Parks & Recreation has also received plenty of recognition for its inexpensive, community-wide events. “We offer free events at each of our community centers, pools, and golf courses,” Bench says, adding that all of these events are listed on the Omaha Parks & Recreation website calendar, as well as in Facebook (facebook.com/OmahaPRPP) and Twitter (@OmahaPRPP) posts.

Take, for example, the free music series for families that will be offered by the organization this summer at the Bob Kerrey Pedestrian Bridge Plaza. On Friday nights throughout the summer, families will be able

As for Cockell, she hopes to continue using the available recreation with her kids in the future, but she knows Omaha Parks & Recreation needs to see continuous growth in the use of the public spaces to continue offering such opportunities. “They’ve been doing a great job with the upkeep of the parks. But they need the support of the community to keep going.”

How To Avoid “Summer Brain Drain”

B

efore students get final report cards, it is a good idea for parents to begin thinking about ways they can encourage their children to continue learning over the summer. Research suggests that students can lose two months of progress if they are not actively engaged in educational activities over the summer. Many local school districts offer a variety of summer school options for continued learning or review, but parents may also consider these options to keep kids academically healthy: A variety of online video resources can help children of all ages review skills and continue their learning during the summer. Khan Academy (khanacademy.org) offers more than 239 million free lessons on a variety of topics. Tyler DeWitt, a Ph.D. student at MIT, provides an extensive science video resource (youtube.com/tdewitt451).

Reading every day within the appropriate level will also help children and teens improve their vocabulary and comprehension skills, especially if they listen to a fluent adult read aloud and discuss the text. Parents and older students can register at goodreads.com with an e-mail address to see what their friends are reading; younger children may enjoy readingrockets.org or biblionasium.com; and public libraries (omahapubliclibrary.org) have summer reading programs to encourage kids of all ages to read during the break from school.

On the Go! Escape the Doldrums This Summer with Great Road Trips

ummer just started, and the kids are already wondering what to do. It’s time to plan a family road trip. Here are three adventures that will create unforgettable weekends:

A NEW WAY TO SEARCH FOR HOMES. Home searching just got a makeover. The next generation of NP Dodge is here–with a new website, new app and cutting-edge features.

Nebraska City, the birthplace of Arbor Day and about an hour’s drive from Omaha, is the perfect getaway. Your first stop should be Arbor Day Farm, where kids of all ages can explore the 50-foot tree house, hike through the forest, take home a free tree seedling, and climb aboard the Discovery Ride. Later, explore the 52-room mansion that was home to J. Sterling Morton, founder of Arbor Day, at Arbor Lodge State Historical Park. Then visit Mayhew Cabin for a peek into John Brown’s Cave—a stop on Nebraska’s Underground Railroad.

Our second recommendation is Nebraska’s capital city. Lincoln offers something to fit every taste: art, culture, history, outdoor recreation, and family fun. Treat your children with visits to the remarkable Lincoln Children’s Museum and the Lincoln Children’s Zoo, both of which offer excellent hands-on experiences. Also consider stops at the State Capitol and Memorial Stadium.

A third option is to head north for a driving trip you won’t soon forget. Explore the first fort built west of the Missouri River at Fort Atkinson State Historical Park in the town of Fort Calhoun. Then, head to Norfolk’s Elkhorn Valley Museum, which offers a children’s discovery zone and a Johnny Carson exhibit. Plan to overnight at the amazing Ponca State Park, where you can rough it in your tent or splurge on a luxurious mini cabin complete with four bedrooms, a full kitchen, Wi-Fi, and cable television. Wrap up your road trip with a day in the park riding horses, hiking the 20 miles of trails, participating in an outdoor skills program, or canoeing the Missouri National Recreational River.

The CycleFest is a free, fun and educational event for the community. It is a great way for families to learn ‘rules of the road’ while enjoying safe cycling. Young children will navigate the Trike or Bike Rodeo, learn hand signals and traffic signs. Participants learn about proper gear and bike maintenance. Free bike fittings will be offered, as well as free helmets to those 15 and younger who don’t already own one (while supplies last). Plus there will be face painting and interactive displays!
